Chef Orazio Parisi has turned Paparazzi Restaurant into one of L.A.’s Top 10 Italian restaurants by going back to his Sicilian roots and relying on simple, basic ingredients. PHOTOS BY CHRISTINA DAVIS

The LAX coastal area’s dining scene doesn’t really have a definition—at least not one with any permanence. This is a community of self-inventors who reject pigeonholing, and the constantly-changing restaurant community mirrors that. Once minute, it’s about Molecular Gastronomy and the science of food; and the next, it’s about farm-to-table dishes that are good for the environment and for the taste buds. But the one thing on which every local chef seems to agree is that the best food is simple. For Executive Chef Orazio Parisi, that simplicity began in the small Sicilian town of Avola, where his mother and grandmother would take the family for quiet outings in the Italian countryside. They roasted artichokes over an open fire, enjoyed fresh seafood plucked from the Mediterranean Sea that surrounded them and did it all amongst family. “In Sicily, you are born cooking,” said Parisi. “Your idol is your mother, your grandmother. Even though I did culinary school, the root of everything I do comes from there.” Parisi’s idols would certainly be proud. The world-famous Gayot guide recently recognized his Paparazzi Restaurant inside the Sheraton Gateway Hotel on Century Boulevard as one of the 10 Best Italian Restaurants in Los Angeles. At the same time, the Southern California Restaurant Writers

Association named Parisi the 2011 Chef of the Year. “I would like to offer our guests ‘scampagnata’ – a visit to the country, enjoying the quality of the ingredients and the simple life,” said Parisi, who, while at Paparazzi, has created some simple but sublime dishes that harken back to his childhood. The restaurant’s Lasagna al Brasato is stuffed with slowly braised boneless short ribs, fresh ricotta cheese, organic spinach and Parmigiano Reggiano in a Béchamel sauce. “It’s a beautiful experience,” said Parisi, who imports his Mediterranean Sea Bass and prepares it pan-seared and skin-on with fingerling potatoes, green beans, organic cherry tomatoes, citrus, olives and a blood orange Salmoriglio. Even Paparazzi’s Caesar Salad has a wonderful old-world taste it owes to simple, high-quality ingredients. “Our Little Gem Caesar is made of a special organic lettuce grown in the Coachella Valley just for us,” Parisi said. “I’m trying to build a story behind every one of our dishes – a story that starts with fresh ingredients, meats without hormones or preservatives and providing a different dining experience.” Hotel restaurants are often stereotyped as generic, stodgy caves where only hotel guests trapped in the building would dare to eat. But that is certainly not the case with Paparazzi. Under Parisi’s leadership, the restaurant

attracts foodies and locals from throughout the area looking for a top-notch meal for occasions of all kinds. “We get a lot of business people, but we also get a lot of people looking to celebrate a special event,” Parisi said. “They might not think of a hotel restaurant in that way, but we are different. They come because they know the quality is there, and that makes me happy. This is my baby.” Down the road, Marina del Rey’s Beachside Restaurant and Bar is knee-deep in efforts to change the restaurant’s concept towards more seafood-centric fare and give the space a new look. Allyson Thurber, the opening executive chef at Water Grill who later lead The Lobster and did a stint in Philly’s Striped Bass, is now leading the team at Beachside and said she, too, is focused on simple dishes that are simply delicious. “Cooking is an art,” said Thurber, whose Lobster was named best seafood restaurant in Southern California by Gourmet Magazine in 2000. “Art is all about the senses – you’ve got taste and smell and sight and texture.” The former architecture student said she fell into the art of cooking. After complex math spelled an end to her budding architecture career, Thurber was working at Tower Records in Sacramento when she started moonlighting at a French restaurant washing dishes. “I did dishes, saw calamari for the first time

I decided cooking was going to be my creative outlet.” So, Thurber went to culinary school at age 31, worked at whatever restaurant gave her the chance to perfect her craft and emerged from the experience as one of the hottest chefs around. As she looks around at the Gordon Ramseys of the world and the way young chefs want to fast forward their careers from culinary student to executive chef overnight, Thurber wonders where the simple concept of “earning your chops went.” “Right now, it seems like everything is about the show and TV, not about the food. Chefs today just want the fame because TV has glorified the career,” said the no-nonsense Thurber. “They all see the fame and the fun stuff, but they don’t know the basics. They don’t know how to be a line cook. They just want to be the boss.” While Thurber appreciates chefs who get the basics, she also appreciates the basics in the menu items she creates. “Young chefs always tend to put too many ingredients in their dishes,” she said. “People want simplistic, but fantastic.” To that end, Thurber’s crab cakes are filled with, you guessed it, nothing but crab. “Sure, there’s a little mayonnaise and egg cider sauce. to hold it all together, but it’s all crab meat – Her grilled Scottish Salmon comes with no filler, no fish. a restaurant together one day. Palermo entered a 13-state chili cookoff, took first place honors and came to Los Angeles for the United States finals. Though he finished a disappointing fourth, he decided Southern California is where he would put down his roots. With no contacts and no money, Palermo and Ringwood set out to establish themselves. Palermo landed a job as the executive chef at the Hard Rock Café and was ultimately promoted to the chain’s director of operations. Ringwood was hired by Trumps, a 5-star restaurant in West Hollywood, where he worked as executive pastry chef. In early 1985, having never lost sight of their true goal, the two quit their respective jobs and began the long, difficult task of building their dream restaurant in Santa Monica – Teasers, a fun, inviting, friendly, great food store that was a meeting place for celebrities, politicians, tourists, locals and people of every walk of life. In late 1996, Tony P’s became the second vision of Tony and Danny. After purchasing Charlie Brown’s and spending a hard, difficult, three months remodeling the restaurant, it was reopened on Super Bowl Sunday, 1997.

Since then, Tony P’s Dockside Grill has earned a reputation for good food, good service and a focus on the family. “At the end of the day, everything we do is for our family – those related to us and those who dine in our restaurant,” said Palermo, the 2012-2013 Chairman of the LAX Coastal Area Chamber of Commerce. “We want to make sure every menu item lives up to the standards of our family. If we wouldn’t serve it to our family, we wouldn’t serve it to anyone else.” Featuring everything from steaks and salads to sandwiches and pasta, Tony P’s menu offers a little something for everyone. A favorite is fish and chips – fresh white fish dipped in Tony P’s secret batter and fried to a golden brown. Served with french fries, creamy cole slaw and house-made tartar sauce, it’s a dish that is one of the restaurant’s top sellers. The restaurant, which also includes one of the top sports taverns in Southern California, is also famous for it’s No Bones About It – a buffalo-style dish of spicy chunks of chicken breast marinated in Tony P’s special sauce and deep-fried that was featured on a Food Network special. But Palermo isn’t happy just putting good food on the table. He wants to help his community. Through the restaurant’s Dockside Dollars fundraiser program, Palermo and Ringwood have helped raise more than $300,000 for local schools and non-profit groups, and he regularly helps young chefs perfect their craft. Every year, a band of young chefs from area schools celebrates creative pizza-making as they receive a tour of the restaurant, a glimpse into the kitchen and the chance to make their own individual pizzas. “It’s a great chance for kids to see how a real restaurant works behind the scenes,” Palermo said. “Plus, what kid isn’t excited about making his own pizza!? Maybe, we help inspire a kid or two to become a chef – that would be great.” In Westchester, another chef was inspired to become a chef more out of necessity than anything else. “I was raised by a single mom,” said Christian Warren, co-owner and chef at Melody Bar & Grill on Sepulveda Boulevard. “I would come home by myself and I learned to cook with whatever we had at home.” As he grew up, Warren followed his dream of making a living cooking, taking jobs doing everything from making lemon curd in a restaurant to slaving away as a busboy and dishwasher. After spending time as a bartender, a caterer, a cook and more, Warren and three partners opened Ma’kai Lounge, a Polynesian tapas lounge on the ocean-front in Santa Monica. Located on Ocean Boulevard in the heart of Santa Monica, Ma’kai Lounge attracted thousands of tourists, locals and fun-

WHAT IS YOUR BEST ADVICE FOR ASPIRING, YOUNG CHEFS? 1. Learn how to be a really great line cook. How can you train someone if you don’t know how to do it yourself? 2. Take whatever job you can and stay no more than a year unless it’s the perfect job. To be a good chef, you need to get different points of view and see other styles of cooking. 3. Be prepared to make no money and work long hours. 4. Don’t be in a hurry. Stay balanced – a little savory and a little sweet. I think about the dish and I know exactly what I want. I can tell what it will taste like even before I make it.” In fact, as he perfected his skills as a chef, Warren’s roommates were constantly amazed at what he could put together. “If we had a potato and an onion, we’d end up with a gourmet meal,” said Warren, who wooed his wife with one of those miraculous meals made out of next to nothing. “That’s how I won my wife over, for sure.” Today at Melody,

If you try to do too much, it becomes a big hodgepodge of ingredients that ruins the dish.” Warren’s concept of simplicity extends to his menu, where straight-up Angus steak burgers and Philly cheesesteaks nestle up to seared Ahi tuna sandwiches with wasabi mayo, mixed greens, diced tomato and daikon sprouts on toasted sourdough. “As long as you’re having fun with it

Hart, who has cooked for a long list of celebrities and politicians, including L.A. Mayor Antonio Villaraigosa, President George W. and Laura Bush and even the president of the International Olympic Committee, said his comfort food menu is composed of dishes that begin with classic recipes and are enhanced with a subtle twist and enhanced flavors. “You can take a classic comfort food dish and kick it up a notch with simple additions or substitutions such as the smoked flavor of chicken or the bite of sharp

cheddar cheese,” he said. “Everything I’m creating is highly approachable and can easily be recreated in a home kitchen.” Still, Hart is all about experimentation. “I always tell people, ‘Don’t say you don’t like it if you’ve never tried it,’” he said. “The kitchen is a playground, and I like to have fun.” As a youngster, Hart’s parents took him out to eat at a different restaurant with a different type of food almost every Friday night. One week it would be Asian, then next it would be Mexican, the following week it would be barbecue. “It was always an adventure,” Hart said. “On Saturdays, I would try to recreate the dishes I sampled the night before. Some weeks they turned out good, others not so much. But through trial and error and experimentation, I grew to love cooking.” While Hart’s latest menu is filled with comfort food, he has worked as an executive chef for more than 10 different hotels and has a resume that includes the “Master of Taste” medal and the National Culinary of Excellence Medallion from the Los Angeles Chefs Committee. “One very special feature of our banquet service is our ability to design any style of menu our clients desire,” he said. “Recently, we created a Shrimp and Lobster Salad with Citrus Mascarpone topped with Beluga Caviar and a Sea Urchin Cream Sauce. Our General Manager, Cindy Boulton, loves food, and I love to cook. She’s very supportive of my creative process to do what I need to do in the kitchen. She knows my culinary team can take it to the next level!” Chef Hart added, “We do have special groups that request extremely specialized custom menus. We have entertained group requests for a vegan menu over a 10-day period (400 people for breakfast, lunch and dinner); created a variety of ethnic menus from India to China; and developed complete menus for kosher prepared meals.” It is that versatility and that passion for food that Hart tries to pass on to his colleagues, staff and diners.

There’s something for everyone – from family-style restaurants that are all about traditional dishes and reasonable prices, to fine dining establishments that rely on the expertise of their classically trained chefs to create incredible dishes. And while dining out has become a part of the Southern California culture, it has also become a major part of the Southern California economy. One out of every 10 jobs in Los Angeles has its roots in the tourism and hospitality industry thanks, in large part, to the tourists who visit the area for its incredible beaches, superb weather and unlimited attractions. In fact, in 2011, Los Angeles experienced the largest number of visitors and spending in the history of the city. A total of approximately 26.9 million people visited L.A. in 2011, an increase of 4.2 percent more overnight visitors than in 2010, according to Los

Tourist spending rose as well, with visitors accounting for $15.2 billion in expenditures – an 8-percent increase from the previous year. “This year’s impressive growth in tourism is great news for our local businesses that rely on tourist spending to make their companies both successful and profitable,” said Mark Liberman, president and CEO of the Los Angeles Tourism & Convention Board. “The increase was experienced in all areas of our city as indicated by increased occupancy at hotels and attendance at restaurants, attractions and cultural institutions.” International visitors made one of the largest impacts on L.A.’s tourism with 5.9 million visitors to the city, a 7-percent increase over last year. International travelers also had a visible increase in spending — 12 percent more in 2011 — totaling nearly $5.5 billion in revenue. Those numbers have a special impact near LAX, a major gateway for both international and domestic travelers. “We rely on tourism a great deal,” said Christina Davis, President and CEO of the LAX Coastal Area Chamber of Commerce. “Because LAX has close to 1,000 weekly nonstop flights to international destinations, we are particularly impacted by those international travelers, and our hotels and restaurants work very hard to serve them, whether they are here for business or for pleasure.” Over the past two years, sales at restaurants in Los Angeles and throughout the country have increased dramatically as the economy recovers and people rediscover the joys of dining out. After bottoming out in fall of 2009, retail sales at restaurants are up by more than 8 percent over those lows. “Things are looking up for the industry,” Davis said, “and I hope everyone will get out there and sample the incredible cuisine that the LAX coastal area has to offer. You won’t be disappointed.”

Every Tuesday, Gateway to Go! features a lunchtime celebration of the best food on four wheels that includes a rotating line-up of the top gourmet food trucks in Los Angeles. FLIGHT PATH LEARNING CENTER WHY GO: Flight Path Learning Center of Southern

California in the LAX Imperial Terminal (6661 W. Imperial Highway) is a hidden gem of a museum featuring aviation history. Exhibits include authentic, historic photographs, models, uniforms and other artifacts highlighting the role of aviation in the history of Southern California. The museum’s main attraction is the DC-3 on exhibit adjacent to the main gallery that visitors can tour. In 2011, Howard Drollinger’s daughter, Karen Dial, joined L.A. City Councilman Bill Rosendahl in dedicating Howard Drollinger Way in the heart of Westchester’s business district. Known as Mr. Westchester, Drollinger’s vision and commitment to Westchester helped turn an area filled with bean fields and dirt roads into a thriving community. A decorated World War II veteran who flew 50 successful combat missions over Italy as a navigator in a B-24 Liberator, Drollinger was awarded the Distinguished Flying Cross, Purple Heart, four air medals and a Presidential Unit Citation, while serving in the 15th Army Air Force. When the war was over, Drollinger, a proud graduate of the University of Southern California, joined his mother, Ella, as a developer in Westchester, a fledgling community just north of what would become Los Angeles International Airport. Though Drollinger passed away in 2006, his legacy continues.

Westchester Skate Plaza, the newly created 13,000-squarefoot skate park, is part of the Westchester Park and Recreation Center on Manchester Avenue. Designed and built by CA Skateparks, the plaza features a variety of elements designed for hardcore street skating and has attracted a host of skateboarding pros, including Luan Oliviera, David Gonzales, Curren Caples, Pat Duffy, Kurtis Colamonico, and Braydon Szfranski. The Westchester Skate Plaza was made possible by funding from the city of Los Angeles and a generous contribution from the Annenberg Foundation. This is the local center of recreational boating and water sports, and a good place to walk along the waterfront, see boats in the harbor, and get a bite to eat. It’s busier and more lively on the weekends when there are free outdoor concerts near the lighthouse in the afternoon. Check to see if the 45-minute narrated tours (seasonal) are operating – it’s a good introduction to the Marina. There are several good restaurants and souvenir shops there, too.

The Gillis Volleyball Tournament was started in 1971 by Steve and Dave Cressman at Gillis Beach, in Playa del Rey. That first year, 17 teams participated, playing on one court. At this year’s tournament in August, there will be 170 teams with over 600 players, playing on 28 courts. Gillis Beach was named after a one block-long street in Playa del Rey called Gillis Street that ended at the sand. The beach shoreline community was wiped out though in 1974 by expansion of LAX and The Gillis, after other stops, was finally relocated to the southern-most point of Playa del Rey – Dockweiler Beach. Perhaps the best part of the tournament isn’t the volleyball at all. What started as a contest in 1980 for the best homemade swim trunks, changed when one team crossed over that line into costumes. Since then, teams come clad in a wide array of costumes and even develop skits and full-blown “camps” around their themes. Take part in a true locals event at this year’s Gillis! Winged Victory

The endangered El Segundo Blue Butterfly has certainly found a refuge in the 200-acre Dunes Habitat Preserve at Los Angeles International Airport in Playa del Rey. The recently completed 2011 seasonal field study and analysis of the El Segundo Blue Butterfly now estimates the population between 120,610 and 125,920 -- representing an increase of approximately eight percent over 2010. The present count has increased remarkably from the fewer than 500 El Segundo Blue Butterflies that existed in 1976 when it was among the first insects to be listed as a Federal Endangered Species. To encourage the butterfly’s comeback, and after careful study and consultation with environmental experts, LAWA created the Dunes Habitat Restoration Project in 1986 to focus on reintroducing and protecting the coastal buckwheat plant, the butterfly’s sole food source, near which it spends its entire life cycle.

Del Rey Lagoon

With the great boom of ocean frontage that began in 1902, Playa del Rey became a hot seaside resort featuring a pavilion, hotel, 3,000-seat amphitheater and even regular boat races on Del Rey Lagoon. Runway Prepares for Takeoff

In September, construction will begin at Runway at Playa Vista, a mixed-use commercial and social center that includes a 200,000-square-foot shopping center, 420 apartments, and 25,000 square feet of office space, on a site that formerly held a portion of the runway for Howard Hughes’ aerospace empire. Leadership Academy is a course designed to develop leadership qualities and encourage individuals to take more active roles in the community at-large. In today’s economy, growing a business is more challenging than ever. Whether it’s new competition, additional government regulations or rising costs, businesses are constantly learning how to do more with less. Since 1953, local businesses have relied on the LAX Coastal Area Chamber of Commerce to provide the connections, access, influence and resources needed to grow their businesses. CONNECTIONS

Ambassadors Ambassadors are member volunteers who educate and involve other members in Chamber programs and services to maximize their membership investments. Let’s Do Lunch Join other Chamber members for an intimate networking lunch at a local Chamber restaurant. Networking at Night Mixers More than 1,200 people attend the Chamber’s Networking at Night Mixers each year. Held monthly, these events enable members and non-members to mingle and build business relationships in informal and relaxed settings. Mixers are held in partnership with local restaurants, hotels and other businesses to showcase the great venues within our Chamber area. Speed Networking Sit across the table from other Chamber members for several minutes apiece in a unique one-on-one opportunity to network and make connections. Young Professionals These upwardly mobile members of our business community get together for social events, community service projects and networking as they solidify their place as the Chamber’s rising generation of leaders.

INFLUENCE

As the voice of business in the region, the Chamber works closely with members to develop and advance policy positions that foster economic growth and improve quality of life. It does so by connecting members with lawmakers face-to-face to discuss critical issues and actively engaging our elected officials to promote a probusiness agenda. Government Affairs Breakfast Briefings (GABBs) These gatherings enable members to interact directly with the elected officials, policy makers and department heads that represent our area. The Chamber limits attendance at GABBs so members get the “face time” they need to express their views and engage in discussions with lawmakers and other key leaders that might otherwise be inaccessible.

Public Policy Committee This group helps shape the Chamber’s overall advocacy agenda. With regular reports from lawmakers’ representatives and on-going analysis of critical legislation facing the business community, Public Policy is an opportunity for members to roll up their sleeves, dig into the issues of the day and position the Chamber to take a leadership role in fighting for the interests of local businesses.

Certificates of Origin The Chamber is the designated organization for issuance of Certificates of Origin, documents required of exporters by foreign governments which validate country of origin. Committee Involvement Each Chamber committee provides a unique opportunity to exchange information and get answers about what is going on in our community. Education is a conduit connecting businesses and schools, advocating for highquality education and promoting strategic partnerships. Business Development promotes individual business development through programs and the dissemination of information, such as identifying barriers hindering the success of business and offering advice and guidance. Marina Affairs reviews issues related primarily to the harbor at Marina del Rey and interacts with the Department of Beaches and Harbors. The Technology committee focuses on the ever changing world of computers, smartphones, social media and more, making sure our local businesses get the information they need to stay on the cutting edge. ONE LAST LOOK – GIVING BACK TO THE COMMUNITY The LAX coastal area business community has a story to tell. We asked them to do just that.

“The Chamber is worth its weight in gold ...” The Chamber is more than business contacts. In our industry, we can’t expect to get new clients at a Chamber mixer or a networking event. It just doesn’t work that way for us. But for JGM, the Chamber is worth its weight in gold when it comes to giving back to the community and raising our firm’s profile. I joined the Chamber’s Young Professionals group as a way to get involved in the community and give back to the area in which we do business. It has been a win-win-win. Whether it’s participating in a beach clean-up or getting involved in a fundrasier for a local

non-profit, helping others just makes me feel good, and it is fun rolling up your sleeves and working side-by-side with other local business people. On top of that, it’s a chance to spread the word about the organization we are assisting, so that these very worthy nonprofit groups can find even more volunteers to further their missions. And it doesn’t hurt that JGM gets a little exposure while we’re at it. The business community can’t be separate from the larger community. We all need to work together. Especially during these tough economic times, it is important for us to Shop Chamber, to do business with local companies

and also volunteer and give back whenever we can. Volunteering through the Chamber is a great way to meet new people at all levels of the corporate ladder, but it’s also a great way to do community service. After all, who wouldn’t want to do business with a company whose employees are always helping out in their neighborhood?
