seasonal veg from our farms Cheer up the new year with wholesome homegrown roots and brassicas. beetroot

£1.75/1kg Nigel Venni at Sacrewell and John Walton at Stockley are two of our champion beetroot growers. They drill the crop in summer and store the beets to last through winter, ready to add welcome colour and earthy flavour to soups and mixed roasted veg. Beetroot is also good in a gratin: slice thinly and layer in a buttered dish with cream, milk, parmesan, garlic and seasoning, then bake until bubbling.

jerusalem artichokes £2.25/1kg These knobbly little roots are a farmer’s dream: easy to grow, with no significant pests or diseases. They do well at Wash Farm - in fact our biggest challenge is keeping them under control. They have a nutty, sweet, unctuous flavour - ideal added to casseroles and soups, roasted in olive oil or sliced thinly and eaten raw in salads.

£1.75 Another cosmetically-challenged seasonal root, grown by our farming

co-op in Devon. It endures winter well and has a delicate, fragrant flavour. It will keep in the bottom of your fridge for several weeks and adds depth to stews, mash and gratins.

purple sprouting broccoli £2.49/350g Until 30 years ago, purple sprouting was the standard, widely available broccoli, before the meteoric rise of green (calabrese) broccoli. It has a stronger flavour and grows well in the colder months of the year. Peter Richardson’s crop at Home Farm is particularly good (as long as the pigeons don’t get there first) and Duncan Janaway grows a significant amount in the south. As with calabrese, it’s good boiled, steamed or stir fried - but don’t let the flower go mushy before the stem is tender. Try bunching it loosely with a rubber band and boiling in an inch of water in a tall pan, asparagus-style. The leaf is tasty, too - leave on the spear for cooking or use as an alternative green, wilted into stews, soups and curries.

a citrus stor y How Gines in Spain is working to grow the most f lavoursome oranges for your fruitbowl. And an invitation for you to pluck your own from his trees. Most citrus fruit ripens in the winter, requiring cold nights to develop skin colour and flavour. Oranges maintain an appearance of freshness in cold store for months, but by the time the fruit has been picked, graded and shipped it has often been off the tree for too long and the flavour can be really disappointing; speed is key.

The Spanish citrus season started in November and goes through until May. Right now most of our oranges, lemons, clementines and satsumas are from a small group of farmers working in the hills behind Almeria. The group is headed up by Gines Garcia who, like us, is intensely proud of his farm, the biodiversity it supports

and the produce he sells. He has become a beacon for other local farmers who have converted to organic and have joined forces to market their produce. Gines is determined to sell only the best flavoured fruit and to get it from the tree to your doorstep as quickly as possible; as the season goes on, his fruit is noticeably developing a sweeter flavour. The current orange variety is Navel, then Navel Late in March. We’ll finish the season in May with Valencia, the sweetest and juiciest of all. Gines is so proud of his oranges that he has offered an open invitation to Riverford customers to visit his farm. warm beetroot salad with blood orange + caraway serves 4 about 300g beetroot, trimmed but not peeled 1 tsp olive oil 2 tsp caraway seeds 1 garlic clove, crushed 5 tbsp blood orange juice 1 tsp sugar 3 blood oranges, peeled + sliced Place the beets in a baking dish, add 5mm water and cover with foil. Roast at 200° until tender (about 45 mins). Skin the beets, trim the ends and slice into wedges. Heat the oil in a pan, add the caraway and garlic and fry for a few minutes, adding the orange juice and sugar before the garlic browns. Mix well and bring to the boil. Tip in the beetroot and stir until thoroughly coated with the hot dressing. Season and stir in the orange slices. Serve immediately.

blood oranges

£2.65/1kg Don’t miss our blood oranges - the flavour is outstanding but they have a short season. Grown in the foothills of Mount Etna in Sicily, the depth of their distinctive colour depends on light, temperature and variety. Ours are Moro and Tarocco, a speckled, half-blood orange. Gines plans to grow some of his own next year. Try in salads, cocktails and dressings to show off their colour.

meat + 10 veg A healthy, thrifty and ethical way to eat in 2011. about our meat Working with farmers over the long term mean that we know where our livestock comes from, we know the breed, how the animal was raised and then how it was killed and hung. The meat is then carefully butchered and packed by hand by our own skilled team of butchers. And it’s all certified by the Soil Association. Most of us eat more meat than is good for us and

the planet. But meat is part of our cuisine and central to the mixed agricultural systems in much of the UK. ‘Meat and 10 veg’ is our philosophy on how to eat meat ethically: let it be better quality, eaten less often, in smaller quantities and with complete confidence that the animal has been treated respectfully. And above all, let the veg be the star of the show. If we are going to eat

meat, this is also an economically sensible way to do it. A steak supper for six is likely to be painful on the wallet; a beef stir fry packed with vegetables is not. We’ve come up with a meal planner to feed a family of four for a fortnight, using one small meatbox (£49.95) and two weekly medium vegboxes (£15.45 each), working out at around £1.40 per serving. bacon, leek + potato gratin serves 6 2 leeks, sliced 1 knob of butter 100g cooked + chopped bacon 300ml double cream 100ml milk 2 garlic cloves, crushed to a paste with a pinch of salt 800g potatoes, peeled + cut into 2-3mm thick slices 1-2 tbsp freshly grated parmesan sea salt + black pepper Sweat the leeks in butter for 10 mins, then add the bacon and garlic. Add the cream and milk and bring to the boil. Season and mix in the potatoes. Transfer to a gratin dish. Cover with foil and bake at 180째C for about 50 mins, until potatoes are tender. Remove the foil, sprinkle with parmesan and bake for another 10 mins, until golden brown.

meet the farmer Tom Browne supplies us with our larger bacon pigs from his outdoor herd of 100 sows at Smallbrook Farm near Exeter. Tom was brought up in a farming family and reckons farming is in his blood. His land is particularly suitable for outdoor stock. He says that being outdoors is fulfilling for both him and his pigs, which spend most of their time chasing each other around in the mud and nuzzling through the grass and clover. The pigs are a mix of Durroc, Large White, Hampshire and Landrace breeds, ideal for bacon, sausages and gammon.
