1 pkg baby carrots – organic, “ready-to-serve”, if possible

2 cups carrot pureé

2 tbsp honey

½ teaspoon sea salt

2 tbsp water

½ cup fresh or dried cranberries

2 tbsp unsulphured blackstrap molasses

2 cups oatmeal

½ cup flax seeds

2 cups oat flakes

½ cup sunflower seeds (shelled)

1/4 cup organic hemp oil, or other pure oil of your choice

INSTRUCTIONS

Set out a cookie/baking sheet and cover with parchment paper. In the first bowl, mix 2 tbsp of honey and 1 tbsp of water. In the second bowl, mix 2 tbsp of unsulphured blackstrap molasses and 1 tbsp of water. Pour fresh flax seeds into the third bowl, and sunflower seeds into the fourth bowl. Take 1 carrot, dip it into the honey or molasses, making sure it is well covered, and then roll the carrot in the flax and sunflower seeds. Once that is done, lay the carrot on the sheet, and repeat. When the cookie sheet is covered with carrot pops, put in the freezer. When you are ready to “party with the ponies,” simply take out your “Party Pony Pops” and pop them into a ziplock bag.

CARROT & APPLE CRUNCH TREATS

1 cup rolled oats

1 ½ cups unsweetened applesauce

1 cup of barley flakes.

1 cup oat bran cereal or oatmeal

2 cups oat bran

½ cup all purpose flour

CARROT CRANBERRY CRUNCH INSTRUCTIONS

Preheat oven to 3250F degrees. Pureé carrots in a food processor or blender. Add sea salt and cranberries and combine well. Add oatmeal and oat flakes, and make sure all ingredients are thoroughly blended. Add 1/4 cup oil and distribute well through mix. Turn out onto a cookie/baking sheet that has been lined with parchment paper. Score with a knife into treat-sized pieces (1 x 3 inch). Drizzle with a bit of oil just before placing tray in the oven. Place tray in pre-heated oven and bake for 20 minutes. Then, turn down the oven to 2000F degrees, and continue baking for 1 hour. Turn off oven, and leave crunch to cool completely, even overnight. Then break along score lines, and store in an airtight container or ziplock bag. Don’t be surprised if you find yourself sharing some healthy crunching with your horse pals!

APPLE OATMEAL SQUARES

1 cup fresh flax seed 4 large carrots, finely grated or pureéd 1 cup unsulphured black strap molasses 1 cup applesauce or small apple chunks

INSTRUCTIONS

Preheat oven to 3000F degrees. Line cookie sheet with parchment paper. Mix molasses, carrots, and applesauce in one bowl. In another bowl, mix the dry ingredients. Slowly combine the molasses mixture with the dry ingredients. Add only enough molasses so that you have a thick dough to work with, and add more bran to your mix, if necessary. The dough should pull away from the sides of your mixing bowl. Using a tablespoon, drop batter onto a cookie sheet and flatten slightly. Bake for about one hour. After one hour, turn the oven down to 1750F, and bake the biscuits for two more hours. Turn oven off and let the biscuits dry out completely. Store in an air-tight container or zip-lock bag.

INSTRUCTIONS

Preheat oven to 3500F. Mix ingredients in large bowl. Oil a 9 x 9 inch pan and spread the mixture evenly in the pan. Bake for 20 - 30 minutes. The mixture will start to shrink away from the sides and will be firm to the touch when done. While still warm, slice into squares and then let cool. Keep squares in the refrigerator in an air-tight container or bag. For an extra treat, drizzle a little molasses on the squares right before you feed them to your horse.
