Mongolian Beef

as you dare, 500g Beef steak, sliced as thinly or to save time, buy beef strips 25g Cornflour A few good twist of black pepper 3 Gloves of garlic, crushed er
1/2 Teaspoon finely grated ging 120ml Low-sodium soy sauce 25g Brown sugar 3 Spring onions, finely sliced
A RECIPE
METHOD Place the beef on some kitchen paper and dry it off. Pop it into a bowl with the cornflour and pepper and toss until it is evenly covered, then set aside. In a good non-stick pan, heat a little oil over medium heat and gently cook the garlic and ginger until coloured, but be careful not to burn them. Add the soy sauce, brown sugar and 120ml of water and cook until everything has thickened down nicely. Pour the sauce into a jug. Put the beef straight into the same pan and cook on high u ntil browned on all sides. Pour the sauce over the beef and allow to bubble for a minute or 2. Sprinkle the spring onions over the top and serve with rice and a smile.

METHOD Preheat the oven to 180°. Grease a 20cm baking tin and line with baking parchment. Sift the flour, baking powder and salt into a large bowl. In a medium bowl, combine the mashed banana, sugar and vanilla extract. Bring a small pan of water to the boil and then turn down to barely a simmer. Put a heatproof bowl on top, place the chocolate, margarine and agave in the bowl melt together until smooth and glossy. Pour the melted chocolate into the banana mix and stir to combine. Make a well in the centre of flour, pour in the chocolate mixture and fold thoroughly until everything is incorporated. Finally, fold in the chocolate chips and walnuts, ensuring not to overwork the batter. Pour into the prepared tin and bake in the oven for 25 minutes. Allow to cool completely before cutting into pieces and dusting the brownies with icing sugar. Enjoy!

50g Parmesan cheese pich salt & black pepper
METHOD Put the courgettes through a spiral slicer to make long spaghetti-like strands. Heat 2 tablespoons of the olive oil in a large frying pan over a medium heat. Add the garlic and fry for a few seconds. Add the spiralised courgettes to the pan. Toss over a high heat for 2-3 minutes, until just softening, then remove and set aside on kitchen paper. Return the frying pan to the heat, add the remaining olive oil and fry the tomatoes for a couple of minutes. Season, add the spiralised courgettes, pesto and grated Parmesan.

METHOD Mix in blender or with a mixer all the ingredients as you normally do with a pancake mix. Cook the pancakes as normal and keep them warm. Dry fry the onion, bacon, garlic and mushrooms. When they are soft add the chicken and peppers to cook through. When it’s ready, add the cream and seasoning and stir f or a couple of minutes. Simmer on a low heat until the cream thickens and ingredients are hot. Lay a number of pancakes out on a plat and place some of the fillings in the middle and wrap the pancakes around it. Enjoy it!
