INGREDIENTS

– 60mL Angel's Envy Bourbon finished in port wine barrels

– 30mL sweet red vermouth

– 2-3 dashes Angostura Bitters to taste

– Garnish: cherry and/or orange peel

METHOD

Add all ingredients into a mixing glass and fill with ice. Stir for 20-25 seconds to dilute.

Strain into a chilled cocktail glass. Garnish with cherry.

INGREDIENTS

– 60mL Maker's Mark Bourbon

– 25mL honey syrup

– 25mL fresh squeezed lemon juice

– Garnish: lemon rind

For the Honey Syrup:

– 2 parts honey to 1 part hot water

METHOD

Add Maker’s Mark® Bourbon, lemon juice and honey syrup to an ice-filled shaker. Give it a good shake. Strain over ice into rocks glass. Garnish with lemon wedge.

Combine ingredients over ice in a mixing glass. Stir thoroughly. Strain into a chilled cocktail glass over a large ice cube. Garnish with a grapefruit peel.

INGREDIENTS

– 60mL Basil Hayden Bourbon

Golden Hour Mint Julep

– 15mL simple syrup

– 8 mint leaves, plus extra to garnish

METHOD

Add the mint and syrup to a julep tin cup or rocks glass. Gently muddle the mint to express oils. Add crushed ice and pour Basil Hayden over. Stir thoroughly and garnish with a mint sprig.

BASIL HAYDEN KENTUCKY STRAIGHT BOURBON WHISKEY 700ML

METHOD

In a mixing glass, combine all the ingredients. Add ice, then stir vigorously for 30 seconds. Strain into a rocks glass. Garnish with an orange twist.

– 20mL simple syrup

From Small Craft Distillery To World Leading Gin Producer

It all started back in 2013 with three mates and one extraordinary copper still. Six years later, in 2019, Four Pillars Gin was named the world’s leading gin producer by the IWSC in London. We won again in 2020, and then lightning struck a third time in 2023, making us the first gin maker to ever claim the title of World’s Best three times. What a crazy ride we are on!

Our journey to becoming an awardwinning gin distillery began when we took delivery of our first custom-built still made by CARL of Germany.

We called her Wilma (after Cameron’s beautiful late mother), and she has since been joined by Jude, Eileen, Beth, Coral and Linda – all named after the mums of our founders or longstanding Four Pillars employees.

In 2022 we became Australia’s first certified carbon neutral gin distillery, and later in the year our sustainability efforts were recognised on a global scale with the IWSC awarded us the inaugural Green Spirits Initiative trophy.

Today, much expanded, we’ve created our own gin paradise here and we’re doing our best to make and showcase the very best of Australian gin to the world.

We are modern Australian makers. We make the world’s most delicious and awarded range of craft gins. Making gin anywhere would be exciting. But we don’t make gin anywhere. We make it here. In Australia. The most delicious, diverse and creative place on earth. And that’s why we get to combine intense creativity around gin with a huge passion for hospitality and gin-fuelled fun.

We are lucky enough to have access to local native botanicals like lemon myrtle and Tassie pepper. And our signature is the use of whole fresh citrus in every gin.

INGREDIENTS

– 45mL Sipsmith London Dry Gin

– 15mL fresh lemon juice

– 15mL raspberry syrup (or cordial)

– Handful of fresh raspberries

– 10mL sweet vermouth

– 1 egg white or foaming agent - see aquafaba

– Garnish: fresh raspberry

The decadent and dessert-like Clover Club – made vibrant with raspberry and creamy with egg white – has a heritage that predates Prohibition.

METHOD

Muddle raspberries in the bottom of a cocktail shaker. Add all ingredients and dry shake. Add half a cup of ice and shake again until cold. Fine strain into a chilled coupe glass and garnish with a fresh raspberry.

Add all ingredients to a tumbler glass over ice. Stir, then garnish with a twist of orange or decorative flowers.

What is the shelf life of Tempus Two Shiraz Gin?

The great thing about gin is that once it has been opened, it can be stored for years without ‘going off’. However, we recommend that you finish the bottle within a couple of years of opening as the taste and quality of the gin will gradually start to change as it begins to oxidise.

It’s important that you store your gin in a cool, dry place that is away from heat sources and direct sunlight. You could also refrigerate your bottle of Tempus Two Shiraz Gin after opening to slow the process of losing the vibrant purple colour.

Build all ingredients except the lemonade in a cocktail shaker filled with ice. Shake well and pour into a cocktail glass and top with lemonade. Garnish with an orange slice and optional maraschino cherry.

VOK ADVOKAAT 500ML

Advokaat Liqueur is a blend of fresh eggs, cane sugar mellow brandy with a hint of vanilla – the perfect smooth and creamy blend.

– 45mL Sazerac Rye Whiskey

– 1 cube sugar

– 3 dashes bitters

– 7mL Absinthe or Anise flavoured liqueur

Pack a rocks glass with ice. In a second glass add the sugar cube and bitters, then crush the sugar cube. Add the Sazerac Rye. INGREDIENTS

– 1 cup of Deen Vat 8 Shiraz

– 2 tbsp of Bourbon

– 1/4 cup brown sugar

– 4 cinnamon sticks (use for garnish after)

– 10 cardamom pods

– 1 inch fresh ginger, peeled and chopped

– 10 whole cloves

– 6 whole star anise

– 1 pinch cayenne pepper

– Vanilla whipped cream

METHOD

Optional: Place cinnamon sticks, cardamom, fresh ginger, cloves, and star anise in a food processor and pulse 2-3 times. No food processor? Place spices in a bag and lightly crush with a spoon.

In a saucepan over low heat, add spices, sugar and Deen Vat 8 Shiraz. Stir often until sugar is dissolved. Do not boil. Note: The longer on the stove, the more the flavours will soak in.

Add a pinch of cayenne pepper and Bourbon, then stir. Once it is warm enough for serving, strain into 2 glasses, top with whipped cream and enjoy!

In a large jug, combine Windy Peak Pinot Grigio, lemon-lime soda, lemonade, sugar and sliced lemons, refrigerate for at least one hour. Give it a good stir and pour into your glass and top with raspberries!

INGREDIENTS

– 750ml bottle of De Bortoli Rosé Rosé

– 1 orange, halved

– 1 1/2 cups (375ml) clear apple juice

– 1/4 cup (55g) caster sugar

– 1 tsp vanilla bean paste

– 4 whole cloves

– 2 cinnamon sticks or quills

– 3 whole star anise

– 1/2 cup (125ml) cherry brandy or Grand Marnier

– 1 small Pink Lady apple, very thinly sliced

Use a vegetable peeler to peel 4 strips of rind from 1 orange half, avoiding white pith, then juice the half. Chop the remaining orange half. Place orange rind, orange juice and chopped orange in a saucepan. Add De Bortoli Rosé Rosé, apple juice, sugar, vanilla, cloves, cinnamon and star anise. Place over medium heat and bring to a simmer. Reduce heat to low. Cook for 5 mins or until aromatic. Remove from heat. Add brandy or Grand Marnier and apple and stir to combine. Divide among serving glasses. Serve immediately.

INGREDIENTS

– 1 (750ml) bottle of De Bortoli Chill Bill

– 1 granny smith apple chopped

– 1 orange thinly sliced

– 1/3 cup raspberries

– 1/4 cup orange juice

– 1/4 cup brandy

– Soda water

METHOD

Place the apple, orange and raspberries in a large pitcher. Pour in the De Bortoli Chill Bill, orange juice and brandy and stir. Chill overnight (optional). Top with soda water and serve in a glass filled with ice.

Pour [yellow tail] Rosé into a large container and freeze overnight. Keep in mind that, because of the alcohol content, the liquid won’t completely freeze. In a glass jar, combine sugar and 1⁄2 cup of boiling water. Stir until sugar dissolves, then blend together with strawberries and set aside. Add the almost-frozen [yellow tail] Rosé to the empty blender with 4 tbsp of your strawberry mix. Option to add vodka, then blend until smooth and serve!
