Council’s two options to replace Charlie Martin CHARLIE Martin’s resignation as a Cook Shire Councillor has left Council examining two options regarding a replacement Councillor. Cr Martin said the timing of his resignation will save ratepayers the cost of a by-election, which is about $50,000, with the runner-up from the 2012 election the next in line for his place in chambers. His resignation is effective from April 24. “Cash-strapped as council is, I expect that saving will bring some ‘joy’ to the shire,” he said. “If I waited until after April 28, the date of the last council elections, a by-election would be required, a burden the shire would have to meet.” He said he was sure the timing

of his resignation will allow the candidate time to make plans to prepare themselves for their new role. “I wish the new councillor smooth sailing for the next three years,” he said. However, Cook Shire Mayor Peter Scott has advised council is not obligated to automatically accept a runner-up to replace Cr Martin. “Council can either appoint the runner-up or call a by-election,” Mayor Scott said. “It will be a council decision, not mine; it’s not my call.” Next in line should council decide to appoint the runner-up is Susan Clark, who tallied 514 votes at last year’s election. Mrs Clark said she is very inter-

ested in assuming the role. “Yes, if I do get a letter inviting me on to council, I would be very interested,” said Mrs Clark. Local Government Act constraints prevent Cr Martin from explaining his reasons for the resignation, or on the conduct of council during his first term from 2008-2012, or since his re-election in April last year. Resignation has not come easy for the man whose election platform during last year’s campaign was, “the Councillor who cares”. “I’ve really enjoyed working closely with the people of Cook Shire during my time as a councillor,” he said. “And I’d like to thank the people of the shire for their loyalty, trust and support over the past five years.

“I thank those who have given me their time to encourage and assisted me through their patience and understanding.” Cr Martin said he wished the Cook Shire Council and Community Councils in Cape York all the best in delivering better services for their people. One comment Cr Martin was prepared to make, was that “it is ludicrous” to suggest that the death of his former wife, Virginia, has in any way affected his performance as a councillor or his decision to resign. “One thing I will never forget is the support given to us by the people of this shire and its communities, when I take my memory back to January last year when we tragically

lost our beloved wife, mother and friend, Virginia,” he said. “We will leave her here to rest in peace, and those better memories of her, and those memories of the kindness given to us throughout these past 12 months will carry us on to a peaceful life elsewhere.” But what does the future hold for the councillor and his family? “We will move from Cooktown to a different life,” he said. “We will take our memories with us, and indeed the memories, faces and experience of living in this part of the world.” Cr Scott said council respected Cr Martin’s decision. “I’d like to thank him for his efforts and wish him and his family all the best for their futures,” he said.

Hog Hunt an endangered species COOKTOWN’S annual Hog Hunt is in danger of becoming extinct, with the event’s organisers of five years unable to continue in that role and looking for someone to fill the breach to guarantee the Hunt’s future. Kellie Sadleir said that she and the other members of the organising committee - her husband Kevin, Anna George and Mark Buckley - had decided to stand down and take a wellearned break. “We’ve got work commitments and young families to consider, so it’s time to take a break,” she said. “When we started the Hunt, the goal was always to get it up and running, then after five years, step aside for someone else to take it over. “That time has come.” Kellie said the committee was very grateful to all the loyal sponsors, competitors and supporters of the event, who have made the last five years of competitions the successes they have been. “We’d like to thank everyone who has been involved over the past five years,” she said. “We’ve met some great peo-

POLICE have suspended the search for a 23-year-old woman missing from Archer River, near Coen since February 10. A large scale search of the area has since been conducted, with police officers, SES and Defence Force personnel part of the effort. As well as ground searches, a number of helicopters, quad bikes and conventional vehicles have been utilised. The Police Dive Squad was also tasked to conduct a search of dams and waterways in the area. A police spokesman said although search teams have been with-

Seat belts a focus

You never know who you might run into

SEAT belts will be the prime focus of a Queenslandwide road safety operation over Easter holidays. Queensland Police Service’s (QPS), State Traffic Support Branch (STSB) will co-ordinate Operation Seat Belts 2013 that runs from Monday of this week until midnight on Sunday, March 10. Police regions and participating commands will collaborate in a multifaceted approach to improve motorist and passenger compliance with seat belt laws. Chief Superintendent Andy Morrow, STSB said that failure to wear a seat belt or wearing a seat belt incorrectly is one of the five causal factors in the on-going “Fatal Five” road safety message.

History to take a hit: Morris Side to reveal The Real Story of Captain Cook COOKTOWN’S Morris Dancers will perform a mumming play about what organiser Eric George has titled, The Real Story of Captain Cook, during this year’s Discovery Festival as part of their 2013 program. While the Morris play is not part of the official Festival program, it will be performed at both the Top Pub and the Sovereign Resort Hotel at some stage during the Festival, with the exact date yet to be decided. In Morris terms, the Cooktown Side will also dance during the Festival. During any of their performances, they also collect money for charity, with $370 raised in 2012,

their first year. This year’s play during the Discovery Festival is not their first. “We did a mumming play late last year and both pubs have invited us back at any time to perform and raise money,” Eric said. Other performances planned for this year include Morris dancing at the Show and the Races, as well as another mumming play in traditional pub theatre just before Christmas. The 2013 beneficiary from the Side’s fund raising efforts will be the Kindy. “We hope to do much better than last year,” he said. Although the Side enjoys a healthy number of enthusiastic

members, they are always on the lookout for more, and are hosting a barbecue which will be held on Sunday, March 10 in Kellehaven Road from 4pm. But what talents are required to be a member? “None really, you just have to be able to enjoy making a fool of yourself in public,” he said. “Being able to sing, dance or play a musical instrument is a bonus, but anyone who just wants to come along to help out is also welcome.” Anyone intending on attending or the barbecue, or who is interested in joining the Side is asked to call either: 4069 5854 or 0409 686 032 or 0410 486 032.

I would like to thank all those people who took the time to fill in the survey with constructive criticism making it possible for the P&C to find out what is working within the Cooktown State School and what is not.

‘Please talk to your kids about bus behaviour’ One of the P&C’s major concerns at the moment is the behaviour of students travelling to and from both schools on the school bus system. This poor behaviour will be addressed at a P&C meeting in March with Endeavour Christian College parents and staff invited, as well as representatives of the bus service. Please - parents with students travelling on the bus system - have a talk with them about theirs’ and others’ behaviour on the buses, what acceptable behaviour should be shown, including respecting other passengers on the bus as well as the driver. But there’s always tomorrow - thanks for that.� What do visitors like about Cooktown. “They love the historical side of things - I have had a lot of flak about the museum being closed this month. They love the serenity and the fishing. They love the river cruises, and rock art trips. “I think we should make more of what we have got. “We have a beautiful river, beautiful views. People really want to climb Mount Cook, but it needs to be more accessible. “I would love to see diving trips, and trips to Lizard Island from here. We get asked for that all the time, but at the moment, they have to go to Cairns to get to Lizard Island.�

And tourists coming in coach parties? Is that good business? “It is incredibly good business, because you get 60 people arriving all at once, with all their accommodation, food, minibar, bottleshop, cafĂŠ, so it is well worth our while.â€? How does Sally find doing business in Cooktown? “Food is always a challenge. You pay top dollar, but for any chef it is a bit of a struggle. “You know, to get a box of lettuce that isn’t 10 days old. Consistency is a really hard thing here. “Thank goodness for the Iceworks! There are some good operators in town and we really want to source as much locally as we can.â€? Can Sally solve a mystery for us - why is alcohol so much cheaper in Dan Murphy’s in Cairns than it is here? “ D a n M u r p h y ’s i s owned by Woolworths, and they have enormous buying power. They are huge. “We cannot get anywhere near the prices they get. For instance, certain wines they are selling at Dan Murphy’s, we cannot even buy it for that price. “People are under the illusion that bottle shops make trillions of dollars, but your mark-up is miniscule compared to coffee at the bar, or food. “You make very little, so you have to turn over a lot. Something like a carton of beer, you might only make five per cent on that.â€? As a hotel operator, Sally must have to take care of sick visitors. She may also be faced with visitors who do not wake up in the morning. “The hospital is really good. We get a lot of elderly people

SALLY Kay and partner Keith Bradford manage that iconic part of Cookt o w n ’s s c e n e r y, t h e Sovereign Resort Hotel. One morning recently, she invited me upstairs to the restaurant for a chat about her, and the business she runs. The Sovereign is the largest and grandest of Cooktown’s hotels and a serious business. As we spoke, workmen downstairs were busy extending the front of the building so more patrons will be able to sit outside with their drinks and watch Charlotte Street go by. So why did Sally come from Melbourne to Cooktown? “Well, the furthest we had gone up north was Brisbane. We flew to Cairns and drove up. “It was a lot prettier than I had expected. It was January and really hot, and there was no-one in the street.� So when the breeze started to blow later in the year, that would have been a surprise? “I’d been told about the Cooktown wind. If the alternative is 90 per cent humidity, I’ll have the wind any day.� What started Sally on her road to being a manager in the hospitality business? “I went to a good school in Melbourne, and I finished a Fine Arts degree in the hope of becoming a wonderful painter. “I went off to be an early childhood teacher. I did that for about 10 years, and then decided I did not really want to be a teacher. “I became a pastry cook. I studied at a TAFE and got a job in a big bakery. “I had always been in and out of hospitality, even when I was teaching, and it seemed a natural progression to go back into it. I’m very passionate about hospitality.

“The Sovereign resort is very old. It has seen its fair share of losing its roof, which made it the ‘Half Sovereign’. They had a fire and had to remodel.� Where did the drive to turn the Sovereign into up-market hotel come from? “That came from the owners, the Lucas family. And they might be looking at new developments. “It’s a very welcoming hotel. People love that it has retained its integrity. It is top end, but we don’t want to make it anything that makes people feel uncomfortable. “It is still maintaining its heritage, while being comfortable.� How do Sovereign accommodation prices compare with Cairns? “About the same. It’s interesting that we do get some people who say, ‘It’s so expensive!’, but everything has to be freighted in here. “We don’t get paid any less. In fact there are many additional costs which we have to absorb, and we are four-and-a-half stars.� Who are the hotel clients? “ I t ’s v e r y v a r i e d . During the wet season we rely very heavily on government and corporate clients, and they come from all over Australia. “From April onwards, we start to get the local tourists. From May onwards, that is the peak of the season. That will be people from all over Australia, possibly grey nomads, and lots of Europeans.� Why are the grey nomads staying in a hotel and not in their campervans? “I think they get to the point when they have enjoyed their travel but they may need to do washing and stay in a comfortable bed. You get a lot of campers like that as well.� Does the Sovereign have an international marketing effort? “We do a lot of advertising in France and

COOKTOWN and Australia’s original proponents of “garage country”, the Roadtrippers, have been invited to play in Port Fairy during the Port Fairy Folk Festival, one of the oldest and most prestigious music festivals in Australia. “We applied to the festival but thought we’d missed out, then some very committed fans in Victoria met with the Festival Committee and really pushed us hard and I think just to stop being annoyed the committee finally succumbed and recommended us,” said band member Gavin Dear. “It’s hard to market ourselves to the big festivals, as music’s become so very compartmentalised and subdivided into style, genre etc. and how do you describe what we do? “I don’t even know! “And with the Roadtrippers, we wrangled a bit of a wild reputation from our alter egos, the Toadrippers and it confuses people unfamiliar with us even more. “So here’s a big chance to show a discerning audience some real northern

I RECENTLY had the opportunity to meet Mr Bruce O’Krat in his Brisbane office overlooking the river, and asked him about his life as a public servant. He is a retiring sort of person, only known to the people of the North from his pithy letters of encouragement. Why doesn’t he appear on television? “It is not the role of a public servant to parade in front of the cameras. We exist to serve our Ministers, and I doubt if any of them would be keen to share the limelight.” But Bruce did appear in public once, when he was involved in a shooting incident at an MP’s office in Cairns, and heroically hid under the office desk with a lady visitor. “Yes, that was a very stressful time. It was the fashion then to shoot holes in the ceiling of your representatives’ offices, and I just happened to be holding the fort that day. There was nothing to it really. We just huddled under the table until the enraged voter had left. Actually, he was thrown out by the plasterers who were patching up bullet holes from the day before and were upset that he had made a mess of their work.” How does Bruce enjoy

working in close proximity to senior politicians? “It can be a challenge. They are very energetic people, always jetting around the state and the country and my place is at their elbow. It can mean early starts, and some very late nights as discussions continue over dinner. “Sometimes I even have to sleep in the limousine with the driver, if the Minister has really intimate discussions to complete.” I am sometimes surprised to find Bruce working at both state and federal level. How does that happen? “Well, the business of government never stops, and I am sent wherever I am needed. Mostly I am involved in communicating my Minister’s wishes to the general public. They are much too busy to write their own letters, and I simply distil their thoughts into short messages that will not overload the newspapers, or the voters’ intelligence.” Some of the Minister ’s thoughts must be difficult to support. For instance, one of Bruce’s Ministers actually proposed setting up Cooktown as a hub for a sex tourism industry. “Well, yes, that was the idea. You have to understand that Ministers are

‘Serious concerns’ about health cuts

FAR North Queensland Senator Jan McLucas (pictured) has condemned the “continued misinformation campaign” about health funding following the announcement of around 230 jobs to go from the Far North’s heath system. “There are now a further 230 health jobs being ripped out of our local health system, this is dangerous and short sighted. “This is on top of the 35 jobs cut out of the Torres Strait region and the more than 200 jobs axed from the Townsville region. “Sadly, this is going to have a serious impact on our community.” Senator McLucas dismissed the Queensland Government’s claims about federal health spending. The facts, she said, are: • The Queensland Government’s

own Service Delivery Statement 2012-13 shows they have slashed almost $3 billion from the State’s health budget. • The recent Commonwealth budget update confirmed health funding in Queensland will increase by 21% over the next four years. • In 2012-2013, federal investment is $3.1 billion. It will go to $3.7 billion in 2015-16 which is a $600 million increase. • Adjustments in growth forecasts are based on a formula agreed to by the Queensland Government. “The Newman Government has ripped investment, jobs and services out of communities, particularly throughout regional Queensland, leaving a devastating trail.

Aussie blokes: Living on the edge of a knife? WHAT is it about some Aussie blokes that has them living on the edge of a knife? Life goes one way and he will spend the next fifty years in suburbia. Probably with the same wife and surrounded by kids that are probably his. And the alternative? He will end up in a modern humpy, somewhere on the edge of civilisation. (Not that anyone like that lives in the secret places of Cape York. We are all very ordinary and normal up here.). Still, I’m curious. How does it happen? Is there

something strange about us, something that doesn’t happen to folk in other countries? It seems quite normal for us to live in cities - we are one of the mosturban people in the world - where we love, marry and have kids. Then a large percentage of the husbands take off into the bush where the real work of Australia happens, and their families stay at home. We are famous for living apart. Our blokes don’t need female company, as long as we have our beer and our mates. At least it is better now than it

used to be. Now we have fly-in, fly-out workers. Not so long ago, it was fly in and stay there until the job was done. The old timers really lived their work, and family was something that happened during the holidays. I suppose if you do that for long, you get funny ideas about where your home is and where you belong. Perhaps you travel back to town one time and realise that the Missus is getting on just fine without you. A few harsh words, and the bush claims another single man. Does that mean our cities are full

RECENT torrential rain has provided scientists and rangers with the perfect conditions to study sediment in flood waters from Lakeland to Princess Charlotte Bay. During recent torrential rain, Cooktown scientists Christina Howley, Jeff Shellberg and the Laura Land and Sea Rangers sampled sediment-laden flood waters that resulted from ex-Tropical Cyclone Oswald’s drenching. The flood plume extended from waterways within the Laura and Normanby catchments out to the Coral Sea, with flood waters primarily from the Laura and East and West Normanby Rivers travelling out over 30km to the Great Barrier Reef. Floods have the potential to impact on fish stocks, seagrass beds and the Reef coral by delivering sediment and nutrients from the river and coast to the

marine environment. The monitoring being conducted aims to identify how much sediment and nutrients are being delivered out to the Reef, and what parts of the catchment they come from. This data will contribute to our understating of how land use practices might impact on the Great Barrier Reef. South Cape York Catchments Co-ordinator Jason Carroll said looking after the Reef will mean a healthy reef, which in turn, will mean better fishing. “If sediments kill a seagrass bed or a coral reef, the fish, turtle and dugongs that feed on that reef or seagrass either move on or die,” said Mr Carroll. “We rely on our reef and fish for recreation and tourism in this part of the world, so it’s important we keep the reef and waterways healthy.”

Four-wheel drive vehicles and a helicopter were used to collect water samples from the Mulligan Highway near Lakeland, all the way to Corbett Reef in Princess Charlotte Bay over a 10-day period. Over 360 water samples were collected in bottles, put on ice and then shipped off to four separate laborataries for analyses. Scientist Christina Howley said this latest study was highly significant for the region and is the most extensive sampling event conducted during a flood event in a Cape York river or coastal area. The project was a collaborative effort involving Ms Howley and Dr Shellberg from Griffith University, South Cape York Catchments, the Laura and Lama Lama Rangers, James Cook University, the Queensland government and Cape York Natural Resource Management.

Student of the Month The Student of the Month at Hope Vale Campus is Alison Williams. Alison is in Grade 2 and loves coming to school everyday. Alison is a model student with her behaviour, and enjoys reading, writing and playing with her friends at lunch. Laura State School’s Student of the Month for February 2013 is Hilda Kellermeier.

Kyle Crowther is the Student of the Month for February. Kyle loves balance in his life. He likes a lot of different activities in and out of the classroom. From teaching his teacher a few lessons in a game of chess, shooting ball on the basketball court, kicking around a football, blitzing through his mental math activities, writing creatively – you name it – Kyle will give it a go. Kyle particularly enjoys science investigations and is able to write accurate predictions. Kyle is a good friend to his peers and can be counted on because of his reliability.

Cinaed Finall is the Rossville State School Student of the Month for February. Cinaed has been setting high standards in all academic areas, as well as being a great role model for others in the school.

Lyndon Creek, Bloomfield River State School’s Student of the Month for February, is a polite and well-mannered student whose attendance this year has been outstanding. He has shown great improvements in his readings and math. Keep up the good work Lyndon.

Mia Serginson is Cooktown State School’s Student of the Month. Mia is a new student to the school, having moved here with her family from Longreach. Her parents, Roslyn and Michael, are both new teachers at the school. Mia has settled quickly into her new 3/4S classroom and has already been elected as a 2013 Primary School Student Councillor. She has also volunteered to join our fantastic team of library monitors. Mia is a great student and role model at all times and her teacher, Ms Smith, is particularly impressed with Mia’s reading and spelling levels. Congratulations Mia and welcome to Cooktown State School.

Julia Arnold is Lakeland State School’s Student of the Month. As one of the senior students in the school, she demonstrates good leadership and independence in her work. Remarkable end to the Dancing Wave story THE Dancing Wave story continued from last week, the ending to this story is quite remarkable. Previous reports were not the end of the discoveries. On March 6, the Cairns Post published a letter which had been handed to Messrs Chapman and Co. Ltd, owners of the missing Dancing Wave - “I beg to report that on passing Cape Flattery at 6 pm on the 22nd inst, I sighted some wreckage on the eastern side of the northern end … found it to be the after deckhouse, or companion of a small vessel. … The house has been built principally of New Zealand Kauri pine, …I am of opinion this house is from the schooner Dancing Wave, which was reported missing at the end

of January.” Yet again on April 29, the Cairns Post ran a report from Captain Priest, the master of the Changsha - having passed at Double Island, a schooner’s main boom or gaff, with rigging attached, which appeared to be fast to something more solid below water. He also saw a lugger mast, about four feet above water at the eastern entrance of Albany Pass. And on August 18 there was another report of a vessel’s gaff floating upwards, and Captain Rhodes: spent yesterday and today searching from Double Island and across Cape Grafton and the reefs around Green Island, he failed to find anything. Nothing more is mentioned about the Dancing

Wave until April, 1914, when Mrs Rose was in court claiming compensation for the loss of her husband as she had four children to support. The Judge found in her favour and a total of £400 was granted to her. This however was not accepted by the owners of the schooner and they went to the full court on appeal, in September 1914. , “… and the questions raised were whether the magistrate was right inferring that Hugh Rose was on board the vessel on January 29; whether the vessel was wrecked on that date; and whether if it was wrecked, if it was wrecked within, the Jurisdiction of Queensland, and that Rose perished. whether the magistrate was right in accepting Mrs Rose’s evidence that her husband was receiving £12 a month and making that the basis of his estimate of the compensation she was entitled to. He contended that the master of the ship was not ‘a worker’ within the meaning of the Act. For a man to be a worker he must be employed in some of the occupations to which the Act applied, and he submitted that a sailor was not covered by the definition. He contended that a master was not a worker within the meaning of the Workers Compensation Act. If the Act applied to the ship it only covered those who were engaged in commercial work. Work which the master performed was not commercial work. The Act applied only to a man in receipt of wages. Then the question arose, had the magistrate any evidence on which he could find as a fact that the ship went down… . No inquiry was made,

and for all the magistrate knew to the contrary, she might still be afloat. Assuming that there was evidence on which the magistrate could infer that there was a shipwreck there was no evidence, that Rose was alive or on board the ship when the disaster occurred. There was no evidence of his state of health when the vessel left Maryborough on November 12. He contended that evidence ought to have been placed before the magistrate showing that when Rose left Cairns, the last port at which he called, he was well and strong. Mr Hart submitted that some evidence must be given from which it could be reasonably inferred that the master was in good health. There was no evidence of any inquiry as to whether any bodies had come ashore from the wreck. There was no evidence that Rose was alive on the day of the wreck. Assuming that these points were de-

COOKTOWN STATE SCHOOL INDUCTS STUDENT LEADERS C O O K TO W N S t a t e School P-12 held its annual induction of student leaders at the PCYC Events Centre last Friday. Special guests at the event were Cook Shire Council Deputy Major Penny Johnson and Cooktown State School Parents and Citizens Association President Nikki Darvell, while students, staff and some parents were also in attendance. In opening the formal part of the ceremony, Principal Leanne Rayner addressed students and encouraged them to build a school of which they can be proud. Following this Mrs Darvell gave an inspirational speech to students about setting personal goals, having the drive and passion to achieve what they want and leading by example. After both speeches, the 2013 Student Leaders received their badges - a testament to the hard work these students had already done. To be standing in the position of Captain, Vice Captain or Student Councillor the students had to nominate, prepare a speech for peers outlining their capability to achieve outcomes in their chosen role and then be elected by their peers. The elected students were honoured to receive their badges and are aware of the responsibility required in fulfilling their roles. Each of the elected students is expected to attend Student Council meetings, participate in school events and encourage their peers to be involved in the positive activities happening in the school. Our School Captains have already been setting a positive example by being an integral part of our Welcome Barbecue last Monday evening. Kelley Miller and Austin McClemens-Morse manned the barbecue for the gathered crowd, while Kelly O’Sullivan and Courtney Robson greeted parents and helped the evening run smoothly. We would like to congratulate all of our school leaders and hope they achieve the goals they set themselves in their new positions. Also, a big thank you must go to the parents who have encouraged their children to apply for these positions and supported the events showcasing our wonderful students. The HPV vaccine protects males against developing a range of cancers and disease, including genital warts. Vaccinating males will also help to protect females from cervical cancer and HPV-related disease by reducing the spread of the virus.

The national HPV vaccination program began in 2007 to protect young women against HPV infections that can lead to cancer and disease. Studies have since shown a substantial drop in HPV infections among the vaccinated group.

Year 8 students are being offered vaccination to protect against Human Papillomavirus (HPV), Hepatitis B and Varicella (chickenpox). Year 10 students are being offered protection against diphtheriatetanus-pertussis (whooping cough). Male students in year 10 are also being offered Human Papillomavirus (HPV) vaccine as part of the catch up program. The vaccinations will be conducted by a team of specially trained registered nurses. Parents and Carers of students in Year 8 and Year 10 will have received a consent form and information for each vaccination offered, sent home with students on February 15, 2013. Please read the information carefully, sign the consent form irrespective of whether you wish your child to be vaccinated or not and return the consent form to the school as soon as possible if you have not already done so. Signature flavour of north Australia I FIRST got to know blachan (also spelt ‘belachan’) sambal when living in Broome, Western Australia, where people are known by the style and quality of their blachan sambal. It has a similar place in the food culture across north Australia where pearling and trepan fishing occurred, which brought Malay and Indonesian workers who came to work in the industry and brought their food culture with them. To me, it is a signature flavour of north Australia. If I am tired and all out of inspiration, I can just throw some rice in the rice cooker, quickly steam or stir fry with sliced garlic, some greens and serve with some blachan sambal, a drizzle of peanut, olive or coconut oil and some torn, fresh herbs. I’ll use any greens which are quick to cook, from green beans through leafy Asian greens, Brazilian spinach, peas, cabbage - whatever I have available. Herbs that go well with the flavours of blachan are the Asian types such as coriander, Asian basils, chives, mint, Vietnamese mint or wild pepper (betel) leaf. Don’t be put off by the pungent smell of uncooked belachan paste - like garlic, it mellows as it cooks to provide a wonderful background flavour to the sambal. Adjust the amounts of chilli to make this recipe your own - these amounts create a mildly hot sambal.

Blachan Sambal 50g (2cm) slice belachan paste 30 dried chillies, halved and seeds removed from most of them 220g (about 4) red shallots, or 1 red onion, roughly chopped ¼ cup (about 6cm chunk) peeled, sliced and diced galangal ¼ cup (about 6 cm chunk) peeled, sliced and diced ginger ¼ cup (about 4 stalks) chopped lemongrass base (white section) ¼ cup tamarind concentrate 6 garlic cloves, roughly chopped 4 kaffir lime leaves ¼ cup coconut palm sugar 2 teaspoons salt 1 cup peanut or coconut oil Blend all the ingredients except the oil to a fairly smooth paste in a food processor. Heat the oil in a medium sized frying pan until shimmering, then add the paste and stir vigorously. Reduce the heat to low and simmer gently, stirring frequently until the piqued is cooked off, the aroma has developed and melded and the paste has darkened slightly and is no longer holding together in a uniform texture. Spoon into a sterilised jar, seal and store in the fridge for up to a week. If you want to keep the paste for longer than a week, spoon into a sterilised jar, make sure the surface is covered in oil (add more if needed), seal while hot, and simmer the jar with water ¾ way up the side for 20 minutes. Cool, then refrigerate. Always make sure the surface is covered in oil and always use a dry clean spoon when removing the sambal.

Praying mantids given a bit of stick CROCS may be the scariest stealth predators in the water, but praying mantids have a claim to be the “crocs of the insect world”. All praying mantids (sometimes lightheartedly called “preying” ) are predators. They use their spiny front legs to capture and hold prey, which they consume alive. Insects and spiders are their normal victims, but large species sometimes capture lizards and frogs. Most praying mantids are sit-and-wait predators, relying on camouflage to escape detection from prey animals that venture within their reach. However, some ground and bark species will chase their prey, usually then simply slicing and chewing with its mandibles. Mantids have large, widely spaced eyes that, combined with a head that can swivel 180 degrees, give them excellent vision. This good sight is important in hunting, so obviously this means they are mainly day hunters. But, as it makes them more vulnerable then, they will often (especially the males in search of a friend) fly around at night and are attracted to light. Like stick insects, mantids show rocking behaviour, with rhythmic repetitive side-to-side movements. You often see them track a person around the room. This is not neurotic behaviour, but is probably important

in allowing the insects to discriminate objects from the background by their relative movement. As in related insect groups, mantises go through three stages of metamorphosis: egg, nymph, and adult, and maybe five to 0 moults until they reach full size and grow wings. We have around 200 species in Australia, and over 2000 world species. The golden praying mantid in this picture was taken at Cockatoo Hill, Diwan by owner, Carmen. So, that’s how mantids work. I’m often asked what is the difference between stick insects and praying mantids? Praying mantids are often confused with stick insects, but they are very different. Mantids are strictly carnivores with specialised front legs for capturing prey. Stick insects are a different proposition. They’re vegetarians with simple front legs. Essentially leaf eaters, they can grow up to 50-60 centimetres in the Wet Tropics - as long as an adult’s arm. One unique species to the Wet Tropics is the peppermint stick insect, which lives in and eats the leaves of only a few species of pandanus. They send out a sticky peppermint spray when upset. They are a stunning blue/green colour and are perfectly disguised among the pandanus leaves. Check some out at the Insect Museum at Cooper Creek or the Lookout Boardwalk at Cape Trib. The females are much bigger than the males but don’t have much by way of wings to speak of. Males are smaller and do all the chasing, attracted by the females’ pheromones. We’re sending this week’s article from Sao Paulo Brazil, a city of over 20 million people. Sao Paulo and Rio De Janeiro, 400kms apart, are in the heart of the Atlantic Forest, a critically important but declining rainforest. At just under 100,000 square kilometers, the Atlantic Forest is big, yet it’s just 7 per cent of its original size. By comparison, it’s 11 times the size of our own Wet Tropics World Heritage Area, and five times the size of the Atherton Tablelands. Sao Paulo is a different kind of jungle - a concrete jungle. Offshore slow - estuaries firing ANGLERS have been taking advantage of the recent great weather to travel far and wide to test new ground - Lizard Island to the north and Hope Island to the south - camping for a couple of days on an island is a treat. Free-diving or snorkelling has been excellent, with calm days and gin-clear water providing perfect conditions for a few hours floating around and looking at thousands of pretty coloured fishes. Just awesome! And for the keen spear fishers, a great way to put a feed on board. Offshore line fishing has been a bit slow. Maybe the lack of rain and the warm seas are to blame, but most fishers have worked hard to put much more than a feed on board.

Red emperor, spangled emperor and coral trout, with only the occasional large mouth nannygai being landed. There have been plenty of no-take species like Chinaman around and all large models, but they’ve all been released. And with plenty of sharks around, the Spanish mackerel have been hard to find. However, the estuaries have been exciting with large queen fish prowling around the Annan, smashing anything in site - with fish leaping high out of the water in an acrobatic-like action trying to chew through the lure. Wayne too ‘hot’ in Monthly Medal win IT was great to see new Dad, Dave Collie, back enjoying a game and celebrating with a win in last week’s Italian Restaurant Weekly Stroke competition. Dave turned in a score of nett 66, while Paul Haley, who also had a good game, was the runner-up with a nett score of 70. A good field turned out to play in the Cooktown Hardware and Italian Restaurant Monthly Medal competition held last Saturday. Wayne King was simply on fire to win the men’s division again this month with a nett score of 64. A count back is required for the men’s division runner-up place between Andrew Kendray and Paul Haley, who both returned scores of nett 66. The ladies’ winner for the day was Julie Sauer with a nett 73. Just behind in runner-up place was Kate Thomson with a nett 76. Wayne King had the lowest gross score for the day with 79 off the stick. Nearest-the-pins were landed by Kate Thomson for 2/11 and Wayne King for 14. No one landed on the green to claim the NTP for 9/18. Sunday saw only a small number of players enjoying the course

Leading the field for this week’s Italian Restaurant Weekly Stableford competition is Kate Thomson with 34 points. This Saturday is a “Come-Try-It” Day to entice new members to the club. A 9-Hole stroke event will be held with a tee off time of about 1.30pm. A sausage sizzle is being provided throughout the afternoon. Non-members of the club will receive a 50 per cent discount on green fees. All members are encouraged to try and bring at least one nonmember. For social golfers who don’t own golf clubs, don’t be put off, because the Golf Club has hire clubs and hire pull buggies. Come out and give it a go - who knows? You may get into the swing of golf. Just a ‘short’ run in the country IT seems a long time since the Hash visited Offal’s place in the country, but that is where we were on Monday night. The hare (and hostess) apologised in advance for a short and easy run because, she said, her knee had been giving her gyp and we were lucky to get anything. The trail started off down Railway Avenue to the suspension bridge and so to the back lots of Marton. These turned out to be more interesting than you might have expected, and Moses even found a discarded mule shoe. Then on to the trackless wastes between Marton and Poison Creek Road, where we found well used, dirt roads everywhere. Everything is very green and pretty

at this time of year, but we were beginning to have doubts about Offal’s description of the run being short and simple. We decided it might have seemed short, especially if you had laid it from your 4WD. On foot, it was much further and we returned to the esky after about an hour. We sat around, feeling mellow, and discussed our Wet season, or the lack of it. We then moved on to local politics but, before everyone fell asleep, the circle was called to order. Nostrildumass was GM for the evening and he quickly had Moses on his feet for reaching his 16 carton run (384), and Fakawe who has nearly reached 14 cartons (336). Then we had Offal,

for the long run, Sew Ezy for stumbling, and Oyster for reading a very memorable book, whose title she cannot remember. Offal, who is a vegetarian in spite of her name, had prepared a marvellous beef stew, with ratatouille on the side. She had also made a substantial dessert for Titus who forgot to turn up and eat it. Firearms amnesty is still in force RIFLE Discipline Captain Toby Graves reported it was a pleasure to shoot in such calm conditions that prevailed at the Cameron Creek Range for last Saturday’s Rimfire Shoot. Results for the 50 metre target from a possible of 100 points were: Toby Graves 100, Chris Stewart 99, Melinda Stewart 98 and Andy Hill 96. And for the 25 metre target, from a possible of 200.20 were: Toby 200.14, Melinda 198.13, Chris 198.6 and Andy 193.6. Our club would like to remind people of the general amnesty for Firearms and Weapons which started on February 1 and ends on April 30, 2013. This means there is no prosecution for the

surrender and/or registration of weapons. If you do have a current shooter’s licence for a particular category and would like to register a firearm, you can take advantage of this amnesty. If you would like to discuss the amnesty further, feel free to contact your discipline captain or the Secretary, Anne Williams (4069 5173). Rush to enter footy tipping

WITH the NRL season due to start next Thursday night, footy fans have been quick off the mark to enter the Cooktown Local News’ popular footy tipping competition for 2013. This year’s tipping competition is sponsored by Hinterland Aviation, Inn Cairns and the Cooktown Local News. The winner will receive a return flight to Cairns for one, courtesy of Hinterland Aviation and three nights’ accommodation in the heart of Cairns

at Inn Cairns - a prize worth more than $1000. The runner-up will receive $250 from the Cooktown Local News. Hinterland Aviation’s Business Development Officer Olivia Thompson, Selwyn Krepp, Manager of Inn Cairns Boutique Apartments, and Cooktown Locan News group editor Mark Bousen all expressed their enthusiasm for taking part in the competition and their willingness to sponsor and promote it.

Two major changes have been introduced this year. 1. Anyone who fails to enter their selections for a week will receive no points. This ensures fairness to those who do enter their tips. 2. Anyone entering the competition after the start of the season, also will start from zero with no points awarded for missed games. Hope Vale notches up first win for the season THE Hope Vale ladies claimed their first win of the season in Monday night’s Cooktown netball clash - but not in the usual sense. A weak turnout of players to the match from Cooktown meant Hope Vale ladies boosted the opposition side - the same side that ended up taking the victory against the all Hope Vale side 21-11, and therefore neither team could claim the victory. The mix of players made it more light-hearted and produced a relaxed environment, giving some of the lessexperienced players confidence to play more freely and assert themselves on the court. Hope Vale’s goal keeper Krystalee Bowen and wing defence Lenore Casey collected a haul of intercepts, while

debutant Julie Bredillett found form immediately in attack and mid-courter Jaccan Hart helped take the ball swiftly through the court. Cooktown regulars Courtney Robson, Kristy Wright, Bryce Kirk, Monique Bidois and Lesley Gibson-Brown again showed their consistency by playing with minimal errors and rapid play. Hope Vale’s Nellie Nipper, Chrissy Cobus, Kiri White, Audrey Deemal, Amanda Fyfe, Kelly Ambrym and Kynomii Saunders all had strong games. A close tussle between goal shooter Lesley Gibson-Brown and goal keeper Kellie Ambrym made for good entertainment as both players fought hard for every ball with neither giving an inch. Any new players are welcome to join the competition, which is played at the Cooktown PCYC Events Centre every Monday night from 6.45pm.
