GloriouS Cornwall a County of adventure, intrigue and inspiration

Cornwall is a wonderful place. It has been voted the number one best holiday county in the 2012

British Travel Awards, and is Countryfile Magazine’s favourite British holiday location. It’s a place where your kids can run free and safe whether it be on sun soaked beaches, wildlife filled woods

or on dramatic moors. Where families can explore, children grow and memories are made. It is an

adrenaline junkie’s dream, an artist’s inspiration, a poet’s provocation, a playground and a retreat. 4 r&r magaZIne

Cooking, eating and surfing living the dream!

Welcome to the Surf Café Cookbook – this book is about cooking, eating and living the Irish way. From foraging on the beach to creating the perfect brunch to making homemade Baileys, this book encourages you to make locally produced food that’s fresh, fun, unpretentious and tasty. The perfect food for sharing with friends and family, around the kitchen table or on a blanket thrown on the ground. It’s contemporary Irish cooking with a soupçon of salty air. Most of all, this book is for the casual cook who likes delicious food that’s straightforward to make. You won’t need to shop all day for these recipes, and most will take less than an hour to make. And the Surf Café Cookbook is more than just a cookbook, with advice from local producers and useful tips ranging from how to gut fish to making crafty home accessories for special occasions. The Surf Café Cookbook is inspired by a little café right by the sea called Shells on the beautiful west coast of Ireland. It’s a place where you can get a handcrafted crab sandwich or beef and Guinness stew or a slice of tangy lemon square. The area is enchanting, combining an atmospheric village with beautiful unspoilt beaches, and a vibrant cultural heritage with an energetic community. It’s the perfect place for surfers Jane and Myles Lamberth to create, cook and live an outdoor lifestyle, and they want to share this rich experience with you. This is coastal living at its best.

The name Retallack is Cornish and traceable back to 1497. retallacks were mostly miners and farmers. although the name was rare, many Cornish people left for the united states and australia in the 1850s and the name spread around the world. The resort is named after a local farmer called john retallack, who lived here in the early 17th century and the old farmhouse can still be seen. To the north of the resort is an ancient ridge-line route to Wadebridge that passes retallack Barrow (an ancient tumulus grave) and The Nine maidens (an ancient row of standing stones).

SSSSSHHH!

Retallack Resort is surrounded by woodland and farmland so there’s a variety of wildlife you can see – but only if you’re very quiet! you can watch barn owls at dusk, cruising for voles on the northern edge of the resort, or listen for the hooting of local tawny owls by night. We have an abundance of birdlife including birds of prey, gold finches and woodpeckers as well as resident water fowl such as ducks and Canadian geese on the resort lakes. Badgers use the woodland by the Polzeath houses as their home, as well as usual British mammal life such as rabbits and stoats. But you must be very quiet to see them!

Slack Lining - slack lining is a circus skill that is similar to tight rope walking. spins, jumps and tricks are what you would hope to aim for.

FOOD: wHen you’re staying at retallaCk resort, try tHis reCipe by our CHef JaMes natHan For a local dish that’s straightforward to make

and extremely tasty you can’t beat a bowl of fresh Cornish mussels. James shows us how to put it together in a few easy steps.

PORTHILLY MUSSELS WITH CAMEL VALLEY WINE AND OYSTER SAUCE Cooking mussels well basically means ‘hot and fast’, so that they steam open quickly and don’t start to lose their plumpness. mussels are a chef’s dream ingredient because they encapsulate the modern ethos of cookery – good quality mussels cooked simply yield a great tasting dish. one of the best seafood cooking liquors for sauces is the pan juice given off by mussels. you barely need to do anything to make them amazing… 1. mix together the chopped ginger, garlic, oil and oyster sauce. 2. in a separate bowl mix the wine, soy sauce, cornflour and sugar. 3. Find a large wok or saucepan with a lid. Heat the pan over a high heat. add the oyster sauce mix and briefly fry for about 10 seconds, stirring so it doesn’t burn. 4. add the mussels to the hot pan and coat in the sauce. after about 10 seconds pour over the wine mixture and cover the pan with a tight fitting lid. Turn the heat down slightly and allow to cook for about 2 minutes by which time all the mussels should have opened. if they are still closed, recover and cook a little longer. 5. When most of the mussels are open, remove from the heat and divide them between serving bowls. 6. scatter over chopped coriander and spring onions. When you’re at retallack resort you can pick up fresh mussels at rick stein’s deli in Padstow and bring them back to cook them in your own kitchen. it’s most definitely worth it!

10 r&r magaZIne

Serves 2 – 3 people • ½ tsp each of chopped ginger and garlic mixed with a little cooking oil • 2 tsp oyster sauce • about 600g per person of picked Porthilly mussels • 50ml camel valley baccus wine • 2 tsp soy sauce • 1 tsp cornflour • ½ tsp sugar • 1 tbsp chopped spring onion • 1 tbsp chopped coriander

James’s Porthilly Mussels are available in The Green Room Restaurant, download the full menu at retallackresort.co.uk.

James won the BBC’s Amateur

famous kitchens in Europe,

including Michel Roux Jr’s, Michael

This year James hopes to

establish The Green Room at

Retallack Resort as a destination

restaurant, incorporating the best

of the local Cornish produce with a laidback bistro style. He explains: “I’m really looking forward

to driving the restaurant forward. I’ll be drawing on my experience of working with some of the

top chefs in the world, but of course I’ll also take inspiration from

the fantastic local produce on our

doorstep here on the

north Cornwall coast.”

James Q&A

Favourite local surf spot? That would be Harlyn but I also love a Mawgan Porth low tide session! This area is good because it’s varied from big wide open faced beaches to more sheltered breaks. What gets you stoked? Being immersed in the sea. It’s the adrenaline that gets me stoked. What’s your favourite dish on the menu at The Green Room restaurant? Crab linguini with chilli, lemon grass, sea lettuce and coconut. How important is it to source your ingredients locally? The closer the food the fresher it is. I’m very interested in the provenance of food, that’s why I came to Cornwall. I also think it very important to support local business so that artisan producers can create quality produce. How do you rate Cornish produce? Cornish produce is so varied – meat, fish, shellfish, vegetables, sea veg, and even coffee all come in abundance from this county. These days people have absolutely no awareness of where the food comes from but in Cornwall you can see it growing, then you see it in the shops. Cornwall is a massive natural larder that I live in!

kernowfornia Cornwall is the country’s best extreme sports playground

The locals call it Kernowfornia. A play on the “Kernow” meaning Cornwall and “fornia” a reference to the

California style extreme playground it has become.

In fact Cornwall probably has more to offer than the west coast of America. The landscape that has inspired John

Betjeman, Virginia Wolfe and Daphne Du Maurier has also inspired generations of thrill seekers to push their limits.

Surfing is the obvious draw, with hundreds of beaches

to choose from and countless surf schools, but Cornwall has more. With hills, coves, trails, and two coasts to explore, it is also home to world class windsurfing,

kitesurfing, kite buggying and SUPing. There are also

the nationally acclaimed skateparks of Wooden Waves

and Mount Hawke within easy reach. The nearby Eden

Project has the ‘SkyWire’ – at 740 metres it’s the longest

zipwire in England. The south coast provides water-skiing, wakeboarding, sailing, diving, and you can even go cage diving on the hunt for the Atlantic’s sharks…

Not enough? Try the 70mph go karts on the UK’s

largest carting circuit five miles away at St Eval, the rush of cliff jumping and coasteering, or maybe even book yourself in for a tandem sky dive with the Cornish Parachute Club

for a mile high rush. From horse riding on beaches, moors

and woods to traversing the coastpaths on mountain bikes, Kernowfornia is a thrill seeker’s dream. And all of this

within easy reach of your holiday base at Retallack Resort. And the fun doesn’t stop there. On resort at Retallack

Resort there is a BMX track, slack lining and the Pro-Flow club on the famous FlowRider, so there is never a dull

moment or a reason to rest. There is no other county in the country that can offer more, and Retallack Resort puts you right at the heart of the action.

Coasteering is basically legalised cliff jumping and cave diving, and is one of those sports pastimes extremists like to dismiss, until they are standing on the edge of a 30 foot ledge, then it takes on a slightly different slant… Qualified instructors with full safety gear will take you and your family on an afternoon to remember. And you may even end up swimming with seals, or dolphins… Try coasteering with Bare Feet Coasteer.

Kernowfornia’s beaches are world renowned, with the Atlantic throwing up rideable waves somewhere pretty much every day. Every main beach has its own surf school so plenty of advice for the novice, while two coasts and access to the wilder North Cornish coast give plenty for the expert to explore. For the beginner, the surf schools offer the best value for money, providing the huge foam boards and wetsuits if needed. The instructors will run you and your children through beach and ocean safety essentials that will stand you in good stead for beach days to come. They will then take you through all the aspects of surfing technique on land before accompanying you in the water for your first rides. Although a difficult and strenuous sport for experts battling huge waves, the success rate for novices is quite remarkable, with good instructors getting 8090% of young pupils riding waves on their feet in the first lesson! A surf lesson will leave you feeling like nothing else – and best of all it’s not weather dependant. If it’s a rainy day what better way of having fun than pulling on a warm wetsuit and

diving in the sea?! Retallack Resort has its own surf shop stocking a huge O’Neill wetsuit and technical wear range. For further information or to find surf schools in the area check our website.

Relaxing in the 4 bedroom Eden Lodge.

Personal experience You can’t beat Cornwall for an out of season break. Here’s what Jackie Offenbach had to say about her Retallack Resort holiday “Self-catering” and “holiday” were two words I always thought sounded like a forced marriage. I would never envy friends who’d take off at half-term, their cars laden with children and Tesco carrier bags. But I get it now, or at least I get the five-star version somehow converted me. As the wild weather raged around us, it was so warm and cosy and clean. When I think of it now, I have this picture in my mind of George and John sitting on the sofa together, John doing his sudoku and George his word puzzles. Let’s say it’s an image of harmony and intellectual endeavour that’s not so common in our real life. In the mornings we’d watch dawn break over the eastern horizon through the huge picture windows, enjoy a relatively stress-free breakfast and then head over to the clubhouse for a swim in the heated 15-metre pool. While the children played in the pool, we’d take it in turns to escape to this eucalyptus-smelling sanctuary with its twinkling ceiling lights and mosaic tiles. It might not be on the coast but Retallack Resort is perfectly placed for day trips to Cornwall’s most famous beaches and fishing villages, which is how we came to be on our bikes in Padstow, having cycled down the Camel Trail. And, yes, Alice and George did cycle five miles back in the rain, surprisingly without complaint. Sure, it would have been nicer in the sun but I felt I’d learned something new about the children. Jackie Offenbach is a writer for national papers and magazines. She was so taken with her holiday experience at Retallack Resort that she has bought one of our lodges. 20 R&R MAGAZINE

year and hearing their news – and of course that’s just one more excuse for jason to be found in the bar having a beer and catching up!

THe ownerS

Owners Amy and Jason are hands on and passionate about making sure everyone is having a good time while they’re on holiday at Retallack Resort.

What’s the best thing about running the resort?

Amy: since we began developing our resort we have made friends with so many families who holiday here. one of the best things is seeing them return every 26 r&r magaZIne

Jason: Quiz nights where i get to catch up with lots of new and old faces and of course enjoy a beer with them. But probably the best thing is getting creative with amy about the future. We are so lucky that we have another 100 acres to develop into an even more awesome resort.

Where’s your favourite Cornish beach?

Amy: jason proposed to me on Boobies Bay and so of course i am very fond of this beach. The walk along Trevone, Constantine and over to Boobies is so beautiful and now jago is three he loves the rock pools there and building huge

sand castles... To only knock them down in seconds! Jason: We have only just begun to explore the south coast and have started to rent a tiny boat at mylor for a few hours and chug up the estuary. We then drop into st mawes, which is a nice protected bay, to play with the kids and to have a quick beer in the local pub.

What tips do you have for keeping the kids entertained?

Amy: my top tip is to buy week long passes for places like Crealy and dairyland. Buying them on your first day means you can dip in and out of them as much as you want through your holiday and you get so much value if you return a few times – even if it’s for an hour or so before tea. Jason: We love exploring new beaches and the best bit is that they are all free! We pack everything into the car and play for hours. Cycling the Camel Trail is also a big hit in our family.

The Pied Piper

As the Kids Activities Coordinator at Retallack Resort, James has boundless energy and a positive attitude. Whether it’s Frisbee golf, building fires in the woods or cruising round on electric skateboards, James is the favourite with all the kids on resort.

James, what do you like about your job?

I like to teach flowriding as it is accessible to all and no one leaves the ride without learning and achieving. This accessibility, hand in hand with our friendly coaching style, makes a flowriding session the most rewarding activity I have had the pleasure of teaching.

would start with coaching kids bodyboarding on the FlowRider. These guys have an energy that really fuels the session. After that I would go on a Powered Skateboard tour, off and on road through the entire resort. Then it would be Lunchtime Picnic club with the teen crew planning our afternoon activities program which would probably include Dodge Ball, Frisbee Golf and Break Dancing. My day would have to finish with a Pro-Flow session. These kids return to this session daily throughout their stay at Retallack Resort which allows them to progress and build upon the skills learnt in previous sessions. This is the

most rewarding of my clubs on resort as riders will take the most away and I will see and feel the most achievement.

If you have a problem then Guest Concierge Geoff is the man to solve it. Ask him anything about Cornwall, the resort, the houses, information on where to go and what to do and he will know the answer. He loves Cornwall and had the chance to play professional football for Manchester United but decided he couldn’t leave his beloved Cornwall. He’s a one off character and he goes the extra mile for his guests. It’s true to say that Retallack Resort wouldn’t be the same without him.

Geoff what makes you laugh?

My good friend and comedian, Jethro.

If you could go back in time and change one thing what would it be? I’d pick the winning Lotto numbers!

If you could meet anyone dead or alive who would it be? It would be George Best, and I would ask him if he would like a drink with me.

A Cornish cream tea - jam or cream first?

What has been the biggest achievement in your working life? Spending 27 years as a retained fireman.

Jam first, cream on top but Cornish cream only.
