AN INTRODUCTION The timeless Fontainebleau has emerged from the original vision of legendary architect Morris Lapidus whose daring designs epitomized a concept of life “more unusual, more interesting, more warm.” Today, Fontainebleau Miami Beach weaves its attributes—striking design, headlining music, contemporary art, fashion, and technology— into a vibrant new kind of immersive guest experience. Situated on an oceanfront stretch of the Atlantic, the architectural wonder sprawls across more than 20 acres.

THE LEGACY Since its grand opening in 1954, Fontainebleau has been the place to see and be seen. When Fontainebleau’s architect unveiled his plans nearly 60 years ago, he explained: “Fontainebleau is designed to convey a feeling of delight, to provide a setting, away from home, away from daily cares, just for the pleasure of a great experience.” To provide this experience, Lapidus broke away from conventions to create what he called “an architecture of joy.” He chose passion over formality, curves over straight edges and hot colors over the traditional vanilla palette. Irony, surprise, wit, serendipity, coincidence, and whimsical extravagance were his tools. Critics and academic killjoys were outraged. The public couldn’t get enough of it. Eventually, the original Fontainebleau came to be recognized as a masterpiece of Modernist architecture, but it was always Modernism with an edge, and with plenty of humor and an abundance of art. Everything Lapidus designed or placed in Fontainebleau was meant to delight and surprise.

BLEAUFISH Taking freshness to a new level, Fontainebleau Vice President of Culinary Operations Thomas Connell and his team launched BleauFish, the hotel’s very own commercial fishing boat, providing fish, lobster and crab claws to the hotel’s famed award wining restaurants. BleauFish provides most of the 500 pounds of seafood used daily, where the live catch is received and housed in a collection of 2,000-gallon salt-water tanks called “Water World.” Designed and built by Fort Lauderdale’s Living Color Aquariums, Water World includes fish friendly amenities including temperaturecontrolled water — Florida spiny lobsters prefer the thermostat set to 70 degrees; Maine lobsters prefer to chill at 50 degrees. A blue-hued ocean mural on the walls of Water World, and the tanks’ lights, kept on timers to mimic the ocean’s patterns, relaxes the fish. “We want them to feel at home,” says Chef Connell. “The less stress a fish feels, the more delicious it’s going to taste. And that’s the whole reason we did this: to provide guests the freshest seafood experience possible. We’re literally going from ocean to table in a matter of hours.”




LOCKER 28 For over 6 years, Fontainebleau has cured some of the best beef in the entire country. We select Amish raised beef and dry-age it to the perfect taste and tenderness. Our Vice President of Culinary Operations, Thomas Connell, credits the region, the lack of pesticides and hormones, the soil’s nitrogen cycle, and Amish traditions for producing a natural product unlike any other on the planet. We bring the meat into Locker 28, the hotel’s meat locker and market, for dry aging. A stainless-steel walkin cooler precisely maintains conditions of 36 degrees Fahrenheit and 85 percent humidity. We weigh it, tag each one with the original start weight, and meticulously monitor its progress to ensure all are drying evenly. Each steak waits its time to be sliced, trimmed, and served to you, our guests, at StripSteak and Pizza & Burger by Michael Mina, Hakkasan, Scarpetta by Scott Conant, and the rest of the hotel’s dining venues. A rack is ready when it’s firm to the touch and doesn’t leave any moisture on the fingers. Prime cuts are aged for at least 28 days; shoulders ground for burgers are aged for about 60 days. Larger rib-eye racks go for about 35 days, and smaller ones spend around 28 days drying. A New York strip’s prime drying time is between 28 and 32 days, and the butcher shop is constantly working to ensure it has enough dry-aged meat at the right point of maturity to meet our customers demand and our talented chefs specific needs. The quality of our product here is borderline Kobe Beef—valued for its flavor, tenderness, and fatty, wellmarbled texture, consistent across the board. From the New York strips to the shoulders we use for our dry-aged burgers, to even the bacon (we smoke and cure our own bacon) and the chorizo we make in house for our red wine chorizo at Vida, its just endless what the possibilities are when you have a facility like Fontainebleau’s. You don’t need to put anything on it other than maybe a little bit of salt.

THE ART OF FONTAINEBLEAU The new 21st century Fontainebleau follows Lapidus’ precedent by incorporating “cool and hot” examples of contemporary art as a part of its radical departure from the ordinary. The mission of Fontainebleau’s art program is to entertain and educate. It is defined by a select number of world-class visual artists and thinkers. Each of them has a significant impact on the look and feel of Fontainebleau. In addition to Turrell’s light installations, major works include the chandeliers by Ai Weiwei, works by Rosalyn Drexler, John Baldessari and Tracey Emin, and photography by Thomas Ruff and Liza Ryan. Each work of art you see in Fontainebleau today is unique, original and site-specific. All the work has been integrated into the hotel’s total architecture and design to create a completely curated environment. Guests walking the lobby and encountering one of James Turrell’s light installations or an Ai Weiwei chandelier will know at once that Fontainebleau is unlike any other hotel on earth, and that the party is on.

AI WEIWEI CHANDELIERS In the Chateau Lobby are three crystal chandeliers that impart an ultramodern, sophisticated and glamorous atmosphere. Multimedia impresario Ai Weiwei, designer of the famed “Bird’s Nest” at Beijing National Stadium for the 2008 Summer Olympics, created these brilliant chandeliers for Fontainebleau. By dramatically increasing the scale of a normal chandelier, Ai made a common object an unfamiliar and awe-inspiring one. Paradoxically, the sheer size of the complete pieces also emphasizes the thousands upon thousands of individual components required to create them. For Fontainebleau, the chandeliers act as contemporary updates of Morris Lapidus’ original designs. They embrace the historic past of Fontainebleau while simultaneously looking towards the future.


JAMES TURRELL James Turrell’s work in light and color provides Fontainebleau’s artistic signature. Turrell’s work also has a strong historical resonance with Morris Lapidus’ own early experiments. Lapidus, like Turrell, understood the power of light and color to define and shape the guests’ experience.



INSPIRATION An enduring architectural landmark. Bold and imaginative design. Lapidus prompted new and unexpected ways to experience glamour that has been endured for over half a century. The rebirth of Fontainebleau magnificently restored Lapidus’ signature details.

COLUMNS A signature effect of Lapidus’ design is the column disappearing into the lighted “cheese hole.” When Lapidus was designing retail stores in New York in the 1950’s, there were typically buildings over the stores, with tons of steel and masonry. Lapidus’ drew the column into a lighted hole so the weight disappeared, thus making the building seem lighter.


CHEESEWALL The underlying project of all Lapidus architecture is to literally make the walls disappear. In many of his designs, Lapidus used indirectly lit display niches in “woggle” shapes to display merchandise and de-substantiate the walls. These cheese “woggles” or “cheese holes” are integrated throughout Fontainebleau with great effect. The architecture resides in arranging and directing the dance of vision.

STAIRWAY TO NOWHERE This iconic landmark maintains its gold hue and original architecture, and it is the focal point of the hotel’s expansive Chateau Lobby. When Fontainebleau opened in 1954, guests descended the Stairway To Nowhere, dressed in their finest evening attire, for the sheer pleasure of making a grand entrance. Today it continues to be used for guests to make an unforgettable entrance.

BOWTIE The “bowtie” floor pattern, one of the original Morris Lapidus design elements is reflexed in the Chateau Lobby’s white marble floor decorated with black marble bows. The bowties are a nod to the ones Lapidus wore personally throughout his entire adult life. Under the design direction of Jeffrey Beers and Lifescapes International, Fontainebleau’s poolscape boasts a bowtie inspired free-form pool.
