Studio Amaro 168 Chapel St, Windsor

Head Chef Daniel Migliaccio of Studio Amaro, a day-to-night Italian-inspired restaurant from Commune Group, shares his recipe for Whole Chicken with Black Garlic Salmoriglio, showcasing the restaurant’s bold flavours and innovative Italian cuisine.

Ingredients Method

1 whole, size 13 chicken

Brine

2 l water

100g table salt (5%)

20g brown sugar (1%)

Spice Marinade

5g coriander seeds

5g fennel seeds

5g dried oregano

5g white peppercorns 1/2 lemon, zested

Black garlic salmoriglio

2 bunches oregano, picked

1 bunch parsley, picked

2 cloves black garlic*

1 clove garlic

1 lemon, zested and juiced

1 long green chili, sliced

150ml extra virgin olive oil

For the chicken

Pat dry the chicken and turn over, breast side down on the board. Starting at the tail, run your shears up each side of the spine and cut out the backbone.

Turn the chicken breast side up, then press down in the middle of the breastbone with the base of the palm of your hand. You’ll hear a crack from the breastbone, and that should allow the chicken to splay.

In a large bowl, mix the salt, sugar, and water until dissolved. Place chicken into the brine and let sit in the fridge for a minimum of five hours.

Take out of brine and place onto a wire rack with a tray underneath. Leave in fridge uncovered overnight.

For the spice mix

In a small pan, gently toast the coriander seeds, fennel seeds, and white peppercorns until fragrant. Cool.

Place spices into a spice grinder and grind until fine.

Mix with lemon zest and dried oregano. Liberally cover the chicken skin with the spice mix.

For the black garlic salmoriglio

In a food processor, place the fresh oregano, parsley, green chili, garlic, black garlic, and lemon zest and blend until fine.

Mix in the lemon juice and olive oil and season with salt to taste. Adjust with more lemon juice if needed.

Cooking your chicken

Grill over a charcoal BBQ or pan fry skin side down first, for 15 minutes each side, or until the flesh is moist but cooked through, and the skin is golden. Using a heavy weight or press will result in golden crispy skin.

Let rest for 5 to 10 minutes, carve up the chicken into 4 pieces, with liberal servings of the black garlic salmoriglio and a good helping of quality extra virgin olive oil.

The attention to detail is evident in every aspect of the restaurant, from the exquisite glassware sourced from London via Chez to the carefully curated playlist that Glenn has personally compiled over the last 15 years during his international trips.

The cuisine at Bouzy Bar is a tantalising blend of French and Modern Fusion fare, offering a twist on classic dishes. Signature items include Duck Cigars, Bombe Alaska, and the famous Smashed Chocolate Pot, which will delight even the most discerning palates.

To bring his vision to life, Glenn has assembled an impressive team of industry professionals. Head Chef Christos Milionis, formerly of St Cloud, Tipo 00, Osteria, and Young’s Wine Room, eagerly joined the project, while General Manager Dennis Ferreira, with an impressive resume that includes stints at Attica, Vue De Monde, Jacques Reymond, and Momo, was also drawn to his vision. French Pastry Chef Kiana Doraghi, previously of Omnia, rounds out the talented culinary team.

Glenn’s passion for fine dining is anchored in his extensive experience, having visited over 35 of the top 50 Michelinstarred restaurants worldwide. This global perspective has influenced every aspect of Bouzy Bar, from the elegant design to the innovative menu.

Victoria’s Housing Vision 2051

In response to the state’s housing crisis, the Victorian government has unveiled an ambitious plan to reshape the state's housing landscape for the future. This comprehensive strategy, part of the broader ‘Plan Victoria’ initiative, aims to construct 2.5 million new homes to accommodate an expected population of 10.3 million residents by 2051.

At the heart of this visionary plan is the ‘Affordability Partnership’, a collaboration between the previous Labor Government and the housing industry. This partnership sets an aggressive target of building 800,000 homes over the next decade, focusing on streamlining planning approvals and stimulating investment in high-quality housing where it’s most needed.

Recognising the importance of balanced development, the plan places significant emphasis on regional growth.

By 2051, regional and rural Victoria are slated to see 425,600 new homes, with major regional centres like Greater Geelong, Ballarat, and Greater Bendigo playing pivotal roles in this expansion. This regional focus aims to alleviate pressure on Melbourne’s housing market while promoting sustainable growth across the state (source: Urban.com.au).

Urban density is another key focus, with plans to increase housing in middle suburbs and around major transport hubs. Areas like Boroondara are set to see substantial development, with an additional 67,000 homes planned. This approach not only maximises existing infrastructure but also aligns with sustainability goals by reducing urban sprawl (source: Property Update).

The success of this ambitious plan hinges on significant planning reforms. The government is focused on clearing the backlog of planning permits and providing certainty around approval times, aiming to expedite the construction process and minimise delays.

To support this housing expansion, the Victorian Government has pledged substantial investments in infrastructure. This includes funding for new schools, hospitals, and transport links.

While the plan has been met with enthusiasm, it's not without its critics. Opposition leaders have raised concerns about its feasibility, particularly in light of potential economic slowdowns and the need for infrastructure investments. However, the government remains confident that collaborative efforts with industry and local councils will make these targets achievable.

As Victoria embarks on this journey, the state is set to become a model for innovative and inclusive urban development.
