What inspired you to become a DJ? Ever since I can remember, I’ve always been into music. I grew up listening to all kinds of music, from Frank Sinatra to 2 Pac. So I always had that love, but you can say my inspiration came while traveling. I remember it was 4-5 years ago while in Miami with a friend. I saw Swedish House Mafia performing their final-ever show. The energy and vibe they gave out to their audience was indescribable and magical. I’ve held on to that feeling ever since and I knew then that I wanted to be able to give the same feeling to the whole world through my music.

What is it about Amsterdam that really inspires you?

Amsterdam is so special to me since the connection to my music is the strongest in this city. I learned most of my craft and basics in this city, and I also struggle the most in this city. The city of Amsterdam itself inspires me everyday, again and again. I also get this feeling and the inspirations from Amsterdam at Schiphol.

The vibe is just so motivating here; I get the feeling that anything is possible.

Since you travel a lot – what do you like most about arriving at Amsterdam Airport Schiphol?

One thing I have noticed here is that it’s very easy to find directions at Amsterdam Airport Schiphol, because there are signs everywhere. Schiphol is so very well organized. I also love the addition of the new luxury world where you can find a selection of the best premium brands. I feel inspired by the fact that there is everything you can ask for in a shopping experience in one area.

Diamond processing is part of Amsterdam’s rich history and continues to draw visitors from all over the world. However, the history of the diamond trade in Amsterdam is permeated with labor unrest, along with the boom-and-bust experienced in periods of mass persecution and migration during the 19th century. In the heyday of diamond processing, the trade was handed down for generations from father to son. However, the diamond-processing trade eventually shifted to Antwerp, and during the Second World War over 2000 diamond processors and jewelers were deported to concentration camps. Few returned, and Amsterdam took a long time to regain some of its previous luster. The efforts of diamond polishing factories such as Coster Diamonds and Gassan Diamonds have helped restore Amsterdam as a diamond hub in the eyes of international visitors.

Sawing Sawing is the first step towards optimal brilliance. It’s not only about sawing the stone into two pieces, but about which pieces of the stone are the most valuable. It’s also important to know where the inclusions are located because they can then disappear in the polishing process. Cutting The cutting machine rotates the stone to create the conical shape needed to make a brilliant. Applying the right amount of pressure is paramount, as too little will not get rid of the excess material, but too much and the stone could break into pieces.

Exactly the right amount of pressure will make a perfect round of the diamond, so that it’s ready for polishing.

“Facets are like mirrors inside the diamond”

The last and third step is to polish the diamond by creating the facets. Facets are like mirrors inside the diamond and the first 4 facets create the basis for the end result.

It’s essential to get the angles and position exactly right. A single-cut diamond is the oldest form of the brilliant and is still used, for example, on the dials of watches. It has fewer facets than the full-cut brilliant shape, which has 57 facets. The diamond can now be placed in the setting of your choice.

Ceramic Art The basis of the ceramic art of Atelier NL is mined and extracted sand and clay from different locations throughout The Netherlands, such as former seabeds.

The material, the use of ancient pottery techniques, and the special glazing methods make each plate or decanter one of a kind. The colour and texture reveal the soul of the Dutch soil, and each item tells how everything is connected: history, humankind and craftsmanship. This tableware belongs to those proud items that make up tomorrow’s cultural heritage.

About creating coziness...

At Studio Piet Boon we feel that when an interior is done well, it conveys an effortless and calm atmosphere. It is omnipresent and is therefore felt more than it is seen by the naked eye. This balance is key to our design philosophy of creating harmony between functionality, aesthetics and individuality. Having said that, any color and material can be used to add warmth and coziness to an interior in principle, as long as they are combined in the right way and are in balance. In our design we always pay attention to mindfully creating these combinations, although it is important to bear in mind that the word “cozy” doesn’t mean the same thing to everyone.

Therefore, we always invest a lot of time in getting to know our clients and the context of a design. As our style is defined by our curiosity and fascination with shapes and

materials, we aim to use a very wide range of different objects, materials and colors in our work. We like to apply them in a layered, tone-on-tone manner to spark interest.

For us, color is a powerful communication tool when creating one of a kind design experiences. It is an aspect we incorporate very early in our design process. As we work across the globe, we believe our palettes should in essence remain fairly neutral, instilling a sense of timeless refinement and creating a subtle, understated effect and a calm atmosphere. At the same time this neutral palette is there to accommodate personal belongings, accessories, works of art and natural surroundings, acting as a platform for bright accent colors that illustrate depth and personality. amsterdam luxury — 2017

Because we carefully combine different, high-quality, rich (natural) materials and textures – our designs asked to be touched. For us attention to exquisite detail and tactility is key. Cashmere, soft cotton, silk, suede, leather, warm lush velvet, wood and natural stone are examples of tactile materials we combine within the same color scheme to add warmth in our designs. Matte and gloss, soft and hard, we look for the ultimate combination that creates an experience that is calm and at the same time an exciting with certain edginess to it. We never compromise on quality. Ultimately everything needs to perfectly add up to create a lasting positive impact.

A proper lighting scheme is therefore very important, as it creates atmosphere, adds functionality and thus contributes to the success of a design. By adding or subtracting lighting you can set all kinds of moods, place the focus on specific elements and play with color. Though it might seem simple, good lighting requires a great deal of thought. It has to correspond with all the interior elements and together form a balanced whole.

For luxury lovers...

Just like “coziness”, the definition of “luxury” isn’t always the same for everyone. Understanding what luxury means for our clients is something we delve into with each and every project – be it a Caribbean beach villa, a metropolitan amsterdam luxury — 2017

is foremost an effortless and timeless atmosphere where you feel comfortable and at ease within a balanced whole. Naturally there are levels of luxury and the difference in these levels lies in detailing and choice of materials used. Our designs are often permeated with richly tactile, high-quality materials and outstanding details. We also care about turning seemingly ordinary experiences into extraordinary ones. A good example is bed linen, an aspect of design that garners little attention, but that can make such a difference in someone’s wellbeing. After all who doesn’t enjoy slipping into a bed covered with good quality sheets. Go for Egyptian cotton with a minimum thread count of 800. The rest is subject to preference. The same rule applies to towels when it comes to creating a luxury spa & hotel experience in the comfort of your own bathroom.

In the beginning, Dutch potters learned the trade from their Italian colleagues and produced multicolored earthenware. Later, when the Dutch East India Company came back with large quantities of blue and white decorated Chinese porcelain from the Far East, these ceramics became very popular among the Dutch Elite. It was not long before Dutch potters copied it and a cultural heritage was born. As the name suggests, the pottery was, and still is, traditionally made in Delft. It is thought that many buildings in Delft were left vacant in the first half of the 16th century because of the declining brewery industry, and therefore a large number of factories were established here. At present, of the 32 earthenware factories that were founded in Delft, the ‘Koninklijke Porceleyne Fles’ is the only remaining factory that produces authentic Blue Delftware – hopefully for many more decades to come.

It feels like a city that is made up of different small towns, with each town having its very own inhabitants and unique characteristics.

Moreover, the city has a rich history and it is bustling with culture. I love being outdoors – Amsterdam lends itself perfectly for outdoor activities with its unique canals and secret gardens adorned with beautiful old trees.

Best places for a relaxing stroll: Visit the Amsterdamse Bos – between the Zuid-As and Schiphol – or the Vondelpark to clear your head or just to relax.

However, it is best to visit the Vondelpark in the morning, as it gets quite busy later in the day.

Your favorite neighbourhood: My favorite area is the area around the Concert Hall, also known to locals as the Concert Hall neighborhood or better known as the Museum quarter. The streets and unique shops make it feel as if I were walking around SOHO, New York. I love walking around here!

perspectives on photography in all its forms, and the gallery shows ambitious international works. The Kahmann Gallery is also a must-visit!

A few must-do activities: Rent a bike! The Dutch are known for taking the bike almost everywhere. If you want to explore Amsterdam like the locals do, then you should do it by bike.

Especially early in the morning, around 8-9 am it is a special experience: that’s when the city awakens. The Corner Bakery at the Johannes Vermeerstraat is one of my favorite spots to experience this.

Favorite Dutch designers: Maarten Baas – I like his organic lines: everything is natural and purely organic.

His creations always look wonderful. In addition, I also love the works of Studio Job. I like their different and unique designs: everything has a personal touch.

My top 3 favorite shops: — Duikelman Amsterdam – this is where you will find some fun kitchen gadgets.

— Lyppens – the coziest jeweler in Amsterdam.

— Mendo bookstore – they have a collection of beautiful books.

Even just browsing around this shop is a wonderful pastime.

Located in the posh neighborhood of Amsterdam-Zuid at the Cornelis Schuytstraat you will find the Menno Kroon Concept Store – a true paradise for flower and interior design lovers. Born in Broek in Waterland in 1961, Menno Kroon, owner, opened the doors to this unique shop in 1996 and his shop has become a permanent fixture in Amsterdam. Being the curious and inventive person that he is – he is always looking for the disarming purity of undiscovered flowers and interior design combinations – we asked the Dutch king of flowers to tell us a bit more about his favorite spots in Amsterdam. Although the global image of the city may be one of old historic buildings and small alleyways interlaced with water, the urban landscape of Amsterdam is rich with a wide variety of architectural gems and surprises. Exciting, elegant, historic, or ultramodern, the architecture can be sleek or it can be traditional but there is no shortage of luxurious feasts for the senses. Here we highlight a few significant examples, some subtle, some unmistakable, some off the beaten path, some new, and some dating from the 1600s. The common thread amongst them is a unique elegance and craftsmanship, highlighting the architectural originality in this diverse city.

Behind the Amsterdam Central Station runs the IJ river, the lifeblood of the city and its grandest waterfront, a panorama of constantly passing boats and ships.

But along the IJ, and not far from each other, stand some outstanding, modern architectural treats.

The EYE Film Institute is a spectacular building with a dynamic, white, geometric form. Serving as exhibition space, cinema, laboratory, and also the national film archive, this building was completed in 2012 to celebrate the elemental qualities of film itself: light, space and movement. At the same time, the striking forms create an alluring contrast to the historical centre of old Amsterdam, offering a beacon for the new Noord District across the river. A short ferry ride allows visitors the opportunity to explore a newly developing community where empty and aging wharfs once stood.

The use of light as a defining element is unavoidable in both its interior and exterior design and function. With floor to ceiling glass enclosures overlooking the river, the quality of the light is physiologically tangible within the space. Transitions among rooms exert a sense of continuity, while diverse lighting conditions, melded with diverse materials from oak planks to concrete, create continuously changing areas and a truly dynamic space.

Located next to the EYE, the A’DAM Tower is a nearly 100-meter-high tower with twenty-two floors, overlooking the IJ in Amsterdam-North from its unique position which is rotated 45° relative to the river. Originally designed in 1966 by Dutch architect Arthur Staal, it was locally known as ‘Shell Tower’, and housed the headquarters of the multinational Royal Dutch Shell until 2009. In 2016 it was reopened after a large-scale redevelopment

by Claus and Kaan Architects, which turned it into a multi-purpose space that includes: offices, a hotel, a nightclub, an exhibition space and a creative hub. There’s also an observation deck and a revolving restaurant. The iconic tower is a tall dark volume on white legs, with a rotated crown sitting on top. The façade went though a massive renovation as well, adding transparency to the enlarged windows with a thin layer of gold in the glass.

Directly out of the tower’s window from its southwest-facing side, across the IJ, you’ll see a complex of buildings constructed on a reclaimed peninsula. The IJDock is 89,000 m2 in size and comprised of several dynamic buildings with diverse functions such as a courthouse, apartments, and a hotel. The contours of the buildings are most notably unique for their “cut-outs,” an empty space cut out of the sharp-edged block of high rises, which designers Dick van Gameren and Bjarne Mastenbroek used to create the form of the structures, to connect to the rest of the city and not disturb its view of the IJ. Stroll through and find the green apartment building, with its astonishingly acute edge, already a popular target for photographers.

The actual edge houses a single apartment in its corner, with nine floors.

On the same side of the river, but on the other side of the station, stands another modern volume of concrete and glass, the Muziekgebouw. Designed by Danish architects 3xN and opened in 2005, the Muziekgebouw aan ’t IJ is a concert venue for mostly contemporary and classical music.

A stunning block of glass, roofed by a slab of concrete, the building is a marvel of transparency. Natural light streams in from the roof and the facades, and from a foyer that continues down to the terrace by the water’s edge. To counter the coldness of the space, rough concrete and raw wood add warmth to its interior. There is a main hall, seating for eight hundred people, and it’s decorated with a wall system that changes colours. The bimhuis hall, a smaller, more intimate hall, is dedicated to jazz concerts and features seating for three hundred people as well as a gigantic window looking out across the spectacular backdrop of the city.

CANAL HOUSE ELEGANCE Built during the 17th century to accommodate the explosive growth of Amsterdam’s Golden Age wealth, Amsterdam’s Canal Ring still continues to exemplify sophistication and luxury. The area was constructed not only to house the new, successful merchant, artist, and political classes, but also to create intersecting waterways for the transport of trade goods. It would become the largest homogenous urban extension of its time and a model for centuries. The main canal belt consists of three notable grachten, the Herengracht (gentlemen’s canal), Keizersgracht (emperor’s canal) and Prinsengracht (princes’ canal). The Canal Ring houses are noteworthy for a mixture of ornate details, elegance, and architectural quirkiness that together make its character one of the most unique in the world. The houses are characterized by their tall and slender appearance, essentially due to both lack of space, and also a special tax determined by the width of the house. The gable, the upper portion within the dual-pitched roof, is an interesting nuance in the history of Amsterdam’s architecture, usually including a curious hook and pulley system for lifting bulky goods to upper floors.

Bell Gable

The bell gable, used between 1660 and 1790, was a popular and more fashionable, ornate gable that mimics the shape of a church bell; it’s also known as the clock gable. They were often adorned with sandstone scroll motifs, which some say resembled the wigs that were in fashion at the time, or also ornamental flowers, fruit, or claws. They are related to the neck gable in their form and silhouette, and later they took on more exuberant additions influenced by the style of Louis XV. The widest bell gable ever built can be seen at Prinsengracht 359.

Neck Gable

Introduced by architect Philip Vingboons, the neck gable, used between 1638 and 1780, was a variation on the gable idea.

It was composed of a slender, straight, rectangular extension that goes upward in the middle, decorated with carved sandstone ornaments, the ‘klauwstukken,’ on its sides and top, often with a shell motif. Embracing the style of Louis XIV, it is more symmetrical than the bell gable.

Some are made entirely from brick, while others entirely from sandstone. A variant, the raised neck gable, features an elongated neck and can be more ornamental. At Herengracht 168 you will find the first neck gable ever built.

Spout Gable

The spout gable, used between 1620 and 1720, commonly signified trade and the presence of a warehouse rather than a residence. The form of the gable is simple, the shape of an inverted funnel, with a rectangular block sitting atop the apex of the roof, resembling the spout of the funnel. Later the form would take on a more elaborate expression with additional details. Made of brick and sandstone, the spout gable was built more solidly than the previous pointed wooden gables dating from 1420, whose construction was halted due to recurring fires. Nice examples can be seen along Brouwersgracht 184-194.

Step Gable

The step gable, used between 1600 and 1665, was often more elaborately decorated than the spout gable. It’s common in the centre of Amsterdam, and is recognized by what look like steps ascending both sides of the top of the roof. It was very common at the time, but fashion and new trends are powerful temptations, and many affluent Dutch homeowners adapted their homes and gables to the more ornate style of the eighteenth century. Only one hundred of the earlier style are left today. The Bartolotti House at Herengracht 170 is easily one of the more iconic examples.

The Netherlands is known for its unique architecture, and Amsterdam is studded with an abundance of these gems. But, not far from Amsterdam, there is a world of flourishing creativity with its own fascinating architectural examples. Rotterdam for example, Holland’s second largest city, has become an architect’s playground where imagination runs wild. De Rotterdam, completed by Rem Koolhaas’s OMA firm, stands towering and shimmering over the river Maas. Three interconnected, 150-metre towers house multi-use public and private facilities. At roughly 90 meters from the bottom, the towers shift sideways in different directions, giving the illusion of one skyline stacked on another.

Markthal Rotterdam is also a new addition. A covered food market in the form of an imposing arch, it combines living spaces above with market stalls below and an archaeological exhibition of the city as you descend further underground. For a feeling of openness, a cable-net glass façade provides transparency both front and back.

One of the closest architectural marvels is in neighbouring Zaandam where you’ll find the Inntel Hotel Zaandam. Wilfried van Winden’s design stands forty meters tall and was inspired by this area’s iconic, traditional green wooden houses. The result is about seventy small traditional houses stacked onto one another, a striking conglomerate façade in four shades of the Zaan region’s traditional green. The Netherlands Institute for Sound and Vision is in nearby Hilversum. Completed in 2006, it houses a collection of 750,000 hours of Dutch audio-visual heritage, from 1898 to the present, and is one of Europe’s largest audio-visual archives. A façade of colourful glass plates depicting television clips surrounds a public atrium where visitors walk above the ‘Grand Canyon’ which houses the archives five levels underground.

Rembrandt van Rijn Rembrandt van Rijn (1606-1669) was a Dutch draughtsman, painter and printmaker renowned for his depiction of a wide range of subjects; from biblicaland historical scenes to landscapes and portraits. He perfected an oil painting technique of strong contrasts between light and dark called chiaroscuro and created paintings with an outstanding sense of drama that represented the great wealth of the Dutch Golden Age. He made approximately 300 paintings, 300 etchings and 2000 drawings; he received numerous commissions for portraits while he was living in Amsterdam. Despite personal and financial setbacks, he was a passionate collector and had many pupils such as Ferdinand Bol and Govert Flinck.

His own collection inspired some of his most iconic works such as: ‘The Jewish Bride’, ‘Portrait of Jan Six’ and, of course, ‘The Night Watch’. The latter is among the eye-catchers of the Rijksmuseum and the Rembrandt House owns an almost complete collection of his etchings.

Vincent van Gogh When Vincent van Gogh (1853-1890) started out as a peasant painter he worked with dark tones and subject matter. One of his most famous paintings today, ‘The Potato Eaters’, depicts the harsh reality of country life in an earthy colour palette.

After moving to Paris, his paintings turned brighter and his choice of subjects shifted to Parisian cafés and boulevards, still lifes and portraits, he often painted self-portraits to reduce his expenses.

Later, longing for the peacefulness of the countryside, the sun and the colours of Japanese landscapes, he moved to Arles where he painted ‘Sunflowers’ and many ‘Wheatfields’ in a style that was loose and expressive. After Van Gogh sliced off his own ear he was admitted to a psychiatric hospital where he completed over 150 paintings in fluctuating mental conditions.

Having chosen to end his life, Van Gogh left over 850 paintings and almost 1300 works on paper.

Johannes Vermeer Together with Rembrandt van Rijn, Johannes Vermeer (1632-1675) is one of the most celebrated Dutch 17th century masters. Having lived in Delft all his life, Vermeer worked with great attention to detail. Unlike other painters Vermeer sat and worked methodically on one pictorial component at a time. This accuracy translates into incredibly intriguing compositions. He primarily painted women, busy with their daily household chores, and their postures and faces reveal a world of thoughts you can almost hear.

Since his works were attributed to other artists for a long period after his death, it was only in the 1870s that 35 paintings were clearly identified as his. Since then, Vermeer’s reputation has grown, and now – with The Milkmaid and Girl with a Pearl Earring being the most iconic – his works are among the world’s most famous paintings.

Large Group Portraits As large group portraits are a typical produce of the Dutch Golden Age, the Hermitage in Amsterdam presents the world heritage of the State Hermitage in St. Petersburg to Dutch and international visitors.

For the first time, ‘Portrait Gallery of the Golden Age’ brings together more than thirty seventeenthcentury group portraits. Those portraits belong to the collections of the Amsterdam Museum and the Rijksmuseum and are rarely exhibited due to their particularly large size. The exhibition tells the story of collective citizenship that is a typical characteristic of the Dutch Golden Age. Civic guards and other influential citizens commissioned portraits to capture their achievements in seventeenth-century urban culture. Regents and Regentesses had themselves portrayed at conference tables while engaging in their administrative tasks. ‘Brothers and sisters’ of Rembrandt’s ‘The Night Watch’, paintings by lesser known painters such as Nicolaes Eliasz Pickenoy and Jacob Backer are an unconventional but unique opportunity to get acquainted with the Dutch mentality of the past and the present.

The Forgotten Artist Stedelijk Museum: Chris Beekman, De Stijl Defector, 8 April – 17 September 2017

The Stedelijk Museum for modern and contemporary art presents the forgotten De Stijl artist Chris Beekman (1887-1964).

He was an artist who thoroughly embraced the abstract art of De Stijl because he believed that revolution in art and in society belonged together. Around 80 pieces are on display, with every painting spotlighting how Beekman’s legacy relates to this movement.

Iconic Artworks The Mauritshuis in The Hague: Steen & Jordaens, As the Old Sing…, 11 July 2017 – 14 January 2018

Located in The Hague, The Mauritshuis displays its permanent collection of world-famous artworks from the Dutch Golden Age, including Vermeer’s Girl with a Pearl Earring and The Anatomy Lesson of Dr. Nicolaes Tulp by Rembrandt. Additionally, until January 2018, two paintings by Jacob Jordaens and Jan Steen are on display to showcase how two different artists tackled the same humorous proverb: “As the old sing, so pipe the young.”

Having started with a small comic-book shop, Benedikt Taschen (1961) has become a pioneer in the field of photographic publishing, mostly by increasing the accessibility of art with his fairly user-friendly artistic books. The Nederlands Fotomuseum in Rotterdam exhibits the spectacular photo series by the world-renowned Brazilian photographer Sebastião Salgado. Having spent eight years traveling to the most remote areas around the world, GENESIS shows the poverty, hardship and oppression of various cultures in the wake of industrialization and its effect on the native landscape. Can you tell us something about the Reflex gallery, your passion for art and how it all began?

The gallery opened in 1986 as a family business working with established artists of that time such as Karel Appel, Christo, Arman, and other artists associated with Cobra and Nouveau Réalisme, dealing in the primary but mostly in the secondary market.

The name of the gallery was inspired by the “Reflex” manifesto of the Cobra group from 1948. It also refers to our publishing house: Reflex Editions. Publishing has always been an important part of our program. In close collaboration with our artists we produce exclusive, limited editions and publish high-quality books for which renowned writers, curators and museum directors have contributed essays.

For our publications, among others, we’ve worked with Glenn O’Brien, Wim Pijbes, Marilyn Manson, Harland Miller and the National Gallery in London.

At the end of the nineties, Reflex was one of the first galleries to represent artists working in the medium of photography. We introduced Dutch photographer Erwin Olaf to the larger public and we were also among the first to work with American photographer Larry Sultan.

In 2005 the gallery did the first exhibition of David LaChapelle in Europe.

Over the last seventeen years the gallery developed from a gallery for mostly modern artists to an internationally-oriented contemporary art gallery, representing renowned artists such as Harland Miller, Todd Hido, David LaChappelle, Iris Schomaker and recently Joel Morrison.

What exhibitions will be on display this summer at Reflex – July through October?

We will be showing new works by American artist Joel Morrison until the end of July and a group exhibition of sculptures during the summer period. After the summer we’re bringing an exhibition of up-and-coming Chinese artist Chen Nong, whose work has recently been included in the collection of the San Francisco MoMA. During the Unseen photography fair in September we will be presenting new works by Todd Hido, Miles Aldridge, Araki and Roger Ballen.

What can you tell us about the art scene in Amsterdam? Why is it so special?

Amsterdam is local and worldly at the same time, and therefore a really good location for a gallery like ours. We focus on fresh works by internationally renowned artists.

In Amsterdam we can introduce these artists to a local audience but at the same time we attract clients from all over the world.

Must visit museums and art galleries in Amsterdam for our audience?

It is worthwhile to pay a visit to the Amsterdam Photography museum Foam. It has a very up-to-date program in photography.

For modern and contemporary art and design you should go to the Stedelijk Museum Amsterdam at the Museum Square. They have a really good collection and organize interesting exhibitions. A hidden beauty is Huis Marseille, a museum for photography located in a beautifully restored canal house. If you have time it’s also nice to pay a visit to the sculpture park at the Gelamsterdam luxury — 2017

Favorite up-and-coming young Dutch artists we should follow?

If it’s only Dutch artists I like the work of Levi van Veluw, Jennifer Tee and Awoiska van der Molen. Van der Molen is a young photographer who makes beautiful, dark landscape pictures, with an old technical camera and a unique photographic technique. I also really like the work of sculptor Folkert de Jong, however he’s a more established Dutch artist.

Any exhibitions in town we definitely shouldn’t miss during the summer of 2017?

Of course our Joel Morrison exhibition at the gallery this summer,and there’s an exhibition of the latest work of Roger Ballen coming up at Foam this Summer, starting the 23rd of June.

Museum Our Lord in the Attic

At the beginning of the Dutch Golden Age, in the first part of 1578, a bloodless revolution turned Amsterdam from a Catholic into a Protestant city. The nonreformed were forbidden to express their faith in public but Dutch tolerance won out and even in those days Catholic churches were privately allowed. Situated on the two upper floors of a canal house, this uniquelypreserved, baroque place of worship offered shelter to Catholics secretly practicing their faith. Many antique details – like the oldpink color of the walls, rush mats and the piano organ – have been kept as authentic as possible so that visitors can take a realistic and unforgettable leap back in time.

Museum Willet-Holthuysen

Situated on Amsterdam’s most exclusive canals – the Keizersgracht and Herengracht – are the Van Loon and WilletHolthuysen town houses. Built in the Golden Age, you would have had to be very affluent to live a house like this. This was certainly the case for the Van Loon merchant family and the Holthuysen-Willet couple. Willem van Loon was one of the founders of the Dutch East India Company, while Louisa Holthuysen was born very rich – her father was a trader in window glass and English coal. Later, the houses were turned into two magnificent museums where you’ll find a large collection of art, fine furniture, precious silver and porcelain on display. Admirers of Louis XIV and Louis XV will assuredly enjoy a visit.

We asked Anne-Marie van Leggelo, founder of ‘Het Etiquette Bureau’ to provide us with a guide to ‘world-class table manners’.

The right posture Once seated at the dinner table, a gentleman and lady must assume proper posture. Sit in a straight, upright (though not unnaturally stiff) position, with the lower back resting lightly against the back of the chair. Both feet should be on the floor as it is improper to cross one’s legs under the table—either by placing an ankle atop the opposing knee or crossing one knee over the other. When not eating, both hands should be placed on the lap, except, of course, if one is engaged in conversation and gestures are necessary. While elbows are never allowed on the table while eating,

leaning with one’s hands on one’s lap oftentimes looks and feels unnatural. A gentleman or a lady may also rest his /her hands and wrists—but not the forearms— on the table between courses. And, of course, tilting one’s chair backwards—the pastime of many a schoolboy—is simply unacceptable at the dinner table (and should be avoided elsewhere as well since it often results in accidents.

About eating caviar and oysters Caviar should be served chilled and never at room temperature. Eat caviar after it’s been thoroughly chilled and serve it cold or even in a dish of ice to keep its temperature down. Caviar should never be served on metal or stainless-steel plates or with stainless-steel forks, as this can change the taste of the caviar and make it bitter or metallic. Eat and serve caviar with utensils made of ceramic, glass or plastic to preserve the taste. Caviar should be served and consumed in amounts smaller than a tablespoon. It is traditional etiquette to eat caviar in small bites.

“No ‘plebeian cutlery’ on the table: mobile phone, keys or iPad during dinner.”

There is a right way to eat an oyster. Take your tiny fork and gently move the oyster around in its liquid-filled half shell to make sure it’s detached. Then put down your fork, pick up the shell, and slurp down the oyster from the wide end—it’s more aerodynamic that way. Chew it once or twice before you swallow it. It’s an urban legend that you are supposed to let it slide down your throat without biting into it. Think of an oyster like a grape: if you don’t chew the grape, you won’t get the full flavor.

And the bread Bread is broken or cut before it is eaten, depending on the texture (soft or firm), the temperature (hot or cold), and the shape (long and narrow or small and cubed). Bread with a soft texture, such as rolls or muffins, is broken in half with fingers. A bite-size piece is pulled from the broken half, held against the side of the bread-and-butter plate, and buttered a bite at a time. Bread with a firm texture, such as a sweet, soft pastry or dry toast, is cut in half or quartered. Hot sweet

rolls and toast are buttered entirely and held by the sides (rather than laid flat on the palm of the hand).

Using your hands You can use your hands as long as there is a fingerbowl or perfumed napkin/towel on the table to clean your fingers. Finger foods which, in certain circumstances, you are allowed to eat with your fingers include: artichokes, asparagus, some types of fruit, herring, crispy bacon, cheese, chips, chicken, corn on the cob, French fries, pizza, shrimp and sushi.

The table napkin You must put your napkin on your lap as soon you sit down at the table. Unfold the napkin when the first course arrives. When you excuse yourself from the table during dinner then you should place your napkin on your chair. The server will, hopefully put a fresh napkin on the armrest of your seat.

Cutlery It’s unsanitary to set used utensils on the table (plus, you risk staining table linens).

If your server clears a course and asks you to hold on to your fork and knife, you can request fresh ones or rest used silverware on a butter plate or paper napkin. The universal ‘resting’ position involves placing your knife and fork so their tips meet near the centre to form an inverted ‘V’ to indicate: ‘I’m still eating’. The 4:20 position (as on a clock) not only signals your server that you have finished your course, but also makes it easier for him to remove your plate and utensils.

MEET THE CHEF JOR IS BIJDEN DIJK Interview: Ferdy Veerman

If there is one thing that can be said about Joris Bijdendijk it is that he is one of the biggest Dutch gastronomic talents of his time. Having mastered his cooking skills under the tutelage of Ron Blaauw, and with a few additional years of experience at various kitchens under his belt, he became executive chef of restaurant Bridges in hotel The Grand where he was awarded a Michelin star. Last year he again received a Michelin star for his outstanding creations at RIJKS making him a true Michelin star magnet! Surprisingly though, after everything he has achieved, this down to earth family man is mostly proud of his beautiful wife and his two sons. We met with Joris Bijdendijk and talked about RIJKS, his favorite Amsterdam culinary hotspots, and of course food.

Apart from the location and Dutch influences have you any other links with The Rijksmuseum?

Yes there are more links as we share the same principle values of authenticity, quality and uniqueness. This is translated to the kitchen, where we work with Dutch products, as well as to the interior which was designed by the Dutch architectural firm Studio Linse. Last year the RIJKS restaurant received a Michelin star. What makes the concept of RIJKS so special?

It’s all about location. We are in a very unique position having the restaurant located in one of the world’s most famous museums: The Rijksmuseum. RIJKS is the culinary variant of the museum - we literally serve up The Rijksmuseum on a plate! The focus here is to tell a story about the Netherlands where many Dutch influences can be experienced throughout the menu. amsterdam luxury — 2017

the heart of the liveliness and spirit of The Rijksmuseum. But you won’t find any art on the walls, there’s no point in competing with The Night Watch and other famous master pieces.

What is your favorite dish on the RIJKS menu?

I think I would go for the ‘Celeriac from the rotisserie’. This dish has enabled us to create a wonderful plate from very simple ingredients. We often prepare vegetables as if they were meat, so the celeriac is therefore prepared with butter before it is fried on the spit, for between three to four hours, in order to caramelize it. To finish off to perfection we garnish with birch water vinaigrette, duck egg and walnut.

With RIJKS invite, you have co-created menus with chefs from all over the World. Is there a chef you’ d definitely like to invite for a so called ‘ fourhand lunch or dinner’?

There are so many chefs I respect and would like to work with, but undoubtedly the number one on my list is Richard Ekkebus. He is a Dutch chef of the two-star Michelin restaurant Amber in Hong Kong. Last year his restaurant received the accolade of the best restaurant in China at the Asia 50

awards. To me he is the Johan Cruyff amongst Dutch chefs.

What are your other favorite Michelin star restaurants in Amsterdam?

I have three favorite Michelin star restaurants: restaurant Bord’Eau in hotel De L’Europe (two stars), restaurant Vermeer in NH Hotel Barbizon Palace (one star) and restaurant Vinkeles in hotel The Dylan (one star). The common thread between them is that they all have chefs who are masters of their trade whilst brilliantly maintain their own identity.

Bord’Eau is based around modern French cuisine, Vermeer’s focus is vegetables and just the thought of Vinkeles makes my mouth water.

What restaurants do you take your friends and family to?

Restaurant Merkelbach is my favorite restaurant in East Amsterdam. I think I can truly say that this is the best restaurant you’ll find in the area. It is the perfect place to relax and enjoy good quality food. I also like to visit restaurant Bak and restaurant Choux. Each one offers value for money as well as good food, wine and service with the added bonus that they feel

What makes a good chef?

For me two things make a good chef.

Firstly I think a personal approach is very important in order to build up a strong rapport with guests and colleagues.

Furthermore being rational and emotionally balanced is crucial. Of course you can stick to the rules and principles you have learned or you can chose to cook with your heart.

I go with the latter because spontaneous cooking from the heart always results in the best and most creative dishes.

What is your favorite local dish, one we should definitely try during a visit to Amsterdam?

In Holland it is typical to eat fresh herring with raw onions. Not everybody wants to try them, but I really like the taste. If you do go for it make sure your herring is a fresh one, so best to choose a fish stand where they may sell hundred herrings a day, or one where there’s a long queue.

I often get my herrings on the corner of Albert Cuijpstraat where it meets with Ferdinand Bolstraat – the herrings there are sure to be fresh. amsterdam luxury — 2017

What is your favorite ingredient to cook with?

Easy answer, that would be the simple Dutch potato. We have been using potatoes in Dutch cuisine for more than 200 years. My parents used to grow them in their garden, so I also grew up with having lots of them around. You can do so much with potatoes, easily combining them with other ingredients. They can also taste great on their own, but that of course depends on the quality of the potato!

Do you have one rule every home cook should know?

Always listen to your wife, even as a chef. Haha. I am the chef at work, but at home my wife decides what’s for dinner.

Last question- what is your favorite dish to cook when you’re at home?

Chicken with tarragon and leek. Buy a good chicken at the butcher, stuff it with pepper, salt and tarragon. Boil the leek, and put the chicken in the oven for 15 minutes at 200 degrees. To finish off put the leek in the oven below the chicken for a further 30 minutes. Enjoy!
