WHAT I LOVED WE’RE EXCITED FOR EVERYTHING IN THIS ISSUE, BUT HERE’S WHAT STOOD OUT FOR MANAGING EDITOR, DIANE BOLT
he team at WestJet Magazine has a penchant for daring me to embrace the great outdoors in all manner of weird and wonderful ways—I grew up in the city and didn’t even go camping until I was well into my 30s. Never one to shy away from a challenge, earlier this year I struggled into a wetsuit and lowered myself into the water to swim with enormous whale sharks, the world’s largest fish, just off the coast of La Paz in Mexico’s Baja California Sur (page 11). The guide instructed me not to touch these gentle creatures, but also not to let them touch me. Easier said than done when you find yourself between two of them with little space to manoeuvre. On a more recent trip to Belize, at the invitation of celebrated archaeologist Dr. Jaime Awe (pronounced Himay Ahway, as I was quickly, but gently corrected by a friendly local), I toured some of the many Maya sites Awe has uncovered during his 30-plus-year career. I climbed the steep, high steps to the top of El Castillo, the large acropolis at Xunantunich, and pushed past my fears as I inched my way to

the edge to look down. Later, I tubed through pitch-black, bat-filled caves and climbed up and then jumped from a series of cave waterfalls at Caves Branch. You can read all about my time with Awe starting on page 54 and stay tuned for more on my La Paz and Belize adventures in future issues.

Located beside the Sea of Cortez, this city is rich in history, culture and marine life.
ituated around two hours north of Los Cabos on the Sea of Cortez, La Paz is the capital of Mexico’s Baja California Sur. The city—its name is Spanish for “The Peace”—was originally founded by Hernan Cortez in 1535, but it wasn’t until 1811 that a permanent settlement was successfully established. Today, this city of more than 290,000 has a surprisingly small-town feel. If you’re craving calm waters and multicoloured sunsets coupled with friendly locals, soft-sand beaches and abundant wildlife, you’ll find it in and around this effortlessly cool city.

Morning Head to The Cortez Club, a dive centre located on the La Concha Beach Resort, for a day-long guided adventure that begins with a boat ride north to Los Islotes. This group of small islands is home to a colony of 350 to 400 sea lions (1), one of Mexico’s largest. Snorkel above coral, glance down on scuba divers and swim in the same waters as playful, curious sea lion pups. Afternoon Stop for a picnic of ceviche tostadas at Ensenada Grande, a tranquil bay on Partida Island with shallow, cyan-coloured water, sand dunes and biscuit-hued rock formations. After lunch, the tour continues to El Mogote, a sand barrier peninsula opposite La Paz, where you can swim with whale sharks, the largest fish on the planet. Evening Back on dry land, dine on creamy guacamole and build-your-own tacos—arrachera (steak), al pastor (spit-roasted pork) or shrimp—at Rancho Viejo, a family-run restaurant that grew from a single taco stand. This lively, downtown spot is open all hours.
Afternoon After a lazy morning on the beach, raise your heart rate with a stand-up paddleboard through the salt mangroves of Balandra Bay (2), located around 35 minutes north of downtown La Paz. Let Baja Desconocida outfitters lead you though the lush foliage of these narrow, mangrove forest-lined canals. Evening Dinner at Mediterranean restaurant Sorstis is a rustic, alfresco affair. Devour 36-month-aged ham cut tableside and served with shredded tomatoes on slices of toasted baguette. Juicy shrimp and vegetables follow, but be sure to leave room for a scoop of chiliflavoured ice cream. Late Evening Cozy up next to the resident cat and order a flight of mezcales— Tobala, Sanzekan, Chacolo and Cartas Y Poetas—at La Miserable, a downtown bar inside a tiny house on a residential street. Drop by the food stand near Plaza Constitucíon for a hates (pronounced jates), a hot dog wrapped in bacon and drizzled with mayo, before going to bed.

THE WHITE ALBUM Fifty years since its release, The Beatles’ seminal work still has us talking. n many ways, it marked the beginning of the end. In 1968, the Fab Four released their ninth studio album, self-titled The Beatles. While it contained many now-iconic songs, including “Dear Prudence” and “Back in the U.S.S.R.”, The White Album—as it came to be known because of its plain cover—also revealed divisions within the group. “You’re not necessarily listening to The Beatles, you’re listening to individual members with their own songs,” says Dr. Michael Brocken, who grew up in Liverpool, England, as the band was growing in popularity. “This is the first evidence of The Beatles starting to fall apart.” Brocken knows more about The Beatles than most. The author of various books about music—including The Twenty-First-Century Legacy of the Beatles and Other Voices: Hidden Histories of Liverpool’s Popular Music Scenes, 1930s-1970s—he created the world’s first Beatles master’s program, The Beatles, Popular Music and Society, at Liverpool Hope University. He shares his insight into the band and why their album is still important half a century later:

Why is it worth studying them? You can look at a variety of topics across the gamut of popular music, and they’ve been involved somehow. You can talk about the British

music industry, lyric analysis [or] popular music at the movies with Beatles’ films. You can look at how The Beatles became very collectible later on and how Liverpool became a tourist area. What was happening with the members of the band when they recorded The White Album? The Beatles had started to fall apart around the summer of 1967, partly because [their manager] Brian Epstein had recently died. The pressures on each Beatle becomes very strong and there are issues with their relationships as band members.
Q
How did that affect the record? It’s like listening to a party line: in the old days when you picked up the phone, sometimes somebody else would be using the line so you would be listening to their personal telephone conversation. For me, The White Album is a bit like that. It’s like listening to somebody’s confessional. It’s very much a representation of The Beatles starting to go their different ways. They’ve created some really interesting music, but it’s not what you might call an overarching, complete thing … it’s many desperate entities stuck together.

What are your favourite Beatles songs? “For No One” from Revolver is really cinematic; you can almost see the images unfolding before your eyes. “A Day In The Life,” from Sgt. Pepper, is an interesting observational song about daily life. On The White Album, I love McCartney’s guitar picking on “Blackbird” and I like Harrison’s song development [on the album].

ON THE HERO JOURNEY Chris Pine portrays Scottish hero Robert the Bruce in Netflix’s Outlaw King.
is new movie may be set in the 14th century, but Chris Pine says the story of Robert the Bruce and his defeat of the English, has a message which is still relevant today. “This man, who comes from great wealth and power, decides—at a very difficult time—to give up all of that,” says Pine. “He is able to do something great for many, many people.” Premiering on Netflix in Canada on Nov. 9, Outlaw King is the story of Bruce, a Scottish nobleman who was crowned king, turned into an outlaw and then freed Scotland from English rule. “The notion is, ‘There is hope in the possibility of doing selfless acts,’” says Pine. “On the hero journey … selfless is always better than selfish.” The actor admits he did not know a lot about Bruce before taking the role. “There is a ton of dry non-fiction to read, which I went through just to get a sense of who he was,” he says. “There is a great deal of information about him, but very little in the way of psychoanalytics. There’s no My Memoir, by Robert Bruce.” Bruce led Scotland during the First War of Scottish Independence against England. He was involved in the murder of one of his rivals, was excommunicated from the Catholic Church by the Pope for his actions, and won and lost many bloody battles against the English. Outlaw King’s visuals frequently run red as Bruce leads his men into battle. It was a gruelling and compact 65-day shoot—filming took place in various parts of Scotland—that required Pine to become adept at riding a horse and swinging

a sword. It was the chance to work with director David Mackenzie, who helmed Pine in the Oscarnominated Hell or High Water, which drew him to the project. “I have made a lot of big films, but I had never made a big film with a director who has the sen-
sibility of David. We like to call it ‘jazz filmmaking.’ You have a structure, but there is room to play.” There may be much we don’t know about Bruce, but one brief Outlaw King scene reveals more of Pine than we have seen on screen before. “To show what we all have [and it] is somehow a Google Alert, it’s a trip,” says Pine about his nude scene. “I don’t want this film to be all about that,” adds Pine, who notes people are more concerned about that one scene than the violence in the film. “People want to talk about that, and yet there is so much disembowelment and beheading in this film [it’s enough to make] your mind spin.” —Richard Crouse

IN SEARCH OF THE REAL ROBERT THE BRUCE TURNBERRY CASTLE Bruce may have been born at this castle hugging the coast of southwest Scotland in Ayrshire in 1274. Little remains of the castle, which Bruce destroyed in 1310 to prevent the English from occupying it. A golf course now sits near the site, a lighthouse was built in the old moat and some remnants of the original stonework can still be seen. GREYFRIARS CHAPEL Bruce was responsible for the death of John Comyn, a rival for the throne. Comyn was murdered in the monastery chapel in Dumfries in 1306. Bruce was later excommunicated by the Pope. The spot of the murder is 60 metres west of the present church, which dates from 1868. BANNOCKBURN In 1314, Bruce met the army of Edward II in Bannockburn, south of Stirling Castle, one of the most important castles in Scotland. Bruce’s forces were outnumbered by the English, but were able to defeat them, helping to secure Scotland’s independence. The visitor centre includes a 3D experience where you can learn more about the battle’s significance.

WHERE TO GO: CONCORD, MASS. Alcott based Little Women’s characters on her own family, friends and experiences, and used her family home, Orchard House, as the novel’s setting. Stepping into this sizeable, Federal-style clapboard house on the outskirts of still-bucolic Concord is to step into Alcott and Jo’s world. Remarkably preserved, the very furnishings used by the family help bring the story to life. In Alcott’s/ Jo’s room, the simple shelf desk where Alcott wrote the novel is humbling in its plainness and tiny size. As in the book, the dining room and adjoining parlour are where the girls would enact elaborate dress-up plays. “This was their stage,” says Jan Turnquist, Orchard House’s executive director. “People have an intense reaction when they visit Orchard House. I’ve heard people describe it as a place of peace.”

WHY WE LOVE HER: O’Dell’s book is largely fictionalized, but based on the true story of a woman who survived alone on San Nicolas Island for 18 years, starting in 1835. No one knew that woman’s real name, but she was baptized as Juana Maria in 1853 after being brought to Santa Barbara. “Everybody loves a Robinson Crusoe-like story about a person who has to live by their wits and skills and survive

r. Jaime Awe embarked on his very first archaeological expedition in the late 1960s. Ten-year-old Awe set off with his older brothers to explore the ancient mounds behind the family home in the town of San Ignacio, Belize. Armed with a couple of old machetes, the brothers hacked their way through the Cayo District’s jungle and began to dig one of the mounds. In a couple of hours, the backyard archaeologists had unearthed a cache of Maya artifacts: ancient fragments of pottery and obsidian blades, and pieces of a mano and metate—a grinding stone, similar to a pestle and mortar, still used today for grinding corn and cocoa beans. Awe’s experience uncovering more than 1,500-year-old remnants of Maya civilization spurred a lifelong curiosity and appreciation for the history and culture of the community that once inhabited the land in and around his hometown. It is estimated more than a

million Mayas—made up of the Yucatec Maya from Yucatán, Mexico, the Mopan from Guatemala’s Petén area, and the Kekchi from Guatemala’s Verapaz region—once occupied the region now known as Belize. In excess of 600 Maya sites have been identified across this small country bordered on the north by the Yucatán Peninsula and flanked by Guatemala to the west and the Caribbean Sea to the east. “These sites are symbols of our national identity,” says Awe, who received his PhD in archaeology after studying in England. During a career spanning more than 30 years, he has uncovered some of Belize’s most-prized national treasures and is considered a leading authority on Maya culture in the region. “People here are proud of the fact that the first Belizeans developed this incredible civilization that formulated and advanced agriculture, astronomy, mathematics and language. We want to share this with the rest of the world,” he says.

he ancient ball court in the western end of the ruins of Cahal Pech is a hive of activity as people shovel earth into buckets. The contents are tipped onto large, flat sieves—hung between trees— which are shaken back and forth to separate the fine earth from any archaeological remains. Some buckets come up empty, while others reveal potsherds (pieces of pottery), obsidian fragments or jute—the skinny, coiled shells of freshwater snails the Maya considered a delicacy. Meaning Place of the Ticks, Cahal Pech began as a small village more than 3,000 years ago

and is one of Belize’s oldest sites. This collection of structures, set on a steep hill overlooking San Ignacio and the Macal River, was once home to an elite Maya family. It was first discovered in the 1950s but did not begin to take shape until Awe began excavating the site in 1988. To date, 34 structures, including temples, administration buildings and palaces—many were erected on top of previous structures—have been uncovered and conserved at the centre of Cahal Pech. “Our team could work here for generations and we’d still be discovering new things,” says Awe, who divides his time between work as the co-director of the

Belize Valley Archaeological Reconnaissance Project (BVAR) and as an associate professor of anthropology at Northern Arizona University in the U.S. As the day unfolds, the team is still hard at work at Cahal Pech, where sections of the site have been staked into grids and marked with brightly coloured string. BVAR archaeologists work alongside a team of students to carefully peel back the layers of earth to uncover the small ceremonial ball court. “Cahal Pech isn’t all that huge and we’ve concentrated on it for 31 years, but there’s still more to uncover,” says Awe. “There’s always next year.”

il y a plus de 3 000 ans et c’est l’un des plus anciens sites du Bélize. Une riche famille maya habitait cet ensemble de structures, sur une colline surplombant San Ignacio et la rivière Macal. Découvert dans les années 1950, il a commencé à prendre forme quand Awe a entrepris des fouilles en 1988. On a dévoilé à ce jour 34 structures, notamment des temples, des bâtiments d’administration et des palais, dont tout nombre avaient été érigés sur d’autres structures. On les conserve au centre de Cahal Pech. « Notre équipe pourrait travailler ici pendant des générations et nous ferions encore des découvertes », affirme Awe, qui partage son temps
entre ses postes de codirecteur du projet Belize Valley Archaeological Reconnaissance et de professeur agrégé d’anthropologie à l’Université Northern Arizona. Au fil de la journée, l’équipe continue de travailler dur à Cahal Pech, où on a procédé au quadrillage de sections indiquées par de la ficelle de couleur vive. Les archéologues œuvrent côte à côte avec des étudiants pour retirer soigneusement les couches de sol et mettre au jour le petit court de jeu de balle de cérémonie. « Cahal Pech n’est pas si grand et nous y travaillons continuellement depuis 31 ans, mais il reste des choses à découvrir, dit Awe. unantunich, meaning Stone Lady, is a 30-minute drive southeast of San Ignacio and, like Cahal Pech, work to uncover more of this ruined city continues. To view the entire site—and neighbouring Guatemala—it is a steep but worthwhile climb up the steps of El Castillo, which, at 130 feet, is the second tallest Maya ruin in the country. At the top, you’ll be able to see the ruined city through the eyes of the elite Maya family that once occupied this imposing stone pyramid. After you carefully descend, explore the rest of the site, including a burial chamber Awe

uncovered in 2016, which has now been expertly conserved. Despite previous excavations of Xunantunich by other archaeologists, this chamber had somehow remained undiscovered. Awe’s colleagues often joke he has a golden trowel, as he seems to have a sixth sense for knowing exactly where to dig. Now fully excavated, this burial tomb is partially covered with a piece of corrugated Plexiglas fitted over the top, but there is still enough room to crouch down and peer inside. New plant life has quickly begun to take root since the site was first excavated. “Nature always wins,” says Awe. Two hieroglyphic monuments, gifted to Xunantunich’s Maya elite rulers as war booty, were discovered on each side of the staircase of the tomb. Fibreglass replicas of these monuments, also known as Panels Three and Four, sit in their place, as the originals are now housed in the site’s museum and visitors’ centre. Awe has already moved on to his next project at the site; a structure that, when compared to the rest in this ruined city, is an anomaly. Unlike Cahal Pech, evidence points to Xunantunich being a more recent Maya city, as many of the buildings only have one or two phases. However, Awe’s golden trowel has again led him to uncover a building that is actually stacked on three earlier structures, all of which predate Xunantunich’s other structures. “Luck has nothing to do with it,” says Awe. “I dig where everyone should dig.”

Awe est déjà passé à son projet suivant, une anomalie par rapport au reste des ruines de cette ville. Contrairement à Cahal Pech, les traces indiquent que Xunantunich est une cité maya plus récente, car de nombreux bâtiments ne comportent qu’une ou deux phases. De nouveau, grâce à sa truelle « magique », Awe a toutefois découvert un bâtiment qui repose en fait sur trois structures plus anciennes, toutes antérieures aux autres structures de Xunantunich. « La chance ne joue aucun rôle, affirme Awe. Je creuse là où il faut creuser. »

ACTUN TUNICHIL MUKNAL Southeast of San Ignacio, Actun Tunichil Muknal—the Cave of the Stone Sepulchre—is accessed after a 45-minute hike through the jungle and a swim across a deep pool to the cave’s entrance. Once inside, it’s an hour-long trek to the main chamber, which is filled with artifacts and skeletons—most notably the thousand-year-old remains of the Crystal Maiden.
CARACOL Two and a half hours from San Ignacio—up dirt roads and through villages—are the ruins of Caracol. The city boasts more than 35,000 buildings, including Belize’s tallest. More than 140-ft high, Caana (sky palace) is similar to some of Belize’s other pyramids in that it has 13 doorways. In Maya mythology, 13 represents the number of levels in heaven.
POOK’S HILL Located at the foothills of the Maya Mountains in the Roaring Creek Valley of central Belize, Pook’s Hill is a private reserve set on 300 acres. At the heart of the property lies the remains of a small Maya settlement, known as a plazuela (Spanish for a small plaza.) The site includes a temple, feasting hall, residential structures and a rare domed sweat house.
LAMANAI Lamanai is considered to be the longest continually occupied site in Mesoamerica, having only been abandoned roughly 200 years ago. Instead of being built around a main plaza like other Maya cities, Lamanai has no main square and instead follows the bank of the New River. So far, only five per cent of the city has been uncovered by archaeologists.

A bird might fly over an abandoned building and drop a seed, causing a tree to grow. Later, a hurricane may rip the tree out of the ground and wreck the top of the structure. “When working on an excavation site you go from the bottom up; from the known to the unknown,” says Awe, who adds the bottom is usually in better shape. “If you see a stone with a nice face, you follow that face because, usually, it’s part of a wall. If you find two stones in a row, it’s generally not accidental and if you find three then you’re sure.”

He brings to Stubborn Seed a palate for concentrated flavours, a nose for superior local supplies and an eye for beauty. The resulting dishes are created with somewhat simple ingredients—such as Warm Celery Root with crackling maitake, creamy mustard, topped with herbs and blossoms—but are complex in presentation and texture. amed after the island sunset, the award-winning Kimpton Seafire Resort + Spa is an oasis of cool on Grand Cayman’s famous Seven Mile Beach in West Bay. The openair design, sumptuous rooms and gorgeous views reflect its intention to impress. But, the resort’s restaurants also happen to be at the forefront of the island’s dining scene in a country well-noted for its amazing food. “From the initial opening [in November 2016], our intent was to create innovative and approachable, world-class food,” says the resort’s executive chef Massimo De Francesca. “We like to call it ‘luxury without the attitude’.” Born and raised in Toronto, De Francesca trained at George Brown College and honed his skills in Italy, Canada, the United States and the Caribbean, before joining the Kimpton family in 2008. He says his classic culinary style is heavily influenced by all the travelling he has done. “I hit as many restaurants, food markets and shops as possible,” he says. “I’m always thinking of new dishes and experimenting with new items to inspire my teams and challenge them to stay ahead of the curve.” Since coming to Cayman, De Francesca’s style has also been

These interactions have allowed him to offer authentic Cayman flavours: fresh and uncomplicated.
De Francesca is also grateful for the abundance of fresh seafood and island produce. “Caymanian cuisine is all about fresh, flavour and family,” he says. It is also multicultural, influenced by the more than 100 different nationalities represented on the islands. “There are many great restaurants to explore here—fine
dining, small beachside shacks and great vegan spots, too.” The same something-foreveryone perspective extends throughout the Seafire. Each of the resort’s three restaurants has a distinct feel. Ave is the main room, open and airy, delivering coastal Mediterranean dishes with a Caribbean flare, such as crispy octopus with a fennel salad and grilled swordfish with an eggplant purée. In the middle of Ave, sits Avecita—a restaurant within a restaurant. It’s a semi-private space with large communal tables seating 30 for dinner only, and serving woodfired Spanish tapas-inspired dishes with Spanish wines. Avecita also features a 10-seat chef’s tasting bar presenting a five-course meal every night. It is one of the most coveted reservations in town. Diners belly up to delicacies such as avocado with almonds and caviar, morel mushrooms with scallops, and wood-fired fish and steak. Serving up elevated Mexican street-style food, Coccoloba is an open-air beachside restaurant, famous for its impeccably fresh ceviche, but just as renowned for its impressive view. “It’s the perfect place to have a late lunch, relax, and stay for the real show—the Cayman sunset,” says De Francesca. —Doug Wallace

ScottsdaleFilmFestival.com ong before North American settlers grew corn to make bourbon or malted barley for beer, the Puritans planted apple seeds to nurture the star ingredient for their favourite tipple: cider. “America was built on cider,” says Chris Haworth, co-owner and cider-maker at West Avenue Cider House in Freelton, Ont. Not only would farmers pay their labourers partly in cider, he says, but in colonial times the fermented beverage was considered safer to drink than water. Prohibition effectively killed cider on the continent—entire orchards were torn down to keep the citizens dry—and it wasn’t until 2010 that the boozy apple bevvy started making a comeback. “All these orchards are being put back in and cider’s having its [second] heyday,” says Haworth. Indeed, in the apple-growing regions of Canada and the United States—from B.C. to Nova Scotia and south to Texas—cider is fast becoming a craft darling. It’s gluten-free, steeped in history and occupies a comfortable niche as a gateway between beer and wine. Plus, it’s delicious. For these reasons, Haworth, a cider-loving Brit with a chef’s background, saw an opportunity to turn Ontario apples into a liquid every adult could love. In 2012, after four years of research and recipe testing, Haworth and his wife, Amy Robson, opened their cider house in Freelton (a community in Hamilton) located between Toronto and the Niagara wine region. West Avenue Cider House sits on a 75-acre farm planted with about 6,500 trees that produce a staggering 100 varieties of apples. The

casual tasting room offers 15 different kinds of cider on tap and in bottles, from a traditional cider made with 100 per cent Ontario heritage apples, to a Spanish-style sour cider. “Cider has many styles and, as with craft beer, there’s a lot of experimentation going on,” says Haworth. Many makers are barrel-aging their ciders, adding seasonal or tropical fruits and dry-hopping them for a deeper, more sophisticated flavour. Others are turning late-harvest apples into rich ice ciders by freezing the apples prior to fermentation, similar to the process of ice wine. “There are no limits, really,” says Haworth. He sees the drink’s future playing out like wine, with makers striving to produce single-varietal ciders or creating the perfect blend—à la Bordeaux—using heirloom apples. “What I want to give customers is [a single] apple variety, or a perfect blend of [different] apples,” Hayworth says. “That to me is the Holy Grail.” —Lisa Kadane

Preheat the oven to 375°F. In a bowl, toss the meat, onions, garlic, spices and splash of white wine. Place mixture in a deep pie plate or shallow pot with the potatoes. Tip 1: You do not need to use beef, pork or chicken. Cyr makes his tourtière with a more elaborate blend of game meat, such as deer and wild boar.

Roll out the pastry dough slightly larger than the top of the baking dish, cover the pie (brushing the edge of the baking dish with beaten egg to help keep it closed while cooking) and crimp the edges or decorate the top however you like. Cut a few holes in the crust to allow the steam to escape and brush the top with beaten egg.

Bake for one hour. Reduce the temperature to 250°F, cover and bake for four to five hours or until deeply golden in colour, uncovering for the last 30 to 45 minutes. Tip 2: Tourtière is delicious served warm or room temperature, and accompanied with a hearty spoonful of plum or apple chutney, or cranberry sauce.
