Lest we forget

November is a time of Remembrance and we are supporting The Royal British Legion’s mission to recognise the unseen service of the Armed Forces past and present.

R

emembrance unites people of all faiths, cultures, and backgrounds but it’s also deeply personal. It could mean wearing a poppy in November, before Remembrance Sunday. It could mean joining your local community commemorations. Or it could mean taking a moment on your own to reflect. In every act of remembrance, we honour the memory of the fallen and pledge to care for the living. Poppies are worn as a show of support for the Armed Forces community. During WW1, much of the fighting took place in Western Europe. The countryside was blasted and bombed, turning beautiful landscapes to barren bleak and barren scenes except for one striking

exception - the bright red Flanders poppy. These resilient flowers flourished, growing in the thousands upon thousands, symbolising peace. A different – and very visible – red presence recently has been Extinction Rebellion. These climate campaigners

have been dividing opinion across the nation (attracting some typically bombastic language from our Prime Minister), raising awareness of our planet’s plight. We’re keen to promote the efforts of eco-conscious individuals out there such as Guildford’s Carolyn Ledge, founder of Naturally Wrapt whose easy tips & advice are well worth seeking out to embrace a less plastic-heavy Christmas. Union Jack Liz Nicholls chats to globally successful musician & dad Jack Savoretti, 36, who has just released his third hit album Singing To Strangers

Q.

You’ve worked with truly amazing musicians. Who would be your dream collaboration? “I have! Seeing my name next to Bob Dylan’s on one of my records is one of my most surreal highlights; his was the first concert I ever went to, aged 17. Collaborating with lovely Kylie was a pinnacle, too, and working with eccentric, beautiful Mika on this album. Connecting with people, for me, is the best thing about music. Being in a room with someone who has this gift is incredible. My dream collab would’ve been Johnny Cash; that amazing voice.” Q. How do you listen to music? “I have a beautiful 1960s record player. It doesn’t offer great quality but it gives a wonderful sound, if you know what I mean. My current favourite record is Chet Baker. I also have a nice Bose system for taking it up a notch. My earliest memory of music was the school run and it’s funny because now with my own children that’s the time we all share music, too. My fouryear-old son reminded me the other day how great the Ghostbusters song is and my daughter is a little obsessed with ABBA. I wasn’t an ABBA fan but she’s slowly converting me – the songs are brilliant!” Q. What surprises you most about parenthood? “I think how much you feel. I spent most of my twenties numbing myself. The love, the fear, the worry, the desperation they go to sleep... it’s 8 | NOVEMBER 2019

overwhelming. They don’t know they have this magic trick at first until they figure out how to use it against you. I’m eternally grateful.” Q. Being of European heritage, how does Brexit make you feel? “Sad. It’s a shame that we seem to have trivialised one of the greatest peace treaties of all time – certainly of the last two centuries – and I hate the divisive language being used. I heard the Prime Minister use the word ‘surrender’ and thought that was cheap. The EU isn’t without dysfunction and negotiating changes would’ve been good. But this feels like a lose-lose situation.” Q. Does November’s season of Remembrance mean much to you? “Yes; a great deal. I think we need to remember the sacrifices previous generations made for us more, especially in school and with what’s happening in politics at the moment. From a personal point of view, I think of my grandfathers. One was Polish and Jewish; he married a German woman young and escaped to Paris and then London. My father’s father fought against Fascism to stop his country being torn apart by divisive language [in Italy a street bears the Savoretti name]. I’m fascinated by that generation’s stories. That’s how complex peace is – ironically you sometimes have to fight for it. Many men and women suffered and lost their lives in the name of peaceful, liberal values which I hope endure.”

Garden historian, Cherrill Sands will be giving a talk, Arts & Crafts Gardens in the South East to the Farnham Society Evening Talk on Friday, 15th November. The Arts and Crafts movement was a reaction to mechanical mass production and encouraged a return to craftsmanship. The talk will look at the partnership between Edwin Lutyens and Gertrude Jekyll who combined geometric structure

Teal deal Radio 2 presenter and award-winning jazz vocalist Clare Teal will bring her jazz trio to Farnham Maltings on Friday, 29th November

A

rich jazz-infused repertoire, interspersed with warm and witty storytelling... Clare says this new show brings you more exhilarating swing and sparkling melodies as she and her trio celebrate popular music from the Great American and British songbooks through to contemporary writers creating today’s standards. For someone who spends part of her working life playing records, it is perhaps apt that records were Clare’s introduction to jazz, tells Peter Anderson.... “I grew up Live recordings asin she a working-class background in rural bring so Yorkshire, and to be honest there was not really any entertainment apart from much joy listening to records. I found the collection in the attic. I think some of the jazz records were 78rpm – those were my dad’s mother’s.”

As she listened to those records, which of the singers inspired her? “Ella Fitzgerald, Louis Armstrong... I love live recordings – they bring so much joy. You feel you have a shared experience with the audience there at the time.” Speaking of audiences, Clare has taken her various backing groups to many locations. Is there somewhere she’d love to perform? “I’d love to play the Royal Albert Hall on one of my tours, rather than just 14 | NOVEMBER 2019

guest or compere. It’s such a marvellous venue – it is large, but also intimate. There can be up to 6,000 people in the audience, but you have the feeling you can reach out and touch each one of them.” As for her dream duet..? “I’d love to sing with Elvis Presley and Ella Fitzgerald – but, trust me, I would be scared of singing with them!” So how will this show’s repertoire differ from one of Clare’s radio shows? “Oh, they are completely different. With the concerts, I select music that the line-up for that evening can perform superbly. For the radio programme I have more than 100 years of music to choose from. I want to try and appeal to as many people as possible with a varied playlist, but hopefully as well introduce music to some people which they may like but is a little out of their usual comfort zone.” As one of the UK’s greatest interpreters of song and much-loved performers, Clare and her trio guarantee an evening of inspired music and unbridled entertainment performed by the very best. She is looking forward to her visit to Farnham Maltings on Friday, 29th November. “Farnham was one of the first places I performed,” she adds. emember, remember the 5th of November… it’s that time of year again when we mark Guy Fawkes’s plot to overthrow the king and blow up Parliament in 1605. Bonfires were set alight to celebrate the safety of the King and since then the event is commemorated with fireworks and burning effigies. t was my pleasure to be asked to help create a garden for the Woking & Sam Beare hospice. Many volunteers and I united to transform a derelict patch of ground into a beautiful garden for patients and staff to enjoy. The garden is created for wildlife with bee -and butterfly-friendly plants and habitats for birds and invertebrates throughout. It’s named Wildwood after Woking’s Paul Weller’s best selling album.

T

ype 1 diabetes (T1D) is an autoimmune disease. The body’s immune system destroys the beta cells in the pancreas responsible for producing insulin. Insufficient insulin hinders tissues from absorbing glucose (sugar), leading to dangerously high blood sugars. Left untreated, this can lead to very serious health complications. T1D occurrence is growing at 3% a year. The risk of developing it is 10 times greater in children with a parent with the condition. Coeliac disease and T1D share common genetic predispositions, so the conditions often co-exist. As T1D is an autoimmune disease, it is unsurprising to find a number of potential triggers and exacerbators, including genetics, when cow’s milk and gluten are introduced into the diet, maternal diet (gluten content and vitamin D status), infections (viruses are a known trigger of autoimmunity), stress, toxic load, the balance of the gut micro flora, digestive system health and the integrity of the gut barrier. It is nearly 15 years since the concept that autoimmunity develops via a complex interaction between our genetic base and our environment was first postulated. The single largest point of interaction between these takes place in the gut – the small intestine has the surface area of a tennis court. Our genes are set at conception, but our environment (dietary choices plus viral/bacterial/toxin and stress load) is, to a large extent controllable, as is the health and permeability (leakiness) of the gut. I’ve cut down newspapers, feuding on social media and general scrappery and increased listening to Nick Cave and Nina Simone, so I’m not too stressed. Plus I’m genuinely excited about my final round of Chaos of Delight; I’m just putting together a new bundle of favourite images.” Q. Are we too apathetic? “The people I meet aren’t apathetic. It excites me to see the energy in the climate change protests inspired by Greta Thunberg. On the other hand, there’s a sharp rise in dozy fury and aggressive complacency. The best relief is to do something useful rather than getting furious about the furious – they’ll drag you down.” Q. Do you change your show all the time? “I aim to change it every night. Some people come and see a tour show five or six times, so I work hard to make it different in case they’re in the room.” Q. Are your surprised by the love for The Infinite Monkey Cage? “It’s lovely to hear from physics students who started listening to it with their grandma when they were 10. It’s a joy to make and the fact that Brian and I can do 100+ shows a 30 | NOVEMBER 2019

year and not fall out says something. Our producer Sasha is brilliant at editing out our more tangential ramblings or realising when the madness should stay. The last series, our 20th, might be my favourite.” Q. Do fans throw themselves at Brian? “Brian wasn’t the famous pin-up of particle physics when I first met him; just another bloke with a deep and passionate obsession with understanding the structure of the universe with access to a particle accelerator. He usually gets a few marriage offers on tour during the Q&A, but when we switch him off and dismantle him, no one realises the crate we are carrying out of the building is him.” Q. Do you have a favourite book? “Currently it’s Jean Rhys – A Voyage in the Dark, but I’m halfway through Margaret Atwood’s The Testaments and it is superb. Shirley Jackson is high on my list too – We Have Always Lived in the Castle.” Q. Who would be your dream dinner party guests, living or dead? “I’d prefer living people as the dead are truculent and smelly. his needs slow cooking, moisture, and a highly flavoured stuffing to add interest and counteract the fattiness. In the past, standard English mixtures of bread with herbs and suet bound with eggs were favoured, but these are very dense to modern tastes. I suggest using a mixture with flavours borrowed from salsa verde (capers, herbs), which works well with this meat.

• Two breasts of lamb, boned • 40g (1½oz) unsalted butter • One medium onion, peeled & finely chopped • Two garlic cloves, peeled and crushed • Two tablespoons salted capers, well rinsed and coarsely chopped • A little chopped fresh mint • Three tablespoons finely chopped fresh parsley • A large tablespoon chopped fresh basil • Zest of ½ lemon (preferably unwaxed), finely grated • 150g (5oz) crustless day-old white bread, torn into small pieces • Splash of stock or milk, to moisten

Breast of lamb is flattish and thin, with one straight edge cut from the forequarter, which may still contain the ends of the rib bones, unless the butcher has already removed them. If you have to do this yourself, run a knife in between the bones and the meat on the outside, then cut them away from the lesser covering inside and slip them out.

To make the stuffing, melt the butter over a low heat and fry the onion and garlic until softened. Stir in the capers, herbs, lemon zest and bread, and add enough stock or milk to moisten the bread.

Spread the meat out, skin-side down. Put a layer of stuffing on top of each piece, then roll from the narrow end and 36 | NOVEMBER 2019

firmly tie at each end with string. Preheat the oven to 140°C, 275°F, Gas mark 1. Put the lamb in a shallow roasting tin and cook for three to three and a half hours, pouring off any fat that the meat renders. Then turn the oven up to 200°C, 400°F, Gas mark 6, and give it a further 15 minutes to crisp up. It won’t produce gravy, but a light tomato sauce goes well with the caper-flavoured stuffing. Alternatively, serve a salad dressed with vinaigrette on the side.

Ingredients: • One generous tablespoon goose, pork or bacon fat, or oil • One medium onion • One or two apples, preferably sourish ones • A small red cabbage • Two or three tablespoons cider vinegar • Two tablespoons light pale brown sugar • Four or five cloves, bruised • 5cm (2in) cinnamon stick • A piece of orange zest (preferably unwaxed) about 5 x 2cm (2 x 1in) • A teaspoon of salt • Freshly ground black pepper

Method: Preheat the oven to 140°C / 275°F, Gas mark 1. Peel and roughly chop the onion. Peel, core and chop the apples. Quarter the cabbage, discard the stem and finely slice. Heat the fat in an ovenproof casserole and fry the onion until translucent. Stir in the apples, then the cabbage, and fry lightly for a few minutes. Add the other ingredients and stir well. Cover and transfer to the oven for about an hour and a half. This can be cooked on the hob, but the heat must be very low – and stir frequently, adding a little more water from time to time if it shows signs of drying up.

Cooking: 140 minutes

Serves: Six

Roast potatoes

Ingredients: • 1kg (2¼lb) potatoes • About 50g (2oz) fat for roasting, such as beef or pork dripping • Salt

Roast potatoes are a defining element of “a proper roast”. King Edward, a potato variety with almost iconic status in Britain, probably has the best flavour, and can develop a fantastic crisp crust and melting interior. Wilja and Desirée are also good; Cara and Romano should produce reasonable results.

Method: The oven needs to be hot – 200–220°C, 400–425°F, Gas mark 6–7. Peel the potatoes. Leave small ones whole, and cut large ones into smaller pieces (3–4 each). Put them in a pan, just cover with cold water, and bring to the boil. Boil for 5–7 minutes. Tip them into a colander and drain well. Put the fat in a roasting tin and place in the oven to melt and get very hot. Take it out and add the potatoes. (Wear oven gloves and an apron in case the fat spits – it should be hot enough to sizzle satisfactorily.) Turn the potatoes well in the hot fat, sprinkle with salt, and roast for 40–50 minutes. In a gas oven, put the potatoes at the top. Turn once or twice during cooking, and add a little more salt each time.

Cooking: 60 minutes
