Serve with bread and mop up the juices.
Ingredients 4 Clarence Court Burford Browns eggs 4 fennel sausages 400g mixed pre-roasted root vegetables (squash, potatoes, carrots, parsnips) Pinch of chilli flakes 150g mixed mushrooms, sliced 2 cloves garlic, crushed Sea salt and freshly ground black pepper 300g pre-cooked mixed greens (Brussel sprouts, cabbage, cavolo nero, tenderstem broccoli) 1 pack pre-cooked puy lentils YOGA & A BREW PODCAST
Method Preheat the oven to 200°C. Start by squeezing the sausage meat out of the skins and roll into even sized meatballs. Place the meatballs into a roasting tray and pop them in the oven to cook for 5 minutes. Remove the tray and add the roasted vegetables, chilli flakes, mushrooms and garlic. Mix in the greens and lentils and cook for a further 5 minutes. Toss everything well and make 4 dents in the tray. Crack the eggs in the holes and cover the tray with foil, return to the oven and cook for around 5 minutes or until the eggs have set. Serve with chopped parsley and left-over gravy or whole grain mustard. clarencecourt.co.uk

Time to go the whole hog at the Impeccable Pig…
It’s almost two years since The Impeccable Pig opened its doors, a luxurious restaurant with unique rooms which not only transformed a former derelict pub but also put a new spotlight on Sedgefield
The Pig has become a destination in its own right, offering great food with the added attraction of being able to stay in one of ten unique rooms. And what rooms they are – all cleverly having some kind of porcine reference. Think The Piggly Wiggly, Le Cochon D’Or, Babe and The Pigsty and you get the idea. And once you’re in the rooms they certainly don’t disappoint – free standing copper baths, opulent decorations and if you decide to go The Whole Hog (literally) you can enjoy the largest suite, complete with a four seater hot tub and a private garden with its own sauna. Guaranteed to make anyone happy as a pig in….. well you get the idea. Like the rest of the world of hospitality, the venue had to close up during lockdown but it is now back with a vengeance and welcoming guests who are looking for a unique and memorable experience. With a boost in “staycations” because of the uncertainty in travelling abroad, The Impeccable Pig – which was already hugely popular pre lockdown – has see a massive amount of interest in its rooms since it reopened its doors. But even those who haven’t been lucky enough to bag themselves an overnight stay can still take advantage of the dining experience. Mindful of social distancing, the Pig has put in place a whole range of measures to keep guests safe without compromising the enjoyment of dining at the restaurant. Nothing raises the spirits like good food and that’s exactly what The Impeccable Pig has to offer. This is comfort food elevated to a new level, with a mouth watering selection of steaks cooked on a Josper grill, pan fried halibut and mussels, beer battered cod and chips, surf and turf and beetroot burgers to name but a few of the dishes. An aptly named Piglets menu keeps the children happy, with a range of pizza specials which take the humble favourite to a whole new level. There are classics such as Margheritas and Quattro Formaggi alongside unique offerings including a Braised Pork Cheek pizza with Parma ham and chorizo or the ultimate – a Philly cheesesteak with pimentos, beef butter glazed shallots, red chilis and two different cheeses. Since day one The Impeccable Pig has set up to offer an extensive wine list and its stuck to that promise. It has an incredible 170 different wines, which includes Most Impeccable- a selection from well known and much-loved producers – and Curious Creatures, a collection of unusual grape varieties which are likely to less well known. The restaurant also a large choice of spirits, including 20 different gins and ten tonics, more than 25 whiskeys and a selection of local, real ales. General Manager Pierre Bertolotti said that it was fantastic to be open for business again. “We are delighted to be welcoming guests back and have been thrilled at the response we’ve had,” he said. “It’s been an incredible two years and we are just glad that can once again let people have the full Impeccable Pig experience.”
