There’s a briskness in the air, the summer traffic has disappeared and you can get a table at your favorite restaurant without an hourlong wait… Yes, Fall is here. Ahhh...

Living at the beach means that Summer always manages to hog the spotlight (and what a wonderful summer it was!) but one of the joys of our area is that it’s truly wonderful year-round. We can celebrate it no matter what the season and Autumn is a particular favorite. It’s a time for clear blue skies and a shimmering ocean, farmer’s markets abounding with harvests, school children in new clothes waiting for the bus… this is a time of year when people settle down after the frenzy of their summer vacations and get back to more normal, real life routines — and frequently with a sigh of relief.

A Delicate Balance:

Shuenn Yang

Yin and yang is a principle in Chinese philosophy that balances opposite forces — light and dark, fire and water. Their interaction is thought to maintain harmony in the universe and influence all within it. So too does Shuenn Yang try to find that balance in his life and in the menus he creates. Shuenn — pronounced “Soon” but after years of American mispronunciation, he answers to the Irish name “Sean” — is a catering consultant and chef at Yumi, the Sea Bright restaurant he operates with longtime friend Bowie Kok, since 2005.

Regularly featured on many “best-of ” lists, Yumi has become a favorite not only among locals but also among countless diners from near and far. The restaurant has also played host for some interesting events over the years including a Beatles’-themed art show featuring the works of May Pang and Nancy Lee Andrews, former lovers of John Lennon and Ringo Starr, respectively. Now a year-round dining destination, prior to the restaurant’s opening, Shuenn and Bowie, while confident that summer business would be brisk, felt less certain about wintertime when the beach town has less dining traffic. “In the beginning, everybody was kind of curious of how it’s going to happen in the winter,” said Shuenn. 18

“But I heard a voice that said if you’re good you’ll survive in the winter. People will come from everywhere. It was a big challenge and I said I’d like to take that challenge.” The first two winters were tough, he said, because “most people did not recognize the food on my menu.” He solved that dilemma by offering a mix of more common sushi and Asian-fusion items as well as Shuenn’s original creations such as Madai Fingerlime and Ocean Avenue, Sea Bright and Fair Haven rolls. “We encouraged customers to try them,” he said. “And they kept coming back.” “Slowly they started giving trust to the chef,” said Shuenn. “And trust is essential in the sushi business.” Long before they founded the restaurant Shuenn said he had already chosen the name. In Chinese “Yumi” has more than one meaning, he explained ­— it’s a popular girl’s name, it means “beautiful,” and it’s also a term used in archery, connoting strong and powerful energy. Shuenn says he strives to provide balance in his dishes. “When it’s a hot item, I put something a little cold to cool down. With a cold item, I put a little stronger flavor to bring out flavor in that dish.” The sushi bar, too, is a balance of tastes and textures.


In 2013 Super Storm Sandy upended that balance. Yumi, like much of Sea Bright and the coast, was under water and the restaurant was destroyed and closed for seven months. Shuenn and a helper spent every day — sunup to sundown — muddling through the much, salvaging, clearing, gutting and rebuilding what they could. Sea Bright and the community came together. Volunteers came by vanloads to deliver sanitizing and cleanup supplies. It was during those times Shuenn realized Yumi had gained a place in the community. “A lot of regular customers asked when were we coming back,” he said. “That made me realize I had to come back. We were more than just a kitchen.” Starting all over from scratch was not the first time for Shuenn. When he was 15 he and his family emigrated from Taiwan and settled in Asbury Park where his lack of English-speaking skills made him feel isolated at school. He started washing dishes after school at a Chinese restaurant. “That’s the place that gave me comfort,” he said. “The chefs spoke to me.” They taught him the ways of American life — in the kitchen and in life. Shuenn’s father was head chef at Deal Country Club for 17 years and Shuenn often helped wash dishes there as well. “At the beginning washing dishes was a just a job for me, a way to make some money,” he says. “But that continued for many years and I started thinking I don’t have a diploma, I don’t speak English. I want to survive in this country and I have to find out what I can do.” Shuenn realized what he did know — and knew well — was the restaurant business. He researched, ate in all types of restaurants and learned all he could about food. He created a catering consulting business where he helps clients with everything culinary, from creating a sushi bar for an event, catering a party to starting up a new restaurant. He handles all the aspects of starting a restaurant, including designing the interior, choosing equipment, hiring and training chefs and staff and creating the menu. The whole package — from miso soup to nuts. Shuenn has created several well recognized restaurants in Monmouth and Ocean counties, including Jenkinson’s in Point Pleasant, which he still operates. But Yumi, he says, “This is my baby.” Shuenn lives in Lake Como and he balances all the hard work — he can be found at the restaurant until 2 a.m. most days — with annual vacations, usually researching and sampling the tastes and trends in the culinary world. “I went to Japan and spent time going to the fish market and eating ramen from the street vendor trying to get more information about ramen.” He says he often dreams of a dish or creation and wake up to scribble notes or draw an image. He can’t help it, he says. “Food is always in my head.”

Asked & Answered: Gassert Design

Gassert Design, headed by Stephen J Gassert, is a Red Bank-based design firm that has specialized in projects of all sizes both residential and commercial for 28 years. In addition to helping clients plan for new construction, additions and renovations, they have also assisted with marketing and graphics for various projects, as well. Although his projects extend well beyond Monmouth County, some his local commercial work includes the redesign of Beacon Hill Country Club, Monmouth Beach Bath & Tennis Club (“Big Monmouth”), Juanitos International Marqueta in Red Bank and multiple Ray Catena car showrooms throughout the area. His private residential designs may be found in some of New Jersey’s finest communities including many in Rumson, Spring Lake, Colts Neck, Sea Girt and more. We wanted to know more about the challenges involved 24


with the design and management of such projects and recently had a conversation with Stephen. Tell us a little bit about your business. Officially, the business name is Stephen J Gassert Inc — incorporated in January 1987. More commonly we are known as Gassert Design, and we’ve been located in Red Bank all along. Our goal has always been to help our clients find the creative and beautiful solutions that work for them. What would you say is your ultimate goal in your work? For all clients, we work hard to exhaust all the design options to that at the end of the day there are no regrets. To date, 95% of my clients come to me by referral, so we must be doing something well. Would you say you have a particular style? We help our clients’ projects reflect their stylistic wishes, but we also pay close attention to the setting, the character of the locale, the context of the site. Our own style may bend in any direction as a result, but we will always try to fit in to the surroundings and always, always try to remain classic. What do you find are the biggest challenges in your work? For the residential client, it is most important to find the balance between their wishes, the site constraints, the budgets, and what we can do to make their home beautiful inside and out. We want to help them

manage a process that is admittedly stressful, messy, expensive and takes longer than anyone wants. We’re willing to do the minimum to help them get their bids and permits and get going, or to be involved to the end helping with cabinetry and tile and mantels and moldings…. It would appear that you work on a wide range of projects, is that true? We have residential clients with interior or exterior renovation projects, back yard dreams, large additions, complete makeovers and new custom homes. Our commerical clients have included home builders, developers, auto dealers, beach clubs and country clubs. We have also designed store fronts, commercial shopping centers, townhomes, mixed use projects, medical office buildings…. How is the process different for a commercial project? For a commercial client, they set the priority: timing cost, efficiency, phasing… while we constant hlep push for a beautiful building. Are you a New Jersey native? I’m lucky to have grown up in New Jersey and I think we should all feel lucky to live here. Having studied in DC, and traveled Europe and the US, I still continue to find so many beautiful examples of fine buildings, towns & cities right here in our home state - large and small, old and new.

Accessories

A complement of well-edited accessories provide a finishing touch by playfully restating color choices in the leopard print and striped throw pillows, the black and white checked spheres, a black throw blanket and other table top items.

Color

Using a strict palette of stark white, black and dark woods and earth tones, color choice plays a dominant role in unifying the three functional areas within the space. The white of the kitchen cabinets and tile backsplash near the entry is echoed in the slipcovered dining chairs and the living room seating and built-ins at the far end of the room. The warm brown tones on the walls extends throughout the first floor.
