In Talamello, cheese-making secrets have been handed down from father to son since time immemorial and give excellent results thanks to the local -3-
ditches. Every summer, these are cleaned and dried out by lighting a straw and shrub fire inside them. A table is placed in the base and the walls covered with wood and cane frames lined with straw. Then Pecorino cheeses are placed in white cotton sacks and put into the ditches, which are closed using another table and chalk. After three months, this unmistakeable product is removed. The public can purchase this delicious cheese directly from the producers. Lots of quality products from all over Italy that are twinned with Ambra di Talamello cheese are also on display and can be sampled and purchased.
