FOOD COUNTRY HEIGHTS SUPPER CLUB Country Heights Supper Club can accommodate groups of 15 to 150 and offers fine dining in a casual setting. It is located “In the Middle of Everywhere” — only 3 miles from Dubuque, 5 miles from Dickeyville and 15 miles from Platteville. The restaurant is known to be full of life! As you enter there is a large, rectangular bar to the right with regular patrons occupying each chair, enjoying one another’s company before advancing to their tables for dinner. The bar has long, thin mirrors running along the wall to add light and depth to the large building. The opposite wall features beautiful outdoor scenes and wildlife. The restaurant has various sized tables arrayed with flowers and a candle for the many dining guests. There are intimate tables for two, the standard four-seat configuration, and long rectangular settings for groups. At the rear of the building, you can see the large salad bar and to the left is another room with more dining tables for the many nightly guests. You will be greeted by the hostess, with a brief review of the menu indicating a diverse assortment of dishes, with all of the local favorites, plus several hard-tofind choices. We offer family-style dinners of fowl, ham, beef, and seafood — each served with a choice of potato. We also offer several pasta selections. All dinners begin with the wonderful salad bar with its wide assortment of homemade items. You can also start your meal with an appetizer if you are so inclined. You might try one of our common appetizer options, including the hot wings, onion rings, breaded cheese curds or maybe even the shrimp cocktail. FOOD THE HISTORY OF PIZZERIA UNO 1943

Franklin Roosevelt is in office, and something is happening in downtown Chicago. On the corner of Ohio and Wabash, a pizzeria opens up. The Pizzeria saw great success with its deep dish pizzas. As time went on, the small pizzeria became the chain of restaurants know as Uno Chicago Grill. However, this is where we separate from our shared past!

1976 Tom Kelly, who worked at the original Pizzeria Uno, purchased the Old Eagles Club building in Platteville. After obtaining the rights to the Pizzeria Uno name in Wisconsin, he set out to re-create the original Pizzeria Uno. With his previous knowledge, he added a Wisconsin twist to the deep dish pizzas that saw success years ago. Now separate and running his own Pizzeria Uno, he made the pizzas for the people in Platteville. They enjoyed the pizzas as much as he did making them.

1994 Many more years pass, and a new couple dined at Pizzeria Uno. They both enjoyed the pizza so much, that they saw a destiny of one day owning the Pizzeria. In 1994, John and Karen Utley purchased Pizzeria Uno, fulfilling their destiny! As the new owners, they wanted to preserve the quality and taste of the 1976 pizza. Since then, the pizza has not changed and the pizzeria continues to bring the pizza that they first fell in love with. John and Karen also wanted to bring exceptional service to the restaurant, another promise they keep to this day.

1995 The Utley’s acquired Weygant’s Appliance building right next door. Wanting a more bar centric location, they transformed the appliance store into the Annex. It was and still is stocked for drinks of all kinds for the people of Platteville. Even after the pizzeria closed for the night, the Annex would stay open longer into the night. Many parties and game victories have been celebrated at the Annex since.

2008 Both Pizzeria Uno and the Annex see another change. The Utley’s really enjoyed the river that ran behind the Pizzeria. They wanted something to share that experience as well as have that outdoor feel. Their solution was adding another bar to the Uno’s family! The Back Bar, an open air bar, was built right across from the Annex by the small creek. The great Wisconsin outdoors add to the events and parties that show up year after year. pizzeriauno.net

FOOD HISTORIC WATER STREET PLACE by Kathy Neumeister

Water Street Place invites you to join them on historic Water Street in downtown Shullsburg, WI. Settle in for a great meal and take in the view of historic Water Street through the 9-foot-tall Victorian era front windows. Water Street Pub offers a Pub Style menu with appetizers, specialty sandwiches, burgers, and the very popular homemade Pasty and Reubens! HISTORY The Water Street Place & Historic Inn is nestled in a two-story cream brick Italianate building on Shullsburg’s historic Water Street. Built in 1883 during the prosperous lead mining days, this Italianate gem was built by Pete Richards, a contractor for J.M. Brewster for commercial rental use. Over the years, many businesses have come and gone including attorneys, dentists, mining engineers, the post office, library and city offices among others. The most notable tenant, The First National Bank, opened its doors in 1909. Mementoes from those days still appear on the walls of the building. The bank’s original vault doors were blown off with nitroglycerin by Chicago Blackie and his gang in 1925. During the Great Depression, the bank closed its doors and the business never re-opened. Today, the vault houses a different kind of treasure – it stores many Wisconsin beers and fine wines. The building sat empty and in disrepair for over 20 years. In 2001, Chuck and Jill Staab began the restoration project. The husband and wife team applied the skills they had learned from past endeavors, including restoration and decorating and innkeeping and restaurant management to create a memorable experience for visitors and residents of Shullsburg and the surrounding area. The building at Water Street Place is one of many on Water Street listed in the National Register of Historic Places.

CHEESE RETURNING MASTER CHEESEMAKER by Chris Roelli, Roelli Cheese Haus, Shullsburg Certified Master: Blue & Alpine

For fourth generation cheesemaker Chris Roelli, the past few years have been a whirlwind. It began in 2006 when he celebrated the reopening his family’s cheese plant, Roelli Cheese Haus in Shullsburg, Wisconsin. Then, in 2015 he completed his first Wisconsin Master Cheesemaker certification in Cheddar before going on to win Best of Show at the American Cheese Society’s competition in 2016 for his Alpine style cheese, Little Mountain. This year, Roelli will add another item to his list of accomplishments as he completes two more certifications through the Wisconsin Master Cheesemaker® program. Administered by the Wisconsin Milk Marketing Board (WMMB) and the Center for Dairy Research (CDR), the Wisconsin Master Cheesemaker® program is the only one of its kind in the United States. licensed cheesemaker for a minimum of 10 years. Qualifying cheesemakers must also take several courses through the Center for Dairy Research, participate in quality checks and complete a detailed test that takes most participants around 60 hours to finish. The entire Master certification process generally takes three years, but in the end, the cheesemaker will receive the honor and respect that comes with this accomplishment as well as the right to use the Master Mark® on his or her products. “All in all it’s made me a better cheesemaker,” said Roelli, who will receive his certification in blue style and alpine style cheeses on April 19th at the International Cheese Technology Expo (ICTE) in Milwaukee, Wisconsin. “The program has helped me learn to pay attention to the details, problem solve and improve the quality of the product:’ In addition to continuing his education, Roelli also wanted to return to the Wisconsin Master Cheesemaker® program to honor the legacy of Little Mountain, the alpine cheese that made his plant famous. “Having won awards for our Cheddar, blue and alpine style cheese speaks volumes for the Master program, since those are the cheeses I’m certified in, “said Roelli. “It’s really come full circle.” Roelli is busy working on his next step now, hoping to continue to grow his business and build value for the Wisconsin cheese industry through Roelli Cheese Haus. Even through all of the excitement over the years, he still takes time to reflect on what this would mean to the generations of cheesemakers that came before him including, his greatgrandfather who came from Switzerland to make cheese in Wisconsin as well as Roelli’s grandfather, Walter and his father, Dave, who taught him everything he knows about cheesemaking. “My childhood was spent in cheesemaking,” said Roelli. “And to get to make a career out of what I love to do is a treat.’’

Spurgeon Vineyards & Winery was established in 1978 by Glen and Mary Spurgeon. At that time, they planted their first five acres of grapes. Their first commercial winemaking took place in 1981 and they opened their doors to the public on May 1, 1982. Over the years, the Spurgeons have outgrown their vineyards and now supplement their harvest primarily with locally produced fruit, grapes and honey. HAWK’S MILL WINERY Our owners, Ric and Teresa Joranlien started a small vineyard on their property in 2012, and were making home-made wines in the basement. In December of 2013 the adjoining property and residence was purchased, and the renovation process was started. By March 2015, the winery was open for business with a small offering of wines. A wine production building was completed in late 2015, which allowed wine to be made more efficiently. Our estate vineyard currently grows Frontenac Gris (white), and two reds, Marquette and Petite Pearl. Our first vineyards were planted in 2013 so our vines are still fairly young, but we do get crops big enough to produce some Estate wines. During your visit with us, you are welcome to go out and look at our vineyards, and we will try to answer any questions you may have. Our tasting room is positioned on top of a hill on our 18 acre property, with 2 acres of vineyards onsite and 600+ acres of State Park land as a backdrop.
