Lest we forget
November is a time of Remembrance and we are supporting The Royal British Legion’s mission to recognise the unseen service of the Armed Forces past and present.
R
emembrance unites people of all faiths, cultures, and backgrounds but it’s also deeply personal. It could mean wearing a poppy in November, before Remembrance Sunday. It could mean joining your local community commemorations. Or it could mean taking a moment on your own to reflect. In every act of remembrance, we honour the memory of the fallen and pledge to care for the living. Poppies are worn as a show of support for the Armed Forces community. During WW1, much of the fighting took place in Western Europe. The countryside was blasted and bombed, turning beautiful landscapes to barren bleak and barren scenes except for one striking
exception - the bright red Flanders poppy. These resilient flowers flourished, growing in the thousands upon thousands, symbolising peace. A different – and very visible – red presence recently has been Extinction Rebellion. These climate campaigners
have been dividing opinion across the nation (attracting some typically bombastic language from our Prime Minister), raising awareness of our planet’s plight. We’re keen to promote the efforts of eco-conscious individuals out there such as Guildford’s Carolyn Ledge, founder of Naturally Wrapt whose easy tips & advice are well worth seeking out to embrace a less plastic-heavy Christmas. Union Jack Liz Nicholls chats to globally successful musician & dad Jack Savoretti, 36, who has just released his third hit album Singing To Strangers
Q.
You’ve worked with truly amazing musicians. Who would be your dream collaboration? “I have! Seeing my name next to Bob Dylan’s on one of my records is one of my most surreal highlights; his was the first concert I ever went to, aged 17. Collaborating with lovely Kylie was a pinnacle, too, and working with eccentric, beautiful Mika on this album. Connecting with people, for me, is the best thing about music. Being in a room with someone who has this gift is incredible. My dream collab would’ve been Johnny Cash; that amazing voice.” Q. How do you listen to music? “I have a beautiful 1960s record player. It doesn’t offer great quality but it gives a wonderful sound, if you know what I mean. My current favourite record is Chet Baker. I also have a nice Bose system for taking it up a notch. My earliest memory of music was the school run and it’s funny because now with my own children that’s the time we all share music, too. My fouryear-old son reminded me the other day how great the Ghostbusters song is and my daughter is a little obsessed with ABBA. I wasn’t an ABBA fan but she’s slowly converting me – the songs are brilliant!” Q. What surprises you most about parenthood? “I think how much you feel. I spent most of my twenties numbing myself. The love, the fear, the worry, the desperation they go to sleep... it’s 8 | NOVEMBER 2019
overwhelming. They don’t know they have this magic trick at first until they figure out how to use it against you. I’m eternally grateful.” Q. Being of European heritage, how does Brexit make you feel? “Sad. It’s a shame that we seem to have trivialised one of the greatest peace treaties of all time – certainly of the last two centuries – and I hate the divisive language being used. I heard the Prime Minister use the word ‘surrender’ and thought that was cheap. The EU isn’t without dysfunction and negotiating changes would’ve been good. But this feels like a lose-lose situation.” Q. Does November’s season of Remembrance mean much to you? “Yes; a great deal. I think we need to remember the sacrifices previous generations made for us more, especially in school and with what’s happening in politics at the moment. From a personal point of view, I think of my grandfathers. One was Polish and Jewish; he married a German woman young and escaped to Paris and then London. My father’s father fought against Fascism to stop his country being torn apart by divisive language [in Italy a street bears the Savoretti name]. I’m fascinated by that generation’s stories. That’s how complex peace is – ironically you sometimes have to fight for it. Many men and women suffered and lost their lives in the name of peaceful, liberal values which I hope endure.”

On Sunday, 24th November, Godalming’s Rotary clubs will present a charity cyclathon at Snap Fitness 24.7. Can you help?

ow in its third year, the exciting community event will raise funds for Phyllis Tuckwell Hospice Care, the Kent, Surrey & Sussex Air Ambulance, and other Rotary charities. Michael Sullivan says: “We would also like to open up the event to other local charities to enable them to raise money for themselves. “We are looking for teams of between one and five riders, from local people, families, businesses, sports clubs, schools and other organisations to make a fun event for everyone.” There will be refreshments, a commemorative medal for all participants and prizes for a range of
team categories, e.g. adult, family, over-60s, charities, junior school and secondary school. Each team will be given a time slot, starting on the hour during the day and will ride for 50 minutes and may change riders whenever they
want. Teams may also race against one another, measured by distance covered. Each team is asked to raise as much sponsorship as possible – entry is £50 per team but they hoping for at least £100 per team (i.e. £25 per rider). Relatively speaking A mother and daughter have written their first book together, all about super siblings
S
ophie Rice and her mum Teresa Kiernan had often talked about writing a children’s book together, but the opportunity to do so came about in an unexpected and alarming way.
“
of developing the storyline and characters and putting the whole thing into rhyme was such an enjoyable and stimulating experience.”
Just five months after giving birth to her first daughter, Sophie suffered a seizure. What followed was a difficult and distressing time as she tried to cope with her baby and multiple daily seizures.
And she says the “beauty of being a mother and daughter team” helped the writing process, allowing the story to flow. It became a real family affair when the pair from Cranleigh enlisted the rest of their family who became a great support in reading, commenting and editing as they wrote.
Confined mostly to home, her mum became her daily support and the pair decided to focus on something positive and began writing a book.
Getting the book published was a lengthy process but Sophie added “the sense of achievement to see it finally in print has been enormous”.

Secret Super Sister was published at the end of August and tells the story of Lulu and her little brother Zeus – Lulu is the quiet, thoughtful one while Zeus often gets into trouble with his big sister working out how to help him out using her secret super powers.
Sophie said: “It took about a year to write and we were inspired by watching my baby daughter grow. During this period, we had time to reflect on the importance of families and how in tough times the people closest to you can really become saviours. “My mum and other members of our family gave up their time, made huge sacrifices and really did what they could to support me. They were my superheroes. Secret Super Sister became our positive distraction during this time. The process 14 | NOVEMBER 2019
“Our daughter/granddaughter was always our inspiration, so to be able to snuggle down at night and read her the printed book for the first time was quite emotional. We never thought we would be published writers, so always believe in yourself and just give it ago, as you never know.” Would they have started the project had they been in a different position? Sophie admitted she didn’t know but said the experience had been rewarding and given them a real sense of achievement. She added: “It has also taught us a valuable lesson; when life throws you challenges, concentrate on the things you can do, rather than those you can’t.” There are some exciting ideas for more adventures for Lulu and Zeus in future too. I thought I’d share the most magical horticultural experience with my readers.
I
t was my pleasure to be asked to help create a garden for the Woking & Sam Beare hospice. Many volunteers and I united to transform a derelict patch of ground into a beautiful garden for patients and staff to enjoy. The garden is created for wildlife with bee -and butterfly-friendly plants and habitats for birds and invertebrates throughout. It’s named Wildwood after Woking’s Paul Weller’s best selling album.

ack and his friends will take pantogoers young and old on an exciting adventure to zany Pantoland, where he begins his quest to slay the fearsome Giant. With lots of fun and laughter, fantastic costumes, and toe-tapping song and dance, it promises to be a great trip for all the family. Craft In Focus will hold its annual Christmas craft fair at West Horsley Place this year from Wednesday, 27th November to Sunday, 1st December.
T
he event is relocating from RHS Wisley where it has been held for the last ten years. Featuring 150+ exhibitors, the fair will once again take place in floored and heated marquees with festive live music and refreshments available to buy. Exhibitors have been selected from some of the UK’s finest professional designer makers and contemporary artists working in wood, glass, metal, textiles, ceramics and more. The UK has a wealth of individual and talented designer makers making wonderful original items that simply cannot be found among the massproduced, imported goods on the
high street. The fair also incorporates delicious artisan food including handmade chocolates, preserves, cordials, liqueurs, alcoholic spirits, condiments, cakes and puddings, liqueurs, artisan gin, olive oils, nut products, truckle cheeses and spices. Visitors often comment on the relaxed atmosphere, exhibitors’ friendliness and their unusual, original work.
West Horsley Place, KT24 6AN, has a fascinating history with its connections to Henry VIII, Elizabeth I, Sir Walter Raleigh and Guy Fawkes, amongst others. It has also been recently used as a film and television location for My Cousin Rachel, Vanity Fair and Ghosts. guest or compere. It’s such a marvellous venue – it is large, but also intimate. There can be up to 6,000 people in the audience, but you have the feeling you can reach out and touch each one of them.” As for her dream duet..? “I’d love to sing with Elvis Presley and Ella Fitzgerald – but, trust me, I would be scared of singing with them!” So how will this show’s repertoire differ from one of Clare’s radio shows? “Oh, they are completely different. With the concerts, I select music that the line-up for that evening can perform superbly. For the radio programme I have more than 100 years of music to choose from. I want to try and appeal to as many people as possible with a varied playlist, but hopefully as well introduce music to some people which they may like but is a little out of their usual comfort zone.” As one of the UK’s greatest interpreters of song and much-loved performers, Clare and her trio guarantee an evening of inspired music and unbridled entertainment performed by the very best. ype 1 diabetes (T1D) is an autoimmune disease. The body’s immune system destroys the beta cells in the pancreas responsible for producing insulin. Insufficient insulin hinders tissues from absorbing glucose (sugar), leading to dangerously high blood sugars. Left untreated, this can lead to very serious health complications. T1D occurrence is growing at 3% a year. The risk of developing it is 10 times greater in children with a parent with the condition. Coeliac disease and T1D share common genetic predispositions, so the conditions often co-exist. As T1D is an autoimmune disease, it is unsurprising to find a number of potential triggers and exacerbators, including genetics, when cow’s milk and gluten are introduced into the diet, maternal diet (gluten content and vitamin D status), infections (viruses are a known trigger of autoimmunity), stress, toxic load, the balance of the gut micro flora, digestive system health and the integrity of the gut barrier. It is nearly 15 years since the concept that autoimmunity develops via a complex interaction between our genetic base and our environment was first postulated. The single largest point of interaction between these takes place in the gut – the small intestine has the surface area of a tennis court. Our genes are set at conception, but our environment (dietary choices plus viral/bacterial/toxin and stress load) is, to a large extent controllable, as is the health and permeability (leakiness) of the gut. Current thinking and clinical experience show that it is often possible to arrest the development of autoimmunity and even reverse it. “...Once the autoimmune process is activated, it is not self-perpetuating; rather, it can be modulated or even reversed.” Professors Fasano and SheaDonohue, Nature Reviews Gastroenterology & Hepatology 2005 The destruction of the pancreatic cells is gradual (although symptoms may appear suddenly). stuffed with capers, garlic and herbs
T
his needs slow cooking, moisture, and a highly flavoured stuffing to add interest and counteract the fattiness. In the past, standard English mixtures of bread with herbs and suet bound with eggs were favoured, but these are very dense to modern tastes. I suggest using a mixture with flavours borrowed from salsa verde (capers, herbs), which works well with this meat.
• Two breasts of lamb, boned • 40g (1½oz) unsalted butter • One medium onion, peeled & finely chopped • Two garlic cloves, peeled and crushed • Two tablespoons salted capers, well rinsed and coarsely chopped • A little chopped fresh mint • Three tablespoons finely chopped fresh parsley • A large tablespoon chopped fresh basil • Zest of ½ lemon (preferably unwaxed), finely grated • 150g (5oz) crustless day-old white bread, torn into small pieces • Splash of stock or milk, to moisten

Breast of lamb is flattish and thin, with one straight edge cut from the forequarter, which may still contain the ends of the rib bones, unless the butcher has already removed them. If you have to do this yourself, run a knife in between the bones and the meat on the outside, then cut them away from the lesser covering inside and slip them out.
To make the stuffing, melt the butter over a low heat and fry the onion and garlic until softened. Stir in the capers, herbs, lemon zest and bread, and add enough stock or milk to moisten the bread.
Spread the meat out, skin-side down. Put a layer of stuffing on top of each piece, then roll from the narrow end and 36 | NOVEMBER 2019
firmly tie at each end with string. Preheat the oven to 140°C, 275°F, Gas mark 1. Put the lamb in a shallow roasting tin and cook for three to three and a half hours, pouring off any fat that the meat renders. Then turn the oven up to 200°C, 400°F, Gas mark 6, and give it a further 15 minutes to crisp up. It won’t produce gravy, but a light tomato sauce goes well with the caper-flavoured stuffing. Alternatively, serve a salad dressed with vinaigrette on the side.

Ingredients: • One generous tablespoon goose, pork or bacon fat, or oil • One medium onion • One or two apples, preferably sourish ones • A small red cabbage • Two or three tablespoons cider vinegar • Two tablespoons light pale brown sugar • Four or five cloves, bruised • 5cm (2in) cinnamon stick • A piece of orange zest (preferably unwaxed) about 5 x 2cm (2 x 1in) • A teaspoon of salt • Freshly ground black pepper

Method: Preheat the oven to 140°C / 275°F, Gas mark 1. Peel and roughly chop the onion. Peel, core and chop the apples. Quarter the cabbage, discard the stem and finely slice. Heat the fat in an ovenproof casserole and fry the onion until translucent. Stir in the apples, then the cabbage, and fry lightly for a few minutes. Add the other ingredients and stir well. Cover and transfer to the oven for about an hour and a half. This can be cooked on the hob, but the heat must be very low – and stir frequently, adding a little more water from time to time if it shows signs of drying up.

Roast potatoes
Ingredients: • 1kg (2¼lb) potatoes • About 50g (2oz) fat for roasting, such as beef or pork dripping • Salt
Roast potatoes are a defining element of “a proper roast”. King Edward, a potato variety with almost iconic status in Britain, probably has the best flavour, and can develop a fantastic crisp crust and melting interior. Wilja and Desirée are also good; Cara and Romano should produce reasonable results.
Method: The oven needs to be hot – 200–220°C, 400–425°F, Gas mark 6–7. Peel the potatoes. Leave small ones whole, and cut large ones into smaller pieces (3–4 each). Put them in a pan, just cover with cold water, and bring to the boil. Boil for 5–7 minutes. Tip them into a colander and drain well. Put the fat in a roasting tin and place in the oven to melt and get very hot. Take it out and add the potatoes. (Wear oven gloves and an apron in case the fat spits – it should be hot enough to sizzle satisfactorily.) Turn the potatoes well in the hot fat, sprinkle with salt, and roast for 40–50 minutes. In a gas oven, put the potatoes at the top. Turn once or twice during cooking, and add a little more salt each time.

Guildford model and songwriter Elena Ramona suffered with anxiety, depression and weight issues as a teenager. Now, having won a place in the finals of Ms Great Britain 2020, she hopes to inspire others to follow their dreams with a healthy body image. Elena tells us more...
Breaking the mould
I
did not have a healthy relationship with myself growing up. I’ve always suffered from anxiety and when I was younger I had a distorted image of myself. It’s taken a long time to be kind to myself and enjoy that amazing chocolate cake without feeling guilty while keeping a healthy balance. Growing up I would see women in magazines and on TV representing my generation who I could not relate to. This made me question career path for a long time. My biggest I would love to my regret is that I let these feelings consume be a role model me as a teen for too long. At the age of 22 I decided to ignore the voice in my & inspiration head telling me I wasn’t “good enough” or “slim enough” and began to take test shots for a portfolio with a friend to kickstart my modelling career and gain some much-needed confidence. Being photographed made me feel powerful and I continued to get work with local photographers and clothing lines.

The main reason I pursued my career as a model was because I would love to be a role model and inspiration to anyone in my position as a teenager now. I want to be the person I needed when I was a teen years ago. In the summer I decided to 42 | NOVEMBER 2019
apply to Ms Great Britain in order to spread my message internationally about how important a healthy lifestyle is, both physically and mentally. Amazingly I made the final 25 in my category and I am so excited to meet all the other women again and share our stories and experiences with the world in a very cut-throat industry. I want my story – and my entry into such a competition – to spark hope in someone who doesn’t feel “good enough”. Times have changed and now Miss Great Britain and other pageants like this are promoting all women from every walk of life, any shape or size and I am so grateful to live in an era that does just this. To win this competition would be an honour. However, to be given the opportunity to get this far and raise awareness for such a current and important cause is a privilege.
