Nancy Lee (Post) Betts age 68 of Janesville formerly of Avoca, passed away at home on Tuesday, February 8, 2022. She was born in Richland Center, on February 7, 1954. The daughter of Douglas and Marcie (Rosenau) Post. She married John Betts in Avoca on September 29, 1984. She enjoyed playing card games and doing cross stitching with John. Nancy loved cats and dogs. She also loved Elvis Presley. She loved watching his movies and listening to his music. Nancy will be remembered as a loving wife, sister, Aunt, Great Aunt, sister-in-laws and as a great friend. Nancy is survived by her husband John Betts, Siblings: Marilyn (Richard) Jensen, Jim Post, Ernest Post, Lou Ann (Carl) Custer and Mike (Sharon) Post. Sister-in-laws, Cheryl Betts and Sharon Betts; Brother-in-laws Ray (Jan) Betts, Ron (Chris) Betts, Bob (Nancy) Betts, Richard Betts, and David Betts. Nieces: Jessica (Travis) Offerdahl, Jody Post, Danielle (Jesse) Pauls, Naomi Post, Amanda Post, Kimberly Post, Kelly Custer, Christy (Cole) Wunnicke, Christine Peltonen, Tricia (Matt) Bochte, Ariana (Joey) Mauro. Nephews: Brandon Post, Josh (Michelle) Post, Robbie (Tammy) Post, Jesse (Lacey) Post, William Post, Rodney (Michelle) Post, Shayne (Kristi) Custer, Aaron (Stephanie) Betts, Nathaniel (Aimee Frenson) Betts. Many great nieces, nephews, cousins and many friends. Nancy is preceded in death by her parents, Siblings: Rodney W. Post Sr., Donna Post and Carolyn Post, nephew Jeremy Post and Aunt Enda (Pete) Moody. A get together at the cemetery in Avoca will be held at a later date. Masks preferred but not required.
Gilbert A. Moe Gilbert A. Moe, 90, of Bosstown, died Tuesday, February 22, 2022, at Soldiers Grove Health Services. He was born January 31, 1932 in Bosstown the son of Casper and Hanna (Goplen) Moe. Gilbert served in the US Army serving in Korea. After his honorable discharge he worked as a cook in California. Gilbert was married to Kathleen and the couple had one son and adopted three daughters. He traveled around the country working and moved to Edgerton, Wisconsin in 1963 to work as a plumber and after his retirement from plumbing he worked at a used tire shop until his retirement in 1997. He was united in marriage to Beth Richie on August 13, 1967. Gilbert enjoyed fishing, NASCAR, playing cards, Yahtzee, bowling and spending time with his grandchildren. Gilbert is survived by his children: Joy Wells of Riverside, CA, Janet Hunton of Riverside, CA, Kathy (Dale) Lee of Parrent, ID; Gilbert (Jenny) Moe of Boscobel; Sister: Lillian Veld of Fennimore; many grandchildren, great-grandchildren, great-great-grandchildren; many other relatives and friends.Gilbert was preceded in death by his parents, wife Beth, son Craig Moe, brothers and sisters Mildred Carter, Alice Fowler, Norris, Orville, Darwin, Wes, and Fay Moe, and two grandchildren Barbara Hurley and Fredrick Hurley. Funeral services were held on Saturday, February 26, 2022, at 3:00 PM at the Pratt Memorial Chapel in Richland Center. Military rites followed the funeral service. Visitation was Saturday, February 26, 2022, 1:00 PM until the time of the service at 3:00 at the Pratt Memorial Chapel. The Pratt Funeral and Cremation Service assisted the family with their arrangements. adno=274901

When her son started playing baseball, Michelle McBride discovered an empty niche in the world of sports drinks. “We didn’t want him drinking traditional sports drinks because they’re filled with artificial ingredients and too much sugar,” says McBride, an entrepreneur. “We tried some natural options, but he didn’t like the taste. And I learned that they provided no better hydration than plain water.” So McBride studied up. She found solid evidence that milk is extremely effective at hydrating the human body. “When I saw that, I thought, ‘Wow! Milk is packed with electrolytes and all of these other nutrients — I really should be able to make a sports drink out of it,’ ” McBride says. McBride enlisted the help of several experts, including an experienced sports nutrition scientist. She also started working with a lab in her home state to formulate prototypes using milk. But the taste wasn’t quite right. Following a suggestion that she seek out a dairy scientist, McBride contacted the Center for Dairy Research (CDR) and connected with K.J. Burrington BS’84, MS’87, who was dairy ingredients applications coordinator at
shelf-stable sports drink that would come to be known as GoodSport. McBride was pleased with the look of it. Next was the taste test. “I remember K.J. and I toasted cheers with our little sample cups, and then we tasted it,” McBride says. “Right away, I knew we had done it, and I literally cried tears of joy right there with K.J. in the lab. I was so happy.” Independent research shows that GoodSport performs as well as it tastes. With support from Dairy Management, Inc., Penn State University studied GoodSport’s hydration efficacy by testing it against water and a traditional carbohydrate-based sports drink. The results, published in Nutrients, show that milk permeate’s natural combination of electrolytes and carbohydrates promotes the body’s ability to retain more fluid at a cellular level than its counterparts. “They found that GoodSport stays in the body and provides hydration more than two hours after it’s consumed,” McBride says. “The results were significant. There’s real science that goes on behind hydration. It’s very important that you have the right type and level of electrolytes and the right balance of carbohydrates.” Looking back on the product development phase, McBride says she is grateful that she connected with CDR. “We had help troubleshooting a ton of issues that will come up with any dairy project,” she says. “And any one of those issues can seem insurmountable if you’re trying to solve them by yourself.”

How Agricultural Technology Can Help Improve Sustainability
National Cattlemen’s Beef Association The popular CattleFax Outlook Seminar, held as part of the 2022 Cattle Industry Convention and NCBA Trade Show in Houston, shared expert market and weather analysis today. Cattle price and profitability trends for producers are pointed in the right direction, even as challenges and uncertainty persist with continued disruptions from the pandemic. While issues around labor and packing capacity have lingered, both are expected to improve in the year ahead. These expansions in capacity combined with strong global and domestic consumer beef demand suggests increased profitability across segments, signaling a market that is healthier and more stable in the year ahead, according to CattleFax. Kevin Good, vice president of industry relations and analysis at CattleFax, reported that U.S. beef cow inventories have fallen more than 700,000 head from last year and are off nearly 1.6 million from cycle highs. This year, the beef cowherd will near 30.1 million head. “Drought, market volatility and processing capacity challenges affected 30 to 40 percent of the cowherd over the last year. Without an improvement in weather and profitability, at least 250,000 more head will be liquidated in 2022,” Good said. The feeder cattle and calf supply will be 675,000 head smaller than last year, totaling 25.5 million head. Fed cattle slaughter will decline 400,000 head lower compared to last year, at 25.7 million head. Commercial beef production will contract over the next several years starting with a 2 percent decline in 2022. Good forecasted the average 2022 fed steer price at $140/cwt, up $18/cwt from 2021, with a range of $130 to $155/cwt throughout the year. All cattle classes are expected to trade higher, and prices are expected to improve. The 800-lb steer price is expected to
average $172/cwt with a range of $158 to $184/cwt, and the 550-lb steer price is expected to average $205/ cwt, with a range of $180 to $230/cwt Finally, Good forecasted utility cows at an average of $75/cwt with a range of $65 to $85/cwt, and bred cows at an average of $1,850/head with a range of $1,700 to $2,000 for load lots of quality, running-age cows. Consumer demand for beef at home and around the globe remained strong in 2021, a trend that will continue in 2022, especially as tight global protein supplies are expected to fuel U.S. export growth. This will also drive beef prices from end-users to consumers to continue higher in the coming years. While U.S. median household income increased in 2021, historically high inflation is affecting low-to-middle income Americans the most. Inflation is also driving beef prices to a higher trading range. The USDA AllFresh Beef Retail Price should average near $7.15/lb this year, ultimately resulting in more margin in the system. According to Good, wholesale demand will likely slow in the coming year, but cutout value should hold steady near $280/cwt on average for 2022. Global protein demand has continued to rise, and U.S. beef exports are expected to grow by 5 percent this year to 3.7 billion pounds. The increases were led by large, year-over-year gains into China, and Japan and South Korea remaining strong trade partners for protein. “The tightening of global protein supplies will support stronger U.S. red meat exports in 2022,” Good said. Mike Murphy, CattleFax vice president of research and risk management services, expects summer weather patterns – and their effect on corn and soybean yields – to be the focus of market participants. With the expectation of normal weather next spring, CattleFax is forecasting planted corn acres at 91.8 mil-

Soybean acres are expected to remain near steady at 87.2 million acres for the 2022-2023 market year. “Exceptional demand from China is leading U.S. corn exports to new records and expanded interest could easily push exports higher in 2022,” Murphy said. Murphy noted that weather is likely to continue influencing hay prices with much of the Central Plains and the West battling some level of dryness or drought. “December 1 on-farm hay stocks were down 6 percent nationally from the previous year, at 79 million tons. Expect current year hay prices to average near $186/ton, $10 higher than 2021 prices due to tighter supplies and stronger demand,” he said. According to Meteorologist Matt Makens, La Niña remains firmly in control of the ocean-atmosphere system, and that is unlikely to change this spring; however, it remains possible that there will be some changes throughout summer. For the U.S., barring any change to the La Niña outlook or sudden warming in the Gulf of Alaska, dryness continues across the Southwest and South with warms temperatures, too. The Northern Plains and Corn Belt are expected to have wetness farther east this spring and drier conditions for this summer, with temperatures closer to normal versus 2021. CattleFax CEO Randy Blach concluded the session with an overall positive outlook, expecting margins to improve as cattle supply tightens and producers gain leverage back from packers and retailers, beef demand to remain solid with expected export growth, and utilization and packing capacity to improve over the next few years.

Recently, the National Cattlemen’s Beef Association (NCBA) welcomed Secretary of Agriculture Tom Vilsack, Under Secretary of Agriculture for Farm Production and Conservation Robert Bonnie, and British Ambassador Dame Karen Pierce to the 2022 Cattle Industry Convention and NCBA Trade Show. “We appreciate the working relationship that our team has with both Secretary Vilsack and Under Secretary Bonnie. Dame Karen Pierce shared her optimism in strength-
ening the relationship between the United Kingdom and the United States through continuing negotiations to reach a free trade agreement. As the U.K. places the upmost importance on sustainable beef production, Pierce shared her confidence in the sustainability goals set by NCBA last year. “We were honored to welcome Ambassador Pierce to convention. Increasing U.S. beef producers’ access to global markets is a top priority for NCBA. Our relationship with Ambassador Pierce marks a tremendous opportunity in the trading relationship between the United States and the United Kingdom,” Lane said.

Industry and International Leaders Optimistic for the Future of U.S. Cattle and Beef Industry
National Pork Producers Association In a report issued today, economists with Iowa State University, North Carolina State University and the National Pork Producers Council found that pork prices have risen because of strong demand for U.S. pork, higher input costs and labor shortages throughout the supply chain, not concentration in the meatpacking industry. The report’s authors, Iowa State’s Dermot Hayes, NC State’s Barry Goodwin and NPPC’s Holly Cook, also found that pork prices in the United States are still lower than in many other countries. The pork packing industry is made up of fewer and larger plants than it was 50 years ago, but the structure of the industry has changed little in recent decades, the report stated, and concentration levels today are about 7 percent lower than they were five years ago because of new packing plants that opened from 2017 to 2020. Four of those five plants are at least partially producer-owned. In fact, more than 100 industries had a greater concentration level, according to a commonly used calculation, the report noted. “This report shows the concentration level in the pork packing industry is not significantly higher than it was 15 years ago,” said NPPC President Jen Sorenson. “The recent increase in pork prices is driven by strong pork demand, rising input prices, higher wages and supply chain bottlenecks throughout the industry.” The report also found no evidence that significantly higher profits are being captured at the wholesale level during this time of higher retail prices. The farmto-wholesale price spread – which consists of packers’ costs and profits – has been shrinking while the wholesale-to-retail spread has increased over the past six months. Packer gross margins also are estimated to be within their 5-year average range, according to the
report. “Although pork prices have risen rapidly in recent months,” said Iowa State’s Hayes, “retail and carcass prices in the U.S. are still relatively low when compared with prices in other countries.”
“Americans pay less for pork, not more than consumers in most other nations,” Sorenson said. “That includes big pork-producing countries such as Canada, Denmark and Germany.”

Explaining Precision Agriculture

The aim is to create a resource that plant breeders can use to make the most of Wisconsin’s famous red fruit crop. Juan Zalapa is building a library. But it doesn’t house classic literature or thick textbooks. This one is all about cranberries. Zalapa’s construction materials aren’t what you would imagine either. Instead of wood for shelves, he’s using chromosomes; rather than paper for pages, he’s using genes. And the goal of the library will be to teach plant breeders and growers how to maximize the potential of this popular tart, red fruit. Zalapa and his research team have become the first to sequence the cranberry genome. In other words, they have discovered the complete list and order of nucleotides in cranberry DNA — the blueprint of all the plant’s genetic material. The genomes of many crops, such as corn, have been known for some time. But fruit crops, such as cranberry, have lagged. Wisconsin produces more than half of the world’s cranberries, so improved breeding is important for the state’s agricultural livelihood. Sequencing the fruit’s genome is an important step toward producing redder, hardier, tastier cranberries. The accomplishment took some time. Using a sophisticated machine in a lab, the team had to split the chromosomes into millions of shorter bits. Once those bits were sequenced, the researchers reassembled and organized them into the 12 complete chromosomes contained in the nuclei of cranberry cells. This is how Zalapa and his colleagues created a space for their cranberry library. “Basically, the chromosomes are the bookshelves of our library,” says Zalapa, a professor of horticulture and U.S. Department of Agriculture scientist. “The first thing we had to do when setting up the library was to build those bookshelves, the scaffold that holds the information.”

Wisconsin is the number one cranberry-producing state in the U.S. Its farmers are responsible for bringing in 59% of the nation’s crop. In 2020, they harvested 20,800 acres for a total of 4.64 million barrels and a production value of $178.7 million. No wonder cranberries are Wisconsin’s state fruit. ________________________________________ The scaffold was built through a strong collaboration with the Mexican government, and most of the work was done by Luis Diaz-Garcia PhD’18, a former student in Zalapa’s lab and now a scientist at the National Institute of Forestry, Agriculture and Livestock Research in Aguascalientes, Mexico. In Mexico, producers and consumers are very interested in blueberries, a popular fruit. But few Mexican scientists study them, so the Mexican government supports students who study fruit crops abroad. Diaz-Garcia earned one of these prestigious scholarships to fund his cranberry research in the United States, which he calls the opportunity of a lifetime. “I was very lucky to have Juan as a mentor,” Diaz-Garcia says. “He created a great collaborative environment within the lab and externally with growers and the industry. We were able to publish research articles that are now the foundation for more research.” Those future projects will essentially stock the shelves in the cranberry library. The books will be the genes and traits associated with different areas of the chromosomes. And organizing and sharing those books will greatly benefit breeders as they look to improve cranberry and related fruits. The samples gathered at Cranberry Creek Cranberries were collected in measures of one full cup per genotype. Traditional breeding involves the selection of better plants over time. Breeders may look for crops with higher yield, superior taste, or lower acidity, for instance.

However, cranberries don’t grow fruit immediately: It can take five to six years to yield a crop. But if breeders can look up the location of certain traits on a chromosome and know which genes are linked to better fruit color, for example, they won’t have to wait for fruit to develop to select the best plants. Instead, they can sample the leaves of seedlings and keep just those plants that contain the gene or genes they want. “In simple terms,” Diaz-Garcia explains, “a piece of a leaf can be used to predict if a cranberry fruit is going to be sweet or not, even before the plant produces fruit.” This ability will greatly speed up breeding and allow growers to choose precisely what traits they want in their fruits. One of the characteristics they are most interested in is anthocyanin content. Anthocyanin is an important chemical for human nutrition, and it gives cranberries their color. Sometimes color doesn’t develop or develops at the wrong time; environmental cues can have a big impact on this process. An understanding of which genes affect how and when plants color, then, would be very useful for growers and breeders. “What we’re looking for are plants that are consistent in their color development, despite the elements,” Zalapa says. “We can really try to understand how this color changes and hopefully put the right combinations of genes together to produce colors that are better for our growers here in Wisconsin and across the country.” The cranberry genome is already available online. Genes and traits will be added to the site after they are uncovered, giving breeders and researchers access to the complete cranberry library. “This work can lead to the development and release of better-tasting varieties with higher fruit quality characteristics and improved adaptation to environmental stresses,” Diaz-Garcia says. “All of that will be beneficial for the cranberry industry, growers, and consumers.”

Students interested in a career as an agricultural engineer can expect to study mathematics, physics, chemistry, computer engineering, and, of course, engineering analysis and design as they pursue their degrees. • Agronomist: Agronomists work with crops and soil management and may work as analysts, environmentalists or forecasters. Agronomists may be tasked with analyzing soil structure and chemistry and study how water is moving within soil. Students will study agriculture, biology, chemistry, and physics en route to earning a degree that will help them become an agronomist. Mathematics also will be part of their studies, and statistics courses will be part of those studies. • Biochemist: Biochemists study the chemical and physical principles of living things and biological processes. Within the agricultural sector, biochemists will contribute to the development of agricultural products, including those that will serve a medicinal function. Biochemistry, chemistry, biology, calculus, and physics will be part of students’ courseload as they pursue degrees that prepare them for a career as a biochemist. • Climatologist: Climatologists will figure prominently in
the agricultural sector as the effects of climate change manifest themselves more readily over the next several decades. Climatologists study climate change, variability and the biosphere. Climatologists offer insight about the effects of climate change on the growth and development of agricultural products, including fruits, grains and vegetables. The natural sciences feature prominently in climatologists’ educations, and students also will study meteorology as part of their coursework. • Food scientist: Food scientists study chemistry, biochemistry, microbiology, and engineering so they can assist in the development of new food products. Food scientists may manage processing plants and some serve as researchers in an effort to solve problems related to food production. • Plant pathologist: Plant pathologists specialize in
analyzing issues related to plant diseases. Research features prominently in plant pathologists’ work, and many work in university settings. Some plant pathologists work for companies attempting to develop pest-resistant plants. Advanced degrees are necessary to work as a plant pathologist, and students will study mycology, bacteriology, virology, and physiology, among other subjects, as they pursue their degrees. The agricultural sector employs millions of people across the globe. Many of those people do interesting work as they attempt to address issues facing the agricultural sector. There should be significant demand for agricultural professionals capable of meeting the challenges facing the world as it confronts climate change and food shortages.
