A day in the Life of...

If you’re body could talk, what would it say about you? Nutrition is the scientific study of our consumption and use of nutrients. In practical task you will analyse the diet of a teenage girl in a typical day at school. Complete each of the activities in order before the prac, during the prac and after the prac.

Profile: Meet Sally. Sally is a 15 yo girl in Year 10 at a local high school. Today we are going to analyse her dietary needs according to her age and then evaluate her diet according to the various nutrients carbohydrates, protein, lipids and sodium. Complete each of the activities below.

Bacon & Egg Cups

Ingredients 3 sheets frozen ready-rolled puff pastry, thawed 500g bacon, thinly sliced 1 1/2 cups sour cream 1/3 cup chopped chives 12 eggs

Method 1.

Preheat oven to 200째C. Lightly grease 12 x 3/4-cup capacity Texas muffin pans. Cut pastry sheets into quarters. Gently ease a square of pastry into each muffin pan.

Cook bacon in a small frying pan over medium-high heat for 3 to 4 minutes or until light golden. Drain bacon on paper towel and allow to cool for 5 minutes.

3.

Place three-quarters of bacon into base of each pastry shell. Whisk sour cream, chives, salt and pepper until well-combined. Spoon mixture over bacon. Crack egg on top of sour cream. Top with remaining bacon.

4.

Bake for 25 to 30 minutes or until pastry is golden and filling is cooked. Allow to stand for 5 minutes before removing from pan. Season and serve hot.


Blueberry, lime & passionfruit slice Ingredients * * * * * * * * * *

6 egg whites 1 1/2 cups almond meal (ground almond) 1/1/2 cups icing sugar 1/4 cup plain flour 1/4 cup self-raising flour 1/2 cup desiccated coconut 155g melted butter 2 tsp finely grated lime rind frozen blueberries 1/4 cup passionfruit pulp.

Method 1.

Preheat oven to 180 degrees C.

Grease a 20 x 30cm pan. Line the base and sides with bakin gpaper. Extending the paper 5cm over the edges.

3.

Melt butter in microwave.

4.

Whisk 6 egg whites in a large bowl until frothy. Lightly fold in almond meal, icing sugar, plain flour, self raising flour, desiccated coconut, melted butter, grated lime rind.

5.

Pour mixture into pan, sprinkle with blueberries and drizzle with passionfruit pulp.

Bake for 90 minutes. Stand in the tin for 10 minutes.

7.

Cool and cut into rectangles. Dust with sifted icing sugar to serve.

Makes 16 slices


Greek Style Lamb Wraps Ingredients * * * * * * * * * * * *

3 tomatoes 150g fetta 2 cucumbers coarsely chopped 1 red onion thinly sliced 1 cup kalamata olives 1/4 cup fresh parsley 2tsp white wine vinegar 1tsp dried oregano leaves 60mls olive oil 4 lamb leg steaks 2tsp cumin 4 pieces Lebanese bread.

Melon juggling balls

Ingredients 1.5kg seedless watermelon 1/2 (780g) honeydew melon 1/2 (900g) rockmelon

Method 1.

Using a melon baller, scoop balls from watermelon, honeydew melon and rockmelon. Place in a large bowl. Serve.

American hotcakes Serves 4 2 eggs 2 cups buttermilk 2 cups flour 2 Tbs baking powder Pinch of salt 4tsp sugar 4 TBS melted butter 1/2 tsp vanilla 2/3 cup blueberries Maple syrup. Method 1. Beat egg and buttermilk together 2. Sieve flour, baking powder, salt and sugar together 3. Add melted butter and vanilla to the egg and milk. 4. Add wet ingredients to dry. Mix well 5. Cook in a non-stick, lightly greased pan.


Vegetable Pasta Bake

Ingredients • • • • • • • • • • •

500g dried penne pasta 6 rashers bacon, rinds removed, chopped 6 stalks silverbeet, leaves removed 1 zucchini, trimmed, diced 1 carrot, peeled, diced 3 stalks celery, trimmed, halved, sliced 150g green beans, trimmed, cut into 2cm lengths 250g button mushrooms, sliced 1 red capsicum, diced 737g bottle tomato pasta sauce 3 cups grated cheddar cheese

Method 1.

Preheat oven to 200°C. Grease a 6cm-deep, 28cm x 35cm (base) baking dish. Cook pasta in a large saucepan of boiling salted water, following packet directions, until just tender.

Meanwhile, place bacon on a microwave-safe plate. Cover with paper towel. Microwave on high (100%) for 2 to 3 minutes or until bacon is cooked through. Set aside.

3.

Chop the silverbeet leaves. Place in a large, microwave-safe bowl. Add zucchini, carrot, celery and green beans. Microwave on HIGH (100%) for 4 to 5 minutes or until carrot is tender. Add mushrooms, capsicum and bacon. Stir to combine.

4.

Drain pasta and return to the saucepan. Add vegetable mixture and pasta sauce. Stir to coat. Spoon into prepared baking dish. Sprinkle with cheese. Bake for 20 to 25 minutes or until golden. Serve.
