Welcome to CityMag... WHEN did ‘craft beer’ become so mainstream? It’s a question we’ve been asking ourselves here at CityMag – after all, we do like to partake in a frothy beverage or two – so we decided to get to the heart of the matter. Sheffield-born brewer, Stuart Ross, is now blazing a trail with Magic Rock Brewing after starting out at Kelham Island Brewery. His American-inspired ales are proving to be a hit, not just locally, but internationally too. He was perfectly placed to tell us all about craft beer and why it’s now the drink de rigeur. So where do you go for the best pales ales, pilsners and porters? We had a comprehensive look at some of the best places to indulge in an ale or two, from city centre pubs to suburban bars and breweries to bottle shops. If there’s anyone we’ve missed, do let us know and we’ll try and feature you in future. Elsewhere we look at some fine vintage bargains, get some spring style inspiration and sent Phoebe Seymour to see if Outlines Festival lived up to all the hype. But you already know the answer to that. See you next month for more super Sheffield news, views and things to do.

WE’VE been feeling a bit lush this morning and have been getting some expert advice on wine, whisky and gin, not forgetting our in depth look at Sheffield’s ale scene. At one time, no, for a long time, drinking beer/bitter/ale was seen as a very male thing to do. Now with the rise of craft beer it’s become much more acceptable for everyone to get on board. Many of these beers, from citrusy pales to chocolate stouts, will be showcased at BeerX, which takes place at iceSheffield 16-20 March. The festival also coincides with Sheffield Beer Week (14-20 March) so you’ve got every excuse to grab our guide and go and try one of the many pubs featured. Sheffield Adventure Film Festival also returns to the city this month (11-13 March), showcasing the best outdoor films at the Showroom. A special thank you to eco graffiti artist Faunagraphic for designing us our very springy cover. You’ve probably seen her nature-inspired work around town as well as in high-end campaigns. Easter will have been and gone by the time we speak again. Have a good one and make sure you try Mr Pickles’ lamb recipe (page 25) – it sounds gorgeous! Melanie Jackson Publishing Manager

After reuniting with his long-lost father (Bryan Cranston), Po must transition from student to teacher and train a group of fun-loving, clumsy pandas to become martial-arts fighters. Together, the kung-fu brethren unite to take on the evil Kai (J.K. Simmons), a supernatural warrior who becomes stronger with each battle.

Based on a 1975 novel of the same name by J.G. Ballard, thriller High-Rise sees Robert Laing (Tom Hiddleston) move into a luxury tower block only to discover a world of complex loyalties. Or has he?

CRIME: Hong Kong Style – Overheard

It’s March at the Showroom, and we have another month of indie hits, stunning world cinema and events to fill your calendar.

Hail, Caesar!

Kino Bambino

Every Monday at 11am, the Showroom screens a film for parents and babies under the age of one year. Parents can enjoy the latest new releases without having to find a babysitter and can watch a film in a comfortable atmosphere, with appropriate sound levels and a dedicated storage area for pushchairs. After the screening they can relax with a complimentary hot drink in the bar and socialise with other parents. Coming up in March: Monday 11: Hail, Caesar! Monday 18: High Rise Full details: www.showroomworkstation. org.uk/kinobambino

THE mean streets of Hong Kong are the stage for some of the greatest crime films ever made. From hard-nosed gangster flicks to seductive noir thrillers, CRIME: Hong Kong Style is a new season that offers well-known classics (Infernal Affairs) to contemporary films never before seen in the UK. We’ll be exploring the political and social backdrop that gave rise to these films and the reallife crimes that inspired them – from shady Triads to outand-out gang warfare on neon-lit streets. CRIME: Hong Kong Style runs from 7-30 March – pick up one of our flyers from the cinema and venues across Sheffield and get a free fold out Hong Kong Crime genre timeline poster. Tom Hiddleston and JG Ballard fans can rejoice in unison as High Rise (opening 18 March) hits our screens. The film adaptation of Ballard’s dystopian novel sees

Hiddleston playing the suave Dr Robert Laing, a man who seems to have it all. But does he? As those at the bottom of the High Rise begin to revolt against their lowly status, order and structure gives way to chaos and mayhem in a riot of music, sex, murder, and fighting over the last tin of beans in the supermarket. It’s a 70s-tinged future from British director Ben Wheatley, who brought us the stunning Kill List and Sightseers. An absolute must-see. If horror’s your thing, we have some of the scariest films that we’ve ever had at the Showroom. The Witch (opening 11 March) and Goodnight Mommy (opening 4 March) and Baskin (6 March) will all scare you witless – atmospheric and unlike anything you’ve ever seen before. International Women’s Day has been observed since the 1900s – since then, a lot has changed but prevailing and

pertinent issues remain. The Hunting Ground (8 March) is an important documentary about on-campus sexual assaults at US colleges. A moving and powerful film about the strength of women in the face of terrible crimes. The Sheffield Adventure Film Festival (ShAFF) returns from 11-13 March with the best adventure cinema from around the world – climbing, mountain biking, trekking, you name it – there’s a film about it at ShAFF. MASTER THE CRAFT

KELHAM ISLAND BREWERY’S PAST EMPLOYEE LIST READS LIKE A WHO’S WHO OF LOCAL BREWING TODAY.

IT’S all about the beer. Pale ales, porters, pilsners… when did we become some such beer connoisseurs? Truth to be told, the craft beer revolution has been humming along nicely for a number of years – but now it’s hit the mainstream. Gone are the days when you’d walk into a pub and find four or five different lagers and one bitter. Now, it’s more likely to be the other way round. As I said, it’s all about the beer. It seems that we’re quite fond of a frothy topped ale or two, which is just as well given Sheffield’s long and largely happy relationship with brewing. There are now more breweries and microbreweries in the city than there has been for over a century but its heritage can be traced right back to the 1700s, where records suggest that Thomas Rawson opened the earliest commercial brewery on Pond Street in 1758. The boom time for breweries came in the 19th century and saw Sheffield become a real hub for beer. There were literally breweries everywhere – Mowbray Street, Penistone Road, Cricket Inn Road, Ecclesall Road, Savile Street, Bramall Lane, The Moor, Queens Road… the list goes on and on. By the 20th century, only a handful remained, the mainstays being Wards, Stones, Whitbreads and Hope & Anchor. By the late 1990s, brewing had ceased in the city leaving something of a brewing vacuum. Thankfully, this void was quickly filled, and it was largely down to one man. In 1981, Dave Wickett was lecturing in economics at Sheffield Polytechnic (now Hallam University) when he bought a pub, The Alma, at Kelham Island. Despite raising a few eyebrows, he renamed the pub the Fat Cat and tapped into a big enough number of beer lovers to make it a success, so much so that in

Words: Richard Abbey

Want to know about the latest ale revolution? We speak to Magic Rock’s head brewer, Stuart Ross, and look at the best of Sheffield bitter. Not forgetting your pale ales, IPAs, porters and more. 1990, he launched the Kelham Island Brewery next door – the first new independent brewery in Sheffield in almost 100 years. The brewery moved to a new purpose-built site next door to the Fat Cat in 1999 and achieved national success with one of their first breed of golden ales, Pale Rider, which won the Campaign for Real Ale’s (CAMRA) 2004 Champion Beer of Britain award. In 2007 the brewery moved again, to an even bigger. Kelham Island Brewery, though, is much more than the name suggests, it has in fact proved to be the catalyst for a growing number of successful breweries in our region and can pretty much take acclaim for making beer popular again and giving rise to the real ale revolution. The brewery’s past employee list reads like a who’s who of local brewing today. Patrick Morton (Abbeydale), Bob Lawson (Ossett) and Paul Ward (Bradfield) all started at Alma Street before moving and setting up themselves. Another graduate is Magic Rock Brewing’s head brewer, Stuart Ross. Former Meersbrook native and self-proclaimed lover of cask beer, Stuart was working at the University of Sheffield sports ground on Warminster Road when a friend asked him to come and work at Kelham Island with him. He joined in February 2004 and, after learning the brewing ropes under Paul Ward, he became head brewer in November of that year, responsible for largely producing Pale Rider and Easy Rider. >

City March Beer Feature_Layout 1 04/03/2016 09:49 Page 3

14 After a short stint at Acorn Brewery in Wombwell in 2007 – producing his favourite beer, Barnsley Bitter – Stuart returned to Sheffield, running the Hillsborough Hotel’s inhouse Crown Brewery for three and a half years. February 2011 saw Stuart join forces with brothers Jonny and Richard Burhouse to create Magic Rock in Huddersfield. The Burhouse brothers were already running an online beer shop (mybrewerytap.com, now alesbymail.co.uk) but wanted to take things one step further and produce their own. Enter Stuart. Inspiration comes from the American style of brewing, particularly beers from the ‘Craft Beer Capital of America’, San Diego. They use 95 per cent American hops and cite their ales as ‘hop forward’, refreshing yet with a sometime bitter or definite bite at the end. Flavour is paramount. “Hops can be categorised in three ways,” explains Stuart. “You have dank, skunk-like smelling hops, piney and resinous ones and fruity, tropical, citrusy hops, which are usually used in pale ales. No two hoppy beers are alike and you’ll find some varieties more pleasing than others.” Magic Rock’s most popular brew is the 5.5 per cent Highwire, a west coast style pale ale that’s a test of balance for your tastebuds. Mango, lychee and grapefruit flavours harmonise against a smoothly composed malt

base, which develops into a crisply bitter finish. It’s the perfect example of their hop forward philosophy. If you’re an India Pale Ale (IPA) fan, they have three to choose from: Cannoball (7.4 per cent), Human Cannonball (9 per cent) and Inhuman Cannonball (11 per cent). “If you fancy something less strong, we’ve just produced Simpleton, a 3 per cent hoppy, full-bodied session ale, which tastes more like 4-4.5 per cent,” adds Stuart. Such has been Magic Rock’s success, which saw demand soon outstripping supply, a move to new premises was required. In July 2015 they moved to Willow Lane on the outskirts of Huddersfield town centre and effectively doubled the size of the brewhouse and doubled production. As well as new equipment and bigger fermenting vessels, a stateof-the-art canning machine was added, something Stuart felt was essential to the progression of the company: “Oxygen ruins beer. We needed to make sure that our beer left in the best possible condition, giving our customers the best

possible product.” It’s a philosophy that is clearly working at Magic Rock’s distribution network is impressive to say the least. As well as local and nation supplies, they have also gone international, supplying to the likes of Sweden, Italy, France, Spain, Estonia, Czech Republic, Norway, Denmark, USA and the Far East including Australia. In Sheffield you’ll find their beers on tap at the Rutland Arms on Brown Street and the Sheffield Tap.You’ll also find some of their gorgeouslydesigned cans at the Hop Hideout on Abbeydale Road. The move to premises also saw Magic Rock add a Tap Room, something of an American concept but one that is already proving to be a clear winner. The Sentinel Brewery are bringing a similar concept to Sheffield – read more about it on page 17 – something Stuart feels the city is ready for: “Sheffield has a much more traditional brewing scene and I think craft beer is only just starting to make it there. I loved Abbeydale’s Mosaic IPA, a progressive ale that was much more in-keeping with the American style craft beer.” Whether you agree with Stuart or not, you have to agree the rate at which real ale, craft beer, whatever you want to call it, has developed has been phenomenal. And the best thing? It’s a big thumbs up to the independents, showing they truly are masters of their craft. I’ll raise a glass to that.

CASK BEER

Draught beer brewed and stored in the traditional way, maturing naturally in the cask from which it is served. Generally termed ‘real ale’.

KEG BEER

Beer supplied in a keg, to which carbon dioxide has been added. Lager-esque.

CAMRA, the Campaign for Real Ale is an independent, voluntary organisation campaigning for real ale, community pubs and consumer rights. It was formed in March 1971 by four men from the northwest who were disillusioned by the domination of the UK beer market by a handful of companies pushing products of low flavour and overall quality onto the consumer. CAMRA has over 175,000 members across the world, and has been described as the most successful consumer campaign in Europe.

CRAFT BEER

The term craft beer was coined in the US and, although it has been constantly surpassed, it is loosely defined as: A microbrewery or craft brewery is a brewery that produces a small amount of beer. The terms are typically applied to breweries that are much smaller than large-scale corporate breweries and are independently owned.

KELHAM ISLAND BREWERY Alma Street, S3 8SA www.kelhambrewery.co.uk Kelham Island Brewery was built in 1990 in the Beer Garden of the Fat Cat in Alma Street – the first new independent brewery in Sheffield in almost 100 years. ABBEYDALE BREWERY Aizlewood Road, S8 0YX www.abbeydalebrewery.co.uk Their brewing story goes back to 1996 when Patrick Morton and his father Hugh decided to pursue their mutual love of fine beer and put their faith and money into creating their very own brewery. With new head brewer Bob Phaff on board, a re-designed range of regular beers was launched in June 2015, complemented by numerous weekly one-off brews. In 2014 they added a gin distill to their portfolio and under the capable hands of gin expert Rob Jones.

At Sentinel Brewing Co, you’ll be able to see the journey of your beer, from raw ingredient to perfectly poured pint.

HOW do you turn a dream that you’ve harboured throughout your career into a reality? For Master Brewer Alex Barlow, who has dedicated his life to beer, you open your very own brewhouse in the heart of Sheffield. And while, in one regard, Alex’s new venture Sentinel Brewing Co. is following in well-trodden footsteps, it’s also giving beer lovers a whole lot more besides. “It’s not a pub, it’s a brewery tap room,” says Alex of his new site, currently taking shape on the corner of Shoreham Street and Mary Street (formerly Geoff Hall Carpets). “Sheffield is a fantastic place for this because it’s got a great beer heritage. While the big brewing companies have closed, the city is now full of independents and I’m really excited to be adding to this scene.” When the warehouse conversion is complete at the end of this month, punters will be able to see the journey of their beer, from raw ingredient to perfectly poured pint. It’s a unique experience to have a freshly poured beer that has been made before your very eyes – whether you’re drinking it straight from the glass or filling up a growler to take home. The shop, where the growlers can be purchased, will also have glassware, tshirts, books and other merchandise for sale. Transparency is a key theme for Alex, and he’s made sure there are windows everywhere. Whether you’re in one of the two private meeting/dining rooms available to hire (free of charge, complete with their own 65-inch TV and fridge) or at the bar peering into the beer cellar, everything is on show. Alex, who now lives in Broomhill, moved to Sheffield 25 years ago while working for brewing giant Bass, but his passion for beer began when he got a job at his local pub aged 17. “I wasn’t old enough to serve at the bar so I did everything else: cleaned lines, stocked shelves, took deliveries. When I cleaned the lines, I tried all the beers and really liked all of them.” At university in Liverpool, he went on to run bars while studying pharmacology. But when he graduated in 1987 and a

job opportunity arose at Glaxo, he turned it down to work for Bass and went on to spend 18 years with the company. As well as becoming the youngest ever Master Brewer, he was also the first Englishman to manage a Czech brewery and has authored the multi-award-winning All Beer Guide. These 30-plus years of experience inform his core range of six Sentinel beers, which range from 3.3 to 6.5% ABV and include a bitter, a Colognestyle Kölsch, a Czech pilsner, an IPA, an orange stout and an American red. As well as the traditional half and pint measures, they’ll be available in 1/3 and 2/3 pints, and will be joined by seasonal specials, limited edition bottles, and guest ales from other carefully selected breweries. The first beers will be available just in time for Sheffield Beer Week (14-20 March) and there’ll be a party at the brewery on that Sunday. From April, the Brewhouse will be open for breakfast until 11pm (midnight on Friday and Saturday, closed Sunday and Monday evenings). Alongside the beer there’s a modest menu of locally sourced, freshly prepared food that not only comes with beer recommendations, but also with dishes made using beer ingredients – beer grain pizza and bread, ice creams and smoothies with wort, and muesli with brewer’s yeast. If you’d prefer a booze-free tipple, there’ll be coffee, tea and hot chocolate by Cafeology. There are plenty of events planned too, including ‘brewvie’ nights each Wednesday, when you can sup on your beer while watching a film on the huge projector, as well as tasting events and meet-the-brewer experiences. “It’s about giving people an education in beer,” explains Alex. “Sentinel means protector or guardian, and we want people to know that if they’re drinking a Sentinel beer, it’ll be a good one.” Sentinel Brewing Co. 178 Shoreham Street, Sheffield, S1 4SQ Email: hello@sentinelbrewing.co Facebook: Sentinel Brewing Co. PEAK Ales is the product of a dream: a dream of establishing a traditional craft brewery in the heart of the Peak District, quality natural ingredients, traditional brewing tools and time-honoured recipes are created. With the assistance of DEFRA and the support of the Trustees of the Chatsworth Settlement, this dream became a reality in February 2005. Peak Ales has grown considerably, supplying premium quality craft ales to the local public houses, inns, hotels and shops. In autumn 2014 a new 20barrel brewery was installed at Ashford in the Water to help meet the growing demands for Peak Ales’ beers and provide the brewery with the extra capacity required for further expansion. Their core beers have always championed traditional English hops but with a new trial brewery available it will be exciting to see what new beers the brewers create. This month’s beers, courtesy of Sean Clarke at Beer Central Ltd, are all about Sheffield, celebrating history and all things new. Rider is a 5.2% Pale Ale that packs a lovely hoppy punch. Kelham Island is Sheffield’s oldest brewery still in production and they continue to brew a highly respected core range alongside an ever-changing list of seasonal specials. Seek out a pint of this in the fabulous Fat Cat and you’ll be standing just a few short paces from where it is brewed.

MARCH is a very exciting month for beer in Sheffield as the city hosts the SIBA Beer X event at Ice Sheffield between the 16-19 March (www.beerx.org) and the very special Sheffield Beer Week at venues all across the city from 14-20 March (www.sheffieldbeerweek.co.uk).

Lost Industry – Hole In’t Road

When brothers Jimmy and Nathan Seaton started to plan their brewery over a year ago, there was a lot of excitement in the city. Their first release was Hole In’t Road (still widely available), a 6.3% oatmeal stout. Bold flavours, richness from the creamy oatmeal, label artwork from popular Sheffield artist Alan Pennington, a beer you really should try.

The Brew Foundation – Bitter That

Another new outfit who have hit the ground running, James and Robert Eardley (father and son) launched their first beers in late 2015 and within just a few short months you can find their brews in many of Sheffield’s pubs, bars and bottles shops. Specialising initially in an easy drinking range, their First Light and Hops & Dreams have become firm city favourites. Here though we feature Bitter That, a fruity 5% Extra Special Bitter that really hits the mark. This beer has its roots in history but shows enough modern character to please drinkers of all ages.

2016 sees SIBA’s BeerX festival return to Sheffield for the fourth year running, which is something that beer lover Jules Gray thinks is worth celebrating – so much so that she’s decided to continue the annual event – Sheffield Beer Week – to coincide with the national event again in 2016. With around 5,000 people visiting the city for BeerX, organiser Jules sees Sheffield Beer Week (14-20 March) as a real opportunity to show off the very best of our beer scene. Jules, joint proprietor of Hop Hideout beer shop on Abbeydale Road, said: “I was really pleased with the response that we had to Sheffield Beer Week last year, so much so, that it was obviously the right thing to continue with the annual event. This year breweries Abbeydale, True North Brew Co and Thornbridge have already agreed to host events and are launching new beers during the week.“

Head to sheffieldbeerweek.co.uk for details of events taking place. If you’re a bar or pub and interested in holding an event, contact Jules at sheffieldbeerweek@gmail.com for more information.

23 Music, food, rugby, a Routemaster bus... and gallons of ale. Welcome to the fourth annual BeerX festival. BEERX, the biggest craft beer festival in the UK, is returning to iceSheffield for its fourth year. From 16-19 March, beer-lovers will be able to sample from over 300 award-winning draught beers, plus hundreds more in can and bottle, and have the exciting opportunity to mingle with brewers themselves. Beers from casks, kegs, bottles and cans will be served from the event’s stunning 30-metre bar and Brewers’ Yard; a new space for 2016 featuring 20 individual brewery bars manned by brewers themselves. Eat Street will return with an array of food stands and trucks serving cuisine from around the world, offering something for foodies and craft beer fans alike. For 2016 it will be run by popular Sheffield street food aficionados Trudi and Justine of Percy & Lily’s. An array of free beery entertainment will take place on the Friday of the event, from tutored tastings to beer and food pairings and ‘meet the brewer’ sessions. These will be run by resident BBC Radio 2 chef Nigel Barden and Sheffield beer expert Alex Barlow of

allbeer.co.uk – for details visit beerx.org. Music will be provided by former Inspiral Carpets frontman Tom Hingley, soul and Motown aficionados Vernon Lewis & EMaculate and Sheffield supergroup The Bootleggers. All the final Six Nations Rugby matches will also be streamed live on a giant screen on the Saturday, making for a great atmosphere with beer aplenty on tap. The BeerX free vintage Routemaster bus will once again run on a loop between iceSheffield and the city centre, with ‘bus stops’ at the Fat Cat, Sheffield Station and the Devonshire Cat. Donations are welcomed, with all proceeds going to Sheffield Children’s Hospital Charity. The timetable can be found on the BeerX Facebook page. For up-to-date news and competitions: Facebook: facebook.com/ BeerXSheffield Twitter: @SIBA_BeerX

Tickets for the festival are priced at £8 in advance and £10 on the door, with a £2 discount for students, CAMRA members and the Armed Forces who book in advance. Advance tickets can be purchased via the wegottickets and SIV websites.

24 Find inspiration for food and drink from Sheffield’s finest independents.

GIN TING This month, Portland House’s Danielle Mustard takes a closer look at three British gins, each with an interesting back story you can memorise to impress your drinking buddies… SIBLING – 42%

Sibling is a triple distilled gin made by four siblings from Cheltenham, all of whom are under 25 years old – beats a paper round, eh? Botanicals in this gin include vanilla, blueberry and lemon peel, all of which work to give the spirit a smooth, sweet finish. Pair it with 1724 tonic to really bring out those sweet notes. BATHTUB GIN – 43.3%

Bathtub gin is something of a unique breed, a ‘cold compound gin’, infused with botanicals but not distilled like most others. A bold gin with classic botanicals including juniper, coriander and cloves, its creamy mouthfeel and earthiness make this the perfect gin for those who like a real ‘ginny’ gin (yes, that is a thing). TARQUIN’S – 42%

A Cornish gin which is easy to spot on the shelf due to its beautifully wax sealed bottle. Tarquin’s is a small batch gin which uses botanicals from across the globe, including orris root from Morocco, green cardamom from Guatemala and Devonshire violets grown in the distiller’s very own garden. This gin is perfect if you prefer something a little lighter. As well as our regular gin tasting sessions (thank you to everyone who came along last month, we had a great night!) we also do tasting nights involving our other spirits, in March, this will be a ‘Port and Cheese Pairing’ on the evening of Monday 7th. For more information, swing by – we’re at 286 Ecclesall Road, or call us on: 0114 266 9511.

The Return of the Whisky Files With The Shakespeare’s Chris Bamford

THIS month I’ve picked three whiskies which illustrate one particular aspect of whisky production and flavours – cask aging and cask finishing. By law, Scotch whisky must be aged for a minimum of three years, in oak barrels not exceeding 700 litres capacity. Whisky derives its colour and a good proportion of its flavour from the wood in which it is aged. Historically its barrels have been previously used to age other alcoholic drinks – the following are three notable examples. GLENFARCLAS 105 – sherry cask – 60% ABV Sherry casks were once the most widely used type of cask in Scottish whisky production, with Britain’s taste for the Spanish fortified wine leading to numerous casks being shipped over to be bottled. Glenfarclas, in the heart of Speyside, exclusively use Oloroso or Fino Sherry casks to age all of their whiskies. 105 is their cask strength expression, big full bodied, with fruity and toffee flavours and practically dripping with sherry. AUCHENTOSHAN AMERICAN OAK – bourbon cask – 40% ABV For the last 30 years or so, casks previously used for ageing the quintessential American whiskey, bourbon, have been predominant in maturing Scotch whisky. The reason is again a mixture of flavour considerations and practicality, stemming from the fact that by law bourbon must be made in new oak. Auchentoshan (Och-antosh-an) flagship American Oak is exclusively aged in first fill (which means the first time malt whisky has been filled into the cask) ex-bourbon casks, giving vanilla cream and white peach flavours. BENRIACH 15 YEAR OLD – Sauternes wood finish – 46% ABV In recent years, a new trend of ‘wood finishing’ has become common in the whisky industry, especially amongst smaller and independent distilleries who have adopted an experimental and innovative approach in order to set themselves apart. BenRiach are a Speyside distillery who have released a series of interesting cask finishes since becoming independent in 2004. This edition is fruity and rich, with the sweetness of the Sauternes wine coming through. If you have any questions about The Whisky Files email chris@shakespearessheffield.co.uk or pop in to Shakespeares and try the whiskies for yourself.

25 Mr Pickles’ Paul Widdowson talks the ultimate Easter treat – lamb. AS food lovers, Easter means two things; chocolate and lamb. And, whilst eating chocolate makes sense at any time of year – on the basis that we love any excuse to stuff our faces with it – lamb doesn’t so much as it’s not in season. But demand for lamb at spring is so high that a lot of supermarkets have had to start looking elsewhere. This is one of the many reasons why we like to work with Firs Farm on Ringinglow Road. As a relatively small farm, with a small flock to manage and monitor, they can ensure we have lamb in store all year round – including at Easter time. We find the lamb chops, loin chops and leg steaks are popular with customers who want a quick and easy meal. Served pink, these cuts can be fried or grilled in a matter of minutes and they taste great with a selection of vegetables or a big salad. The large joints are the shoulder, which we bone and roll for easy carving, and the leg. Both are perfect for roasting but the shoulder prefers a much lower and slower roast than the leg (can be served pink). Lastly we have the breast and neck – both work well cooked in a stew or tagine until the meat falls off the bone. When it comes to adding flavours, garlic and rosemary are the obvious choices as the meat is robust enough to stand up to these strong flavours. Studding a roast with anchovies is becoming increasingly popular – the tiny fish fillets practically

melt into meat and their saltiness adds a savoury richness to the lamb. We also like to add spices, especially cumin, which is why lamb is our first choice when we cook curry. Recently we’ve been trying a new flavour combination – lavender. Packed with aromatic oils, lavender always ensures for a delicious smelling kitchen and, as it’s quite similar to rosemary, it’s good in more savoury dishes than you may have thought! Fancy trying it for yourself? Scan the QR code for our saltcrusted leg of lamb recipe.

Many of you may have randomly popped in and ended up staying the evening and feeling the aftermath the next day due to the free flowing rum offerings! You may or may not know that Barry whips up some of the best authentic Caribbean food, all cooked fresh each day by himself. Don’t ask us the ingredients as Barry keeps his recipes close to his chest but always refers to giving the food ‘time’. Anyway, we called in for Wednesday’s offering – the menu changes daily – and left with a generous serving of curried mutton with rice and peas. You can also eat in the pub. All I can say is Barry’s mutton gets the thumbs up from us and we’ll be back very soon for the ackee and saltfish… also it was only £4.80. Bargain!

SPRING STYLE Courtesy of Randle + Randle. HERE at Brag Vintage we’re massively looking forward to spring – and with spring comes fresh, lighter styles. That’s why our top pick is the embroidered patterned shirt. It’s such a versatile item in your wardrobe because it works well as a layer but is also a statement piece in itself. Each vintage shirt has a different pattern or embroidered design which makes your choice endlessly exciting. With such a vast variety to pick from you’re guaranteed to find your perfect shirt buddy. One of our favourite combinations at Brag is an embroidered shirt with an A-line flared mini skirt. Seventies shapes and styles have been massively popular recently and we’ve had a lot of fun wearing them. The A-line skirt is fantastic as it flatters all body shapes, pulling in at the smallest part of the waist and flaring out to create an hourglass shape. Try a block-coloured or tartan skirt for a touch of sixties styling, a decade which is set to erupt this year, with shift dresses, geometric prints and bright bold colours set to make a massive comeback in 2016.

Here’s some of our favourite style combinations for Spring ‘16:

Wear an embroidered shirt (above) or a block shift dress over your collared shirt for an instant sixties feel (right)

AFTER months of dark nights and dark mornings, we’re now well on the way to spring. For many people this means looking closely in the mirror to assess the winter damage. How can you improve your skin and hair health? Let’s start with your skin; Amanda, who is trained to ‘expert’ status with Dermalogica, advises that at this time of year skin is more prone Amanda to sensitivity. & Glynn Randle Cleansing is the key element. If this vital step is missed then buildup can cause the skin to look dull and uneven. A calming cleanser (used twice in the morning and twice in the evening) will gently clean the skin without stripping it of its natural oils. Once you’ve cleansed your skin, your moisturiser will become more effective as it’s being applied on clean skin. A moisturiser is designed to lock in moisture to prevent dehydration so investing in a good one is vital. When you’ve achieved these two stages in your skin care then exfoliation, masks and eye creams come into play. My advice, however, is to keep it simple until you know what works for you. Get the basics right first! For your hair, Glynn recommends treating your hair and scalp with respect and care. Your scalp is covered in pores and hair follicles, so much like the skin it is essential to keep it clean so your hair can grow continuously out of a clear follicle without breaking. Nioxin and Pureology products both work on the scalp by unblocking the pores. The Nioxin system offers an in depth look at your scalp and hair follicles; by using a special microscope attached to a computer screen; we can magnify an area up to 200 times in size to check what’s happening. In some cases a dermabrasion treatment of the scalp is needed to help clear it before other products are recommended to keep the condition maintained. The treatment is relaxing and performed at the back wash giving instant results and can be done as a stand-alone service or when you have your hair cut and styled. And NEVER underestimate what a good hair cut can do to instantly make hair look healthy and improve your self-esteem. CLEAN-CUT KID The trend of being clean-shaven stretches back centuries. THE art of male shaving has been part of our history since time began. The resurgence of the traditional hot towel wet shave is well documented and is a regular service for many or our patrons at Savills, either as part of their grooming routine or as a popular treat, bought by wives, mums and girlfriends, for special occasions. It is 45 minutes of pure relaxation. Think a men’s version of a facial but in an altogether more masculine environment tailored to a man’s needs. Using products from our apothecary of male grooming aids from Sheffield’s own Edwin Jagger, Apothecary87, and First Olympian to name a few, the experience leaves the customer an expert in the fundamental rules of a good shave and with super soft skin. It’s affordable luxury and a step back in time to when the experiencing a good gentlemanly hot towel wet shave was every man’s regular grooming necessity. Exploring the history of shaving is fascinating and if you think that today’s men are fastidious or vain you should get a load of our ancestor’s take on shaving! • To ancient Egyptians any body hair was seen as the ultimate in uncleanliness and a daily full body shave was de rigueur, with the wealthy elite employing their own personal barbers to ‘live in’ and tend to their hirsute needs. Pharaohs were buried with their barbers so they could get ongoing tonsorial tendering in the afterlife… I can’t see any of our talented guys volunteering for posterity in a pyramid. • The early Romans were also partakers of the clean-shaven look.Young male Romans would carefully tend to their peach-fuzz until the eventual designated day of their maturity when a great deal of partying and Roman

raving would herald the ritual shave after which the unwanted whiskers would be housed in a special box. Emperor Nero kept his in a gold and pearl encrusted casket. Eventually, Emperor Hadrian (yes he of the wall fame) championed the return of the beard due, it is thought, to his lousy complexion. Ugh! • In yesteryear’s conflict torn world (nothing changes), eventually many civilizations encouraged the removal of facial hair as a defensive. This stopped enemies from grabbing their hair in handto-hand combat. • As shaving spread through the world, men of unshaven societies became known as ‘barbarians’ meaning the ‘unbarbered’. Nowadays, society is not so judgmental and pretty much anything goes in the word of facial hair, but to those gents who still prefer the clean-shaven look, a shaving experience with one of our barbers is not to be missed and can be booked in person, by phone, our Facebook site or our website. Gift vouchers can also be purchased on our web shop. Or for those of you who are more impulsive, just pop in, grab a free beer and wait for our walk in service the next time you are passing. Until next month when we continue on our march towards manly perfection… Savills Mens Hairdressing Ltd 118 Devonshire Street, Sheffield, S3 7SF Tel: 0114 276 1011 www.savillsbarbers.com

WE live in such a blessed city; to the west is the amazing Peak District and all within a short train ride away. Cycle down to the railway station and pick up the Hope Valley line from platform 2C, they’re just about every hour and there is room for your bike. Jump off at Hathersage and take the valley road along to Castleton where pies and pints can be found aplenty. Although surrounded by hills it’s not necessary to ride up any of them unless of course you wish to tackle the infamous Winnetts Pass and then return down the equally famous Mam Nick. It’s worth the spectacular views but you’d be forgiven if you got off to push. With a bottle or flask on your bike and a picnic in your bag you can be in the middle of the countryside in minutes and all for less than a tenner. What more can you want on a sunny weekend? Remember to stock up on gobstoppers and liquorice at Castleton’s sweet shop on your way back to Sheffield and if you have the energy you can chase the train back to Platform 2C. Catch it at any station along the route but if you miss it at Grindleford, you‘ll have to wait for the next one or ride back over the hill. Discover more and go further on your bike or hire one from Russell’s Bicycle Shed at the Railway Station.

Beautiful views over Castleton

GO FURTHER BY BIKE The Peak District is only a short journey away, says Russell Cutts of Russells Bike Shed.

They paved the way for ecigarettes in Sheffield... now there’s no stopping Mirage. ACCORDING to the NHS, around seven million of us make a New Year’s resolution to improve an aspect of our health each year and stopping smoking is one of the most common. But after a couple of months, our determination to go cold turkey starts to dissolve. Instead, why not switch to an ecigarette and quit gradually? Mirage was established by local businessman Craig Newbould in 2008 and was one of the very first ecigarette companies in the world. Their Manor Top branch was the first ecigarette shop to open in Sheffield and was quickly followed by 39 more stores nationwide. Their other successful Sheffield branches now include Ecclesall Road, Meadowhall and Leopold Street, next to Orchard Square in the city centre. Not only does Mirage offer the highest quality vaping brands around such as Eros and Gold Star, they also manufacture their own eliquid, available in a number of flavours.

“We have invested hundreds of thousands of pounds in our production facility and laboratory, ensuring the quality and safety of our eliquid is second to none,” says business development manager Gareth Lupton. “Mirage was built on the basis that we believe in the products we sell. Electronic cigarettes can change people’s lives, as they have done for many of our staff. It is important for people looking to make the switch to vaping that they get the right advice and safe, quality products.” Mirage are the only eliquid manufacturers in the world to carry the official Made in Sheffield mark – a testament to the high level of manufacturing excellence that the city is renowned and recognised for all over the world. Furthermore, each and every member of their team endeavours to put the customer first and to create an environment they would love to visit themselves. Whether that means sourcing the best products around or putting new customer’s minds at ease, Mirage’s experienced team are here to help you live a happier, healthier, smoke-free life. Drop into their city centre branch or visit www.mirage.co.uk to find your nearest store. Mirage 49 Leopold Street, Sheffield, S1 2GY Tel: 0845 475 0148 www.miragecigarettes.co.uk

LOXAREL WINE NEW TO STARMOREBOSS

HERE at StarmoreBoss, we are lucky in that we get to meet in person many of the producers, importers and winemakers that we work with. So it comes as a bit of a surprise to some of our customers that at any given moment during the day a winemaker or rep may pop in and happily decant drinks for our perusal. Such a happenstance occurred when Mel from CityMag popped in and Cristina, marketing manager from Loxarel winery, was showcasing their wares. Situated in Vilafranca del Pendes, around 40km or an hour south-west of Barcelona, the Loxarel winery was founded in the 1930s and has been in the hands of the Mitjans family for four generations, currently run by Josep Mitjans and his wife Teresa. The estate is fairly small at 50 hectares and so is a hands-on affair, and for the last ten years has been farmed organically and uses biodynamical principles (things like harvesting and planting according to lunar cycles). They make a respectable range of wines from easy-drinking, crisp, clean, zesty and refreshing whites using native grapes like Xarel-lo (where the name of winery comes from) to some incredible tasting and beautifully balanced sparkling Cava (including one which is aged for a staggering 109 months and leaves the sediment in the bottle for maximum flavour) to red wines which exhibit real depth and complexity. A range of wines to suit all styles and budgets but always organic and always made with sympathy and as an expression of the environment from where they come. MEADOWHALL WELCOMES TAPAS REVOLUTION Gordon Ramsay named him the Antonio Banderas of cooking and, as celebrity chef Omar Allibhoy stood in the back yard of Thali Café on Chesterfield Road, tending to his metre-wide pan of paella, I could see exactly what he meant. His smooth Spanish accent and love of Spanish cooking is enthralling. Omar, who moved to the UK in 2008 having been born and raised in Madrid, hosted the pop-up dining event at Thali Café to introduce Sheffield to his new restaurant, Tapas Revolution, which will open at Meadowhall on 16 March. It’s his fifth restaurant and the only one in the north; the others are in Shoreditch, Birmingham, Shepherd’s Bush and Bluewater in Kent. So why Sheffield? “It’s an upand-coming city that appreciates good food and I feel that we match in that respect,” said Omar. “It’s a big deal. Bread is the only thing we don’t make in-house. It’s a very personal project – there is a great deal of effort, passion and detail that goes into Tapas Revolution.” Meadowhall will also be the first place to have a dedicated Tapas Revolution churrería, a hatch solely dedicated to selling churros with hot chocolate dipping sauce. 39 Creating a culture of creativity and innovation.

ACEG is a Sheffield based company that provides music tuition services to schools around the country. Founded by husband and wife Lewis and Melissa Quaye, they believe that music education can play a vital role in ensuring children retain their innate creativity into young adulthood. It’s this belief, which has lead to them working with over 100 schools in the UK. Austerity measures have imposed greater pressure on schools around the country. Resources are limited and teachers are stretched. As a result, schools are finding it harder and harder to offer their pupils the individual attention they need. Attainment has been harder to achieve, and teachers and students have felt the pressure. Will it change? We started our company ACEG because we believe it will. In fact, we feel it already has. The internet has changed everything. We no longer need to be the custodians

of knowledge. Meaning that, if we want too, we can focus our energies on the application of knowledge. Allowing us to impart new-found wisdom. If used the right way, teachers have a limitless supply of free resources that can revolutionise the classroom. Actually, it can go beyond the classroom. These resources can engage whole communities of families creating a new-found collaboration of engaged parents. “Easier said than done” I hear you say. Well maybe, but it’s surprising what can be achieved with a supportive culture. A culture of creativity and innovation. A culture that gives teachers the self-confidence to become better educators and mentors and pupils the opportunity to receive validation of their individual progress. Here at ACEG, we are focused on contributing to that culture. We believe that creative subjects like music have a valuable part to play. Because, if done in the right way, it fosters creativity and innovation and gives pupils the chance to be individuals. But we as educators need to move forward and develop. We need to use the resources we have and encourage parents to join us in supporting the personal progress of our future adults. Hip-hop heavyweight Roots Manuva brought the house down at Plug

What a weekend that was. Outlines came, saw and conquered in style.

CAN I GET A WITNESS? WORDS: PHOEBE SEYMOUR PHOTOGRAPHY: JAMIE BOYNTON

AH Outlines. So many bands, so little time. For those of you who don’t know, Outlines is a one day music festival thought up by the brains behind Tramlines. With a number of acts across six venues all over the city – it’s the perfect warm-up before the big festival in the summer. Each venue on the day had its own personality and music theme, so if your taste is as eclectic as mine, you will be able to see why choosing one place to settle in was near impossible. I started at Queens Social Club where all manner of electronic acts were welcomed, from the weird, heavy electronica of Sammartino to

the wonderful alternative pop of Polo. Singer Kat Mchugh oozed cool with vocals ranging from languid and low to high and haunting on tracks such as Visions Of Fortune and Running Deep, whilst Luke Lount’s illuminated keyboard provided booming bass which vibrated the old floorboards of the former working men’s club. Sammartino was one of the strangest acts I’ve ever seen perform. Wearing a Mexican wrestling mask and a V-neck jumper and shirt combo, he threw himself around the stage and violently gestured to the crowd as his electronically manipulated vocals buzzed

over thumping, krautrock-influenced electronica. Across the road at Skate Central Roller Disco, they welcomed a mix of indie-rock and punk bands including influential Leeds post-punk group Gang Of Four. As a crowd gathered around the stage on one side of the rink, others rock’n’roller skated on the other. O2 Academy 2 was another mixed bag with Blessa’s electronic infused indie, followed by KOG’s infectious and danceable fusion of afrobeat, funk and reggae – two of the most talented bands in Sheffield. Blessa frontwoman Olivia Neller’s gorgeous vocals flowed through chilled tracks such as Unfurl and Open Fields, but there were also plenty of upbeat tracks verging on disco to tap your toes to as well. The Harley did what they do best and hosted a number of heavier punk, rock and grunge bands. As female punk band Skinny Girl Diet’s fuzzy guitars and gravelly shouts filled the room, the dance floor quickly turned into a sweaty mosh pit. This was followed by Kagoule, a grunge rock band with pop-fuelled songs such as Glue. DINA is a new venue on Cambridge Street, which hosted a day of DJs with Bristol-based DJ Oa$is and Silver Waves, followed by Sheffield’s Wavey Tone DJs. Even the team behind September’s music and film festival Sensoria were in on the

action, with a number of music videos being shown on the big screen at Bloc Projects on Sylvester Street with scores by Sheffield acts such as folk singer-songwriter Nat Johnson and comedy band Everly Pregnant Brothers. Plug felt like the mighty main stage of this festival. Taking advantage of the big gig room and huge sound system, all of their acts were hip-hop influenced, with the exception of soulful electronic dance group Nimmo, who once supported Years & Years and are every bit as awesome. As the day went on, more and more amazing acts clashed on the timetable, but when it came to choosing a headline act, it had to be hip-hop heavyweight Roots Manuva. The charismatic rapper did a number of songs from his new album Bleed such as Hard Bastards, whilst his soulful backing singers wowed the packed-out Plug with

Don’t Breathe Out. Finally, the room erupted and all hands were thrown in the air for Roots Manuva’s bestknown track, Witness (1 Hope). As I thought back to all the vibrant venues and the variety of acts the city attracts – both local and national – I realised what a huge live music destination Sheffield is, not just on days like this, but all year round. That being said, I can’t wait to explore more of what the city has to offer at Tramlines later in the year. Outlines will return in 2017. Faunagraphic: one of the few British female eco-graffiti artists. FAUNAGRAPHIC grew up in Yorkshire, surrounded by rolling countryside in an industrial town; it is clear where her inspiration came from. Her beautiful and delicate paintings feature birds, animals, nature, female characters and an element of fantasy. Fauna has been using spray paint for nearly ten years, The Yorkshire girl’s work has graced the walls of abandoned apartments and disused factories alongside working with large international clients and also stamped her mark on snowboards, canvas, clothing and exhibitions. Faunagraphic collaborates with Rocket01, traveling together to international events, commissions and exhibitions. They class themselves as eco artists; painting British nature onto the walls of neglected buildings. Their aim is to emphasise and educate us on the beauty and diversity of nature and the impact we have on it.

The new Samsung Support Centre is a unique walk-in proposition for speedy Samsung repairs. THAT gut-wrenching feeling as your phone falls from your hand is one you’ll probably be all-too familiar with. If you’re lucky, it’s a cracked screen or a rattled motherboard – if the toilet or a puddle is involved, that’s another story. We all know there’s no coming back from total submersion, even with experts on the case. But for almost everything else that could possibly go wrong with your Samsung phone, the Samsung Support Centre on Commercial Street (between Ponds Forge and Primark in the city centre) is here to save the day. Here you’ll find eight fully-trained technicians and front of house staff that can troubleshoot whether you’ve got a cracked screen, simply want to update the software to the latest version or get even more out of your device. Manager Neil Timmins has been repairing mobile phones for 25 years and, before that, spent years repairing telecommunications devices in the army. It’s fair to say he’s got a bit of experience in the industry. “We’re a walk-in proposition for Samsung repairs,” he explains. “A customer comes in with an issue with their device and, if parts are available on that given day, we strive to achieve a repair within the hour. If it’s not too complex a problem, they leave with their phone back up and running the same day. We will, on any given visit, manage the customers’ expectations to the length of the repair.” The Sheffield shop is one of 16 Support Centres in the UK that provide this support to Samsung customers, and more are planned to launch this year. “Samsung have had this system in place for the last three or four years and it’s proved really popular with customers,” says Neil. “It’s a unique walk-in support proposition. Samsung know people can’t live without their phone for long periods, so they’ve done something about it.” There are three major components of modern phones – the LCD screen, the motherboard and the chassis that holds it all together. Then there are other smaller parts such as the

earpiece and the microphone. Neil and his team can fix all of them on-site in a matter of hours, or the same hour dependant on the issue and resolution required. Everything used in the repair is a genuine Samsung part, shipped directly to the store from the company’s base in Holland. If something has gone wrong with your phone that isn’t your fault (i.e. if you haven’t dropped it) and it’s within its two-year warranty period, the repair is free. If not, you’ll need to pay the cost of the parts plus labour, which will in turn replenish the remaining warranty term of the product or offer 90 days warranty to the parts that have been replaced, whichever is the longest. “People don’t realise how expensive these devices are,” says Neil. “Most people pay £30 a month for their contract and don’t think anything more of it, but they’re costly pieces of kit.” For more information, call 0114 327 0370 or drop into the shop.
