From the Mayor’s Desk - Our lovely Mayor Carolyn Goodman has graciously agreed to answer some questions from MYVEGAS Magazine’s readers. A special thanks to Mayor Goodman for her willingness to engage with our readers and the community of Las Vegas. Q: Summertime means family fun, summer vacations and lots of outdoor activities. How do you and your family like to enjoy summertime in Las Vegas? A: We really do like to spend time together as a family especially if I can get some or all of them together- a rare happening! Most times in Las Vegas we’ll just hang around the house barbecuing, swimming, playing games, and for sure I’ll be serving food from start to end. Our home is where our children grew up (same one for 38 years), so they love bringing their children here whenever they can. With some great planning, we’re off to the beach and then the families come oneby-one to squeeze into our little condo in Coronado. Q: Have you visited the High Roller Ferris wheel yet at the Linq? What are your thoughts on it, and how do you think both visitors and locals will respond to this new Las Vegas form of entertainment? A: The Linq and the High Roller are fantastic new additions to the world’s

top tourist destination, and our skyline is forever changed and improved by that magnificent and the biggest observation wheel in the world! It is unique and top-of-the-line, and yes I have visited, but not yet ridden it. In fact, CBS did a special on the opening and lucky me, I was asked as Mayor to make brief comments nationally about what a great place it is. It has added great excitement to the Strip where a visitor can stroll, shop, eat and enjoy a unique ride. The food there is decadent, from Sprinkles Cupcakes to the Ghirardelli ice cream and chocolate shop. Brooklyn Bowl is also something special as it is a new intimate venue for live music combined with gourmet comfort food and a bowling alley. Where else but Las Vegas would one find such a great combination of fun and excitement- it’s what we do! Q: Fourth of July is a great holiday to spend in Las Vegas! What are some fun ways that you like to celebrate with your family and friends?

Visitors come in from around the country (and the world) to converge in our city for our huge patriotic celebration. Naturally there are fireworks exploding in the sky from our hotel rooftops, but during the days leading up to the nighttime celebration, there are outdoor activities galore for tourists and residents to enjoy. Personally, Oscar and I usually walk in the Summerlin Patriotic Parade when we can. There is hiking, horseback riding, golfing, fishing and boating at Lake Mead, tennis, biking, and so much for everyone to do as they celebrate the Fourth of July in our city. Meet the Writers CAROLYN GOODMAN

LORI NELSON

Carolyn G. Goodman became the mayor of the city of Las Vegas on July 6, 2011. Carolyn has devoted much of her life to volunteerism and education in Las Vegas. She has been recognized with the “Distinguished Nevadan” award, and become a Sarah D. Barder Fellow in The Johns Hopkins University Center for Talented Youth and an Alumna of the Year in Education at UNLV. Goodman continues to prove her deep commitment to the community and devotes herself to the highest quality of life for all southern Nevadans through her efforts and dedication.

As the Vice President, Corporate Communications for Station Casinos, she is responsible for the Company’s public relations activities and serves as the Company spokesperson. She serves on the Governor’s Planning Commission for Nevada’s 150th celebration, is a 1999 graduate of the Las Vegas Chamber of Commerce Leadership Las Vegas and served as president of Child Focus at St. Jude’s Ranch.

LISA LYNN BACKUS Lisa Lynn Backus, CMP, CPCE, is Catering and Convention Services Manager. She has worked in the hospitality industry for over 25 years, including management with Marriott International and owner/operator of a full service DMC. She has worked with The International School of Hospitality, Past president of the Las Vegas Chapter of NACE, Her honors include recognized at the 2010 NACE Experience 2009 George Zell Spirit of NACE , Caesars Entertainment 2006 Chairman’s award for Community Service.

MICHELE POLCI Michele Polci has dedicated her career to building and shaping the Las Vegas catering industry, contributing to the greater good of our economy. Her contributions include leadership in industry organizations, as well as advising and teaching courses at local institutions. She currently oversees catered event sales at Caesars Entertainment’s eight Las Vegas properties.

MELISSA TORRES Melissa can be found doing her radio show every weekday on KCYE, 102.7- The Coyote. Melissa’s credits span from her very first TV commercial when she was 5 years old, to national TV commercials and projects for CNN.com, The Discovery Channel, MTV, KLAS-TV and FOX5 News. She also volunteers for several different local non-profit charities in town.

MICHELLE VELEZ Michelle Velez is on Wake Up With the Wagners and on weekend mornings on News 3 at Sunrise and News 3 Today. She joined the News 3 team after spending four years at KSNV’s sister station in Yuma, Ariz. Michelle devotes a lot of her time to cancer fundraisers and related events. Before moving to the Desert Southwest, Michelle lived in San Diego where she attended San Diego State University and earned a degree in Journalism and Political Science. Over the span of three years and three different stations, Michelle worked her way up from an intern to a producer and then made the move to Arizona to start her broadcasting career.

ince the beginning of time, holidays have played an important role in American life. The Fourth of July is an example of a holiday that Americans enjoy celebrating in a variety of ways. Las Vegas is home to a number of options and activities on this special day. Las Vegan, Meaghan Miller, spends her Fourth of July at the beautiful Red Rock Hotel, hanging out with her friends, listening to music, and watching the fireworks. Her younger sister, Ashley, likes lounging by the pool at the Golden Nugget Hotel and delving down the three story waterslide, which passes through a shark tank. Lance Early has lived here for almost five years and his favorite Fourth of July tradition is the Boulder City Fireworks show. Like Lance, Fran Goldberg raves that “the Boulder City Fireworks are nothing less than spectacular.” Others prefer the grand light show at Station Casinos annual Fourth of July Blast. Many ‘long-timers’ choose to watch the fireworks on the grassy knoll of the Las Vegas Country Club Golf Course, gathering with members of their family. Amazingly, amongst them are families that extend over three and four generations of proud Nevadans.

Some folks like to head out to Moapa Valley to choose from a wide range of fireworks to create their own light display. A little advice here: be mindful of federal laws! In other words, don’t light your fireworks on federal land because it is illegal to have fireworks on federal property, which includes all parks and recreational areas such as Lake Mead, Mount Charleston, Spring Mountains and Red Rock- even if it is America’s birthday. There is extreme danger of fire in the parklands and people caught using fireworks can face an extremely

stiff penalty. And, well, a lock-up, or any unfriendly encounter with the FEDS is really not a fun way to celebrate our nation’s holiday. While thousands of tourists flock to Las Vegas on the Fourth of July and other holidays, Las Vegas poet, cowboy, and lawyer, Al Marquis, heads out of town with his wife, Joanie. They travel to Kingston Ranch in Sandy Valley where they enjoy participating in Sandy Valley’s Fourth of July parade. Sometimes, Al chauffeurs Sandy Valley’s Grand Marshal in his 1978 red Cadillac convertible amidst horseback riders and antique automobiles. One year, Al decided to fly his airplane over the parade route... let’s just say that did not go over well with the town folks. (Al’s plane spooked their horses). Bareback riding, swimming, pickle ball, volleyball, horseshoe, pool, and swinging from trees are all laid back ways the Marquis’s celebrate their Fourth of July away from the city’s

flashy fireworks. Loud noises frighten Charlie, their white lab, and Charlie is a pretty important member of the family and even, the community. He is the recipient of the Nevada Childhood Cancer Foundation’s 2013 Community Angel Award. Charlie brings smiles to the faces of kids with cancer, helping in his own way. As such, the Marquis Clan and Charlie prefer watching the Las Vegas Fireworks on television enjoying the peace, quiet, and serenity of country life without their extravagant plane. Personally, my idea of celebrating Fourth of July is sitting out in the glowing, warm Las Vegas sun and barbecuing with my loved ones. My “Fourth favorites” include hamburgers, hot dogs, veggie burgers, tofu dogs (yes, that is a real thing) and sharing ice cold, crunchy watermelon. Las Vegas offers so many ways to celebrate our nation’s birthday, so, celebrate however you like. Have a Happy Fourth of July! MV

Tricks to Staying Healthy at Your Next Summer BBQ Fab Fit – It’s a lifestyle!

W

ith summer upon us, what better excuse to dust off the barbeque and enjoy some time outside in the fresh air with family and friends? If your first thoughts are highcalorie, high-fat sausages, burgers and high-sugar margaritas, don’t fret! There are some tricks to enjoy the summer barbeque season without sabotaging your diet and health goals. No, you don’t have to be the “weird one” refusing to eat or “on a diet”. The way you eat doesn’t have to be a big deal for you or anyone else at the party. At the same time, you certainly don’t have to eat junk in order to fit in with everyone else. The key is having options available for you and for all that want to partake, and just having a good time. Here are some simple items you can take when invited to, or hosting your next barbeque:

For starters, make sure you take veggies for either an appetizer or for the grill. I love taking snap peas, peppers and celery to dip in hummus. You get that chip and dip crunch without all the fat and calories. As for the main meal, perhaps some veggies like zucchini, asparagus, or a mix of veggies, fruit and lean meats for a healthy kabob. I love grilling zucchini, pineapple, peppers and chicken. Another option is to take a large healthy salad. You can enjoy your salad with whatever meat the host is grilling. Even a burger…no bun of course! With the main dishes handled, let’s move on to dessert. I’m sure there will be plenty of cupcakes, pie and tons of cookies. If you can resist your sweets craving, then by all means do so. But you can still stay healthy while having dessert. Try sticking with fresh fruit if that is an option. I love to take a melody of berries and light whipped cream. Place the mixed fruit in a cup with a splash of light whipped cream on top as a guiltfree treat that takes care of that sweet tooth.

egas summers are not for the faint of heart and us locals know very well just how challenging the desert heat can be on our delicate epidermis. Most of us keep sunscreen and lotions close and lather up as much as possible. Yes, this is exactly the thing you should be doing to protect yourself, however, you should be informed about what it is that you’re buying. Skin care brands make all sorts of promises in terms of protection but fail to acknowledge the toxic ingredients, which actually may harm your skin and your health in the long run, nor do they acknowledge the animal cruelty associated with the test phases of their products. Here are some things to consider before you stock up on sunscreen: Most commercial sunscreen products contain a toxic ingredient called Oxybenzone; its main purpose is to block UVB rays only. Did you know that UVB rays are in fact good sunrays, which supply us with the much-needed vitamin D? I encourage anyone to produce official evidence that over-exposure to the sun causes skin cancer; in fact they will see that there is plenty of evidence proving the contrary – we need the sun to fight cancer! Oxybenzone easily penetrates the skin and enters the blood stream, which can mimic or disrupt natural hormone production and this can cause several health issues including breast and other cancers.

Another dangerous ingredient found in almost all commercial sunscreen is Retinyl Palmitate, which is a type of a synthetic vitamin A. While it is usually listed as an “inactive ingredient”, it is anything but: several government and independent studies conducted between 2009 and 2012 strongly suggest that when RP is applied to skin during sun exposure, it actually could speed up the development of skin lesions and tumors. The FDA has yet to make a sound decision of banning this ingredient. For all natural sunburn protection, without harmful chemicals, opt for Badger Healthy Body Care products. They may cost a little more, however, it’s worth every penny. When it comes to skin lotions and moisturizers, beware of anything containing parabens or alcohols and ingredients you cannot pronounce. Parabens are chemical preservatives used in almost all cosmetics. In January of 2012 Journal of Applied Technology published a comprehensive study of women who have breast cancer. The study found parabens in nearly 100% of cancerous breast tissue. For safe and highly effective lotions try brands such as Alba Botanica® or Avalon Organics; these brands use high quality ingredients that will leave your skin feeling amazing and will not cause any harm and as with anything else, please research before you buy. I love mixing sliced cucumbers with mint leaves to my water as well raspberries and lemon for a sweeter taste. You can make infused water the night before in a large pitcher and take for all to enjoy! How about a cocktail? Most people tend to drink a lot of their calories and don’t even realize it. How Working Out Saved A Life by Meghan Leigh

I

t was the summer of 2012, and I recall Alec bouncing down the stairs to the kitchen, eager to go to the gym. At the time, he was very thin, pale and had only just begun working out and eating healthy. As excited and happy as he seemed, I would never have guessed that just a couple of months prior he had given up a plethora of hard-core addictions. These included prescription pain pills, ecstasy, heroin, sleeping pills, cigarettes, alcohol and marijuana. The more friends he lost to drugs, the more he realized something had to change. On the day of June 3, 2012, his father, author of “Interrupt the Pattern”, took 17 year old Alec under his wing and required him to change his drug habits into healthy eating habits and working out every day. Alec recalls it as being his “second chance at life.”

here are no shortage of great doctors and dentists in Southern Nevada, but there are always a few bad apples in a bunch!

I get calls from people on a monthly basis wanting to know what they can do when they dislike the treatment they have received from a doctor, nurse or dentist. There are actually very specific actions you can take, but you have to know whom to call. Unfortunately, due to medical privacy laws known as HIPPA, there is very little a journalist can often do on your behalf. I can admit, I’ve orchestrated some victories for locals, but more often than not, your best bet is to contact the medical boards. Below, I have the contact numbers for anyone you may need to contact if you have had a bad experience:

A DOCTOR: Contact the Nevada State Board of Medical Examiners at 888890-8210 or the Nevada State Board of Osteopathic Medicine at 702-732-2147.

A NURSE: Contact the Nevada State Board of Nursing at 486-5800.

A HOSPITAL OR OTHER HEALTH CARE FACILITY: Call the Nevada State Health Division at 702-4866515. Hospital complaints can also be directed to the Joint Commission, which accredits facilities, at 800994-6610.

DOCTORS OR HOSPITALS: Medicare patients can call Health Insight, a nonprofit organization hired by Medicare to improve the quality of care, at 800-748-6773. Before you go to any medical professional or facility, do your research. You can find out a lot online these days. MV

A

n escape from the summer heat doesn’t have to be far. In fact, Southern Nevada offers many places to get away, and get in a good workout at the same time. I have the honor of working with a few workout enthusiasts who manage to keep their cool. Nicki Gatlin, our weekend newscast director, plays ice hockey. For her, working up a sweat means layering on thick padding and braving an icebox. For those looking to incorporate ice into a workout routine, she shares a few tips: “work mostly on skating skills, including balance, speed and agility. Many hockey players and figure skaters do what is called “dry land” training, Plyometrics or jump training to help with agility. Drills help with hand/eye coordination and having a resistance routine focusing on core trength. Hockey and figure skating is based around your core because it helps with balance and stability on the ice.” When you’re actually on the ice, she says “consider doing a warm up of skating slowly around the rink, but pick up speed, then switch to skating backwards.” Heading to the rink is one way to keep cool and fit, even with scorching temperatures. As always, check with your physician before attempting any new exercise. MV

The Roth IRA

A

fifty-five year old friend of mine, Jane, recently changed jobs from her employer of fifteen years for a better opportunity. She had diligently contributed to her company’s 401k program and elected the “pre-tax” contribution option, thereby postponing tax on the saved money, into the future. Between her own contributions and her employer’s match, she stashed away $13,000 on average over her fifteen years which grew to almost $300,000 before she left the company. She explored her investment options with her tax accountant and investment manager. She decided to convert her 401k plan to a Rollover IRA and then convert the IRA to a Roth Rollover IRA. She was advised that a 401k plan can be converted to a Rollover IRA without limitation by the IRA rules pertaining to Modified Adjusted Gross Income. She was also advised that Rollovers are not limited by Annual Contribution limits. Armed with that advice, she decided that a Roth Rollover IRA was the right way forward for her. We’ll take a look into the downside and advantages of her decision.

The big downside in the decision is that conversion to a Roth IRA subjects the amount rolled over to tax at your marginal tax rate. In fact, based on her income and the amount of the rollover, Jane’s decision results in draws tax of about 30 percent of her rolled over amount. In order to protect the benefits of the Roth election, the funds must remain in the Roth IRA account for a minimum of five years from the date of conversion. So why take those negatives? Here are the advantages to offset that costly downside: 1. The tax payment can be withheld from the IRA funds being rolled over. This would leave Jane a net Roth IRA savings account of $210,000. The tax payment can also be made from other available funds. 2. Assuming there is no need to draw the funds until retirement at 65, in this example there are ten years to make up the tax burden from this year. 3. Over a period of ten years, at a cumulative annual gain of 7.5%, the account would reach over $410,000. The account would reach its original $300,000 level in the same period at a 3.66% cumulative gain. Neither earnings, nor equity gains within Roth IRA will be subject to tax as long as the five year “don’t withdraw” rule is observed.

4. In the same period, a 401k or Rollover IRA plan would reach $600,000 at 7.5% and $425,000 at 3.66% average annual cumulative gains. If Jane had made one of these choices, every penny of her savings would be subject to tax and rates in force when the money is withdrawn. 5. A Roth Rollover IRA option has no mandatory withdrawal requirements 6. Traditional IRA and 401k accounts withdrawal requirements that start at age 70½. There is a level of flexibility with Roth account balances. After risking investment in equities for higher returns in the ten-year period, Jane could change her investment profile to investments that produce stable and regular earnings, such as bonds or bond funds. Using the $410,000 account level (item 3 above) and a dividend rate of 4.5%, $1,500 could be withdrawn every month without tax. Roth IRA withdrawals are not counted as income in calculations otherwise used by IRS to determine Adjusted Gross Income or Modified Adjusted Gross Income. As with all other issues relating to your investments, consult tax and investment professionals who know you and your personal situation before making changes to your investment strategies. The decisions described here might not be right for you, but Jane’s situation might give you something to think about. MV

WEBSITE Whether you have a brick and mortar, home-based or Internet Marketing business you need to have a website. For those of you that have a website, take some time and go through the entire site. Start with the Home page. What does it look like? Are there too many stock photos that would cause your site to feel generic? Next go to the Contact Us page. Is the information correct? Then click on the social media icons. First, check to see if the icons go to the correct page. Second, are the postings up-to-date? Or are there tumbleweeds rolling across the page? Finally, do you have a CEO or President bio with a current photo of you on the website? After reviewing the entire site, be honest- would a new customer or client want to pick up the phone and call you for your service?

T

he Downtown Container Park is the new flagship achievement of Zappos CEO Tony Hsieh and his Downtown Project. Container Park was created to support locally owned shops and restaurants, but there is a lot more to experience there than just shopping and eating. Constructed using actual recycled shipping containers, the Downtown Container Park features live music on stage

and a huge tree house which is great fun for kids and adults. The real attraction though is the a massive metal praying mantis sculpture that welcomes guests into the area by shooting giant fireballs from its antennae (which can be heard from blocks away). Hsieh purchased the Mantis after seeing it at the famous Burning Man festival, and it was a huge hit

at First Friday and other local events. It now has a permanent home at Container Park! These artistic features are just some of the many highly creative endeavors that went into creating one of the most unique development projects Las Vegas has seen in years. Summer Real Estate Trends

I

t’s that time of year again- beautiful weather, flowers blooming, and a steady rise in the number of homes on the market for sale. We are also seeing a steady increase in home prices as well. We aren’t getting the monthly increase of 2-3% as we did last year, however, we have seen as much as a 2% increase for the first four months of this year. Obviously, this is not across the board in all areas of the valley; however, it is a trend that is occurring in all parts of the valley. The slow and steady increases, the rise in traditional sales, and the increase in population are all good indicators that we are nearing a stable market. Each time a real estate professional conducts a comparative market analysis (CMA) they are finding more traditional listings than we had the same time of year, last year. As of May 1st, there is a total of 6,297 listings available for sale without an accepted offer, of those, 859 are short sales, only 13% of listings, and only 349 are REOs a merely 5%, that is a HUGE shift in the market. A traditional sale is when a seller is making the decision to put their home on the market and either take advantage of a lower price on a home that they intend to keep for

a period of time, or maybe it’s just the desire for a change in lifestyle, whereby a homeowner is possibly downsizing, desires to have a home without a pool and outside maintenance responsibility, and possibly even a condominium that allows them to be more mobile. One of the trends that we see prior to listing their house is that some people are electing to identify maintenance issues, repainting, minor upgrades themselves, or hire a property inspector that provides them with a list of suggestions to make the home more marketable. After all it is springtime, the weather is quite good, and home repair places like Home Depot and Lowes make this opportunity a little easier with the kind of specials that we see running. This is always the time of the year when many people start to plant and upgrade their landscaping. With market conditions improving, we will see better quality listing inventory. Another positive trend we are seeing is an increase in those moving to our valley over this time last year by approximately 10%, and we expect that to continue as long as there are employment

opportunities. Some of the employment opportunities are SLS on the corner of Las Vegas Boulevard and Sahara where they are hiring approximately 2,000 people; the LINQ project where the High Roller has already become a major tourist attraction, the Cromwell which is a complete renovation of the old Barbary Coast/Bills Gambling Hall and the new 20,000 seat stadium planned behind the New York and Monte Carlo. These are just some of the examples of the kind of increase in employment that favorably affects the housing market. These employment opportunities along with the ability to purchase a home at below replacement costs are some of the primary reasons our sales activity is coming back to normal. With the slow and steady increase in home prices, the decreasing amount of short sales and REOs, and the steady growth in our economy with population and job growth, 2014 is shaping up to be a great year. The Poor Man’s Guide to Summer Pool Care by Rob Holbrook

W

hether you’re new here, or whether you’re a lifer, this city’s residents seem to retain little memory of the melting and blistering days consistent of every single summer previous. Well, when those dog days of summer drag through July and August without reprieve you’ll be chilling, literally, in your cool and cared-for oasis...the swimming pool. Let’s assume, for argument’s sake, that we don’t all have pool care technicians who make regular visits and, simply (if forced into such circumstances) could we perform routine pool maintenance? With a little care, attention, interest, and this guide, you’ll be swimming laps in the sweetest summer sanctuary on the whole block!

STEP ONE: Chlorine and pH are the backbone of pool care. With either out of balance you’ve got more an algae-ridden swimming hole (or colossal chemical burn) than a backyard oasis. Soak up some knowledge from your local pool supply store, and stock up on the chemicals and testing kits you’ll need to maintain that crystal clear hideaway all season long.

STEP TWO: The water in Southern Nevada is not only in short supply, but contains some

of the highest levels of calcium hardness and total dissolved solids (TDS) in the country. If left unchecked, this calcified hard water can spell doom for your pool’s water balance, sanitation and aesthetic appeal. Do yourself and your wallet a favor, and stay on top of the hardness levels on a weekly basis.

STEP THREE: Skim, brush, and vacuum your pool regularly to keep the water clear, reduce the necessity to add chemicals constantly, and maximize the efficiency of your filtration and circulation system. Throw some music on your headphones and Zen out with a leaf skimmer on an extension pole for a quick meditation session. It’s an easy way to rid your pool of larger debris and eases the strain on your vacuum, allowing it to suck up all the nastiness on the pool floor without clogging.

STEP FOUR: With a solar pool cover, you can save on your heating and water bills by harnessing the heat of those suffocating summer afternoons. You’ll save thousands of gallons of water a year by reducing evaporation, and notice an almost immediate difference in the temperature of your pool. Take advantage of the rebate offered on the Southern Nevada Water Authority website (www.snwa.com) and you’ll be doing all of this saving with very little

expense. It’s no small consolation that a cover also protects your pool from fallen debris from the constantly swirling winds throughout the valley. Less work for less money; hard to argue with that.

STEP FIVE Hire a GREAT pool man. This step may seem a bit ironic, but doesn’t negate the previous steps. Hire a pool man who gives your pool the care and attention it requires so you can perfect your breaststroke without a second thought. The trick to this all-important step is, of course, finding a “great” pool man- because this city is riddled with bad ones (I won’t name names). Too often, by the time you realize who you’ve hired, all the money’s been spent to be your own pool technician, sifting through magazines and the Internet for pool care how-to articles. And while that may help this Writer’s cause, it’s an expensive mistake that really just defeats the whole purpose. Do your research and get referrals from people you trust, because you can’t put a price on peace of mind. Now that your pool is summer-ready, heat up the barbecue and invite the friends over for some backyard grilling. And don’t forget the sunscreen! MV

How to be a Transformational Leader

1. Say yes to accepting normal. In order to be extraordinary, there must be an understanding of what is ordinary. Some managers may immediately scoff at an existing idea to try and recreate the wheel. Making improvements does not necessarily mean the old ideas are worthy of extinction. Recognize the positives and enhance the product by adding resources that will propel the company to the next level.

2. Say yes to accepting the do-nothings and slackers. Many managers will blame the employees as a reason for not meeting their goals. Some will make an extra effort to terminate employees who are perceived as the “loud mouth”. On many occasions, the “loud mouth” is considered a leader amongst their co-workers. The key is to be vigilant and utilize their ability to influence others to gain a positive advantage for the company. Placing them on a morale committee might be the trick. Allowing these types of workers an opportunity to collaborate in the decision

making process may alleviate the negative energy. 3. Say yes to copying your competition. Many companies state that they want to be the best in their field. In order to be transformational, recognizing that there is competition is fundamental to the success of the business. Identifying what the competitors are doing will only strengthen the ability to create new ideas to be at the top of the industry. 4. Say yes to the thought that employees and managers are not on the same team. The “Us vs. Them” mentality is alive and well in the workplace. Many employees feel that they are not on the same team as the managers, and that the overall goals and objectives are different. By embracing this concept, a leader can gain an advantage by recognizing and listening to their employees. Rather than immediately striking an idea or concept, the manager should let the employee know that all ideas are up for consideration. Summer Simplicity Fun Family Ideas by Katie Bencze

I

was just wrapping my head around the fact that spring is here, when it dawned on me that summer is soon to follow. I admit that I cringe a bit when I start thinking about the high heat and long days. Add in the fact that my kids will be out of school and I start to sweat a bit. The thought of helping them find something to entertain themselves every day of the summer always makes me roll my eyes and bang my head against the keyboard a few times. OK, perhaps I’m exaggerating a bit. I love my kids dearly and I do enjoy having them around a bit more, but I have to admit that there are times that I wish I could just send them outside and tell them to be home for dinner like my parents did. These times include the constant presence of terms like: “Mom, Mom, Mom, Mom, Mom” and other gems like “I’mmmm boooooored.” So what to do, what to do? After a year of “winging it” through a summer and feeling a bit frazzled now and then, I decided to do a little preplanning. Nothing fancy. I didn’t even have to think of the ideas. Between fellow moms, local resources, the Internet and my kids, we were able to create our very own…(drum roll) “Summer Fun Jar” (also known as the “Mom I’m Bored Jar”). This is not a new invention, I know, but it’s a worthy one! By taking the time to write down doable ideas, this not only helped me plan my days, but it gave the kids something to anticipate. And here’s the kicker- we also added in not so fun things like chores (dishes, cleaning rooms, etc.) Let’s face it, we can’t do something all the time, every day. The chores were a good down time and added an element that made the kids think before they whined or asked for the jar. In the end, it was amazing how fun it was to pick something for the next day and look forward to it. Plus, it took the burden off me to think of something spur of the moment and helped us save money, as most of our ideas were free (or close to it)! So as simple as this idea sounds, it worked well for us. To make your own “Fun/Boredom Jar”, involve your kids. You can use a jar, coffee can, a bowl or whatever you have handy. You can decorate it or just stuff your ideas in it. I’ve seen ambitious

people use Popsicle sticks, but personally, we just fold pieces of paper. You can always use websites like Pinterest to scout out more creative ideas. As far as what to put in those jars, that’s up to you. Remember, you can put your favorites in more than once. Here’s what’s on our list thus far: Water balloon fight, go to a park, science experiment (you can put individual experiments – the Internet is full of easy ones!), lemonade stand, go swimming, blow bubbles, do dishes, outdoor picnic, create a water wall, paper mâché animal, piñata, whip cream pie fight, clean room, read a book, play a board game, yard work, go to library, play in the dirt, scavenger hunt (use whatever you have around- we use toys.), make Flubber, road trip, play dress-up, quick math, bake something sweet, explore a museum, vacuum, build a racecar from a box, paint rocks, organize garage, back yard scrabble, chalk art, dance party, make a comic book, pick something at dollar store, find a fair/festival, make ice cream, fly a kite and enjoy your time together!. First and foremost NEVER leave a pet in the car- even for a minute. Extreme temperatures inside a hot car can cause irreversible organ damage or even death. Limit exercise to early mornings and evenings when it’s cooler- and watch the asphalt because it can get very hot and burn their paws. Also watch for signs of heatstroke: heavy panting, glazed eyes, profuse salivation, lethargy. Dogs can only regulate their body temperature by panting and by a tiny amount of evaporation by sweating through their paws, so it’s important to keep them cool. We like to put ice in the water bowls for our girls for a nice frosty cold drink! A good general rule of thumb is, if you are uncomfortable, so is your pet. Happy summer everyone! MV

ummer is right around the corner and it’s going to be hot. The heat affects your furry family member just like it affects you. Every summer, too many family pets suffer from heat exhaustion that is easily avoidable. Educate yourself on the signs of heat exhaustion in dogs. Here are my top 10 tips for keeping your pets cool and hydrated this summer: 1. Water, water and more water. The best way make sure there is plenty of water for your pets is to invest in an automatic flow water system. They range in size from ½ gallon to 6 gallons so get what fits your pets needs best. 2. Limit the amount of time your dog spends in the heat. If your four legged companion spends most of their time outdoors, provide adequate shade. If possible, bring them inside to enjoy the air conditioning. 3. If you take your furry baby everywhere with you, make sure you bring along a portable water supply. 4. Do not leave your pets in a parked car. The temperature inside a vehicle can be 15-20 degrees hotter than the daily temperature, even with ventilation. 5. If your dog enjoys baths, try a cooling bath or buy a kiddie pool and fill it just a couple of inches with cold water and ice cubes. Keeping your dogs hydrated keeps them happy and healthy. MV

Chef Vic Vegas is on Fire An Interview with Vic Moea by Jenn Zenn

“I

t’s pronounced ‘cipollini onion’…stop butchering words!” Vic Moea, a.k.a. Chef Vic Vegas, laughs as he voice transcribes a text message to a friend into his cellphone when we sit down to talk shop. Specifically his shop, Vic’s, located in the Anthem area of Las Vegas. Metaphorically speaking, it seems that he never steps out of that chef’s coat, he’s always got great food on his mind, and most of all, he demands respect for the food itself. On our conversational menu are topics ranging from Vic’s incredible work ethic, co-operating a restaurant with one of his best friends, and his recent and ongoing appearances on the Spike TV hit, Bar Rescue. In addition to his restaurant and his many television and public appearances, Vic recently landed himself the honorable position of working with U.S. Foods as a Corporate Executive Chef. It seems that there is much more to this self-taught chef than meets the eye… JZ: I was reading about how you’re self-trained. Tell me more… VV: That’s why I wear the dishwasher shirt…that’s not a Chef’s coat I wear…it’s the dishwasher’s shirt, because that was my first job. Instead of me wearing the fancy chef’s coat, I wear the down-anddirty dishwasher’s shirt. It’s awesome because starting out as a dishwasher and working in bars on the side of the road, to the finest restaurants in a fifteen to twenty year time span, I worked my way up from dishwasher to hotel executive chef. Then, U.S. Foods hired me as a corporate executive chef, it’s like, you can go no further! JZ: …and you’ve done that in a very short amount of time, right? VV: I did… from start to finish… about twenty years. JZ: So, you’ve really had no formal culinary training at all then? VV: Zero…I’ve never worked under any other known chef…and it’s a blessing

actually because, once you do that, you become the reflection of that person… which, I don’t mean to say that in a bad way because there’s a lot of chefs out there that work for someone else. But, everything I’ve accumulated, and everything that I’ve learned, everything I know, all came from me sourcing it out myself. JZ: So in your opinion, is it harder for chef’s who’ve taken the traditional route, compared to what you had to go through to find success? VV: It was actually harder for me, the route that I took. But in the long run, it made me different because I adapted to myself as opposed to following a structured format…the cookie-cutter degree, etc. JZ: You’re from New York originally. When did you move out west? VV: 1989. It was because of my parents, I was just a kid and they brought me out here! When I first got here, it was not huge yet- it was just starting to grow. It was old Vegas still in full effect. I was building up as the city was building up. JZ: What are some of the most important lessons that you’ve learned living in Las Vegas? V: To definitely keep a very tight, trusted circle of friends around you. Trust is key. JZ: Do you work with your friends? VV: The co-owner of the restaurant is a friend. I have two partners: our financial manager, and my best friend Scott. So my best friend is actually a partner in the restaurant. He’s been my best friend for fifteen years. JZ: That’s amazing! So how is it working with such a close friend? Do you ever butt heads? VV: Nope, because he understands. He gets it…Scott gets the whole thing.

He sees what my eyes see, he knows what my eyes, mind, body and soul experience, so when it’s time to leave Vic alone (because when I’m filming a show, the restaurant gets ten times busier)…he knows what I’m going through. JZ: How has working in reality television, media, social media, and all of the stuff that you’ve got your hands in, affected your business? VV: In amazing ways! It has affected me as a chef in an important way because, everything you do out there becomes recorded and people can see it. So the more you do, the more people see, the bigger the comfort zone that gets created because the first thing that people do nowadays when they meet you is check your credentials. Everything is online and available. JZ: How did the location of your restaurant come about? VV: We kind of tripped over it. We had plans of going elsewhere, more inner city, but it just kind of popped up. There were actually close to twenty restaurateurs trying to grab that restaurant location and it was a process that had been going on for months. We threw our name in the hat at the last minute, and we were the wild card. JZ: That’s so great! As we all know Vegas has a tendency to categorize: local vs. tourist. So what would you say is your restaurant’s target audience? VV: Well, it’s kind of rough because it’s so very unexpected that I would go into that location, so we were kind of looking at it as a privilege to be able to reach out to a different clientele. We figured we know what we’re going to be doing, we know we’re going to be a restaurant group, why not get our asses handed to us for a year or two to really polish us and make us great, so when we do finally hit the Strip and Downtown, we’re ready for anything!

JZ: So you really did want to learn, “trial by fire”… VV: My career…I mean, I say I didn’t have schooling, but in a way, I really did. I worked at bars, I worked at local Mom and Pop’s, I worked at corporate local establishments and hotels (both non-corporate and corporate), I became an executive chef of a hotel, and that qualified me for a corporate executive chef’s position of a nineteen-billiondollar food company covering Las Vegas and Southern Utah! JZ: It’s so true that people tend to be impressed by individuals who are “self made”… VV: I’m self made all the way, and let me tell you, I’ve felt every bit of the struggle. JZ: You’ve been in the industry a long time and I’m sure you’ve noticed trends and changes. Do you follow the trends? Or do you set your own trends? VV: Well, I respect the trends because it’s part of the industry, but I like to be part of the trend setting. That’s why I really lucked out because, if you line up a thousand chefs, you’re probably going to notice me! I’m just, different. I don’t try to be different, but me just being myself, I fall into this other category. JZ: What would you say your specialty is? VV: My specialty is Classic American Italian and comfort food, all the way. I was one of the first. Vic Vegas is known for the ‘twisted classic’ stuff. Good eats. Vic’s restaurants will be expanding in Las Vegas…different locations and different concepts. JZ: So back to television, we know you’re on Bar Rescue, but what was your first experience with reality television? Where did it all begin? VV: My debut was in 2008 on the Food Network challenge, Big Bash Catering Competition. First time ever competing on TV.

JZ: Were you terrified? VV: My knees were shaking! I thought the microphone was going to pick up my knees hitting together! It was insane because you have that make-you-or-break-you feeling the first time on the show before you even get a chance to become something. It was a one-time episode competition show. It was the only time and year, they never repeated the competition…so me and my teammate, we go down in history as the only Big Bash Catering companions in the history of Food Network. After that show, I was on The Italian Family Feast. I had the opportunity of being surprised by my family to help me cook JZ: Was that fun? VV: My dad and my aunt showed up out of the curtain, and we had no idea until we were filming and they came out. And it was totally nerve-racking because I just knew that my family wasn’t going to listen to me! And they did not at all. My father cut up all my food and fed the audience, and then I had nothing to feed the judges…so now that I have no food to present to the judges, I have to accept that as fact, and I took responsibility, and they saw me as a growing chef even

though I’m not formally trained, I knew to take responsibility (though it wasn’t my fault). But I was the chef of the kitchen, and instead of crushing me, they (the judges) mentored me and let me know that I was a better chef today than I was yesterday because I took accountability. JZ: The chef really is the manager of the kitchen. Tell me about U.S. Foods… VV: U.S. Foods is a great company to work for. U.S Foods has definitely supported me- we’ve collaborated and joined forces to make food service better in Las Vegas and southern Utah, straight up. We have it broken down into three chapters: National accounts (franchises and chains), Streets (‘Mom and Pop’ places and local restaurants), and hotels. We cover everything. I travel a lot; they use me on a national level. I’m representing U.S. Foods in the Indy 500. I’m teaming up with a racecar driver, we’re making his favorite dish for one thousand people and all the proceeds go to charity. JZ: What are some of the charities that you guys support? VV: St. Jude’s Ranch for Children, Three Square and Boys and Girls club. I want to bring awareness to charities, and hope to spread the word on their behalf. JZ: Time to get personal: are you married or single? VV: Mr. Vic is single. I’m so busy, so honestly I substitute that time for a relationship with work time. And the goal of all this hard work is so that one day, I can make someone very, very happy. I’ve got kids…I’m a father. Family is important to me. And I have a dog; his name is Meatball. I told Meatball when I got him ten years ago, I

promised him that I was going to make him famous! I got him as a puppy and he’s been my best buddy ever since. He’s gotten to see a lot. He’s been through it all with me. JZ: I want to talk about tattoos. What are the meanings behind your tattoos? VV: At first I only had the black tribal, and as I got older, my tattoos started to have more meaning to me. Now my tattoos (dice) means I always roll the dice, and reach into the fire (flame tattoo)- that’s what I do for a living, and that’s what I do in life in general; I take chances. But as well, I use these hands to create, so no matter what… look how far it’s gotten me…I have the winning hand- number twenty-one. I’m constantly reaching into the fire. JZ: If you had one person, living or dead, that you can say is your role model, who would it be? VV: My inspiration is Mr. T. I feel like I’m a descendant of his, in a different 2020 kind of way. He’s my hero! “Do the right thing!” And I’m a wrestling fanatic. Somehow, some way, I will find a way to wrestle professionally! Half of me is wrestling. JZ: Any other projects that you’re working on? VV: NBC Food Fighters is NBC’s culinary extravaganza, Home cooking vs: Chef, and I am in two episodes. We are the defenders; we’re like gladiators. I’m now heavily involved in a world food championship which is the Official Olympics of Food. I was the host of the final food fight in 2013 and it’s coming again in November; I’m the host of the final food fight. JZ: What would your tagline be? VV: I’ll say this: we come far, and some people that get in our situations forget where they come from, and I just always tell people: stay humble, and be proud. MV

Pasta Shop Ristorante and Art Gallery

W

ho doesn’t love a neighborhood restaurant to call your own? In such a big city with all sorts of dining options, these establishments get lost in the shuffle. You can imagine how ecstatic we were to find the Pasta Shop Ristorante and Art Gallery in Green Valley. The atmosphere is as casual and welcoming as the food is wonderful. All over the walls and ceiling (and everywhere else) is unique art, much of it crafted by the owner’s other half. A chalk board in an artsy frame sums it all up with a six-word alliterative declaration: “Fresh Pasta / Funky Art / Fabulous Wine.” If you ever wanted to be part of a big Italian family surrounded by plentiful food including homemade pasta, where everyone is genuinely interested in your happiness and sends you home with food, we’ve found you the perfect eatery! It’s the kind of place where the owner knows your name, welcomes you with a handshake and checks for satisfaction throughout the meal. Ciabatta garlic cheesy bread was delivered to the table immediately as we sat. We were surprised we managed to make it last all dinner. One of us would’ve been super happy just with bread and wine for the night. The wine list was an easy read with descriptions that made you want to try them all, especially the California reds. Our favorite of the night just might have been the artichoke appetizer. It’s not on the menu, but we had heard the regulars have come to demand it- and we can see why. It’s a perfectly cooked artichoke, petals removed and artfully arranged as a flower, heart in the center and leaves radiating out all around with a little fresh red pepper to add a vibrant garnish. Topped off with an EVOO/balsamic potion, the taste sensation was something to behold. Difficult though it was, we demonstrated our united restraint by leaving a couple of these tasty leaves behind (just two, believe us!). A must try is the Saffron Shrimp Sauté, with squid ink fettuccine in a colorful saffron cream sauce. Served in a bowl with a pasta-twirling spoon, the tiger shrimp appeared to be synchronized swimmers in the sun-hued pool of yumminess. Amazingly, the spoon served a dual purpose making this dish a double feature of sauce and saffron soup.

We also enjoyed the Ravioli Bianca. It was subtly filled with cheese and topped with a browned butter sauce, roma tomatoes and toasted pistachios. While Caesar Salad appears on menus everywhere, we found the Pasta Ristorante’s version perfectly dressed. It was light in flavor, not overpowering the rest of the meal. Another weightless pleasure was the Lemon Ricotta Cheesecake with ginger graham cracker crust. This dessert was definitely shareable for four with a few bites each for taste. We didn’t have enough room to finish this so we boxed it up for later. Pasta Shop and Ristorante is a gathering place for all. The night we dined, so did a group of 10 for a social dinner meeting. Also a romantic couple, and a gentleman picking up a large order to go. A bonus for making Pasta Shop Ristorante your new favorite place is the parking- it’s right in front of the shop. So, if you are looking for some fun, colorful, casual, makeyou-feel-good art and happy-to-be-hungry-for-Italian food, we’ve found the perfect place. And that’s What She Said! Summertime Food & Wine

ummer is here, and pairing a wine selection to an occasion is the first step in finding wines you will truly enjoy this season. Wine matches with food best when the weight and intensity of the wine balance with the weight or richness of the food. Cabernet Sauvignon complements spiced rack of lamb or grilled game because they are equally intense. Pinot Noir makes a better match with roast beef, stews, and mushrooms because the richness of texture is the same in both. Fresh seafood dishes served with lemon (raw oysters, crab, shrimp, and white fish) will pair best with lighter white wines like Sauvignon Blanc. The key is to focus on the sauce, for example a Grenache served with a raspberry glazed pork chop, a Pinot Noir paired with salmon, or a creamy Chardonnay would be perfect for a rich Caesar or Cobb salad. The basic elements are as follows: Alcohol - Full bodied wines tend to be higher in alcohol, heavy sauces will tend to make these heavier wines taste a little sweet, but salty foods such as ham, bacon and cured meats can make high alcohol wines taste bitter. Acidity - Balanced acidity in wine is your friend, as it helps food taste vibrant and refreshing, and helps uplift the flavors in the dish. Sweetness - Peppery and spicy foods like a little sweetness, as do slightly sweet dishes, such as Asian or Indian food and spices paired with a Riesling or GewĂźrztraminer. Tannin - Many red wines have bold or elevated tannins, which can complement fatty dishes. Think leg of lamb or slow roasted braised meats, as well as rich, creamy foods, such as blue and aged cheeses. MV

Park on Fremont

The rustic versatile restaurant and bar located in the heart of the revitalized Fremont East Entertainment District, transforms seamlessly between weekend brunch, mid-week lunch, after-work happy hour and late-night bar scene. The hostesses, servers and the bartenders (all clad in stylish plaid shirts and coy suspenders) welcome you with smiles, quick wits and stiff drinks. Park on Fremont is a whimsical wonderland of delightful art and oddities including: thought provoking chalkboard messages at the entrance, an antelope sculpture with machine gun antlers by artist Peter Gronquist, a 1960’s-era juke box, and a chandelier hallway. The hidden gem of Park is their back patio. A

bright and bountiful garden by floral and garden designer Victoria Hogan of Flora Pop sets the stage for this surrealistic landscape where urban life meets nature. Tuesday at Park is the day of tacos. American journalist and author Hunter S. Thompson once wrote “Don’t judge a taco by its price,” and you sure will be glad you didn’t form an opinion on Park’s merely by their $2 sticker! The juicy, savory Carne Asada nuggets of deliciousness are available every Tuesday from 3 to 7p.m. Pair with $1 Coronitas, and call it a day well played. It’s no new news that Thursday is the new Friday, but at Park it is also Acoustic Patio- a night to kick back in their back patio in good company and rejuvenating vibrations. The weekly event, held every Thursday from 6 to 9 p.m., features local musicians, such as Matt Matelko. As for the bevy of choice, definitely the Peach Fuzz Smash by Boozologist Dan Marohnic: bourbon muddled with

peaches, lemon and basil combine for a libation that tastes like a bite out of a ripe peach freshly plucked from the orchard. Weekends at Park are filled with delightful boozy brunches. Satiate your inclination towards indulgence, without pocketbook remiss with Park’s Patio Pounder. The special is only $20 and comes with a bottle of Mumm champagne and a carafe of orange juice. Brunch items like the Morning Skillet (red potatoes, sausage, onions, peppers, cheese, salsa, topped with over easy eggs) and French Toast (vanilla bean soaked brioche, topped with drunk mixed berries, syrup and powdered sugar) are instant hangover nurses. Any pizza joint worth its salt offers chicken, and Naked City covers it in spades. Both wings and fingers, tossed in a multitude of flavor options (try the Hot Sicilian for a real kick), are juicy, meaty and served with, yep, house-made blue cheese or ranch. For the self-proclaimed foodies, the Entrée Specialties are mouth-watering, inventive, and items you’d find on menus with much higher price points. outed as one of Summerlin’s best restaurants, Embers Grille + Spirits delivers a wonderful MyVegas Magazine experience.

Nestled in Boca Park, Embers is contemporary and relaxed, featuring a warm palate of dark hardwoods, flagstone walls and high ceilings that are complimented by an open-air patio. We dined there one recent Sunday evening, enjoying the outdoor patio space. As our desert temperatures climb, it is important to note the patio was shaded and offered calming effects as we were lulled by the sounds of the nearby fountain.

The service was delivered in a team approach. May, who hails from Hawaii, served as our hostess ensuring all our needs were met. Our group was in agreement that Elgin might be one of the best servers we have ever encountered. The descriptive terms he used to interpret the menu were reminiscent of listening to a story. Elgin is an artist with his words, making each dish sound more enticing than the last. Steve, a Las Vegas native, supported the team and is a seasoned service professional. Needless to say, the team helped to make our dining experience at Embers more than enjoyable. They made it fun!

pudding, glazed Brussels sprouts and cranberry demi. The beef selection, an eight-ounce filet and the Blackened Prime Flat Iron Steak, was equally delicious. For dessert the Warm Chocolate Cake was worth every minute of the twenty minute baking time.

Embers’ fusion menu offers a unique and modern take on classic American cuisine. Our meal started with various selections from their Fresh Beginnings menu. The Bacon Wrapped Dates, stuffed with toasted almonds and finished with a pomegranate reduction, are an Embers signature. The vegetarian in our group selected the Mushroom, Spinach and Parmesan flatbread with Truffle Oil offering the perfect touch. The Tempura Rock Shrimp Misto with avocado and red Fresno peppers was a group favorite.

All in all, their food, wine, beer, cocktails and atmosphere make for an excellent experience at very moderate and competitive prices!

Our dinner selections included the Pan-Roasted Chilean Sea Bass, which is fresh daily and served in a bowl of saffron butter sauce with chorizo, red potatoes, zucchini and squash. The Pan Roasted Herb Chicken was cooked and seasoned to perfection and served with a delectable French bread

t all started with a reality show.” Generally nothing good can come after that quote, but in this case the result is delicious. Chef Seonkyoung Longest was an unlikely hero in the kitchen- having no culinary experience while battling semi-professional chefs on Food Network’s, “Restaurant Express.” She won, and her prize was to become Executive Chef of her own restaurant at The M Resort. Jayde Fuzion is the product of her hard work- a mix of Japanese, Korean and Chinese cuisine that will surprise and delight fans of any or all of those categories. For starters, an absolute must is their Korean Street Tacos. Featuring spicy beef and sriracha-lime sauce all wrapped up in scallion pancakes, these are a hit. Their Chinese Spiced Duck Sliders and Crab Salad are incredible appetizers as well. When it comes to entrées, that’s when it gets fun! Sushi, Thai, Chinese… they have it all. Honey Walnut Prawns are delicious, featuring enormous prawns dipped in tempura, along with candied walnuts and a wild honey drizzle. For more “kick”, try their Szechuan Pepper Crusted Filet Medallions with sake-plum wine butter. Their desserts are just as unique! Yuzu Doughnuts are indescribable; a must try. And their Green Tea Crème Brûlée is a great twist on a classic. Since the show aired and the restaurant opened, Chef Seonkyoung has moved on to other opportunities, but her menu has remained and expanded. Welcome to Tequila Country: Las Vegas! by Rob Holbrook

One tequila, two tequila, three tequila, FLOOR!

T

o the vast majority in this country, the distilled blue agave spirit from our neighbors to the south conjures only blurred memories. This perception, however, is slowly changing in America, and specifically Las Vegas. “Tequila is finally getting respect”, notes Robert Ansara, President of Ricardo’s Mexican Restaurant, a Las Vegas institution since the nineteenseventies. “As recently as thirty years ago, there were five brands of tequila imported into this country.” A quick lesson:

Tequila takes its name from the specific city and region in Mexico where the blue agave plant is legally allowed to be grown and harvested. A surplus of agave from a boom in cultivation some years ago created a growing number of “bang and bust” tequila brands. 1500 brands of tequila are made in that region of Mexico, with only 150 distilleries legally allotted to produce it. And the market is steadily growing. “All these George Clooney tequilas, the Justin Timberlake tequilas- they’re all being made at very similar houses,” muses Kevin Vanegas, the Master of

Tequila (that’s literally his title) with Wirtz Beverage Nevada. “To discern, you look at the CRT distillery number on any bottle of tequila. You know when it’s something like 1122, Casa Cuervo- the biggest tequila maker in the world- they have the capability and resources to make amazing tequilas.” The official regulatory body in Mexico, the CRT, allows two classes of tequila. One is a minimum 51% agave sugars and 49% sugar cane juices. In the United States, this is considered a mixto, or blend, and is the most common type of Tequila found in North American stores and homes.

The other class has 99% agave sugars, with small amounts of oak essence, infusion, and glycerine for texture and body. Both of these classes are stated clearly on each bottle of tequila distributed. Within these classes, five styles are recognized, based on the aging process.

Plata, or Silver or Blanco, is bottled within sixty days of distilling. Its flavor is strong and alcohol is pronounced due to the nearly non-existent aging. Reposado, or “rested”, is required by law to age in barrels a minimum of two months, and are known for their earthy, herbaceous notes imparted from the oak they have been aged in. Joven, or young- or Gold as determined by its amber hue- is not to be confused with a mixto (though it is a blend of tequilas, but not sugars). Joven tequila is ordinarily a large percentage Silver tequila blended with a small percentage of Reposado- often for flavor or color. Some of the most purchased tequilas in the world are jovens- Cuervo Gold and Sauza Gold being the most popular. Anejo is aged a minimum of twelve months, up to three years, which accounts for its smooth texture, soft flavors, and easy drinking. The anejo leads the current zeitgeist in North America toward slow drinking, no chaser, fully appreciated tequila. While the Extra Anejo is for the high rollers of the spirit drinking world, it is the Anejo that changes the mindset of tequila from simply a party shot with your bros to a full-bodied, nuanced and flavorful beverage you can appreciate with your boss or father-in-law. Extra Anejo, aged at least five years, is tequila to be properly appreciated, fawned over, loved and adored by individuals with a little bit of liquid and,

hopefully, a deeper understanding and admiration for the process, labor and distinction of tequila. Most bottles don’t go for less than $150 in stores, and some have sold for as much as $10,000.

Those successful brands marketing quality and filling a niche, but not necessarily following through on the promise, are few. Most go under very quickly.

So, why is tequila suddenly charging the market here in Las Vegas and the country? Not so fast.

“The concept many tequila companies don’t grasp,” says Vanegas, “it takes a lot of hard work and time to producing and selling quality tequila. A tequila company should plan on making no money, actually, losing money, for at least the first five years.”

“Tequila isn’t an overnight success,” points out Ansara. “Cuervo started distilling tequila in 1795”, adds Vanegas. “We drink more tequila in this country than in Mexico. You have brands that are the standard of tequila and then you have the bandwagoners.” So the sudden appreciation isn’t so sudden? Branding and marketing plays a major role (perhaps more than other factors) in educating the masses, and on the influx of tequila brands to North American homes. The amount of dollars spent to brand any tequila as “quality” is the first, and possibly most important, step to increasing knowledge, appreciation and, in the end, sales. This branding imparts an ideal of sophistication in the consumer- as if they are a certain level of social and financial standing when they drink it. Like anything “high end” in this country, if it is branded as “quality”, we are more apt to buy it. Once the marketing works, however, the work isn’t done. That quality being marketed must follow through on its promise. Some brands will pass the litmus test and some will not. Vanegas imparts without naming names, “Some brands jumped on the niche of upscale tequila- marketed themselves that way. And now, that’s how they’re sold- feeding back into their identities.”

Perhaps this is the long overdue tipping point for tequila. Whether through marketing or legitimate education, more people are getting to know it and appreciate it. S

ince the beginning of time, horses have roamed the earth both with and beside mankind. These days, they are found everywhere from being featured as stylish symbols on clothing, to being sung about in a country song! Bet you’ve never considered a horse working with you on your emotions or mindset, have you? Meet a new kind of therapist: he loves to gallop and enjoys his stack of hay. Yes, your new therapist could very well be a horse. Horses are extremely kind and compassionate, and are often the link between sickness and healing. Equine therapy (also known as equine assisted therapy) is a form of psychotherapy that helps to promote physical, occupational and emotional growth from people who suffer from a variety of issues including ADHD, anxiety, autism, depression, and many others. Widely used as a form of therapy for children, equine assisted therapies all over the world have developed as a medical field and have become popular here in the United States within the last decade.

This was all a foreign concept to me until my boyfriend came home one day and said he was working on a new project involving horses. What a journey he’s had to find this groundbreaking therapy. To talk about Marcelo Gellert, would take many pages. He’s a world-class illusionist with a Masters degree in psychology that first started performing at a very young age. That’s why I took a break from performing on stage and started working with disadvantaged youth to make them understand that the real magic is within themselves; and if they can understand that, nothing is impossible.” Marcelo currently provides services as a mental health professional at Goals 4 Success here in Las Vegas. A typical equine therapy session involves the patient doing an activity (such as grooming, feeding or leading a horse) that is supervised by a mental health professional, often with the support

of an equine therapist. While the patient does the activity, the equine therapist can observe and interact with the patient in order to identify behavior patterns and process thoughts and emotions. The goal of equine therapy is to help the patient develop needed skills and attributes, responsibility, self-confidence, problem solving skills, and more. Is Social Media Ruining

A

girlfriend of mine recently asked me to write about my feelings on social media and relationships. Coincidentally, social media had been a factor with someone I was seeing not too long ago who became upset after creeping on my Twitter page and saw me writing XOXO’s and red lip emoticons to my guy friends. He thought I was too flirty, where I thought XOXO’s and emojis were simply cute and not meant to be taken literally. However, as ridiculous as I thought his complaint was, since my behavior was upsetting to the guy, I did stop the XOXO’s to try and put his overactive imagination at ease.

While the jealous boyfriends and girlfriends of the world might not like it, in this day and age, most men and women have platonic friends of the opposite sex. I can see how Facebook can create jealousy in an already insecure person. It’s funny, there are men who write on my Facebook wall and “like” every picture I post, yet I don’t actually know them that well and they most likely don’t even have my phone number. From the outside looking in, it would appear that these men are my best friends or maybe something more. So when my girlfriend asked if a comment her guy made to his lady friend was out of line, I totally understood her suspicion but

couldn’t say with any certainty whether he was flirting or just being nice to a Facebook friend. As embarrassing as it is to admit you were cyberstalking, the best thing to do in this type of situation is always put your pride aside and communicate openly and honestly. You don’t want to make your significant other feel like he or she did anything wrong, which will always put a person on the defensive. Instead, I would sweetly say something like, “who is that pretty girl who always writes on your wall?” Having this conversation will most likely put your suspicions at ease instead of saying


Our Relationships? nothing and having stories run like wild through your head. However (not to make you worry) but I did recently read a statistic that Facebook is responsible for one third of divorces today. Not only can social media make a jealous person become even more crazy with jealousy, but there is so much temptation right at our fingertips. I know that every time I post a picture, there are a handful of men asking me out, which I’m sure is true for most single ladies. While I personally don’t do online dating sites, I did go out on a date with a guy I met on Facebook (whom one of

my girlfriends vouched for) and another guy I met on Twitter. People are definitely connecting on social media. Facebook is a great way to keep in touch with old friends, but if it weren’t for sites like this, these former classmates and old flames wouldn’t be much more than a fleeting thought. Whatever happened to the one that got away? Now you can probably find out within a matter of minutes- that is, if you don’t already know.

Nevada Blind Children’s Foundation

S

ince its inception in 2006, Nevada Blind Children’s Foundation (NBCF) has worked to remove barriers, create solutions, and expand possibilities so that children with vision loss can achieve their full potential. NBCF was founded by Kevin and Toni Spilsbury whose son Conner, was born blind. In a city with no school for the blind, NBCF has become that resource for families to help bridge the gap between a public education and the special needs of children with visual impairments.

Children with visual impairments often miss out on educational enhancement options, are excluded from many recreational activities and traditional summer programs, and have limited physical fitness and arts

opportunities. NBCF has developed educational programs and services to provide the specialized assistance these deserving children need including, after-school tutoring and enrichment programs, blind-specific technology assistance, homework support, Braille literacy, summer day camp, playgroups, blind-specific sports outings, music and art opportunities. All programs and services are offered free of charge. The NBCF Learning Center is proud to offer high-tech, state-of-the-art blindspecific equipment and software that is readily available in our Technology Lab. A Braille resource library is also housed inside the NBCF Learning Center. Ultimately, the goal of NBCF is the building and creation of Nevada’s first and only fully functional learning center for the blind that would give the educational support for children from birth through second grade. Can you imagine what it

would be like if you could not help your child read? Children learn to read at a very early age by imitating. Children who are blind do not learn by casual observation. Parents in Nevada have little resources for blind-specific help with reading, math or technology. Without help from NBCF children may fall further behind lacking the basic fundamentals to succeed. By the time these children are in the third grade, learning becomes difficult without basic skills, and they continue to fall behind. Instruction then becomes unmanageable in secondary education and very few children who are blind graduate with regular education diplomas. With a specialized center, these children could develop the strong educational foundation that would allow them to be successful both in the classroom, and in life. You’ll Fall in Love With

ne of the most fascinating places we’ve been to… Quito, Ecuador! Our trip this issue, took us south of the equator, to a town rich in history, romance and excitement! There are so many reasons to visit Quito, it would take this entire magazine to write the whole story. But once you’ve been there, you will want to go back for more. We spent five days in this town, and didn’t know what to expect, but what an incredible and memorable surprise! From the classy hotels, to the cobblestone streets of yesterday, you will love this city beyond a doubt. From the rich culture, to the delicious food, to the love of music, I highly recommend Quito on your bucket list, if not sooner!

THE CITY Originally named “San Francisco de Quito” this beautiful city is the Capital of Ecuador, (Spanish for Equator), with a population of 2.7 million, a bustling city full of ancient history in perfect harmony with big city modern culture. Quito sits high in the Andes mountain range, in South America, at an altitude of 9350 above sea level. With one thousand years of incredible preserved history, you will fall in love with the charm and passion that went into Quito. There are three main regions to know about Quito itself: South Quito, somewhat industrial, is primarily where the hardworking locals live and play. Central Quito is known as the Historical District, with it’s massive ancient churches, cobblestone streets, and the Presidential Palace. North Quito is the modern Quito, with incredible shopping malls, beautiful hotels, and all of today’s modern big city features.

A city for both the young and old, you will fall in love all over again, as Quito is a City of Romance. I suggest you bring someone you care for, or plan on meeting that special somebody there, but don’t go alone; you’ll want to share this experience with someone incredible as the city itself.

WHAT TO PACK There’s no need to dress up in Quito, unless you have a fancy dinner or special event planned. Jeans are totally accepted everywhere. For gentlemen, I recommend comfortable t-shirts, tennis shoes, jeans and perhaps a few dress shirts for going out, but that’s it! Ladies, you won’t need your high heels here. Be sure to bring comfortable walking shoes, and casual attire. Maybe a sweater or two for the evenings, but if you’re a Vegas local, you won’t need a jacket at all. Make sure you bring your camera, comfortable

walking shoes, and your vitamins. The altitude here is high, and you’ll want to stay healthy for your vacation!

THE WEATHER You can always count on a consistent temperature in Quito, around 67 degrees daily high, and nightly lows around 45 degrees. While it’s cool, (or “Frio”) to the locals, I found it a refreshing break from the heat of Las Vegas. This is a city built in the mountains, and has some rainforest effects at times, so to avoid the rain, I recommend June, July or August for your trip. If it does rain, no worries, there are hundreds of umbrellas for sale on every corner. (Only $3.00, so save your suitcase space, and don’t pack one.)

THE AIRPORT In a word, Wow! The new Quito Airport was built only two years ago, and feels like brand new. It is absolutely

spectacular of this beautiful mountainous region, from either side of the plane. The old airport, located in the heart of the city, is now a huge park with concerts and special events on a regular calendar.

ACCOMMODATIONS

gorgeous, with all of today’s modern amenities, check-in kiosks, restaurants, shops and great customer service. The new Quito Airport rivals the cleanliness of McCarran’s new T3, however includes the warmth of the city itself- a little out of town, but a wonderful and memorable taxi ride into Quito! About 60 minutes into town, I think you will enjoy “tour like” journey to your hotel. I suggest you fly in, or out, during the day, for the views are

There are many beautiful accommodations: Beautiful Hotels, Hilton, Mercury, Swissotel, Radisson, and more. We stayed at Quito’s Hilton Colon, and highly recommend this incredible luxury property to anyone! It’s nothing but first class service from the moment you pull in to the beautiful Hilton Colon! You are greeted with courtesy concierge captains at your car, helping with all your luggage and registration needs. They are all bilingual, so there is no language concerns at this fantastic resort. Once you check in, you will find an incredible hotel, with luxury amenities everywhere. The lobby is adorned with elegant roses and travertine floors in a comfortable lounge atmosphere. The rooms are superb, with every benefit imaginable, and large window views of the Quito skyline. The beds are the best and you will want to stay in bed all day, but don’tthis hotel is a true resort with much to

see. The restaurant is always ready for breakfast, and delivers some of the best food any Hilton can offer. The menu has all your American favorites, as well as some classic Ecuadorian delights. The lobby bar is very intimate, with a classic warm charm of days gone by. The Sushi bar sits just outside the lobby lounge, and hosts your favorite pescetarian delights.

GETTING AROUND There are several options for making your way around Quito. You may choose to rent a car, take the bus or walk around. However, the most popular mode of transportation is any one of the 8,800 taxis available on every corner! I couldn’t believe how convenient and reliable the taxis in Quito are. I consider it the best form of transportation, and it cost us about 1 or 2 dollars, for just about everywhere we went. At the most, I think we spent 5 dollars for getting around the local city. However, if you book a taxi from the airport, it will run $50 for that enjoyable, one-hour journey. On one day, we took a city tour, booked a taxi for the entire day, and only spent $100. Best tour I ever had. We found a bilingual taxi driver, he took us to all the sites, showed

us everything, and even took pictures of us at the stops. A very enjoyable, personal and private tour of the city.

ENTERTAINMENT Live music is prominent in Quito, with bands performing at just about every bar and lounge. From Rock, to Salsa, Dance, Top 40, and Karaoke, this city is not lacking in fun, live (and I must say), excellent entertainment! The “Party Center” is the FOCH Center, where all the action is, and centered in Quito. Bars, restaurants, clubs, karaoke, and so much more! Another hot spot we hit was Calle La Ronda- a cute little cobblestone street, in Old Quito, lined with bars, restaurants, gift shops, more bars, more restaurants, and not a dull moment anywhere on the street. We closed the night on Calle de la Ronda, and shot one last photo.

THE CULTURE In Quito, I found the people very friendly and helpful. There is a rich, deep culture that goes back a couple thousand years, that is evident in the people’s love for their land. I could write an entire novel on the history of Quito, but this trip, we explored the current culture, and how the people of Quito live today. What we found amazing was that they, in many ways, are just like

Americans. They take their kids shopping, they play music in the park, they shop, dine, dance, go to concerts, church, and celebrate Mother’s Day buffets at the hotels, (which we did as well), and enjoy the amenities of their city and culture, just as we do here. It’s beautiful to find that in this big world, we are so similar in our love for life. Many of their holidays are the same as ours.

FAST FACTS: • Spanish is the language, but just about every hospitality stop has bilingual locals. • They use US Currency. You will see a lot of US dollars used in the form of the US Dollar Coin. Very convenient. • Quito is located high in the Andes Mountains 9,350 feet above see level. • The Original name was “San Francisco de Quito” • The Population is about 3,000,000, just a little larger than Las Vegas. When you travel there, you will also enjoy the fact that practically all hospitality services are bilingual, making it very easy to get around and enjoy your vacation.

SECURITY Before this trip, I was advised to be very safe down there. Well, I am back, and safety was the last thing I had to think of. First of all, the city is very clean, safe, and booming. Everyone there is doing fine. Like New York or Las Vegas, every city has areas that are not the best to be in after dark, but all-in-all, Quito is very safe, and no different than any big city in America. In fact, maybe safer than most US cities, in the fact that there are police on every corner, and you are never more than a few feet away from security. They take care of their people, and take

care of the tourists. Quito is totally safe, and you will enjoy every sight, sound, and taste of this fabulous city, with its beautiful blend of ancient history, and modern culture. You will fall in love with Quito, as I did, and I don’t think anyone leaves Quito, without leaving a few tears of joy, of their own. Happy Travels! MV

• Quito is the highest capital city in the world. • Some people have High Altitude health concerns. There are pills for those that can’t handle the high altitude. Consult your physician, if you are concerned. • Taxis are better than walking- you may get short on breath due to the high altitude. • Also because of the high altitude, it only takes a couple of drinks for a hangover… so keep the drinking light. • The non-rainy season is best for travel in July, August and September.

Who Knew?

8 Questions for Mayor Carolyn Goodman 1: First thing I do in the morning is… I always get out of bed before Oscar and go around to his side of the bed to applaud him. I want him always to wake up in a good mood and feel loved and important every day. 2: One thing I like to do after my workday is… As the mayor of Las Vegas, your workday doesn’t really ever end, and whenever my cell phone rings, I’m ready to respond. This is a 24-hour town, and being mayor is thus a 24- hour job. When I do get some time, I always watch the national news, “chill out” maybe with a drink or a glass of wine, catch up on the day with my husband, speak with the rest of the family and most often end up cooking dinner for us. 3: I wish I knew how to… I wish I knew how to sing. I am a happy person by nature and used to have a decent voice, but as I’ve gotten older, the sound is much like a scratch and so I can’t even sing in the car anymore- it’s irritating to me! 4: A person who inspires me a lot is… You know it is not any single person who inspires me, it is several, but for different traits they each possess. I have great respect for anyone who radiates happiness, acceptance and shows an inviting and giving personality. 5: When I leave Las Vegas I like to go to… We’ve always gone to Coronado Island off of the San Diego coastline to recharge our batteries. There is something that is very relaxing and special about being near the ocean. We always come back refreshed. 6: On my day off I like to… I may be the Mayor of the greatest city in the world, but like so many others, when it comes to time off, it’s the household chores that await me. I always have a list of errands to take care of on my day off and for the most part I do Oscar’s as well. I like him to relax and be happy when he’s got free time. Obviously, there is grocery shopping, laundry to be done, sprinklers to change, outdoor lights to replace and on and on… 7: One thing that I cannot live without is… Oscar!

8: One of my most cherished memories is… I have so many happy memories with my family. First was my immediate family growing up in New York City with my parents and sister. We had a great life. Then meeting Oscar in college, marrying and living in Philadelphia, then moving to and living in Las Vegas. I still laugh when I think back to the night Oscar had planned to give me an engagement ring. I thought something was really wrong with him for he was so nervous he had to go into the bathroom five different times before he finally pulled it together and got the job done! That happened in 1961 in Philadelphia, and it was a long but special time ago and always a cherished, happy memory.
