THE COSMOP OL I TA N ’S CHOICE at Amsterdam Airport Schiphol

It all began on 19 September 1916, which was the date of Schiphol’s very first flight. The airport was nothing more than a large field at the time, and had a capacity for only one shop. At the time, flying was extraordinarily glamorous since only a happy few travelers were lucky enough to experience the luxury of air travel. It would retain that élan and allure in subsequent decades as the preserve of a relatively small elite.

Fast-forward a century, flying lost its edge as an elite hobby, and became an increasingly normal part of daily life due to the evolution of the aviation industry.

Combined with the growth in passenger numbers, Amsterdam Airport Schiphol has evolved into a major international airport – one of the world’s largest.

Eek brings to life the despised splendour of former centuries. One of his masterpieces is a transformation of magnificent Italian Murano glass pendants, which are over a hundred years old, into a translucent assemblage of led-light, metal pipes, floral elements, rings and crystal drops. MEET THE CHEF — RON BL A AU W With more than thirty years experience in the world of hospitality Ron Blaauw is a chef who simply cannot be ignored. In 1999, having worked in several restaurants and in the process mastering his trade, it was time for a new adventure - opening his first restaurant. Ron Blaauw Restaurant in Amsterdam was an instant success, and the rest as they say is history!

What do you consider your greatest achievement?

Achieving a Michelin star had always been my childhood dream. That’s what you go for as a young chef, and realizing that dream by being awarded two Michelin stars is obviously a great achievement. In the end, I gave up the Michelin stars to open Ron Gastrobar Paris. Many restaurants are copying the concept of Gastrobars, which is also a nice acknowledgement.

‘stamppot’. On the other hand, I am also very fond of pizza made in a wood oven. Provided that it’s made with passion of course. Each dish should be well thought out and there should be a ‘why’ behind it. In The Netherlands we have very few typical local dishes; we have a variety of different cuisines due to our multicultural society.

Must-visit local restaurant?

My new addition, Ron Gastrobar Paris, is a wonderful restaurant and it makes you feel as if you were back in Paris in

the ‘70s and ‘80s. A real must! I also like to eat at Rijsel. Every time I go there for a meal, I feel at home.

For a unique location combined with beautiful food, you should really try Bridges.

Favourite ingredient to cook with, and why?

An egg, because you can do so much with it. Even if your pantry is empty, with an egg you can make something delicious. Also with my children, for example, it conjures up a smile on their faces every time I make a fried egg. A fun fact: that’s also the inspiration for the Gastrobars’ logo.

What makes a good chef ?

A good chef must be innovative and must empathize with his guests.

I see myself as a typical guest and I consider how things should be done from that perspective. That needs to be passed on!

Any new exciting projects you’ ll be involved with?

It’s in my nature to come up with new things and make them possible, but at the moment I’m in a good place. The focus is now on the current restaurants, and how to improve them.

A rule every home cook should know?

Begin with the product – its quality.

From there you cook with your heart.

If you don’t like to cook, then you should simply not do it.

What are your favourite local dishes?

A nicely prepared potato makes me happy and I love a typical Dutch

What is your guilty pleasure dish?

Honestly? I really enjoy eating a shawarma sandwich now and then.

Although the global image of the city may be one of old historic buildings and small alleyways interlaced with water, the urban landscape of Amsterdam is rich with a wide variety of architectural gems and surprises. Exciting, elegant, historic, or ultramodern, the architecture can be sleek or it can be traditional but there is no shortage of luxurious feasts for the senses. Here we highlight a few significant examples, some subtle, some unmistakable, some off the beaten path, some new, and some dating from the 1600s. The common thread amongst them is a unique elegance and craftsmanship, highlighting the architectural originality in this diverse city.

Built during the 17th century to accommodate the explosive growth of Amsterdam’s Golden Age wealth, Amsterdam’s Canal Ring still continues to exemplify sophistication and luxury.

The area was constructed not only to house the new, successful merchant, artist, and political classes, but also to create intersecting waterways for the transport of trade goods. It would become the largest homogenous urban extension of its time and a model for centuries. The main canal belt consists of three notable grachten, the Herengracht (gentlemen’s canal), Keizersgracht (emperor’s canal) and Prinsengracht (princes’ canal). The Canal Ring houses are noteworthy for a mixture of ornate details, elegance, and architectural quirkiness that together make its character one of the most unique in the world. The houses are characterized by their tall and slender appearance, essentially due to both lack of space, and also a special tax determined by the width of the house.

Most houses are not more than three floors and feature elegant gables and tall narrow windows, providing stunning views over the beautiful water network.

In the early seventeenth century, in what became known as the Golden Age in The Netherlands, Amsterdam was the largest port and marketplace in the world. The National Maritime Museum, housed in ‘s Lands Zeemagazijn (the Arsenal), is an imposing historical structure originally used by the Admiralty of Amsterdam as a storehouse for the shipping needs of the war fleet. Since its establishment in 1656, it has remained a storehouse in various differing forms, and yet an architectural marvel with astounding views of the city. It has endured multiple transitions, housing cannons, sails, flags, and as a repository for rainwater for sailing crews, as well as a stint serving Napoleon’s navy, a devastating fire and subsequent assaults; and, until the early 1970s it was a storehouse for the navy. In 2011, its renovation was completed to preserve it as a public space and museum for the stored collection. A striking new element was introduced: the glass roof over the courtyard, using 1200 pieces of glass and 160,000 kilograms of steel.

There is a specific beauty to the dimensions and scale of the innercity system of concentric canals, or ‘onion rings’ as some say. Best viewed from the water, this is where you experience the canal houses, slightly at an angle to correct the perspective, as Amsterdam architecture at its best.

All of the individual buildings, refined, ornamental, brutal, and eclectic, merge to form a public space that feels like a comfortable interior.

Are there any exciting projects you’ ll be involved with?

On the Zuidas we’re currently working on two offices (NoMa house and the Hourglass) and an apartment complex (the Fred). Next to the Olympic Stadium we’ve just completed a housing complex with retail and restaurants and, at the IJ, work will start on a new residential tower. A couple of exciting hotel projects are in development, as are multiple housing developments. And a master plan is in the making for a smart city development.

Are there any exciting new projects in Amsterdam we should visit?

I would suggest doing a little museum tour.

Take in the reopened Rijksmuseum and Stedelijk Museum on the Museumplein, and the EYE film museum across the water from the central station. Architecture meets art. I’ve always valued art as my main source of inspiration.

What is the biggest difference between architecture now and 25 years ago?

There is a constant battle between the outside appearance and the inside of a building, which I’m finding stranger and stranger, as people seem to be increasingly interested in a very superficial kind of architecture. Caring only about the outside is like dressing up a building. I’m not into doing dresses.

Exterior and interior should be linked in a fundamental way.

From an architectural perspective, what’s your favourite neighbourhood in Amsterdam?

I’ve already highlighted my love for the canals. The development of ‘North’ Amsterdam is interesting as well; like the transformation of the old docks and the developments around the former Shell laboratories. Their old office tower is now a cultural hub. Though I’m not going on that swing they installed on the panoramic observation deck.

Do you have a favourite young Dutch architect who we should follow?

I’m blessed to be working with very talented young architects in our office.

Foremost my son Diederik Dam, and to name just a few of our team members: Karel Bodon, Edwin van Heijningen, Haakon Brouwer, Maurice van den Berg and Bram Waumans. Outside of our office, I’m following the progress of former office architect Alex Letteboer and the young talent Ard de Vries. Have a look at his recent private villa!

Must-visit art galleries in Amsterdam?

I’ve collected art my entire life, so naming my favourite art galleries is actually a difficult question. But OK, you’ll have to visit Tegenbosch Van Vreden and Morren for sure.

An easy question to answer: Hotel de L’Europe is in a league of its own!

AMSTEL HOUSE, W HER E C ON T E M P OR A RY MEETS T R A DI T IONA L Situated on the banks of the Amstel River in Amsterdam, the Amstel House is a distinctive standout amongst its neighbours. A house and office designed in 1988 by Cees Dam, the same architect who designed the National Opera and Ballet, the Amstel House is a contemporary interpretation of the unique design of the Amsterdam canal house. The canal houses were originally both offices and living quarters for merchants and traders, so a mezzanine and large open front on the ground floor were typical features. The architect used these traditional elements and proportions, along with the strict building code for maximal heights and façade plans established in the Middle Ages, to blend the contemporary with the seventeenth-century traditional in remarkable ways. The same vertical slenderness and partitioning of the floors are present, but the architect has made use of industrial elements and materials, such as concrete and glass, as well as asymmetrical window placement and elevation, and added a recessed, glassed-in concrete penthouse, to offer an uncommon twist to its surroundings.

Sitting along the opposite bank of the IJ river is a spectacular building with a dynamic, white, geometric form. Serving as exhibition space, cinema, laboratory, and also the national film archive, the EYE Film Institute Netherlands was completed in 2012 to celebrate the elemental qualities of film itself: light, space and movement. At the same time, the striking forms create an alluring contrast to the historical centre of old Amsterdam, offering a beacon for the new Noord District across the river.

A short ferry ride allows visitors the opportunity to explore a newly developing community where empty and aging wharfs once stood. The use of light as a defining element is unavoidable in both its interior and exterior design and function.

With floor to ceiling glass enclosures overlooking the river, the quality of the light is physiologically tangible within the space. Transitions among rooms exert a sense of continuity, while diverse lighting conditions, melded with diverse materials from oak planks to concrete, create continuously changing areas and a truly dynamic space.

Museum Van Loon is a magnificent private residence built in 1672, owned by the Amsterdam regent family, Van Loon. In the rooms, a large collection of paintings, fine furniture, precious silver and porcelain is on display. The beautiful garden demonstrates the unique unity of canal house, garden and coach house.

VINCEN T VA N G O G H

When Vincent van Gogh (1853-1890) started out as a peasant painter he worked with dark tones and subject matter. One of his most famous paintings today, ‘The Potato Eaters’, depicts the harsh reality of country life in an earthy colour palette. After moving to Paris, his paintings turned brighter and his choice of subjects shifted to Parisian cafés and boulevards, still lifes and portraits, he often painted self-portraits to reduce his expenses. Later, longing for the peacefulness of the countryside, the sun and the colours of Japanese landscapes, he moved to Arles where he painted ‘Sunflowers’ and many ‘Wheatfields’ in a style that was loose and expressive. After Van Gogh sliced off his own ear he was admitted to a psychiatric hospital where he completed over 150 paintings in fluctuating mental conditions. The Hermitage in Amsterdam presents the world heritage of the State Hermitage in St. Petersburg to Dutch and international visitors. For the first time, ‘Portrait Gallery of the Golden Age’ brings together more than thirty seventeenth-century group portraits.

Those portraits belong to the collections of the Amsterdam Museum and the Rijksmuseum and are rarely exhibited due to their particularly large size. The exhibition tells the story of collective citizenship that is a typical characteristic of the Dutch Golden Age. Civic guards and other influential citizens commissioned portraits to capture their achievements in seventeenth-century urban culture. Night Watch, 1642

Rembrandt van Rijn (1606-1669) was a Dutch draughtsman, painter and printmaker renowned for his depiction of a wide range of subjects; from biblical- and historical scenes to landscapes and portraits. He perfected an oil painting technique of strong contrasts between light and dark called chiaroscuro and created paintings with an outstanding sense of drama that represented the great wealth of the Dutch Golden Age. He made approximately 300 paintings, 300 etchings and 2000 drawings; he received numerous commissions for portraits while he was living in Amsterdam. Despite personal and financial setbacks, he was a passionate collector and had many pupils such as Ferdinand Bol and Govert Flinck. His own collection inspired some of his most iconic works such as: ‘The Jewish Bride’, ‘Portrait of Jan Six’ and, of course, ‘The Night Watch’. ST EDEL I JK MUSEUM’S FINEST E X HIBI T IONS In addition to its comprehensive collection, the Stedelijk Museum presents three temporary exhibitions of twentieth-century art and contemporary art. ‘100 Years of Russian Revolution: Constructing the new man’ commemorates the centenary of the Russian Revolution by showing propaganda posters, prints from the ‘20s and ‘30s and Eisenstein’s film ‘October’ (1927) alongside Malevich’s Suprematist paintings. Another exhibition at the Stedelijk Museum invites visitors to step into the intriguing world of renowned street photographer Ed van der Elsken (1924-1990). The exhibition ‘Camera in Love’ provides an overview of the work of one of the most important Dutch photographers of the twentieth century. Bold, unconventional and personal, his photographs – taken in cities like Paris, Amsterdam, Hong Kong and Tokyo – present colourful personalities. An insight into contemporary art is offered by German artist Jana Euler (1982), whose paintings vary from fluorescent Swiss landscapes to a nude woman ascending a staircase, allowing for reflection on our irrational world.
