uncovering the remains of creatures that roamed the same stomping ground millions of years ago. “I look for tells,” she told our writer. “Sometimes, I just go by instinct.” For some people, embracing change isn’t easy, but the wonderful thing about it, as Sloboda demonstrates, is that it allows us to discover things we may otherwise have overlooked. This serves as an excellent reminder that in our lives and in our travels, we need to always follow our instincts.

WHAT I LOVED

here’s an age-old saying that one of life’s only constants is change. The world around us continually evolves; city skylines undulate as state-of-the-art buildings replace some older structures, rivers carve new paths through the landscape and animals migrate with the seasons. This issue of WestJet Magazine is not specifically about change, but it is a concept that weaves through many of our stories. We discover how Hamilton has grown from an industrial hub—once known by the less-than-complimentary name of Steeltown—to a culinary destination, with restaurants and eateries transforming the local food scene (page 63). While Halifax, a city I called home for many years, continues to revamp its once-overlooked neighbourhoods, such as the North End and downtown Dartmouth, into must-visit communities (page 24). It was our story on Wendy Sloboda and her fossil discoveries (page 20) that made me think the most about change. Hiking through Alberta (among other places), Sloboda has a knack for

DAY 1 Morning Explore the city’s architectural heritage with a Los Angeles Conservancy walking tour of the Theatre District, Angelino Heights, City Hall and other landmarks. Be sure to peek at the ornate ironwork inside the Bradbury Building, and see the mission-revival Union Station. Afternoon Fuel up with a Mexican feast on Olvera Street, referred to as the birthplace of L.A., or at Grand Central Market, the city’s food court since 1917, with 38 vendors including Wexler’s Deli, Sticky Rice and Tacos Tumbras A Tomas. After, feed your eyes at The Broad, one of the city’s boldest art museums, exhibiting Yayoi Kusama’s popular Infinity Mirror Rooms. Evening Happy hour doesn’t get any better than at The Varnish, named best cocktail bar in the U.S. at the Tales of the Cocktail Foundation 2019 Spirited Awards. To get there, enter through Cole’s, which claims to have invented the French dip sandwich in 1908.

DAY 2 Morning Jump into the L.A. lifestyle by exploring its famed beach towns. Funky Venice Beach Boardwalk is lined with bohemian shops, street performers and unique sights, including outdoor Muscle Beach Gym (shown), where a young Arnold Schwarzenegger used to flex his pecs. Rent a bike and cruise along the beach path to the Santa Monica Pier, where the thrills include a roller coaster and trapeze classes. Afternoon Drive the

Pacific Coast Highway to neighbouring Malibu and the incredible Getty Villa. Originally the site of the J. Paul Getty Museum, it is renowned for its Greek and Roman antiquities. Evening Take a sunset spin along the twists and turns of Mullholland Drive to Hollywood Boulevard and Highland Avenue, to shop and dine, see the Dolby Theatre, where the Academy Awards are held, and to snap a picture of the iconic Hollywood Sign.

Where to Stay HISTORIC HOLLYWOOD AND AN AMAZING POOL SCENE

1 Ace Downtown Los Angeles This is easily the hippest place to stay in downtown. The dramatic, gothic building was the headquarters of the United Artists film studios (co-founded by Charlie Chaplin) and includes an incredible, ornate theatre. There’s also a rooftop bar, Upstairs, and plunge pool, both with killers views.

2 Fairmont Miramar Hotel & Bungalows This Santa Monica property (shown) is the perfect place to feel like you’ve escaped the hustle of the city. Morning Order a breakfast burrito at the Original Farmers’ Market, a favourite spot for locals since it began as a roadside produce stand in the 1930s. Evening Enjoy an unforgettable performance at the Walt Disney Concert Hall, a Frank Gehry masterpiece built for the Los Angeles Philharmonic and Master Chorale. FOSSIL HUNTING Where have you hunted for fossils? Mongolia, Greenland, France, Montana, Argentina, northern British Columbia and all over Alberta. My favourite spot is southeastern Alberta. I love the solitude. It’s big and empty with rolling hills and canyons. I travel with my dog, an Australian terrier named Quigley. He can go all day, just like me. I’ll average 15 to 20 km. It’s up and down over steep terrain. To find fossils you have to cover ground.

How are you able to find fossils that others don’t? I look for tells—changes in colour, where a streambed used to be. I might see a bone by the way it glints in the sun. You look for something that doesn’t belong. Sometimes, I just go by instinct.

endy Sloboda has a unique talent among dinosaur hunters. Although she has no formal training as a scientist, the 51 year old has made hundreds of important discoveries of dinosaurs and other extinct creatures, earning a reputation as one of world’s best fossil finders. Her notable discoveries over the years include the fossilized skulls of an armour-plated ankylosaurus, an ancient type of crocodile, and a flying reptile known as a pterosaur. In southern Alberta in 2010, she discovered the remains of a new species of horned dinosaur, which was named Wendiceratops pinhornensis in her honour. To celebrate, Sloboda had an image of the beast tattooed on her right forearm. When not hunting bones, the Warner, Alta., native freelances as

a sports and wildlife photographer and is the mother of two teenage boys. Sloboda and her family live on a farm just two kilometres from the house where she grew up. When did you get hooked on fossil hunting? I had my first big find when I was 18. I discovered dinosaur eggs with embryos at Devil’s Coulee in 1987. It was the biggest paleontological discovery in Alberta in 50 years. Searching for fossils became an obsession for me after that.

What scientific training do you have? I worked as a technician at the Royal Tyrrell Museum in Drumheller, Alta., for 16 years. We excavate the fossils, transport them, clean them and cast them. We do everything but write the paper.

Q

How many fossils will you find on a typical expedition? I find about 90 to 95 per cent of what the paleontologists work on. I come back to camp with samples and co-ordinates and they decide what to dig. Excavating a dinosaur can take two to three years. In Alberta, there are 10 dinosaurs that I have found, that haven’t been excavated yet.

What species are on your personal bucket list? I’d like to find a caenagnathus. It’s a small, fast-moving dinosaur with bird-like features. No full skeleton of it has ever been found in Alberta. I’d also like to find a baby ankylosaurus, a baby ceratopsian and ceratopsian eggs. Actually, eggs from anything.

The city’s two other major stadiums— Talking Stick Resort Arena, home of the Suns, and the Diamondbacks’ Chase Field—are just two blocks from each other. hink of a golf holiday in Europe, and courses in the U.K., Portugal or Spain might come to mind. But France? Probably not. I’ve been playing golf for more than 30 years, but it’s only in the last decade I’ve discovered France offers some of the very best golf in Continental Europe. I’ve golfed in Paris at various times of the year: in May, the courses are emerging from hibernation, and, while you may need to contend with the odd shower, the days warm up nicely; and, in September and October, you’ll find some of the year’s best game weather. Green fees tend to be pretty consistent throughout the year, but, if you’re looking for savings, hotel rates dip in August as temperatures rise and business tourism drops. Book an early tee time, and you’ll be sipping a post-game beer before the heat of the day sets in. One of the country’s best courses is the Tom Simpson classic Golf de Fontainebleau, an hour’s drive south of Paris. I booked an afternoon tee time, and, even though there had been rain earlier in the day, the course drained magnificently. This is a real thinker’s course, where strategy will beat brute force every time. As the sun dropped in the sky, long shadows were cast through the trees and the evening took on a magical air. It made for one of my all-time favourite evenings on a course. After a quick beer on the terrace of the Norman-style

clubhouse, I headed to Versailles, just west of Paris. After spending a night at the Hôtel le Versailles, I drove 20 minutes north to Golf de SaintGermain, a course where you can feel the history. The clubhouse walls are adorned with pictures, including Seve Ballesteros winning the French Open here in 1985. There was a short rain shower on the first hole, but, once again, the land drained well. This course, designed by the great

Harry Colt, was probably the most forgiving of all I’ve played. By the time I finished my 18 holes, the sun was heating up, and the terrace overlooking the putting green was the perfect spot for steak frites. Last up was the 2018 Ryder Cup venue, Le Golf National. It is a long, tough course and while many of the holes lacked some of the imagination of the others, it has a spectacular finish. My TK adrenaline was pumping as I tried to carry the water that defines the

finishing stretch of the Albatros course. While you can expect to pay €250 for 18 holes here in May, June and September, green fees drop to €200 in August and just €145 in March and November— tremendous value for a course of this calibre. Paris has a lot of key ingredients for a great golf trip. Ne parle pas français? Don’t worry. Many courses have English-speakers to help you book a tee time. (Although peppering in a little French will be appreciated.)

orsqu’on pense à jouer au golf en Europe, on pense au R.-U., au Portugal et à l’Espagne. Mais à la France? On y pense moins. Je joue au golf depuis plus de 30 ans, mais cela fait seulement 10 ans que j’y ai découvert certains des meilleurs parcours de l’Europe continentale. J’ai joué au golf à Paris en différentes saisons : en mai, les terrains reprennent vie, et malgré les pluies intermittentes, les jours se réchauffent agréablement tandis qu’en octobre et en septembre,

vous pourriez profiter des meilleures températures de l’année. Les frais d’entrée sont assez uniformes pendant l’année, mais en août, le tourisme d’affaires et les tarifs hôteliers baissent alors que la température monte. Réservez un départ tôt dans la journée et vous savourerez une bière d’après golf avant l’arrivée de la chaleur. Le Golf de Fontainebleau, tracé par Tom Simpson, à une heure au sud de Paris, est l’un des meilleurs parcours du pays. J’ai réservé un départ en après-midi et même s’il

avait plu plus tôt dans la journée, le terrain était parfaitement drainé. Ce parcours demandait de la réflexion, le stratège ayant raison de la force à chaque coup. De longues ombres se formaient entre les arbres alors que le soleil descendait, créant un effet enchanteur. Cette magnifique soirée a rendu ma partie de golf inoubliable. Après une bière rapide sur la terrasse du chalet de style roman, je suis parti pour Versailles, à l’ouest de Paris. Après une nuit à l’Hôtel Le Versailles, je me suis dirigé vers le Golf

de Saint-Germain, à 20 minutes au nord, où on sent bien la présence de l’histoire. Le chalet est décoré de photos, notamment de Seve Ballesteros, qui a remporté RolandGarros ici en 1985. Il y a eu une averse au premier trou, mais une fois de plus, le terrain était bien drainé. Ce parcours, conçu par le grand Harry Colt, était probablement le plus facile de tous ceux que j’ai connus dans ma vie de golfeur. À la fin de mon parcours de 18 trous, la température s’était réchauffée et la terrasse surplombant le vert m’appelait pour un steak frites. Dernier arrêt : le Golf National, où s’est tenue la Coupe Ryder en 2018. C’est un parcours long et difficile et malgré le fait que plusieurs trous manquent d’imagination comparativement à d’autres parties du parcours, la finale est tout à fait spectaculaire. Mon adrénaline était au maximum tandis que j’essayais de me rendre à la dernière portion du parcours Albatros. y parents tell my teenage son to, “go for it.” And, grinning broadly, he does. It’s a short run and then a sky-kicking jump as he leaps off the cliff at the “blue hole” at Island Gully Falls in Jamaica. His landing is an Olympic 10-worthy splash in the water below. Now, all eyes are on me. I shrug, run, jump and fall with a flop into the water below before emerging, arms raised, to cheers. Our brood of six includes my husband, our kids and my parents, and most days of this multigenerational vacation have been a combination of adventure, relaxation and fun—exactly as we’d hoped. Our goal was to find a vacation spot with activities to keep everyone engaged, while protecting the family budget. And, unlike the Rolling Stones’ tune, during Caribbean shoulder season, you can always get what you want. Opting to vacation in the spring or fall has become a bit of a ritual for my family. And while Jamaica’s off-peak season includes the summer (running, for the most part, from May to mid-December), if you can take the heat, you’ll avoid the crowds by opting to pop in on either side of the winter crush. Rates on accommodations and activities can drop as much as 20 per cent in shoulder season, making it a good choice when

you’ve got one eye on a beach vacation and the other on your finances. Of course, you’ll need to weigh your September and October trips against the region’s hurricane season. The one wrinkle in off-peak travel is that it can mean taking the kids out of school, but we’ve found that a quick getaway, strategically planned around teachers’ professional development days, can keep absences to a minimum. In Jamaica, families with young kids might want to consider allinclusive resorts, such as Moon Palace, which offers a surf simulator on property but also puts you in close proximity to off-resort adventures such as horseback riding on the beach or climbing the famous Dunn’s River Falls. In Ocho Rios, we opted for a home rental ( jamaicavillas.com is one booking site) and found the costs were reasonable for a multigenerational trip. Plus, there is no shortage of activities in the area: try out the ATVs, cooking classes and Segway tours at Yaaman Adventure Park. Our family opts to do it all, but also saves time for slower days filled with small group tours, swigging bottles of Ting on empty beaches, mid-day hammock swings and long, sun-weary family dinners. Unanimous grins tell the story of a budget-friendly vacation mission accomplished.

Je hausse les épaules, me mets à courir et plouf, on m’applaudit tandis que j’émerge, les bras dans les airs. Nous sommes six avec mon mari, nos enfants et mes parents, et la plupart de nos journées de vacances multigénérationnelles comprennent aventure, détente et

plaisir, comme nous l’espérions. Je voulais trouver un lieu de vacances avec des activités pour tout le monde tout en respectant le budget familial. En Jamaïque, les parents de jeunes enfants voudront envisager des tout-inclus comme le Moon Palace, qui possède un simulateur de surf et se trouve à proximité d’aventures offertes à l’extérieur

de l’hôtel comme l’équitation sur la plage ou l’ascension des chutes de la rivière Dunn. À Ocho Rios, nous avons loué une maison (jamaicavillas.com) et trouvé les prix raisonnables pour un voyage multigénérationnel. Les activités ne manquent pas : VTT, cours de cuisine et excursions en Segway à Yaaman Adventure Park. os Cabos is a confounding place for water babies. Located at the nexus of the Sea of Cortez and the Pacific Ocean on the southern tip of Mexico’s Baja California peninsula, this sunny destination is surrounded by indigo waters, but that powerful merging can make for choppy seas, shore-pounding surf and powerful undertows. Yet, what makes the towns of Cabo San Lucas and San José del Cabo the ultimate destination for a restorative H2O-based wellness getaway is its proximity to these glorious bodies of water. Scientific studies highlighting the benefits of simply being near water are relatively new, but you don’t need a research lab to appreciate water’s soothing effects. Designed to celebrate the ocean, the Viceroy Los Cabos hotel in San José del Cabo is a sprawling landscape of tranquil pools, called “water mirrors,” along with buildings that appear to float within. Minutes after checking in, I can practically feel my heart rate slow. During shoulder season (May through mid-July and October through November), occupancy at the Viceroy hovers around 60 per cent, and the feeling of having this watery wonderland all to myself only adds to its restorative vibe. At the hotel’s 11,000-squarefoot spa, I lose track of time in

the indoor grotto, a network of steam rooms, saunas, vitality and plunge pools and ice fountains, and then doze through my facial. Major investments in Los Cabos’ luxury hotels and spas have made the region top-notch for pampering. It’s an accessible splurge during shoulder season. The Viceroy’s “Start Your Week Off Right” pricing means 30 per cent off treatments Monday through Wednesday, and access to the spa pools and facilities costs less than half the usual fee. If you’re looking for wellness in Los Cabos during shoulder season, just follow the water.

Meals reach a new level of bliss thanks to pitchers of mouth-puckering margaritas, the nearly 100 varieties of tequila on offer, and, for dessert, hot churros plunged into salted caramel.

How can tea grow in England? Many days in Cornwall are actually warmer than in Darjeeling, India. We have a lot of rain and great rolling countryside, which helps with irrigation. The bushes we grow at Tregothnan are our own unique variety, but are similar to Darjeeling.

Tregothnan Estate Steeping a homegrown pot of tea. or most Brits, any problem can be solved with a nice cup of tea. But, the majority of the country’s tea leaves make a long journey from China or India before they reach those English teacups. That’s why the tea grown on the Tregothnan Estate is such a rare British treasure. Set on the banks of the River Fal, near Truro, Cornwall, the estate established the nation’s first tea gardens in 1999 and began producing and selling the world’s only British-grown tea in 2005. While that first crop produced just 28 grams of tea, today the estate yields about 10 tonnes annually and blends some 14 varieties, including

English Breakfast, Earl Grey, Jasmine Green and Rose tea made with real rose petals. For the past 12 years, John Price, a former professional nurseryman, has volunteered to care for the estate’s young tea plants. The 84 year old has travelled the world studying botany and tea. Through Sri Lanka, Japan, China and India, he has learned all there is to know about tea and lectures about the two national collections he has created at Tregothnan through experimentation. For all his studying, Price has come to realize that Britain’s favourite brew is actually rather simple. “Two leaves and a bud, no more,” he says. “This is what tea is all about.”

3 Steeping times vary by variety. As a general rule, steep Dark Oolong and White teas for three to five minutes and Light Oolong and green teas for two minutes.

4 Whether you drink it black or add milk before or after the tea is poured is a contentious issue, so do whatever tastes best to you.

Why are more people not growing tea in England? We have very little competition because tea is a difficult crop to grow and maintain, especially the young plants. You need a lot of land, a lot of manpower and the perfect climate conditions. That’s why, across the world, tea is grown at large estates. You seem very proud of what you are growing. This plantation is growing extremely well. We’ve collected all sorts and take cuttings from these bushes to grow little tea [plants]. Now we know what we want to grow: a light green tea achieved from Assam; Chinese [plants] that have quite small leaves; a little, low bush that is grown in the mountains of Vietnam; an Indian tea. Another interest of mine are great big Camellia—the darker green, taller bushes. I’ve established a national collection of Camellia reticulata. [Growing tea at Tregothnan] is an exciting innovation to have been involved in. —Fiona Tapp

What goes into the process? We process all our leaves by hand, so it’s very time consuming and labour intensive—you pick it, and you let it wilt. The leaves have to be withered first so they are malleable, then rolled to bruise the leaves and release the oils. They are left to oxidize, and, as they dry, start to turn from green to brown to black. The whole process takes about 36 hours and it takes about 700 leaves to produce one kilogram of tea.

GOING AU NATUREL Low-intervention wines are growing in popularity in Montreal and across Quebec. rown and processed with minimal chemical or technological involvement, lowintervention wines are a soughtafter tipple du jour in Quebec. Their popularity has grown over the past five years, largely in the city of Montreal, where they dominate wine lists at bars such as Cul-Sec or Bar Loïc, and are offered at top restaurants including Montréal Plaza and Le Mousso. Also known as natural wines, they’re seen by supporters as a true expression of their distinct terroir, the environmental factors that affect a wine’s character. Others categorize their funky aroma and taste to be flaws—and all hype. Although trendy, natural wines aren’t new: for thousands of years additive-free grape juice has been fermented into wine. Labour intensive and unfiltered, these wines are often organic and biodynamic, coming in various styles from skincontact (orange-coloured wines) to those fermented and aged in clay amphoras. Some find their lower alcohol levels appealing. Others like that they don’t contain additional yeast or sulfites that, although unproven, are associated with the wine-related headaches experienced by some wine drinkers.

Quebecers aren’t only enjoying imported wines, provincial growers are making their own. Unfortunately, making wines, let alone natural wines, in Quebec’s extreme climate is difficult. Besides having a short growing season, the

hands-off approach (meaning that vines are treated organically for disease) translates to small releases and many bottles being purchased before they hit the general market. “Wine agencies are currently involved in the movement and raising the awareness for natural wines in Quebec,” says natural wine importer Julie Audette of Le Vin dans les Voiles. “While they all have different styles, their common denominator is low-intervention.” —Renée S. TRINIDADIAN DOUBLES Serves four BARA INGREDIENTS • ¾ cup warm water • 1 tsp active dry yeast • 1 tsp sugar • 2 cups all-purpose flour • 2 tsp turmeric • 1 tsp salt CHANNA FILLING • Canola or vegetable oil, for cooking • 1 small onion, finely chopped • 2 garlic cloves, minced • 1 Tbsp curry powder or paste (or to taste) • 1 tsp cumin • 1 can (540 mL) chickpeas, drained • Salt, to taste • Hot sauce, cilantro, tamarind, chutney or kuchela for serving

Place the water in a large bowl and sprinkle in the yeast and sugar. Let it sit for five minutes, until it’s foamy. Add the flour, turmeric and salt, and stir until it forms a dough. Knead for five to eight minutes until it’s smooth and elastic. Cover and let rise for an hour, or until doubled.

Tip: There’s no need to plate, as doubles are traditionally served on a piece of brown paper.

Tip: Like sandwiches, doubles can be topped with any condiments you prefer.

Drizzle oil into a skillet on medium-high heat and sauté the onions for three to four minutes. Add the garlic, curry and cumin and cook for another minute. Add the chickpeas and half a can of water. Season with salt, cover and cook for 20 minutes until the chickpeas are soft and the sauce has thickened.

To cook the bara, heat about half an inch of oil in a skillet over medium-high heat. Tear off egg-sized pieces of the dough and roll each into a four- to six-inch circle. (Don’t flour the countertop—the tacky dough will grip the surface and be easier to roll.) Fry each piece of dough until golden on both sides. To serve, scoop some channa into each bara and serve in pairs, topped with your choice of condiments.

Introducing Chef Bill Alexander.

“Food is our conduit to share our culture.”

C

hef Bill Alexander creates cuisine experiences that are both authentic and delicious and inspire tourists and Canadians to learn more about Indigenous peoples. It’s a mission he also undertakes as the executive chef of hospitality at Grey Eagle Resort and Casino, located on the beautiful Tsuut’ina Nation in Calgary, and as a consultant on the Indigenous Tourism Association of Canada’s culinary strategy. We sat down with chef Alexander to talk about his passion for food and his experience of partnering with WestJet on this culinary endeavour. Q. How did your journey with WestJet begin? A. It began with a simple meeting that had a powerful impact. WestJet President and CEO Ed Sims invited Tsuut’ina Chief Lee Crowchild and respected members of the community to attend a meeting at WestJet. I was fortunate enough to be invited by Chief Lee. As the meeting progressed, the topic of food came up and how it plays an important role to Indigenous peoples. The idea was born to include Indigenous food as part of the Canadian culinary experience on board. Q. Tell us about the food you have created for WestJet guests? A. I wanted to create dishes that were inspired “from the land.” The vegetarian shepherd’s pie is layered with local

flavours—Alberta lentils, sweet potato, mushroom duxelles, pearl onions, sweet corn, sundried tomato relish and finished with an award-winning five-cheese spinach dip. The Braised Alberta Beef Short Rib is so tender that it falls off your fork. I paired this with delicious mashed sweet potato, braised spring onion, honey glazed carrots, golden shoestring potato crisps, and topped it off with a one-of-akind saskatoon berry au jus to complete the Indigenous-inspired Alberta dish.

Q. Why did you become a chef? A. Food is such an important part of Indigenous culture that it has been a part of my life since I was a child. I’ve always loved the idea that food brings people together and that our most important moments in life are often shared over food. As a chef, you have a chance to really impact people’s lives in a subtle but significant way. Q. What would you like to tell people? A. Indigenous cuisine is gaining attention

Les différents étages du pâté chinois (hachis Parmentier) végétarien sont composés de saveurs locales : lentilles de l’Alberta, patates douces, duxelles de champignons, oignons perlés, maïs sucré et relish de tomates séchées, le tout marié à une trempette primée aux épinards et aux cinq fromages.

J’ai toujours aimé l’idée que la nourriture rassemble les gens et que les moments les plus importants de notre vie sont souvent partagés autour de la nourriture. Debbie Lindsay is one of our friendly customer service agents. She is one of 12 WestJetters chosen for the President’s Circle Award in 2018 – an award that recognizes WestJetters who consistently go above and beyond to create a remarkable guest experience. Based in Kitchener, Ontario, Debbie is known for organizing events that bring the Kitchener team together. We sat down with Debbie after she won the President’s Circle Award to hear her thoughts on WestJet: Favourite WestJet destination: I have two; Glasgow, Scotland, and Halifax, Nova Scotia. The people in Glasgow are incredible. When we visited, we stayed in a bed and breakfast that happened to be an old rectory, it was phenomenal. Describe WestJet in three words: Passionate, caring, family. What is one thing you want to share with our guests? We are very passionate about what we do, we take ownership and we walk the talk. If we say we are going to do something we follow through. What is your favourite WestJet value and why? Caring from the heart. It resonates a lot for me. I work with a great team at the Kitchener airport that values teamwork and looking out for one another. Our positive team dynamic is reflected in our interactions with our guests. A positive guest experience starts with being passionate in everything you do and sincere to everyone you meet, including your fellow WestJetters. Where do you see WestJet in the future? I envision our Dreamliner providing us the opportunity to travel to an increasing list of international destinations.
