For anyone that lives in Fort Collins, whether it be the four years they attend college here or the 30 they spend here after graduating, this place becomes home. For me, Fort Collins is quite literally my home. Despite being born out of state, I have lived here for the better part of 20 years, and when it came time to for me to start college, Colorado State University was the obvious choice. To me, there’s no better place in the world than the 47 square miles that the Choice City covers. We’ve got everything. When it comes to bars, restaurants, breweries, music venues and so much more, there’s no better town to find anything and everything you love. Every establishment has its own unique and diverse feeling, but if there’s one common theme among them, it’s that they treat you as one of their own. For students entering the overwhelming world of college life, there’s no better feeling than walking into a restaurant or bar for the first time and being treated as if you’re part of the family. In the 27 years that Student Media has published the “Best of CSU” edition, it has always been our goal to highlight the businesses and establishments that you, the reader, believe are the cream of the crop in our great city. We each have our favorite places to go, but by allowing the voice of our community to be heard, I believe we are truly able to present the best of the best to you. There’s not many places in the world like the one you’re in right now, so go out and explore the best things this city has to offer. Whether you’re looking for the perfect place to take a first date, or maybe the best place to drink after that first date goes horribly wrong, the 2016 Best of CSU edition is your guide to what we love. What year was the business established?

The Silver Grill Cafe is Northern Colorado’s oldest restaurant, serving breakfast and lunch since 1933, and with roots dating back to 1912. It was 1912 when two friends, Liggett and Brown, purchased space near the current restaurant’s location for a mere $140 and named it UNEEDA Lunch Cafe (“you-need-alunch,” get it?). Legend has it a hungry local painter conceived the Silver Grill name and painted it on the front window in exchange for a pork chop lunch. In 1933, the restaurant moved a few doors down to the space that today serves as the Silver Grill’s main entrance. What is unique about your business?

The Silver Grill is a regional icon. It has been for 83 years. Guests are swept back in time by weathered wood floors, brick walls and diner-style seating. The ever-present sound of clanking dishes, heaping breakfast and lunch creations, along with its signature Giant Cinnamon Rolls, combine to lend an old-style atmosphere that draws customers repeatedly back. What are you best known for?

Our world famous cinnamon rolls! Owner John Arnolfo also is credited with developing the Famous Giant Cinnamon Roll 30 years ago. Starting with an old recipe in a Better Homes and Gardens cookbook and the help of a retired German hand baker, Arnolfo first baked only 18 per day. Today’s Silver Grill staff bake over 10,000 a month. A restaurant reviewer called them ‘the holy grail of all brunch desserts.’ We also use our colossal cinnamon rolls in other menu items, including: • CinnsationAle (a sensational and sweetly spiced autumn ale infused with hundreds of tasty bits of our famous cinnamon rolls) • Cinnamon Roll French Toast • Cinnamon Roll Toast (a slice of Cinnamon Roll that’s buttered and grilled) • Cinnamon Roll Ice Cream • Cinnamon Roll Toast Sundae (Cinnamon Roll Toast topped with Cinnamon Roll ice cream and cinnamon caramel sauce) • Cinnamon Roll Ice Cream Sundae

What’s your CSU connection?

Owner John Arnolfo is a 1974 CSU graduate with a degree in finance who remains an ardent supporter of CSU Athletics. We employ a number of CSU students as servers and cooks. Each week, countless numbers of students, faculty and staff stop by for a good meal, business meeting or to enjoy a tasty latte or bloody mary. What do you believe makes you the best?

Good food isn’t the only ingredient of a popular restaurant. At Silver Grill, our servers and kitchen staff play a key role in making us a ‘must visit’ restaurant. They’re so devoted to our customers. A significant number have worked here 5-10 years (unheard of in the industry). Nolan, a baker, has worked an astounding 13 years! What do you like most about Fort Collins?

What year was the business was established?

JAWS sushi was established 3 years ago Aug. 5, 2013. What is unique about your business?

What make JAWS unique is many of things. First and foremost, we aren’t your typical sushi restaurant with authentic décor or atmosphere. We wanted to create a place that was different from all the other sushi restaurants in town while also providing some of the freshest fish and unique combinations of ingredients. We have four televisions that will have many different sports playing. A great décor with anything from our Neko Kitty Army to Godzilla, Star Wars, and great beers like Sapporo and Asahi Super Dry. To stand out as a little different than our competitors we tried to not have the same “cookie cutter” sushi restaurant that offers the exact same items as everyone else. We take chances on rolls with unique ingredients like the “Beets by Doctor Jones” which has goat cheese, roasted beets, asparagus, cucumber, avocado, topped with fresh salmon and microgreens with a balsamic glaze. We also offer appetizers such as the Chum Bucket, ceviche or edamame hummus, which you might not find elsewhere. What’s your CSU connection?

Our CSU connection other than being across the street is that co-owner Adam Schager graduated from CSU in 2008 from the Restaurant and Hospitality Management program (now just Hospitality Management). He still occasionally will drop by and do a sushi demonstration for students in the program as well as keeps in touch with former teachers and advisors who you might find eating as JAWS. What do we believe makes us the best is that we all have been doing this for quite some time now. Most of our chefs have at least seven to eight years experience in sushi alone as well as other cooking experience. Both Chef Adam and Chef Zack started out in restaurants when they were 14 years old and still continue to work and get better with each day. Chef Jeff Nanbara, co-owner of JAWS, has over 20 years experience with sushi. So, it’s not like this is something we just do to earn a check. It’s what we love to do. We enjoy coming to work and that shows when customers come in and the overall feel isn’t drab but more upbeat with employees who actually look like they are enjoying being at work. The Human Bean Coffee Truck is mobile so that it can serve patrons at community events across northern Colorado when it is not stationed at CSU.

My father and I purchased a small store named Beverage Nation in 2000 and then relocated the store in our present location next to Whole Foods in 2004. What is unique about your business?

My grandfather Darrell was the head of facilities for CSU in the 1970s and 1980s, my father got his electrical engineering degree from CSU, and I have a marketing degree from CSU. Currently our six and nine-year-old children are talking about attending CSU.
