he first time I attempted to surf was more than a decade ago. I say “attempted” because I never actually rode a wave. I learned to paddle my board—my arms disappearing into the dark waters of the Atlantic Ocean with each stroke—and manoeuver myself to catch a wave, but the act of standing up eluded me. My instructor with One Life Surf School, an all-female surf school that used to teach at Lawrencetown Beach near Halifax, N.S., warned me against being disappointed. Some people don’t master the pop-up—the act of going from lying on your stomach to standing on the board—their first time out, she told me. I was reminded of this while I was conducting the interviews for our surfing feature (page 31). “If you are trying surfing for the first time, I would say to never give up and just keep putting in the time, because, once you get it, it’s incredible,” 16-year-old Canadian surfer Mathea Olin told me. “It’s about knowing how to read the wave, that’s the most difficult part,” said Maine-based surfboard builder Mike LaVecchia. “You will be hooked.”

They are right. Each effort that first day saw me tumbling off the longboard into the cold Atlantic waters. But, after a few more tries over the years, I eventually did learn to pop-up. Even though I don’t surf as much as I used to, I still love catching a wave when I get a chance.

Find puffins, pilgrimage sites and spectacular seafood on this sleepy Scottish island.

he Isle of Mull in Scotland’s Inner Hebrides is a place where life slows down, partly because of its beachy and bucolic charms, and partly because of its system of winding single-lane roads—occasionally blocked by Highland cows. Remote, but easily accessible, Mull is only a 50-minute ferry ride from Oban (a two-and-a-halfhour drive northwest of Glasgow) and is best explored by car and on foot. Make your base in Tobermory, Mull’s picturesque and seaside capital, and start exploring.

Afternoon The whitewashed Tobermory Distillery (1) at the south end of Main Street has produced single-malt Scotch whisky since 1798. Sign up for one of the hourly tours and taste its famous Ledaig whisky. A two-minute walk down the harbour takes you to the Mull Aquarium (2), a catchand-release marine education centre. If you’re lucky, you’ll meet a curled octopus. Evening Walk to Calmac Pier at the other end of Main Street and get a table at award-winning Café Fish. Start with caviar served with Scottish oatcakes, then treat yourself to the Café Fish Roast Shellfish Platter with langoustines and lobster caught that day (3).

Morning Drive five minutes from the centre of Tobermory to Isle of Mull Cheese (4), a working dairy farm with a self-guided tour and a café where you can breakfast on handmade scones. Drive clockwise around Mull to Fionnphort, a scenic hourand-a-half journey.

Two Can’t-Miss Events Mull Cyclosportive June 2 Bicycle (or watch others bicycle) all the way around Mull on 140 km of single-lane roads, passing wild beaches and sheep-dotted farmland. There is also a 70-km option, and all routes have food and water stops.

Mull Highland Games July 18 At this traditional competition, kilted strongmen toss cabers and hammers in Erray Park overlooking the Sound of Mull. Visitors enjoy pipe bands, dancers and food, and can compete in a hillrunning race.

Afternoon Park in Fionnphort and board the 10-minute foot ferry to the Isle of Iona, one of the oldest Christian sites in Western Europe. Walk the pilgrim path to Iona Abbey (5), founded as a monastery by St. Columba in 563 AD. The Abbey Church of St. Mary is said to be the burial place of Macbeth, a former king of Scotland and inspiration for William Shakespeare. Evening Drive to Calgary Bay, a two-and-a-halfhour trip. This white-sand beach is a great place to explore rock pools. A 30- to 40-minute drive returns you to Tobermory. Order haddock and chips from the Fisherman’s Pier Fish & Chip Van and eat overlooking the waters of Tobermory Bay.

Morning Go to Main Street to see the iconic row of colourful buildings, and stop by the Tobermory Bakery & Tea Room for a full Scottish breakfast, which includes eggs, beans, toast, black pudding and square-shaped Lorne sausage. Browse the waterfront shops for local crafts and Hebridean tweed.

Morning Breakfast on scrambled eggs and smoked salmon (6) at the Tobermory Scullery on Main Street and grab a ploughman’s lunch to-go. Walk to Tobermory Harbour and board a Staffa Tours boat. Book ahead and don’t be late— this all-day experience almost completely tours Mull’s coastline. Keep your eye out for whales, basking sharks and dolphins. Afternoon Picnic at the Isle of Staffa (7), a volcanic island off Mull’s west coast made from hexagonal basalt columns, and walk the path-

way from the mooring to Fingal’s Cave. This geological curiousity was immortalized in a Felix Mendelssohn overture 200 years ago. Continue your boat ride to Lunga, the largest of the Treshnish Isles—a series of islands off the coast of Mull—where a 15-minute hike takes you to a clifftop puffin-nesting site. Evening Drive southwest of Tobermory for dinner at the Am Birlinn restaurant near Dervaig. Give the haggis rolls a try and don’t miss the locally caught seafood stew. —Julia Williams

CHÂTEAU SAINT-LOUIS Quebec City, Que. In a crypt beneath the iconic Fairmont Le Château Frontenac lie the ruins of a governor’s residence dating back to 1620. The excavation (revealing a lower court, outbuildings and kitchen facilities) wrapped up in 2007, but kids can still get in on the action by grabbing shovels and trowels and taking part in a dig. CROW CANYON Mesa Verde, Colo. The ancestral Pueblo people of the American southwest are famous for their cliff dwellings, but many relics from their settlements have yet to be unearthed. Learn more about this highly developed ancient society at Colorado’s Crow Canyon research campus before visiting an active excavation site. (crowcanyon.org)

3 PLAYA SANTA LUCÍA Camagüey, Cuba In the sea surrounding the 18th-century fortress of San Hilario on Cayo Sabinal, about three-and-a-half hours northwest of Holguin, divers encounter submerged ceramics and wine bottles discarded by fort guards. There are also two exceptionally preserved 19th-century wrecks, including the Mortera, a Spanish merchant ship that sank near Santa Lucía beach in 1896. (gocuba.ca)

This summer field school, open to amateur archaeologists, examines an imposing palace-fortress in northern England, which has housed a succession of historic rulers, most notably the early medieval kings of Northumbria. This year’s team will seek out relics from the 7th- and 8th-century Anglo-Saxon occupation, though materials from as early as the Roman era have been found on previous digs. Shamrock Train Inn and Suites Florenceville-Bristol, N.B. Train-lovers will want to check into Shamrock Train Inn and Suites. In 2018, the inn opened two suites inside refurbished train cars parked just a five-minute walk from its main location. The Romancing on the Rails suite is housed in a converted tourist car built for the Canadian Pacific Railway in 1919. Taking up half the car’s length, it features a queen-size bed, a small kitchenette stocked with drinks and snacks and an electric fireplace. The car housing the Adventure on the Rails suite was built in 1939 and may have been used as part of a tour of Canada by King George VI. It includes three bunks—two with double beds and a third with a queen—separated from the main living space with headboards and footboards that stop just shy of the ceiling. Built in 1846 as mercantile buildings for the fishing industry, this National Historic Site is a jewel on the city’s harbourfront and one of its oldest structures, having survived the Great Fire of 1892. ON-CAMPUS “I’m a McGill University alumni—it’s a beautiful campus with this old Victorian museum called the Redpath Museum. CABARET Discover what it is like to cancan at the storied Moulin Rouge Paris.

porting bright-rouge lipstick, sparkling Swarovski earrings and a diamond-encrusted bikini, Claudine Van Den Bergh looks every inch a showgirl. While a stream of glamorous dancers race around the dressing room in perilously high heels, she remains calm, elegant and poised. For her, this is merely a typical working day as a principal dancer for one of the most prestigious cabarets in the world—the Moulin Rouge Paris. Almost a quarter of a million bottles of champagne are cracked open every year at this renowned venue, but, make no mistake, it’s not all glamour and decadence. It takes a month of intensive training to master the show’s choreography before a dancer is even allowed to perform on its historic stage. Van Den Bergh takes us behind the scenes to share both the joys and the tribulations of life as a cabaret star.

What are some of the favourite costumes you’ve worn during the show? All the diamonds on the costumes are Swarovski. We have an [atelier] here that makes the costumes on-site—it’s hidden in one of the many little corridors of the Moulin Rouge. I love the Medusa act, which links to Greek mythology. We have a tank and one of our girls, Olga, swims underwater with snakes. I play the part of Medusa, so I wear [a silver fascinator with 3D snakes spiralling out of it].

What are the biggest challenges you face on stage? Our finale tableau [includes] the French cancan, which is eight minutes of intense kicks, cart-

wheels and jump splits, and involves serious training. It’s very fast and very technical. How has the cabaret evolved over the years? I’ve seen all the Moulin Rouge archives—it’s important that I understand the history because that adds richness to my work. It’s evolved and it continues to evolve. The standard just keeps getting higher. Now we have modern acts to entertain between each tableau—rollerbladers, gymnasts, ventriloquists, circus performers and medleys. Plus, there are the performers dancing underwater. Only the traditional cancan has remained the same.

What is the most common misconception about the show? It’s not burlesque—it’s more like a West End musical. There’s a huge amount of talent and effort that goes into it, and I think the crowd realizes that by the end. —Chloe Govan

What attracted you to becoming a dancer at the Moulin Rouge? My mom is a classical dance teacher, so it was handed down to me and it’s something I’ve been passionate about all my life. Paris is definitely one of the most liberal cities in the world. It’s a huge haven for artists and creatives.

What is the process to be a performer? [For me], it was a gruelling four-hour-long audition process. Auditions are held all over the world, so they go far to find the best. They’re looking for tall, classically trained dancers.

tion of surfers have discovered ride-worthy waves in some surprising locations and are changing the face of the sport.

lex Pelletier zips up his sleeveless neoprene jacket, tethers his board to his ankle and walks down a steep path to the water’s edge. He disappears for a few moments behind the trees and bushes before he floats past Montreal’s Habitat 67 housing complex. Lying on his surfboard—head facing up the St. Lawrence River—the current carries him into the wave. He stands, and is soon riding the whitewater, moving along its edge. “It’s like Tetris,” says Pelletier, when he returns to shore. He points to the water, just “look for that slot and go in.” The 23-year-old has been surfing this standing wave on the St. Lawrence, located minutes from downtown Montreal, for eight years. “When you see it for the first time, you think it can be crazy, but it really is not,” he says. “The bottom of the river in this area is a bit higher, and then it goes down really quickly. It’s like

a spoon and it creates the wave. We do not have to wait for a swell to come or for the weather to be nice; this wave is always here. You could stay on it forever if you were good enough—and had strong legs.” Pelletier works for KSF, a Montreal company that teaches surfing, kayaking and standup paddleboarding on the St. Lawrence. He says Habitat 67 is the perfect place to surf in the city, and is sometimes visited at the end of a full day of lessons offered through the school. “It does surprise people that aren’t from Montreal, because we are, maybe, five hours away from the ocean. You would never think there was a possibility you could surf here,” he says. Getting to the wave takes a few minutes. After passing the stacked concrete boxes of iconic Habitat 67, you turn into a parking lot. From there, you walk through a grassy field followed by a narrow dirt path a few metres above the water that runs parallel to Habitat 67’s back fence. The river can also be ridden most of the year, with the right equipment and skill level. In summer, the river can reach 24 C, but in winter, Pelletier says, you need to wear a thick wetsuit, hoodie and protective booties—and have warm water on hand in case your suit’s zipper freezes.

Il disparaît derrière les arbres et les buissons avant de réapparaître sur l’eau, devant le complexe Habitat 67 à Montréal. Couché sur sa planche, la tête face au fleuve Saint-Laurent, le courant l’emporte dans la vague. Il se lève et bientôt il surfe sur la crête de la vague en eaux vives. « C’est un peu comme dans Tetris », dit-il en revenant près du bord. « Tu cherches l’ouverture et tu y vas. » À 23 ans, Pelletier surfe cette vague stationnaire à quelques minutes du centre-ville sur le fleuve Saint-Laurent depuis huit ans. « Quand tu la vois pour la première fois, tu te dis que c’est un peu fou, mais ça ne l’est pas », dit-il. « Le fond du fleuve à cet endroit est un peu plus élevé, puis il s’enfonce soudainement, formant

un genre de cuillère qui crée la vague. Pas besoin d’attendre une vague ou une température clémente, cette vague est toujours là. On peut la surfer indéfiniment si on est assez bon et qu’on a les jambes assez fortes. » Pelletier travaille pour KSF, une entreprise montréalaise qui enseigne le surf, le kayak et la planche à pagaie sur le fleuve. Selon lui, Habitat 67 est l’emplacement idéal pour faire du surf en ville, et c’est là qu’il se rend parfois à la fin d’une journée de cours. « Les gens qui ne sont pas de Montréal sont assez surpris, car nous sommes à cinq heures de l’océan. Ils n’auraient jamais pensé qu’on pouvait faire du surf ici », faitil remarquer. La vague est à quelques minutes. Après avoir dépassé les cubes de béton emblématiques d’Habitat 67, on tourne dans un stationnement. De là, on traverse un champ puis on suit un petit chemin de terre quelques mètres au-dessus du fleuve parallèlement à la clôture arrière d’Habitat 67. On peut surfer ici pendant la majeure partie de l’année avec le bon équipement et la bonne technique. L’été, le fleuve peut atteindre 24 °C, mais l’hiver, il faut une combinaison épaisse, une cagoule et des bottillons, et une réserve d’eau chaude au cas où la fermeture éclair gèle. f you want to know what it’s like to surf in Tofino, on the west coast of Vancouver Island in British Columbia, there is no better ambassador than the reigning Queen of the Peak. “It is the best place anywhere in the world,” says Mathea Olin, who won the title at the local all-female surfing competition this past October. “You are surrounded by the prettiest trees, and, when you are out there, you feel like you are on a planet before humans got there. The waves are incredible for Canada,” she says. Olin knows about riding—and making—waves. Having started surfing only five years ago, the 16-year-old has competed in local, national and international competitions, including the 2017 Pan American Trials where she won Canada’s first medals—a gold and bronze—for surfing. Born in Canmore, Alta., Olin moved to B.C. with her family when she was a child and instantly took to the ocean. Tofino has 35 kilometres of beaches and an exposed coast that is known for attracting surfers—even with its cold water, where temperatures can range from seven to 15 C. Olin, who tries to surf for an hour-and-a-half each day, is currently training for her next challenge: the Olympics. Surfing will make its debut in Tokyo in 2020. “Being in the Olympics is any athlete’s dream,” says Olin, who will compete this May to be part of the Canadian team

Olin says Canadian surfers need to have a high level of motivation and dedication, not only because of the chilly weather, but also because they often train in isolation. “It’s a new path being paved by Canadians,” she says.

Née à Canmore, en Alb., Olin a déménagé très jeune en C.-B. avec sa famille et a immédiatement adoré l’océan. Tofino possède des plages qui s’étendent sur 35 km et une côte exposée réputée chez les surfeurs, malgré la froideur de l’eau, allant de 7 à 15 °C. Olin essaie de surfer une heure et demie par jour et s’entraîne actuellement pour son prochain défi : les Olympiques. Le surf fera son entrée aux Jeux de Tokyo en 2020. « Participer aux Jeux Olympiques est le rêve de tout athlète », affirme Olin, qui participera aux épreuves de mai pour faire partie de l’équipe canadienne, au cas où cette dernière arriverait à se qualifier. Pendant ce temps, elle est l’ambassadrice du surf au Canada, un pays réputé pour son climat froid plutôt que pour ses vagues. Les surfeurs canadiens doivent faire preuve d’une grande motivation et d’une grande détermination en raison du temps froid et de l’isolement lors de l’entraînement selon Olin. « Les Canadiens sont en train d’ouvrir la voie », dit-elle.

ike LaVecchia picks up a hand plane and runs it along the edge of the cedar planks, showing how, little by little, he carves the wood into the rounded nose and gentle contour iconic of a surfboard. The co-owner and founder of Grain Surfboards, a workshop in York, Maine, LaVecchia builds boards the old-fashioned way. He constructs them out of wood, eschewing the use of foam and limiting the amount of chemicals used in the finishing process. “It’s worth putting in a little extra effort, a bit of extra investment for the payoff,” says LaVecchia, who stands near the first board he ever made—proudly hanging in the shop. “People will have a board they will feel close to.” An hour north of Boston, York is where Bostonians come to escape the summer heat and humidity, and to surf. Flags on the north and south side of the hard-packed sand beach mark a zone where surfing is allowed on this stretch of the Gulf of Maine. LaVecchia moved to York from Vermont to be a boat builder. He grew up in the 1970s and ‘80s intrigued by surfing, and made his own board after his work for a local builder slowed down 15 years ago. His friends were soon asking him to make them boards. In his workshop, LaVecchia points out the raw cedar, that arrives in six-, eight- and 10-foot lengths. It is these planks that, through a series of steps—sawing,

planing, milling, shaping, epoxying and sanding—are transformed into surfboards. The cost can range from US$1,900 to $2,400, and Grain offers workshops where participants learn to make their own board, and sells kits so surfers can build their own at home. The cost is more than a foam and fibreglass surfboard, but LaVecchia says wood will last longer. “Wood has memory to it, so it can bounce back,” he says. “They are very strong, they don’t—unless you are throwing it on rocks—really show pressure dents and dings.”

Enfant des années 70 et 80, il est intrigué par le surf et il a fabriqué sa propre planche de surf après avoir travaillé pour un constructeur local il y a 15 ans. Puis, ce sont ses amis qui lui demandent d’en fabriquer. LaVecchia montre les planches de cèdre brut de six, huit et dix pieds de long dans son atelier. Ce sont ces planches qui, après avoir été sciées, planées, façonnées, enduites d’époxy et sablées, sont transformées en planches de surf. Le coût d’un surf varie entre 1 900 et 2 400 $ US. Grain donne des ateliers pour apprendre à fabriquer sa propre planche et vend des ensembles de surf prêts-à-monter. Le bois coûte plus cher qu’une planche en mousse ou en fibre de verre, mais dure plus longtemps selon LaVecchia. « Le bois a une mémoire, il peut s’adapter. This cobbled beach a half hour from Halifax is a popular surf spot. The best time for beginners is July and August, with world-class waves for experienced riders in the fall. East Coast Surf School offers group and private lessons during the summer months, and rents boards, wetsuits and accessories.

A sculpture of a surfboard greets visitors to the beach in Inchydoney, located an hour southwest of Cork. A good spot for beginners, you can surf year-round, but the waves are best in the spring and fall. Other popular spots include Bundoran, Rossnowlagh and Lahinch, all on the Atlantic coast.

In winter, the place to be is Cerritos Beach north of Cabo San Lucas, while in the summer, the best spot for beginners is Acapulquito Beach in San José del Cabo. The Los Cabos Open of Surf takes place each June at world-famous Zippers Beach, located in San José del Cabo.

Some of the best places, with consistent swells and rolling waves, are along the Galveston Island Historic Pleasure Pier, located at 25th Street and Seawall Boulevard. The best times of the year are spring and fall as frontal systems push through the Gulf of Mexico, creating great waves.

Kananaskis is home to The Mountain Wave, a man-made swell on the Kananaskis River built by the Alberta River Surfing Association and Surf Anywhere in 2016. The wave is suitable for more advanced riders, there is also a viewing deck for spectators and competitions are held annually.

This community in Orange County is home to the International Surfing Museum, opened in 1988 by the late Natalie Kotsch, a Canadian who wanted to preserve the community’s surfing past. Surfing is popular on both sides of the local pier, the end of which is home to the 1940s-style Ruby’s Diner.

Operating on Lake Pleasant, north of Phoenix, WakeSurf AZ allows surfers to ride the wake created by a boat moving in front of them. WakeSurf offers instruction to all levels, from beginners (who learn with the help of a rope line that pulls them) to experts.

A man-made island that was completed in 1916 and modified into a peninsula about 30 years later, this rivet-tough warren of False Creek factories underwent an ugly-duckling transformation in the 1970s. That’s when crumbling wood-beamed workshops were reclaimed with new theatres, artisan studios and a foodie-focused Public Market that’s now a major Vancouver visitor magnet. Dozens of additional creative pit stops add to its latterday appeal, ranging from lip-smacking Liberty Distillery to handcrafted Granville Island Broom Co. But the gritty past hasn’t been forgotten: check out the preserved dockside crane, rail-embedded sidewalks and row of towering concrete silos, now painted with a gaggle of giant colourful characters.

Chinatown

Canada’s largest Chinatown is also one of Vancouver’s oldest neighbourhoods. While trendy new businesses regularly open here, it’s not hard to tap the past in a district where red-painted lampposts are topped with sinuous golden dragons. Some of the oldest buildings are on East Pender Street, where slender, terracotta-accented edifices look like time-travelling imports from yesteryear Shanghai. Nearby, Dr. Sun Yat-Sen Classical Chinese Garden deepens the cultural immersion, its whitewashed walls enclosing a turtle-rippled pond framed by twisting pines. Steps away, you’ll find Chinatown BBQ restaurant, where nostalgic neighbourhood photos look down on heaping plates of Cantonese comfort food.

Gastown

Thanks to chatty Englishman John “Gassy Jack” Deighton and the sawmill workers’ saloon he opened here in 1867, this is where modern-day Vancouver began. The surging development surrounding his pub soon became known as Gastown, which was later officially renamed Granville and then Vancouver. Still the designated moniker for this historic neighbourhood, there’s now a jaunty, barrel-plinthed statue of old Gassy Jack here, overlooking brick-paved streets lined with handsome heritage buildings. Deighton would be delighted to know that many of these structures now house some of the city’s favourite bars, from the cocktail-loving Diamond to the craft beer-hugging Six Acres and Alibi Room.

This area was regarded as the bohemian soul of East Vancouver thanks to the postwar Italian immigrants who transformed it into a promenade of patio cafés and neighbourhood coffee shops. Consider the Lebanese comfort dishes at Jamjar (don’t miss the deep-fried cauliflower); the French-Tunisian bistro ambiance (and bestselling lamb shank) of Carthage Café; and the celebrated sushi at Kishimoto Japanese Restaurant, where queue-avoiding off-peak dining is recommended. Hecho en Casa means “made at home” and Lamas quietly dismisses the tiny chalkboard menu (with prices in the local, not tourist, currency), saying she welcomes customers as if they are guests in her own home—cooking for each visitor’s taste and mood. With just seven tables, and vintage Cuban music softly playing, dishes are lovingly presented, starting with piquillo peppers stuffed with ropa vieja (shredded beef) and served on fried plantains, a Cuban caprese salad with local farmer’s cheese, creamy pumpkin soup and grilled pork with a hint of coconut oil served with papaya jam. So does the doorman, who checks reservations and sends you up a narrow staircase to sit among ornate chandeliers, antique chairs and poster-packed walls. The food is modern Cuban—a fusion of Spanish, African and Chinese influences, with local ingredients, saucy smears and pretty platings. Lamb, duck and rabbit make appearances. Suckling pig, fish ceviche and fried potatoes with chorizo are winners. Sister restaurant Al Carbón is located downstairs.

BREAKFAST El Café serves all-day breakfast with espresso-based beverages and fresh-pressed ginger and lemon drinks. The pulled pork sandwiches with yucca and orange marmalade are stunning, and the sourdough bread is homemade.

LUNCH Some say El Aljibe is Cuba’s best state-run eatery. Come for the roast chicken, served since 1946, with a secret, garlicky, bitter orange sauce. The feast comes with all-you-caneat fried plantain chips, rice, black beans and vegetable salad.

SIGNATURE EXPERIENCE FROM URBAN FARM TO TABLE Cojímar, a town on the outskirts of Havana that inspired writer Ernest Hemingway, is home to the private restaurant Café Ajiaco. Guests are invited not just to eat, but also to tour its backyard garden where herbs and greens are picked, make mojitos with its bartender, and cook lunch dishes with its chefs. It’s all part of a food trip designed by Ela Velunza, one of the Havana guides who works for ToursByLocals, a Vancouver-based company that connects travellers with locals around the world. Don’t miss the restaurant’s signature dish—ajiaco, a hearty stew with root vegetables, three kinds of meat, corn cobs and chunks of tamale. It’s considered one of Cuba’s national dishes.

s the days lengthen and you begin craving the delicate cocktails of warmer weather, perch yourself on a patio—Tom Collins in hand— and consider the following tale: It’s 1874, and a notorious slanderer has been running unbridled through the public houses of New York City. A friend informs you that you’ve been the latest victim of Tom Collins’ wicked tongue. You make haste to the local bar to confront the scoundrel, but, when you arrive and ask for Collins, you’re handed a tall, sour gin beverage instead. So goes the story of “The Great Tom Collins Hoax of 1874,” which caught hold of New York and is said to be the origins of the cocktail. But there’s a duelling creation story, in which several decades earlier, John Collins, of the Limmer’s

Hotel in London, England, concocted a gin punch of the same recipe. Perhaps the true story of this drink’s origin lies in print. “New York saloon-owner Jerry Thomas was the first to put this cocktail down in writing,” says Bradley Evans, head bartender at Harding’s in Manhattan. Thomas’ original cocktail of gin, fresh lemon, gum (simple) syrup and soda is in 1876’s Bon-Vivant’s Companion—with the brand of gin used in the drink likely evolving from Jenever to Old Tom to today’s favoured London Dry. While the Collins is often overlooked because of its simplicity, that’s the beauty of this wellbalanced tipple. “The Tom Collins cocktail reminds me of sitting on a porch in the summer and drinking lemonade,” says Evans. “It’s a NYC staple.” —Taylor St. John

Steam the lobster or lobster tails in a pot with one or two inches of simmering water. The pot should be big enough so it can accommodate the lobster and you should be able to cover the pot completely with a lid. Cook for 10 minutes, or until the lobster shells turn bright red.

When cool enough to handle— cooked lobster can be refrigerated for up to two days—crack open the shells and remove the meat. Chop the meat into large chunks. Combine with the celery, green onion, mayonnaise and salt.

Spread butter on the flat sides of the buns and grill in a skillet over medium-high heat until toasted on both sides. Line the buns with baby spinach leaves and stuff with the lobster mixture, saving a piece of claw meat for the top. Tip: Don’t over-do the mayonnaise. You want to moisten the lobster, but still let its natural flavour shine through.

Landon Petty is one of WestJet’s finest cabin crew members. He is one of 12 WestJetters chosen in 2018 for the President’s Circle award—an award that recognizes the impact of WestJetters who consistently go above and beyond to create a remarkable guest experience. Based in Calgary, he has been recognized for his ability to care for WestJet’s guests and to make amazing connections along the way. We sat down with Landon after he won the President’s Circle Award to hear his thoughts on WestJet. Favourite WestJet destination: Puerto Vallarta. I’ve been there four times in the past year. I try to go every three months—it’s a quick hop over! The best taco stands are the ones hiding around the corner. Describe WestJet in three words: Passionate, caring and family. What is one thing that you want to share with our guests? We are there for you. When needed, we are prepared to take control of any situation and will do our best to make things right. What is your favourite WestJet value and why? Rise to the challenge. To do this, we need to bring our all every day. Seeing where WestJet is right now, we are rising to the challenge and going global. Where do you see WestJet in the future? A global airline, absolutely.

Celebrating Japanese culture—and cherry blossoms—in April. APRIL 4 TO 27 Vancouver Cherry Blossom Festival Vancouver, B.C. This annual festival marks the reawakening of the community after a long winter. Events include the Sakura Days Japan Fair (April 13 and 14) at VanDusen Botanical Garden, a large picnic at Queen Elizabeth Park (April 13) and The Big Sing, a group choral sing-along at Robson Plaza (April 27).
