Thanks to early detection and increased screening rates, combined with better breast cancer treatments, the survival rate is now 87 per cent. Nevertheless, breast cancer remains the most common cancer and the second-leading cause of cancer death among women in Canada. Our belief and commitment to making breast cancer beatable drives our annual campaign to support the Canadian Cancer Society (CSS) and its research, education and awareness programs. Now in the sixth year of our partnership with CCS, we provide support with the gift of flight to assist in reducing administration expenses and bolstering fundraising activities. We are also the official airline of the CIBC Run for the Cure and rally our caring WestJetters to participate and raise funds for a cause that is very important to us. hen I travel, I travel for food. Preparing for a trip always starts with looking up the destination’s signature dish. When we were looking for a recipe to feature this month, I had to suggest Nashville hot chicken (page 64)—fried chicken covered in batter, brushed in a cayenne-pepper sauce, placed on a slice of soft white bread and topped with two pickle slices. The story behind this spicy fried chicken dish is almost as good as its tongue-tingling flavour. A little more than 80 years ago, a scorned woman added peppers to her fried chicken in an attempt to wreak revenge on her philandering partner, Thorton Prince. The plan backfired, as he ended up loving the taste, and eventually opened a restaurant. Today, there are two Prince’s Hot Chicken Shack locations in Nashville—the original shop, located in the northeast, is a must-visit—and a number of other hot chicken places, including Hattie B’s Hot Chicken (served with delicious sides) and Pepperfire Hot Chicken, whose recipe we feature in this month’s edition of WestJet Magazine.

I’ve spent a lot of time in Nashville since my first trip, and I keep going back to Prince’s. The chicken is crispy, without being too hard, and you get a piece of bread with every bite, which helps soothe the spice. Mild or medium is the way to go. Pair it with a side of potato salad and it’s the Southern comfort dish you’ll dream about long after you’re home.

MASSACHUSETTS While it’s best known for its infamous 17th-century witch trials, Salem’s past is full of scary and spooky happenings. From notorious murders to UFO sightings, here are six things you will want to explore in this historic New England city—if you’re brave enough.

SALEM COMMON In the 17th century, this eight-acre park hosted militia training, spawning what is now the U.S. National Guard, and was home to the popular Salem Cadet Band from 1878 to 1941. The apparitions of soldiers and haunting music from an invisible band are said to have occurred in the park, particularly around the circa-1926 bandstand.

HAWTHORNE HOTEL This boutique hotel is located on the site of an old apple orchard once owned by Bridget Bishop, the first of the city’s executed witches. Guests on the sixth floor frequently report seeing a woman in a long dress, thought to be Bishop, who is accompanied by a strong apple scent.

SALEM VILLAGE PARSONAGE The witch hysteria of 1692 began in the home of Reverend Samuel Parris. When his two young girls fell ill, they accused locals of witchcraft, ultimately leading to the executions of 20 people. Today, all that remains of the parsonage is its foundation, and the surrounding fields where the devil allegedly held his Sabbaths.

WINTER ISLAND Visitors to this island park in Salem Harbor can check out the exterior of an abandoned 1934 coast guard barracks, where security guards have reported ghosts. Nearby is a former air station where, in 1952, a Coast Guard seaman took a famous photograph of four UFOs hovering over the city.

GARDNER-PINGREE HOUSE Salem’s most-notorious murder took place here in 1830. Captain Joseph White was stabbed 13 times, leading to widespread paranoia in Salem. The resulting trial and public executions of two brothers inspired writers Edgar Allan Poe and Nathaniel Hawthorne. The captain’s ghostly face is said to appear from the second-floor windows.

star of the ballet world, Misty Copeland is known for placing herself in the spotlight to take her audiences on an emotional journey. It may seem out-of-step that someone used to being centre stage dealt with terrible shyness as a child. “When I say I was shy, it was beyond what most imagine,” says Copeland, who became the first African-American female principal dancer with the American Ballet Theatre in 2015. “If I was called on to read in school, that was the most terrifying thing.”

“I don’t think my siblings are shocked when they see me perform,” Copeland says. “But, when they see me speaking in public, they are kind of like, ‘How in the world did you blossom into the person you are when you literally wouldn’t speak?’” Drawn to music, movement and performing as a child in San Pedro, Calif., it was her experiences dancing which allowed her to overcome her fears. “Through the chaos of my home life—moving a lot and being one of six children— it became a way of expressing myself. Being introverted I needed

It is dark and scary. Then it is bright and amazing.”

Scary, then bright, is a sentiment that could also be used to describe Copeland’s own journey from struggling with shyness as a child to becoming a role model and dance superstar in the world of classical ballet. “I feel like I have always spoken candidly about my experiences of being a black woman in the ballet world, of feeling different, of going through puberty at a late age in front of the public while in the midst of my professional career,” she says. “I think these are things that young people can relate to.” —Richard Crouse

AT A HOTEL MacPherson says you tend to tip the people you come into contact with during your stay. But, with staff shifts changing on a daily basis, it can be complicated ensuring your tip goes to the intended person. “In the case of your room, leave something at the beginning, or a little every day.” The important thing, says MacPherson, is to leave it on the pillow. “[Housekeeping] are not supposed to touch money left elsewhere in the room. I also leave a note that says, ‘This is for you.’”

ON A BUSINESS TRIP “It’s important to find out what the [local] practice is so you do the right thing,” says MacPherson. “Otherwise, you’ll look ill-prepared or uninformed. The impression it gives your client is if you don’t know something as simple as tipping, [how are you going to handle] their business?” MacPherson adds it’s also important to follow your company policy. “If the policy is to tip no more than 10 per cent, then tip 10 per cent on your card. If you feel more is appropriate, then pay in cash.”

AT AN ALL-INCLUSIVE Technically, you don’t need to tip at an all-inclusive because it’s included in your fee for the resort, says MacPherson. “But, I’m a strong believer that, if someone has gone above and beyond, then you should tip. A lot can be said for tipping at the start of your stay. I’ve been known to tip early, rather than at the end, so they’ll take care of me.”

WAX SCULPTING For years, Paris’ Musée Grévin has been turning heads with its wax figures of the famous and infamous. Stéphane Barret, a sculptor with the museum, shares how it’s done. téphane Barret is entrusted with creating some of the most convincing doppelgangers of the famous, from Charlie Chaplin and Angelina Jolie, to Bruce Willis and beloved French singer Édith Piaf. For the past 18 years, Barret has sculpted the heads of celebrities for the Musée Grévin, Paris’ pre-eminent wax museum. “It starts to feel alive, when I have placed the eyes and when I get the expression right,” he says. We asked Barret to walk us through the process of making a wax figure:

What might surprise us? The hair is real and is implanted strand by strand. It takes [around] a month and a half to add hair, eyebrows and any facial hair. Each sculpture starts with very long hair, which can look strange before it’s cut. Sometimes the celebrity will bring their own hairdresser to cut and style it. Is it easier to create sculptures of men or women? Older women and men are easier because there are points of reference with wrinkles and smile lines—when you don’t have these markers, a smallest misplaced detail can ruin the resemblance.

How are they maintained? A team comes every morning to fix the hairstyles and check if there are any problems, such as scratches. There is also a regular restoration schedule. The most [popular] personalities have two heads, so [even when one head is being restored] they are always on display for visitors. Do you have a favourite? I don’t have a favourite, but I was happy to do Brad Pitt and Angelina Jolie. [I recall] an interview with Pitt where they showed him all his sculptures in museums around the world, and he said Musée Grévin’s version was his favourite. Angelina Jolie was the most difficult I

have done; she has a very angular face and yet not so angular at the same time. We did her with a fairly neutral expression, which is very difficult. What happens to the models that are no longer displayed? There is a warehouse in Paris where old models from the early 20th century to today are kept. There are shelves and shelves of them. It’s like a scene from Indiana Jones. Who would you like to sculpt? I am really attracted to the legends of American cinema, such as Jack Nicholson. To sculpt Jack Nicholson would be a dream for me. —Hannah Meltzer

How did you become a sculptor for Musée Grévin? I originally worked in industrial engineering and would sculpt and paint in the evening after work. [In 1993,] I quit my job and moved to Paris. I studied design then worked in prototyping, making props for advertising clients as well as Disneyland. Bruce Willis was my first sculpture for Grévin in 2000. How does the process of creating a new figure start? We start with a two-hour consultation. The person stands on a revolving plate in a pose and we take photos to work from later. We scan the head and body with a 3D scanner and record any jewelry and tattoos, as well as the colour of hair, skin and teeth. The museum always tries to meet the personality, but, without a meeting, we do a body casting to find someone who has the same build and height as them.

Mother Nature has left her unique mark; from Death Valley’s salt flats, to Zion’s dramatic canyon and Joshua Tree’s enigmatic boulders. Each national park has a story to tell, and now—with the cooler temperatures of fall and winter—is the perfect time to discover each of its secrets.

azing out over the salt flats of Death Valley’s Badwater Basin, I’m relieved—and moved—to see they are still as strange and magical, white and glittering, as when I was seven years old and visited the park with my family. Then again, with its vivid extremes of altitude and topography, California’s Death Valley isn’t really a place you easily forget. There’s the Ubehebe Crater, a 600-foot-deep volcanic depression that looks like it could reactivate any time. In fact, geologists have recently announced it’s more active than previously thought. There is the hair-raising four-

wheel journey through the limestone narrows of Titus Canyon and the drive up to Dante’s View, where you’re rewarded with breathtaking views of the valley floor—and a chance to see bighorn sheep. And there is the salt-crusted surface of the Devil’s Golf Course and Badwater, which at 282 feet below sea level is the lowest point in North America. It was formed millions of years ago when floodwaters deposited salt and other minerals in the basin. Thanks to longer legs than I had when I was seven, I’m able to explore further this time around; climbing the Mesquite Flat Sand

Dunes, seeking out the dramatic rock arch known as Natural Bridge and hiking Mosaic Canyon, with its narrow confines and smooth marble walls. At night, I gaze into the depths of one of the darkest skies in North America, awed by the wash of stars that, as a child living in a world with less light pollution, I took for granted.

’admire les étendues salées du bassin Badwater et je suis soulagée, et émue, de voir qu’elles sont encore aussi étranges et magiques, blanches et scintillantes que quand j’avais sept ans et que j’ai visité le parc avec ma famille. Bien sûr, avec ses extrêmes d’altitude et de topographie, Death Valley en Californie n’est pas vraiment un lieu qu’on oublie facilement. Il y a le cratère Ubehebe, une dépression volcanique de 183 mètres de profondeur qui semble pouvoir se réveiller n’importe quand. Des géologues ont annoncé récemment qu’il est plus actif qu’on pensait. Il y a la virée terrifiante

en 4x4 entre les parois en calcaire du canyon Titus, et la route vers Dante’s View, qui offre des vues imprenables de la vallée et permet parfois de voir des mouflons d’Amérique. Le soir, je scrute les profondeurs du ciel, l’un des plus sombres en Amérique du Nord, émerveillée par la multitude d’étoiles qui me semblait normale il y a longtemps, quand il n’y avait pas de pollution lumineuse.

or more than 12,000 years, people have sought shelter from the sweltering desert heat in Zion Canyon. The temperature is cooler at the base, which was formed as the Virgin River cut its way through the landscape deepening the canyon each year. With so much to experience, Zion is best approached not as a single place, but as a list of destinations—most of which are easily accessed by the park’s free shuttle bus.

2 THE NARROWS As its name suggests, The Narrows is the narrowest part of the Virgin River slot canyon, where the towering limestone walls close in so tightly, the only way to experience its majesty is by wading through the water. Closed-toed shoes and a hiking stick are recommended.

3 EMERALD POOLS Coloured bright green by microalgae, the Emerald Pools are a series of small, waterfallfed ponds accessible by a trail that meanders along a lush streambed.

4 WEEPING ROCK One of the most photographed sights in Zion is this large, arched alcove laced with lush hanging gardens fed by water leaching through its sandstone walls.

THE ZION-MOUNT CARMEL HIGHWAY This 40-km drive is most famous for its nearly two-kilometre-long tunnel cut through a mountain that connects Zion Canyon with Mt. Carmel. The tunnel, built in the 1920s, is studded by a series of galleries originally designed to provide light and air.

Located at the juncture of two deserts, the Mojave and Colorado, Joshua Tree National Park features a landscape as diverse as anything Theodor Geisel would have created for Oh, the Places You’ll Go! or The Lorax. The California park’s incredible topography features arid moonscapes and fantastical rock outcrops thrust upward by colliding tectonic plates. These rocks form gigantic jumbles

and labyrinths of boulders, which have been sculpted and eroded by the elements into towering arches and twisting spires. The sculpted series along a stretch known as Park Boulevard, with names like Skull Rock, Cap Rock, Arch Rock and the Wonderland of Rocks (a serious jumble and maze of shaped stones) are must-sees. As is Keys View, an overlook at the crest of the Little San Bernardino Mountains, which offers sweeping views of the Coachella Valley below. Existing in stark contrast to the rocks are the prehistoric-looking cholla cactuses and fan palms, which form dense clusters near the park’s seeping springs. Cottonwood Springs

Oasis and the Oasis of Mara are the most accessible, but, to truly experience the Jurassic Park vibe, make the 11-km (round-trip) trek to Lost Palms Oasis, which also offers great views of the Salton Sea along the trail. And, of course, make sure to see plenty of those iconic trees, named by Mormon pioneers because they were reminded of Joshua raising his arms to heaven in the Biblical story.

ía de los Muertos has been celebrated in Mexico since as early as the 1500s, but its roots began with the Aztecs roughly 3,000 years ago. Previously, it was held in August and considered a harvest festival, but Catholic influences moved it to November to overlap with All Saints’ Days and All Souls’ Day. This mixture of Catholic, Spanish and Aztec influences has changed the celebration over the centuries, with regions of Mexico embracing different traditions. But, the idea of celebrating in the face of death, has remained. From Oct. 31 to Nov. 2, it’s believed that spirits return from the afterlife to reconvene with their loved ones. Nov. 1 honours the souls of children, called angelitos (little angels), who have passed away, while Nov. 2 culminates

with a celebration for the souls of adults, and the La Caravana de la Muerte parade. “It’s a way to remember loved ones,” says Kevin Simpson, one of the owners of Puerto Vallarta’s Peyote People art gallery. “Once a year, let’s remember what they did for the family. Day of the Dead is about the full circle of life, it’s not a sombre thing.” During the days leading up to the festival, altars are built all across the city. Some are tucked away in homes while others are displayed along the downtown Malecón, allowing passers-by to consider the ofrendas (the offerings). The altars typically include a photo of the departed as well as seven steps filled with symbols and gifts left for the loved one as a way to welcome him or her home. Altars offer a peek into a stranger’s life.

Most altars hold a few staples, however, including marigolds, candles, sugar skulls and pan de muerto, a sweet bread—often baked into the shape of bones and skulls—that is only made during this time of the year. Official Día de los Muertos celebrations begin as November nears. The streets start to overflow with decorations, windows are filled with marigolds, and strings of vibrant papel picado (traditional Mexican cut paper) are strung above the streets, squares and buildings, where they sway in the fall wind. Locals and visitors fill the streets and graveyards for the festivities, with many painting their faces white, with black circles around their eyes and stitches over their lips, to look

like living skeletons. A dance show on Nov. 1 sees children from the Xiutla Folkloric Ballet take over Puerto Vallarta’s Lázaro Cárdenas Park. Young girls dressed as La Catrina, the Day of the Dead’s grand dame, dance with the rigid grace of the skeletons they depict. The boys play the role of her male counterpart, El Catrin. Soft, blue lights and low-lying smoke illuminate the skeletal dancers as they move across the stage. In the plaza behind the dancers, vendors, also sporting black-and-white face paint, sell Day of the Dead-inspired treats and nearby restaurants are decorated with massive papiermâché La Catrinas. Music rings through the streets as the city comes to life and its people honour the dead. “It is a celebration of the cycle of life,” explains Simpson. “We are taught that your

When the crowds arrives at the the Malecón, the atmosphere is electric. Lit only by candlelight, an energy buzzes through every corner of downtown. Mariachi bands play on the street corners, while men and women dressed as skeletons dance under the moonlight. Death may be inevitable, but one thing is for certain during Día de los Muertos: death can be celebrated, not feared, because the souls and the memories live on through generations.

he humble butter tart is a regional favourite that’s risen to the level of national delicacy. Combining brown sugar, syrup, eggs and (of course) butter, this simple treat with a gooey, semi-solid centre was born north of Toronto—the first recipe appeared in a cookbook published near Barrie in 1900. While this sweet little treat can inspire a sense of warmth on a cold autumn day, it can also ignite a certain amount of passion. Calgary’s Teatro Ristorante is back in the spotlight as it celebrates 25 years. fixture of fine dining in Calgary, Teatro Ristorante has been a go-to for locals since it first opened 25 years ago. But, in recent years, the Italian restaurant began to feel more like an institution than a must-try hot spot in a city with a burgeoning dining scene. Last year, Dario Berloni, president and CEO of Teatro Group, and Devin Morrison, director of operations, decided to change that by hiring corporate executive chef Matthew Batey. Well-known to food-lovers in Western Canada, Batey was the executive chef at Calgary’s The Nash, and before that at the Mission Hill Family Estate winery in the Okanagan. The result is that, while the service is still impeccably elegant and,

in accordance to Berloni’s vision, unmistakably Italian, 25 years into the game Teatro is once again fresh and fun. Batey not only oversees the culinary program at Teatro, but also at Teatro Group’s other properties: Cucina, Royale, Vendome Café, E.A.T., Capuccini and Alforno Bakery & Café. Each has its own chef running the kitchen, but Batey is responsible for steering the culinary vision and making sure everything is both delicious and efficiently run. Batey relishes the opportunity to be both a kitchen “artist and an architect.” He loves managing and mentoring, but still appreciates the opportunity to put on an apron and stand in front of the stove, particularly if he’s able to get his hands on a piece of fresh fish, a reminder of

his Vancouver Island upbringing. “I touch food every day in the kitchen,” says Batey. “Some days, [that] means doing a tasting with the chefs before one of the restaurants rolls out a new menu, or I could be working service and be shoulder-to-shoulder with the guys in the kitchen.” While Batey takes great pride in all the group’s restaurants, Teatro is the shiniest jewel in the crown. The menu changes seasonally, but the nightly six-course tasting menu, which can feature anything from handmade ravioli filled with fresh mushrooms to a delicate scallop crudo, is a must try. “It’s about being a great restaurant in a vibrant culinary city and never losing sight of who we are,” says Batey —Elizabeth Chorney-Booth

BRENDAN BANKOWSKI AND DEAN SYMONDS The pair are the owners of the recently opened Gorilla Whale (1214 9 Ave. S.E.) in Inglewood, which serves up ramen, yakitori, craft cocktails and local beers with a side of rock ’n’ roll swagger. TOSHI KARINO Carino Riserva (2206 4 St. S.W.), which is a refined mash-up of Italian and Japanese cuisine, is the brainchild restaurant of Karino, a former sommelier at Teatro. ANDREA ROBINSON Robinson is the general manager and part owner of Two Penny (1213 1 St. S.W.), which specializes in cheeky, upscale takes on Chinese food classics and spectacular Asian-inspired cocktails. In a large bowl, combine the buttermilk, Tabasco and a big pinch of salt; add the chicken pieces and coat. Refrigerate for a couple of hours or overnight. Put flour in a shallow dish and season generously with salt. Remove each piece of chicken from the buttermilk and dredge in the flour, then place on a wire rack set over a baking sheet. Dip the coated pieces again in the buttermilk and then the flour. Leave the pieces on the rack for 10 minutes to dry out a bit.

Heat two to three inches of oil in a shallow pot or Dutch oven to 350°F, or until it’s hot, but not smoking—a scrap of bread should sizzle when dipped in. Cook a few pieces of chicken at a time, without crowding the pot, for about 8 minutes, turning as needed until deep golden. If you have a meat thermometer, the thickest part of the chicken should register 165°F.

Transfer the chicken to a paper towel-lined plate while you whisk together the melted butter, oil, cayenne, brown sugar, chili powder, garlic powder, paprika, salt and pepper. Brush mixture over the chicken while they’re still hot. Serve on white bread with sliced pickles.

t started with a pink fruity mocktail. “I wasn’t drinking and asked for a nonalcoholic option, and was offered a poor and sweet drink,” says Ben Branson, who set off on a two-year path trying to solve his dilemma. Already dabbling in home distilling, the design agency owner worked with historians, distillers, botanists and farmers to create Seedlip, the world’s first distilled nonalcoholic spirit. The England-based company’s motto sums up the result, this is “what to drink when you’re not drinking.” A trailblazer in the bold new world of zero-proof spirits, Seedlip is made using a method that’s based on the production of nonalcoholic remedies found in 1651’s The Art of Distillation. The product’s botanicals are individually macerated in neutral grain spirit for up to six-weeks to extract the most flavour before they are copper pot-distilled, de-alcoholized, diluted, blended and bottled. Herbaceous and vegetal, Garden 108 hints at peas and hay (ingredients from Branson’s family farm) with strong spearmint, rosemary and thyme aromas. Warm and woody, Spice 94 is a mix of cardamom and allspice, citrus peels and bitters. Not meant to be consumed neat, the sugar-, calorie- and allergen-free product often replaces traditional alcoholic spirits. Whether it’s for health or personal reasons, the demand for quality booze-free alternatives is growing beyond teetotalers, pregnant women and clean-living advocates. One of the most magical experiences of all at SilverStar is the horse-drawn sleigh. can also explore the connecting Golden Mile Trail, where you’ll hike past roaming cattle and 100-year-old mill ruins. But the cherry on top of the whole experience is sitting on the patio at Miradoro, taking in the unbelievable view of the valley below as you dine on charcuterie and toast to exciting experiences and newfound memories. The Thompson Okanagan truly has something for everyone, and fall and winter are some of the best times to experience all the region has to offer. Take it one step further and visit the farms and orchards themselves. At Davison Orchards, you can take a harvest tour to pick pumpkins throughout October. After, enjoy true farm-to-fork dining with a slice of homemade apple pie at the on-site Deep Dish Café. Vernon’s year-round Planet Bee Honey Farm is another unique stop. See the bees hard at work at the indoor, glass observatory hive, then shop for souvenirs such as natural soaps, beeswax candles and more than 20 kinds of all-natural honey. There’s also an on-site meadery, Honeymoon Mead, with a tasting room where you can learn how mead is made and then taste some sweet, refreshing sips. Later in the year, as snowflakes begin to cover the vines and the lakes freeze up, Vernon transforms into a magical winter bliss known for its sunny bluebird days and champagne powder that sparkles all around Mount Robson, the tallest peak in the Rocky Mountains. In the wintertime, locals trade in hiking boots for snowshoes to journey through the mountain’s oldgrowth cedar forests. For different levels of adventure to be experienced all in one spot, drive just 25 minutes from Vernon to SilverStar Mountain Resort, which recently celebrated its 60th anniversary. The resort is especially known for its family-friendly offerings including Canada’s first all-inclusive lift ticket and ski-in and ski-out accommodations. In addition to more than 3,200 acres for skiing (including romantic night skiing), there are tons of activities off the hill for everyone to enjoy, including ice skating on Brewer’s Pond next to a toasty outdoor fire pit, hours of fat biking and snow tubing fun, plus snowmobile tours and even dog sledding. Christina has been recognized as one of our outstanding WestJetters by our President’s Circle Award. The President’s Circle Award is WestJet’s premier award recognizing the impact of WestJetters who consistently go above and beyond to create a remarkable guest experience. Based in Calgary, Christina is responsible for the way all of our aircraft look and feel inside. She sets a high standard and takes her job seriously (but not herself) so that both guests and crew members can enjoy a clean aircraft. Favourite WestJet destination: Either Ireland or England. I love these locations because of the history and stories you can find at every turn. If you’re looking for affordable eats and great local music, I would encourage you to check out one of the local pubs. In your words, how would you describe WestJet? A fun, caring family. Best travel tip: Stay positive! Even if you take the wrong turn or train, you’ll probably end up with an even better adventure or at least a story to share. Chat with locals, as they often have the best tips and know the best local attractions. What is one thing that you want to share with our guests? WestJetters are here because of you, so we always strive to make your experience a great one.
