Lafayette County is of course known for its ATV Cheese Trail, but the real cheese trail may be the roads linking the working cheese factories that serve as the lifeblood of the county.

Down our trail just north of Darlington on Hwy. F you will fi nd Brunkow Cheese, makers of a number of great cheeses including Brun-uusto, a baked cheese you have to taste to believe. Brunkow has a shop open daily to taste and purchase their products.

Heading into Darlington you will fi nd Mexican Cheese Producers, Inc. founded in 1994 by Miguel and Martina Leal. Producing the highest quality, authentic Mexican cheese, cream and yogurt products, MCP leads the way into new and growing markets. Their products are available at two Mexican grocery stores in downtown Darlington and on the fi nest Mexican dishes nationwide.

At the crossroads of Hwys. 23 and 11 you will fi nd the Roelli Cheese Company, a family owned business. Roelli General Store offers grocery items, beverages, ice cream cones and is a great place to sample the varieties of cheese they offer. The small batch artisan shelf cured Dunbarton Blue is simply amazing, found from Bistro Campagne in Chicago to Zabar’s in New York not to mention Whole Foods coast to coast.

Wisconsin Whey Protein is a manufacturer of highly purifi ed, regular, and instantized, Whey Protein Concentrate powder (WPC-80) and Whey Protein Isolate (WPI-90). Their products are designed to meet the requirements of numerous value-added food applications and is sold both domestically and exported. They are an affi liate of Stainless Technologies LLC, and are headquartered in Wisconsin. Their facilities are located in Turtle Lake and Darlington, WI and were greenfi eld projects built in the past few years to specifi cally produce our products. A proprietary membrane process, designed, engineered, and fabricated by Stainless Technologies, is used to convert Whey to Whey Protein Concentrate. In Darlington, they are also constructing integrated lactose and cheese plants to add to our high quality product offerings.
