When chef Richard Rangel moved back to his native Arizona after a stint in Texas, he connected with colleague and sommelier Broc Chavez. After working together at a Fountain Hills bistro, the two opened Famiglia in 2021, where they aim to showcase locally sourced ingredients in elevated Italian dishes. Among Famiglia’s most popular dishes is Braised Lamb Cappelletti ($26). The dish was inspired by specialty lamb that Rangel procured from Jet-Fresh in Tempe. Rangel and his team hand-shred the lamb and combine it with Crow’s Dairy ricotta, mascarpone cheese, pepper, salt, and caramelized onions before tucking it into cappelletti pasta made using Blue Sky Organic Farms kale. The rustic dish is finished with caramelized onions and greens sauteed in braising liquid, garlic, Calabrian chiles, and candied lemons. Famiglia, 17025 N.
