L'OSSOBUCO ALLA MILANESE The ossobuco is one of the most wellknown dishes of Italian cuisine and is traditionally served with the classic risotto alla Milanese, a rice dish prepared with rendered beef fat as well as bone marrow and saffron. The ossobuco is cooked slow and at low heat and finished with "gremolata", a simple mix of parsley, lemon zest and anchovies. Prep: 1 hr Cook: 3 hrs Serves: 8 Ingredients:

For the Ossobuco: 8 slices of veal hind shank cut at 2” | 200g plain flour | 120g butter, unsalted | 2 large onions, diced | 1l beef broth, kept warm | Sea salt & pepper to taste 14

For the Gremolata: 2 lemons zested | 1 garlic clove | 4 fillets of anchovies | 2 cups of chopped parsley For the Risotto: Rice | 2.8l chicken stock | 2 tbsp saffron threads | 6 tbsp rendered beef fat | 100g bone marrow | 2 medium onions, minced | 480g Arborio rice | 450 ml dry white wine | 100g grated Parmesan | sea salt & black pepper, to taste Method: 1. In a heavy bottomed pan, melt the butter over a medium-low heat. Add the onions and let them sweat till translucent. Season the meat with salt and pepper. Lightly drench the ossobuco (veal) slices in flour and shake off the excess. Push the onions on to one side of the pot and place the meat in the free space. Let it sear for 3 minutes per side. 2. Once the rice is tender and creamy, (about 30 minutes), turn off the heat. Add the grated Parmesan and mix well to combine and season to taste.
