There are many great reasons to visit Royal Hawaiian Center in Waikīkī during your stay on O‘ahu, but one stands out above the rest: the food. One thing we all have in common is the need to eat, and Royal Hawaiian Center’s amazing menu selections are ‘ono loa – totally delicious! P.F. Chang’s (Building A, Lewers St.) offers cosmopolitan-influenced Chinese fare in a festive setting. Chibo Okonomiyaki, also in Building A, features excellent offerings, from shrimp and fresh ‘ahi to fine wagyu beef, fired up on teppanyaki grills. Heading towards Diamond Head, Building B is where you’ll find the Pā‘ina Lānai Food Court (Level 2) with an array of favorites including sandwiches, salads, burgers, pizza, Korean barbecue, ramen, local plate lunches and more. Doraku Sushi – an ingenious Japanese-Caribbean fusion with trendy ambience – is on Level 3. Steps away is Restaurant Suntory with sumptuous, traditional Japanese fare. Bordering The Royal Grove is Il Lupino Trattoria & Wine Bar (Building B) offering indoor and outdoor dining and authentic Italian cuisine. Wolfgang’s Steakhouse by Wolfgang Zwiener of New York boasts the very best dry-aged steak in the islands (Level 3, Building C). he Royal Grove at Royal Hawaiian Center is more than a beautiful garden—it is the cultural and spiritual piko (center) of this property, known for generations as “Helumoa.” Once home to ali‘i (nobility), Helumoa was an expansive ulu niu (coconut grove) where 10,000 trees grew. In breathing new life into this ‘āina (land) and re-establishing a Hawaiian sense of place, the Royal Grove has become an icon—an inviting oasis in the heart of Waikīkī. Dozens of coconut trees now shade the area, and an array of native Hawaiian flora (lower left) provides an elegant green backdrop for cultural performances and classes. Above The Grove is the Kahalaopuna Bridge, named for the princess of Mānoa Valley, inland of Waikīkī. Kahalaopuna’s beauty was likened to an ānuenue (rainbow). Royal Hawaiian Center is owned by Kamehameha Schools, established in 1884 by the will of Princess Bernice Pauahi Bishop. In her honor, Ka ‘Ikena Ho‘oulu a Pauahi (the inspired vision of Pauahi) was created by Kamehameha graduate Sean K.K.L. Browne. The bronze statue (above) illustrates Princess Pauahi’s love for keiki (children). The Kaulani Heritage Room is where short films, cultural messaging and a colorful mural celebrate the vibrancy of Hawaiians and share the heritage of this wahi pana (legendary place). or many, the most obvious colors to represent Hawai‘i are blue and green: the ocean, the sky, and the landscape alone cover countless shades and hues. While polū, (Hawaiianized “blue”) is widely used, uliuli really describes the deep blues and greens in our environment.
Waiho‘olu‘u is color in Hawaiian, but more specifically refers to dyes. White kapa or bark cloth would be soaked (ho‘olu‘u) in water (wai) infused with a number of organic materials to create a range of hues. Kapa ‘ōlena is a prominent example of native turmuric, ‘ōlena, creating rich yellow cloth used in ceremonies. Lenalena, ‘ōlenalena, hālena, pōlena and melemele are all shades of yellow. ‘Ōma‘oma‘o is green, and is a part of the name Wahine‘ōma‘o, green woman, a companion of the goddess Hi‘iaka, always adorned in ferns and other forest greenery. Wai‘ōma‘o (an O‘ahu place name, deep in Pālolo Valley) means “green water,” suggesting a mountain pool or stream filled with limu (seaweed) or moss.

‘Ula‘ula, red, is revered by Hawaiians and is difficult to replicate through the waiho‘olu‘u process. But turn to the natural environment, where red is found in lehua blossoms of the ‘ōhi‘a tree, sacred to Pele, the fire goddess. They seem to mimic the hulu (feathers) of two mountain birds who feed on lehua nectar. The ‘apapane and ‘i‘iwi are honey creepers whose prized hulu were gathered by expert kia manu (bird catchers) for use in royal insignia including ‘ahu‘ula (cloaks), mahiole (helmets) and lei hulu. The yellow variety of Pele’s favored pua is the lehua mamo that sometimes grows next to its ‘ula‘ula relative, creating a vibrant red-and-yellow display. These dominating colors in Hawaiian feather

work are recognized as royal colors. Primarily black, ‘ō‘ō and mamo birds provided only a few yellow feathers, the most valuable in chiefly regalia. Our ancestors developed ingenious methods to snare birds in such a way that they could be released after a three or four feathers, less than an inch in length, were plucked. At dawn and dusk, the heavens are ablaze, lit by the rising and setting sun. The pinkish hue is called wena, reminding us of the legendary Hawaiian scholar Kawena Pūku‘i. Tūtū Kawena, as she was known in her elder years, was from Ka‘ū on Hawai‘i Island, where the sacred fires of Pele are described as pūnono ‘ula — glowing red. On the slopes of Maui’s famous volcano Haleakalā, the stately, unusual-looking silversword or ‘āhinahina boasts silvery leaves. Pa‘iniu, another silvery native, has narrow leaves with an underside practically metallic in its appearance. Ke‘oke‘o means white, as does kea. snow goddess Poli‘ahu and her sparkling sisters. ‘Ili kea means fair skin, and was a term assigned to early American and European settlers. Koa‘ekea is the white tropic bird (koa‘e) whose long white plumes were collected for making kāhili, feathered standards that would herald the ali‘i on formal occasions. ‘Ele‘ele is a town on Kaua‘i whose name means black. Kapa ‘ele‘ele is black cloth worn only on specific occasions. Limu ‘ele‘ele, meaning black seaweed, is a slimy delicacy that is really more dark green than black. A variety of kō or sugar cane, is kō‘ele named for its dark purple, almost black, stalks. Ao ‘ele‘ele are dark clouds that bring rain to nourish the ‘āina, the land, and pō ‘ele‘ele — dark night — is a time for rest and rejuvenation. Ua nani ke ānuenue, pi‘o maila i luna begins an old mele (song) saying: “So beautiful is the rainbow as it arches above.” Our kūpuna viewed rainbow forms including ānuenue, pūnohu ‘ula and uakoko as divine. of Mānoa valley — Kahalaopuna, for whom the bridge at Royal Hawaiian Center is named – was the child of Kuahine and Kahaukani, Mānoa's resident rain and wind. Her stunning was likened to rainbows that regularly appear there to this day. Hala is the pandanus tree whose male species bears white hīnano blossoms. ‘Ōpua hīnano are billowing clouds on the horizon, white like the hīnano. Female trees bear fruit that look somewhat like pineapples. As the heavy fruit ripens, individual sections or “keys” fall, dotting the ground with yellow, orange or red. The colored tips are strung into fragrant, symbolic lei. Dried leaves (lau) are woven into moena lau hala or mats. Pōpolo is a medicinal plant whose dark berries are also used in dyes that yield varying shades of poni, purple. Poni ‘āhiehie is lavender, the color of koali and pōhuehue, relatives in the morning glory family. Both have medicinal uses as do many plants in the traditional Hawaiian landscape. With the more recent 19th and 20th century introductions of tropical flora to our islands, nature’s palate welcomed more purple with orchids and crown flower, white pīkake and ginger, green pakalana and lokelau (green rose), red anthuriums and carnations, and many more that we enjoy today. Sometimes it’s difficult to pinpoint a specific hue within a pattern on a mu‘umu‘u (long Hawaiian dress) or aloha shirt. Locals may dub it kalakoa, colorful, a word derived from calico fabric brought to Hawai‘i by American missionaries 190 years ago. Keu a ka nani ‘o Hawai‘i nei i nā waiho‘olu‘u like ‘ole: Hawai‘i is made even more beautiful with its myriad colors — kalakoa, for sure!

or centuries before Western contact, Native Hawaiians made their own cloth from the pounded bark of the wauke bush. It was called kapa, and it was so finely crafted that Captain James Cook wrote of it, “One would suppose that they had borrowed their patterns from some mercer’s shop in which the most elegant productions of China and Europe are collected.” Quilting with fabric, needle and thread was likely introduced to Hawaiian women aboard missionary ships like the Thaddeus, which is said to have hosted the wives of two reigning chiefs. The result is a distinctive hybrid with roots both in Hawai‘i and New England, and an interesting parallel across two very different communities. Quilting has always been considered to be a storytelling medium. The protest quilt of Queen Lili‘uokalani that sits in ‘Iolani Palace certainly tells a story, one too long and complex to fit here. Commonly, Hawaiian quilts feature large symmetrical patterns, which are often inspired
by plant leaves, such as ‘ulu, breadfruit, with shapes repeated symmetrically creating the intricate design effect of the cutout classroom snowflake. A wide variety of gorgeous, handmade Hawaiian quilted bedspreads, wall hangings, pillow covers and countless small goods (eyeglass cases, pincushions, bags, and even educational toys for children and baby accessories) in 100 percent cotton is available at Royal Hawaiian Quilt (Building A, Level 2, (808) 926-0678). The shop specializes in custom-made quilts, says shop proprietor Mrs. Kim. “If you want something that you do not see here, we can make it for you.”

WELCOME TO BEIJING There’s a short list of authentic Chinese restaurants in this town, and Beijing Chinese Seafood Restaurant is on it. Start with the ever-popular Peking duck, then move on to grassy, fresh chive dumplings, dipped in soy and hit chili sauce, their pan-fried undersides pleasingly crisp. Next, sample the fried prawns with roasted garlic: juicy, golden-crisp prawns wok-tossed with a mixture of roasted garlic, green onion and red chili. A simpler preparation, the choi sum in garlic sauce is a classic dish featuring stir-fried local choi sum, the Chinese vegetable that’s sort of like a cross between asparagus and bok choi. “Most vegetables come from local O‘ahu farms,” says owner Jimmy Wong with pride. TOUR OF CHINA The pan-Chinese cuisine at P.F. Chang’s is a familiar and fun choice. Operating Partner Eli Locke recommends having some appetizers to start. “We call them pupu.” You can try a variety of dishes, not just one entrée.” Chang’s Chicken Lettuce Wraps — savory chopped chicken with nuts and herbs, served with crisp lettuce leaves — are perennial favorites. NEW YORK, NEW YORK A place like this is “something you don’t see here,” says General Manager Bill Nickerson. “It’s a traditional New York City Steakhouse,” right in Waikiki! The rich mahogany interior plays against swaying palms on the lanai, creating an old-world ambience with an island touch. A more perfect environment in which to enjoy a perfectly seared cut of USDA prime beef cannot be found. Wolfgang’s Steakhouse by Wolfgang Zwiener dry-ages every single cut on the premises. FIRST CLASS TO JAPAN Restaurant Suntory is the place to go “all out” on an authentic Japanese dining experience. Widely recognized as a pinnacle of Japanese cuisine in Waikiki, it’s the sole remaining original tenant of Royal Hawaiian Center. “You don’t stay in business for 30 years without excellence,” says General Manager Aki Peters. To really pull out all the stops for a special occasion, order the washugyu (Kobe-style beef ). “It costs more, but it’s just beautiful. TERRIFIC TEPPANYAKI A meal at Okonomiyaki Chibo Restaurant is dinner and a show. Specializing in teppanyaki, the Japanese cooking style that takes place on a flat grill right at your table. The talented chefs make the food look great and taste even better. “It’s fun food,” says Manager and Chef Harry Huynh. “I throw a bunch of stuff on the grill, and everyone shares.” The house specialty, okonomiyaki, is a Japanese pancake that is cooked to order with nearly any ingredient imaginable and cut into wedges like a pizza. It’s a classic comfort food in Japan. During the week, this restaurant is packed for lunch due to daily specials such as grilled rib-eye steak, fresh ‘ahi, and totally addictive garlic shrimp. orld-famous Kona coffee is a prized and remarkable Hawaiian crop. On Hawai‘i, the Big Island, the narrow “coffee belt” is in the Kona district. There, on the slopes of Hualālai and Mauna Loa volcanoes, coffee plants luxuriate in perfect growing conditions: volcanic soil, warm weather and many dedicated farmers upholding a centuries-old legacy. The coffee is supremely rich in flavor and aroma. So distinctive are these beans that, in order to be labeled “Kona coffee” they must be at least 10 percent pure Kona. (Though purists insist one-tenth is not nearly enough.) Today many of Kona’s coffee farms give tours, and even large coffee house chains are riding the wave of its appeal. Island Vintage Coffee carries 100-percent, unadulterated, locally roasted Kona beans. Its Peaberry is robust, made from prized coffee cherries (known as peaberries) that make up just one-twentieth of a typical coffee harvest. The shops also offer flavored pure Kona roasts such as mellow Vanilla Mac Nut and nutty Coconut Cream, as well as chocolate-covered beans and gift baskets. At islandwide Starbucks locations, you can find packaged 100-percent Kona coffee, which is a fantastic gift or souvenir.

he show’s name, “ROCK-AHULA!” says it all. It’s taken from the song “Rock-A-Hula Baby,” which was made famous forever when Elvis Presley sang it in the 1962 movie “Blue Hawaii,” filmed right here in Hawai‘i. This quick reference guide, along with pronunciation tips, will help you learn more about the people behind the names: Kalākaua (kah-laah-kow-ah) Avenue: The main thoroughfare in Waikīkī is named after King David Kalākaua. He ruled the Hawaiian Islands from 1874 to 1891. He was nicknamed the “Merrie Monarch” because he was a patron of the arts and revived hula—which had been banned in the mid-1800s by missionaries— and built ‘Iolani Palace in Downtown Honolulu, the only official royal residence in the U.S. Kūhiō (coo-he-oh) Avenue: This street honors the memory of Prince Jonah Kūhiō Kalaniana‘ole. Known as “The Citizen Prince,” Kūhiō was a delegate to Congress for nearly 20 years after the Hawaiian Islands were annexed by the U.S. He passed the Hawaiian Homes Commission Act, a program returning a portion of lands in Hawai‘i that were confiscated by the U.S. to native Hawaiians. Lili‘uokalani (lee-lee-ooh-ohkah-lah-knee) Avenue: Named after Hawai‘i’s last monarch, Queen Lili‘uokalani. She inherited the throne in 1891, but was deposed by a coup of American and European businessmen two years later.
