GLOBAL WINGS! The American Classic Tours the World Ever the crowd-pleaser, popular with Millennials and Baby Boomers alike, wings are seen as the promise of a good time. They may seem like a long-standing, ubiquitous menu item, but chicken wings have been enjoying a steady rise in popularity in the past few years. They are the perfect catalyst for many durable food trends such as communal food, finger food and street food. The wings themselves are incredibly versatile and can be presented on a menu in several different ways without seeming redundant which can help to consolidate food costs. This typical bar food has migrated from the counters of sports bars to the tables of trendy restaurants. Several national chains have had great success in the past few years with “just wings” concepts, offering variety in sauces and cooking styles. Wings offer a blank canvas on which chefs can unleash their culinary creativity to develop sauces that tap into new trends and exciting ingredients. We took some cues from the great food cultures of the world and, looking to the Roland Foods’ global pantry, have reinterpreted this American favorite. We hope this booklet will inspire your next creative adaptation of America’s favorite bar snack!

HABANERO BUFFALO WINGS

Place Roland速 Habanero Pepper Sauce, granulated garlic, white pepper, onion powder, smoked paprika, and butter cut into cubes in a heavybottomed sauce pan and bring to a simmer, stirring. Once butter melts, whisk thoroughly to emulsify. Toss fully-cooked wings with sauce and serve with chunky blue cheese dressing and celery sticks. 2

Combine Roland速 Chipotle Pepper Paste, honey, cilantro, zest and juice of one lime, Roland速 Red Wine Vinegar, and water in a food processer until thoroughly incorporated and smooth. Toss with fully-cooked wings until coated and serve with a side of ranch dressing and carrot sticks. 3

PICKAPEPPA速 DRUMS Whisk together melted

butter and Pickapeppa速 Sauce in a small bowl. Dip floured wings in the sauce and bake in the oven until crispy and glazed. If using fried wings, toss the fully-cooked wing in the sauce until fully-coated. Serve these fiery wings with slices of fresh mango and a squeeze of sliced key limes. 4


ARGENTINA

CHIMICHURRI WINGS Combine fresh Italian parsley, Roland速 Olive Oil, Don Bruno速 Sherry Vinegar, fresh cilantro, garlic cloves, Roland速 Dried Crushed Chili Peppers, ground cumin, and Roland速 Fine Sea Salt Crystals in a food processor until coarsely mixed. Toss fully-cooked wings with sauce and serve with slices of toasted bread to use for dipping.

DIJON WINGS

Whisk together Roland® Dijon Mustard, Roland® Whole Grain Dijon Mustard, Roland® Maple Syrup, Roland® Barrel Aged Apple Cider Vinegar, Roland® Fine Sea Salt Crystals, and freshly-ground black pepper until combined. Toss fully-cooked wings and bake until glazed. Serve with slices of toasted french bread. 6

PESTO WINGS

Mix Roland速 Pesto, lemon juice, Roland速 Unfiltered Extra Virgin Olive Oil, Roland速 Fine Sea Salt Crystals, and black pepper. Toss fully-cooked wings with pesto sauce and garnish with parmesan cheese and fresh basil leaves. Serve with a side of crusty Italian bread and antipasto. 7

HARISSA WINGS Put Roland速 Harissa, unsalted

butter, lemon juice and lemon zest in a medium heat-proof bowl and place over a pot of boiling water, whisking until butter is completely melted and sauce is warm. Toss fully-cooked wings in Harissa sauce and serve with a side of labne and mint dipping sauce to help relieve some of the heat. 8

SHAWARMA & TAHINI WINGS Combine Roland速 Shawarma Spice Blend, honey, Roland速 Tahini, lemon

juice, Roland速 Fine Sea Salt Crystals, and freshly-ground black pepper until fully blended. Toss wings in sauce and serve with a sprinkling of Roland速 Dukkah Spice Blend and cucumber raita. 9

SUMAC LEMON WINGS In a small bowl, mix the

juice of freshly-squeezed meyer lemons, Roland® Sumac, finely-minced garlic, Roland® Fine Sea Salt Crystals, Roland® Extra Virgin Olive Oil, and fresh thyme. Evenly coat raw floured wings with dressing and bake until chicken is cooked through and outside is crispy. Sprinkle Roland® Chili Pepper Flakes and extra Roland® Sumac on top for added flavor and color. 10

HONEY SCHUGWINGS Whisk together Roland速 Schug Spice Blend, honey, fresh-squeezed lemon juice, Roland速 Fine Sea Salt Crystals, and black pepper until well combined. Toss fully-cooked wings with sauce and bake in the oven until the wings are glazed. Serve with triangles of grilled pita and hummus.

VINDALOO WINGS Whisk together Roland® Vindaloo Curry Sauce, Greek yogurt, and chopped cilantro until well-

Roland速 Sriracha Chili Sauce, Roland速 Soy Sauce, butter, garlic, lime juice, & honey in a sauce pan and bring to a boil while whisking. Allow the mixture to cool; portion half for the marinade and reserve the rest. Toss the raw chicken wings in the sauce, and marinate. Roast or grill until cooked. Gochujang, Roland® Sesame Oil, Roland® Seasoned Rice Wine Vinegar, sugar and water in a food processer until dressing is thoroughly incorporated and smooth. Toss with fried wings to coat. If wings are grilled or baked, omit sugar and toss them in the sauce before cooking them. Garnish with Roland® White Sesame Seeds and crushed toasted peanuts. 18

Ssamjang WINGS In a medium bowl, whisk

together Roland™ Ssamjang, fresh lime juice, sugar, Roland® Unseasoned Rice Wine Vinegar, Roland® Fine Sea Salt Crystals, and freshly-ground black pepper until fully combined. Toss with fried wings to coat. If wings are grilled or baked, omit sugar and toss them in the sauce before cooking them. Serve with lime wedges and kimchi. 19

SEVEN SPICE WINGS Blend Roland® Seven Spice Soy Glaze, Roland® Sesame Oil, Roland® Unseasoned Rice Wine Vinegar, and honey in a bowl until combined. Toss fully-cooked chicken wings with the sauce until coated and garnish with thinly-sliced scallions. For an extra kick, combine Roland® Fusions Solutions® Szechuan Sauce with a splash of Roland® Rice Wine Vinegar and serve as a dipping sauce. 20

Toss fully-cooked wings in sauce and bake until glazed. Top wings with Roland® Black Sesame Seeds.

Wings are a simple pleasure, a flavorful sauce covering a well-cooked piece of chicken. We know everyone has a favorite wing procedure. Whether you’re a purist who never flours a wing or a mad wing scientist constantly experimenting, we know the importance of proper execution when cooking such a small piece of meat. We’ve tapped our Roland Foods’ chefs for their versions of the best recipes for juicy, crispy wings that make the perfect vehicle for a delectable wing sauce.

Deep-Fried Wings:

• For Fresh wings: heat oil to 375ºF and cook for about 5-7 minutes. • Frozen wings: heat oil to 375ºF and cook for about 10-12 minutes. • Cook wings in a deep fryer until an instant read thermometer reaches 175ºF. The skin should be crispy and golden brown. NOTE: If you want a saucier wing, lightly flour wings before frying. The flour coating will help the sauce adhere to the wing.

Award-Winning Confit Wings:

Prep: Always use fresh, trimmed wings. • Cover evenly-spaced wings by about ¼ inch with canola oil in a large roasting pan. • Cover pan or pot tightly with aluminum foil. • Place pan or pot in oven and cook for 1 hour at 300ºF. • Take pan or pot out of the oven and let sit for 10 minutes, then put wings on a sheet pan and allow to cool. • Portion out 6 wings for each order into bags for service. • To fire an order during service, deep-fry the pre-portioned wings for 5 minutes until skin is crispy and golden-brown. Toss with 2-3 tablespoons of sauce and plate.

Crispy Baked Wings:

• Toss trimmed wings in a mixture of rice flour, baking powder, salt, pepper and garlic powder. • Cook at 350ºF for 15 minutes, remove wings, toss with 2-3 tablespoons of sauce for every 6 wings, return to oven and increase temperature to 450ºF for an additional 1520 minutes. Sauce should be nicely caramelized.

Char Grilled Wings:

• Build a medium fire in a charcoal grill or heat a gas grill to medium-high. Oil grill grates to prevent sticking. • Grill chicken wings, turning every 5 minutes and basting occasionally with a marinade, until fat is rendered and skin is nicely charred in spots, about 30-35 minutes. The key here is to turn the wings often so the skin doesn’t burn. • Continue cooking chicken without basting, so it will get crispy, until wings are cooked through, about 10 minutes longer.

Saucing:

Standard order size: 6 wings. A good rule of thumb for properly saucing wings is to use 2-3 tablespoons for every 6 wings. This keeps the skin from getting soggy while still keeping the sauce center stage. Your sauce should be viscous enough that it clings to the wings and if the wings are wellcooked, the skin should stand up to the sauce. 22

Legend has it that a bar owner in Buffalo, NY had a room of hungry patrons looking for a midnight snack. Having accidentally received a delivery of chicken wings, she thought quickly, deep-fried the wings, then smothered them in a fiery sauce and served with a side of celery sticks and blue cheese dressing. The wings were so well received that a revolution had begun! Now the entire world demands these little fried delectable nuggets of joy wherever beer is poured or a football game is televised.
