It has been a pleasure serving as the newest County Commissioner for these past few months, and I am looking forward to the many challenges and opportunities that lie ahead as I continue on in this position. Throughout these first few months, I have had the opportunity to visit with many different departments to discuss their needs and goals, and how we as a team of commissioners can best assist them.

One extremely informative tour that I was able to attend was the Receiving Center at the McKay-Dee Hospital, which provides psychiatric care in a medical setting with licensed professionals. They specialize in behavioral health and provide resources to help you, a friend, or family member in a safe and supportive way who may be struggling in one way or another with their mental health. I am very grateful for the opportunity that I have to work with them, and assist them as they provide this very important service to our community here in Weber County.

Recently, your county commissioners and other elected officials were able to attend the annual Capitol Day on the Hill, where representatives from each county throughout the state were able to gather together at the State Capitol and advocate for the needs of those within their communities. While there, we were able to discuss the needs and interests of us right here in Weber County, and work with state legislators to discuss solutions to some of the challenges we face.

We were also able to work with those state legislators and ask for their support in infrastructure plans that we have, which would help bolster our growing population and ensure that Weber County is kept as a great place to live for generations to come.

It was a great experience celebrating our annual HOF Germanfest at the Ogden Eccles Conference Center. As a community we were able to come together and celebrate with authentic food, music, and traditional dances with entertainment being provided by the Salzburger Echo, B&B All-Stars Band, Kerry Christensen and many more artists. Between the show floor and the vendors it was the perfect place to share in the German Heritage!

Thank you to all those who worked tirelessly behind the scenes to make this event happen. From the staff at the Ogden Eccles Conference Center, to the vendors that ran their booths, and all event attendees. Thank you for making this a fun, family friendly tradition for all to come and enjoy!

Weber County Attorney Reflects on the Past and Looks Forward to the Future

Chris Allred is a dedicated public servant who has served the citizens of Weber County for over 25 years.

Born and raised in Ogden, he attended Ogden High School, graduated from Weber State University with honors, and obtained his law degree from Brigham Young University. Chris and his wife, Priscilla, have raised their four children in Ogden. Allred began working for the Weber County Attorney’s Office in 1996, where he developed expertise in civil law as well as criminal prosecution. In 2015, Allred became the first Republican elected to the office of Weber County Attorney in over thirty years.

Chosen by his fellow county attorneys to serve as the Utah County and District Attorneys Association (UCDAA) president, he was also recently elected to serve as the president of the Statewide Association of Prosecutors & Public Attorneys (SWAP). Additionally, Chris is a board member of the WeberMorgan Children’s Justice Center and has been a presenter of local government issues at numerous statewide conferences.

Allred and his team act as in-house legal counsel for over 1,000 county employees and 20 departments by providing legal advice for each department for a variety of civil matters. His team’s services include responding to lawsuits, reviewing contracts with vendors, and guiding health departments with policy decisions, to name a few.

Allred’s legal expertise extends to criminal prosecution as well. Weber County’s criminal department handles every felony that occurs within the county, and while municipal courts oversee misdemeanor cases, Allred and his team file 4,000 cases per year, from felonies and juvenile court orders to misdemeanors that occur within unincorporated areas.

“Serving the community of Weber County is something that I am very passionate about,” said Allred as he reflected on his official duties. “Here at the Weber County Attorney’s office we take our jobs very seriously, and are grateful for the opportunity to live and work in such a great county.”

As a re-elected county attorney, Allred’s hopes for Weber County include strengthening the local community through strong collaboration with our law enforcement partners. Equipped with invaluable knowledge, experience, and leadership skills, Allred is an asset to Weber County, and he looks forward to continuing to serve with unmatched dedication and integrity.

Weber County Officials Receive Distinguished Awards

Weber County Assessor John Ulibarri, and Ricky Hatch, Clerk/Auditor for Weber County, were recently awarded as the Assessor and Clerk of the year for the state of Utah.

“Receiving this award is a great honor, very humbling, and something that I am grateful for. It also motivates me to continue to improve and be better, and do my best at my job,” said Ricky Hatch.

For Hatch, this is not the first time that he has been awarded the Clerk/ Auditor of the year. Since being elected as County Clerk/Auditor in 2010, Ricky has been honored by his peers as Utah’s County Clerk twice, in 2015 and 2022. He has also been honored as the Auditor of the year in 2013 and 2017. He and his team have garnered awards in elections innovation and service from the U.S. Election Assistance Commission (EAC), The Election Center, and the International Association of Government Officials (iGO). While discussing the awards, Weber County Assessor John Ulibarri stated, “Our objective is to efficiently conduct and complete our duties as fairly, accurately, and equitably as possible. Here at the Assessor’s office, we believe that our commitment to the community must remain one of exceptional service and cooperation, and that has been one of the main focuses since I have been in office.” Ulibarri continued to state, “The team here at the Weber County Assessor's office is fantastic. Over the last couple of years, we have faced many challenges, and through all that, we have learned and grown a lot, which I believe has helped to make us as efficient as possible. I also know that I wouldn’t be receiving this award without them, so I feel like this award really represents all of us as a team.”

John began his career in real estate in 1997 working as a fee appraiser. He then took a job with Davis County as a residential appraiser. John served in several different positions for the Davis County Assessor’s Office before accepting the appointment of Chief Deputy Assessor in Weber County in 2008. John is a Certified General Appraiser in the state of Utah. He earned the Ad Valorem Residential and Ad Valorem General Real Property Appraisal designations from the Utah State Tax Commission. On the international level, he holds the Assessment Administration Specialist (AAS) and Residential Evaluation Specialist (RES) designation with the International Association of Assessing Officers (IAAO).

Commissioner Froerer praised both Ulibarri and Hatch for their achievements, stating, “We believe that we have some of the best and brightest minds in the state right here in Weber County, and these awards help demonstrate that.”

Weber County Sheriff’s Office Seeks to Expand Jail

Over the last 20 years, Weber County has experienced a 25% increase in population. While inevitable population growth has brought about economic expansion and many wonderful opportunities, the county’s current jailing infrastructure has reached its capacity.

Presently, Weber County Jail can hold up to 888 inmates. However, in light of our recent increase in population, the current jailing facility is at capacity, forcing correctional staff to turn away those who have incurred misdemeanor charges for shoplifting, trespassing, public intoxication, and disorderly conduct. Without exposure to the jail’s correctional programs, people with misdemeanors not only walk free but are more likely to become repeat offenders in the future. In short, inadequate jailing infrastructure poses a monumental risk to the community.

Not only does an at-capacity jail threaten public safety, but the current jail construction model is outdated and lacks basic necessities such as medical and mental health wings. In the wake of a post-pandemic world, mental and physical healthcare needs have only worsened, particularly for incarcerated individuals. Constructing a medical and mental health wing will provide more inmates with access to the health care services needed to heal and develop while serving their time.

In addition to constructing a medical and mental health wing, the proposed modern community release center will not only equip inmates with

invaluable life skills and rehabilitation services, but also opportunities to participate in community service, education, and work release programs.

After all, prioritizing Weber County’s jail expansion efforts is not just about warehousing individuals. While it’s essential to provide Weber County inmates with a safe environment, rehabilitation programs, schooling, and employment opportunities, a chief concern of the sheriff’s office is protecting the local community by mitigating rising crime rates.

“We have a goal to help teach these individuals to be self-sufficient and contribute to society in a good way, and with our current facility, we are unable to do that to the extent that we hope to,” Sheriff Ryan Arbon said.

The Intermountain Icebreaker Rodeo

Coming to the Golden Spike Event Center March 1-4, is the 12th Annual Intermountain Icebreaker Rodeo.

UUtah has 565 High School student-athletes and 221 Junior High school athletes that are members of the National High School Rodeo Association and are eligible to enter. Sixty of those youths are members of the Spikers High School Rodeo Club based in Ogden, Utah, and 25 are members of the Wasatch Jr. High Rodeo Club based in Ogden, Utah. Northern Utah also has quite a growing number of students who are members of the District 9 rodeo club for Idaho. The NHSRA rules state that all 2023 fifth grade and under, Junior High, and High School students are eligible to participate. It is open to all students in the United States and Canada. To date, there are entries from 19 US states and 1 Canadian province. The average number of entries over the last few years has been between 700-750 students with event entries as high as 1500.

The Icebreaker Rodeo is part of the NHSRA Western Legacy Series. It was started by Ben German from the Broken Heart Rodeo Company. He partnered with the Weber County Golden Spike Event Center along with support from the National High School Rodeo Association, Cinch, The American Quarter Horse Association, and others to produce this event. This rodeo has grown to help promote the sport of rodeo and to promote membership in the National High School Rodeo Association. Ben says that the support Weber County gives to this event is wonderful and that the revenue brought into the community is about a million dollars of positive economic impact.

The Icebreaker rodeo has had some amazing young men and women participate and move on to become professionals.

Around and Bull Riding World Champion; he has seven career world championships that includes 4 All Around (2019-2022), 2 Bull Riding (2020, 2022) and 1 Saddle Bronc Riding (2021).

One of the benefits of participating in a rodeo of this size and caliber is being exposed to the high level of competition from around the country and the stress that accompanies it—young men and women learn how to compete and manage the pressure of competition. It also gives students a chance to see how they fare against others their age from different areas.

Along with the top-notch competition, there will be a variety of western vendors. Thanks to many national and local sponsors the Icebreaker has $82,500 in prizes with 28 saddles and 296 buckles to award. The rodeo is much more than an event; It is a sport that teaches hard work, dedication, resilience, hustle, responsibility, good sportsmanship, and heart. Wishing all the young contestants the best of luck!

Weber County Parks in the Spring

As the weather begins to warm and springtime recreation invites locals out of their homes and into the sunshine, we wanted to provide a list of parks that you and your family can enjoy. Whether you’re a local looking for new parks to explore or if you’re a new Weber County resident on the lookout for ways to take advantage of the outdoors, this list featuring four parks is essential to getting the most out of this upcoming spring!

NORTH FORK PARK is a 2400-acre camping and outdoor destination located on the eastern side of the Wasatch Mountains. This land is also considered an International Dark Sky destination. The International Dark Sky Places (IDSP) Program was founded in 2001 and promotes park and land conservation.

This park opens the first weekend of May, weather permitting, and closes mid-October. It’s important to note that water will be turned off in mid-October, depending on weather conditions and temperatures.

In the meantime, until wintry weather gives way to spring, North Fork also features winter trails groomed by Ogden Nordic for snowshoeing, fat biking, and Nordic skiing. In addition to camping, parkgoers can also enjoy a variety of activities including hiking, biking, and horse trails.

FORT BUENAVENTURA PARK was originally built in 1846 by Miles Goodyear on the Weber River. In the time since the fort has become much more than a historic site; it is a premier outdoor recreation destination.

The Fort is host to the Fort Buenaventura Mountain Man Easter Rendezvous, OFOAM’s Ogden Music Festival, and numerous educational trips for children. In 2021, the Fort hosted the PDGA Disc Golf World Championships. Facilities include a picnic area, pond, community fishery, and an 18-hole championship disc golf course.

WEBER MEMORIAL PARK is a 166-acre camping and outdoor recreation destination also located in the Upper Valley. Considering the adjacent Causey Reservoir and South Fork Ogden River, the opportunities for fishing, swimming, kayaking, and paddle boarding are perfect for the outdoor enthusiast.

OBSERVATORY PARK is a 119acre ecological renovation project right in the heart of Ogden City, and it features a stunning new entrance and pavilion, which is free to the public. You can access the 2.4 miles of walking trails, in addition to having easy access to Centennial Trail, Weber County Archery Park, and Fort Buenaventura Park.

Spring Gardening

Spring is springing, and March is the perfect time of the year to garden. Marriott-Slaterville was proudly designed in 1999 as Utah’s Open Space City. Since that time, our community has encouraged gardening, fostered conservation, and promoted sustainable development. Each summer, the Marriott-Slaterville Garden Market opens with local vendors who bring their garden surplus to share with the community. So, put on your gloves and get out your spade to plant your garden space.

Also, consider that gardening is an excellent way to improve mental and physical well-being. With all the stresses and conflict in our daily lives, gardening is an excellent activity for self-care. Here are some ways that gardening can help our well-being:

• Burns Calories: Gardening is considered moderate- to highintensity exercise. You can burn up to 330 calories during a one-hour session of gardening or yard work.

• Lower Blood Pressure: Just 30 minutes of moderate-level physical activity a few times a week can help control high blood pressure. The National Heart, Lung, and Blood Institute recommends gardening on its list for addressing high blood pressure.

• Immune System: Outdoor sunshine

helps you soak up Vitamin D, which helps the body absorb calcium to keep bones strong and the immune system healthy.

• Happiness: Research involving active participation with nature and gardening provides psychological benefits such as lower stress, increased self-esteem, and improved social interaction.

Even if you have never gardened before, it is fun to learn. March is a great time to prepare.

• Prune trees and shrubs as needed.

• Trim perennials.

• Clean-up your yard as the soil thaws.

• When it warms enough, prepare an area for a garden.

• When planting, note soil quality, plant size, and light.

• This month, plant your early coldloving vegetables, like peas, carrots, radishes, and onions. Inside your home, you can start growing seed, like tomatoes and peppers, to transplant in May. When May arrives, it is usually the best time to plant corn, squash, beets, other vegetables, and flowers..

The Ten Basics of Square Foot Gardening

These days, there is a lot of interest in square-foot gardening. These gardens fit neatly in the back yard or in other small areas. Create a square-foot garden with the following steps:

@ Layout. Square-foot gardens are arranged in squares rather than rows. The layout is typically 4’ X 4’ planting boxes.

@ Boxes: Build elevated planting boxes and fill them with a fresh new soil mix.

@ Aisles: Space the boxes around three feet apart, so that there are walking aisles to access the boxes.

@ Soil Mix: Fill boxes with a special soil mix you can find at your local nursery or create your own with 1/3 blended compost, 1/3 peat moss, and 1/3 coarse vermiculite.

@ Grid: Make a permanent squarefoot grid across the top of each planting box.

@ Care: Avoid walking on your growing soil. Tend your garden from the aisles.

@ Select: Plant a different flower, vegetable, or herb crop in each square foot, using 1, 4, 9, or 16 plants per square foot.

@ Planting: Plant a pinch (two or three seeds) per hole. Plant transplants in depressed hole filled with water.

@ Water: Water by hand or from sprinkler as needed.

@ Harvest: Harvest as the garden ripens over the summer. Add compost and replant it with a new or different crop the next gardening season.

General Burning Regulations

The State of Utah issues burn permits; Weber Fire District no longer issues them. Burn permits are to be obtained from the Utah Department of Environmental Quality. Here is the link to their website: https://air.utah.gov/OpenBurning/form/index.php.

Permits may be issued between March 30 and May 30 and between September 15 and October 30. You cannot obtain

a burn permit until the burn window begins. Yard burning requires a valid burn permit issued during the open burn window. The burning of trash, rubbish, tires, hazardous material, or oil products is not allowed. Agriculture burning of ditches, fence lines, and stubble is allowed at other times, so contact Weber Fire District at 801-782-3580, extension 206. THE HOUSE THAT CALLED THEM HOME

When Kenzie and Tony Poselli stumbled upon a 1901 farmhouse for sale in Hooper, it was nothing like what they had been searching for, but they both felt a strange magnetic pull toward the place during their first visit.

Tony felt stirred by the large wooden garage that still smelled of oil. Kenzie was drawn to the idea of having a small patch of land where she could have a small farm. The interior of the house had been newly remodeled in a way that gave nods to its historic roots. The Posellis were excited to move right in and begin restoring the outbuildings, including the large garage, a chicken coop and two sheds.

When the Posellis made an offer— including a heartfelt letter—to the homeowner and it was accepted, they were overjoyed. Soon after moving in, neighbors came by to welcome them with homemade bread and other treats to share, and stories of the former homeowners, namely Thorald Cox, who Kenzie says, “deserves to be known.”

To get a better picture of Thorald, we should look back two generations to the original homeowners Robert and Tirzah Cox. Robert immigrated from England to the U.S. with his parents at a young age, walking across the plains west of the Missouri River to Idaho. His family moved to Hooper in

1868, when the land was still just an open prairie. He married Tirzah in 1876 and the two went on to have 14 children. Robert invested in dry goods and, at one point, built an adjoining structure to open a dried goods store in the front of their home (now the Poselli’s living room). Despite suffering many hardships, including the death of several of their children, it’s said that Robert and Tirzah were known for their service and friendship in the Hooper community and beyond. Maybe it’s that same saltof-the-earth spirit that was passed down to the Cox’s grandson, Thorald.

Sometime in the early 1920s, Thorald took over the property his grandparents had built. Thorald and his wife Eva Cottle became known for their engagement in the community, one year they even froze their entire paddock so friends and neighbors could ice skate.

In 1929, Thorald talked the Weber School board into replacing the horsedrawn wagon that was used to carry children to Hooper Elementary with a school bus, and he became Hooper’s first bust driver. He originally paid

for fuel and bus repairs on his own, and eventually built a large garage to open a mechanic shop for the busses. Thorald was known in the community for his generosity and love for kids. He would often stop at Farr’s Ice cream on the route home from Weber High, covering anyone who didn’t have the money to buy a treat. Over the course of his career, Thorald logged over 600,000 miles, driving 120 miles and 137 stops each day. He retired in 1972 after 43 years with an insignia for four decades of safe driving, forever sealed in the hearts and minds of the kids he drove to and from school each day. Since they moved into Thorald’s beloved domain, the Posellis have reframed and added concrete floors, new doors, windows, and electricity to the garage, and made significant improvements to many of the other outdoor structures. Because they fell for the heart and history of this historic home, the Posellis have found themselves claiming a simpler, more timeless way of life. They say that without a doubt it’s living in both the spaces and the spirits of Robert, Tirzah, and Thorald Cox that brought them home.

had a great experience with people who really cared and helped out. We didn’t feel like we were being run through any sort of mill. They made arrangements so family members could have some personal time to say goodbyes.

Third–Have some easily accessible cash for your family

I had one of the most difficult experiences of my life this Christmas season: my mother passed away suddenly, unexpectedly, while we were taking her to the hospital. Nothing prepared me for this experience, not even the work I have done with couples and individuals planning for these end-of-life moments or taking people through the probate process. Now, I understand better the overwhelming emotional journey that accompanies the legal situation. As I am walking this road, cleaning out her apartment, arranging for funerals, and communicating with family, I thought it could be helpful to share a few things that I have learned through these circumstances.

First–Be Prepared

We all know that our lives are going to end at some point. As often as not, that end will come without much advance notice. I want to know where all of the information about my bank accounts, insurance policies, debts, etc. is located, so my family can find that and access it easily.

Second–A good mortuary makes a big difference

My mom did not do any pre-planning, so we had to find a place to help. The hospital gave us a list of mortuaries, and we called several till we found one that seemed affordable. We

While the mortuary experience was nice, they also come at a cost. Cremation will cost you a minimum of $2100, while a funeral will cost you several times that. Most of our children do not have the ability to simply foot that bill while waiting for an estate to settle up. Set up a bank account with your children as the pay-on-death beneficiaries. That way, they can have a way to access some money to cover those initial costs.

Finally–Have a place to keep all of your important papers

My mom had a will (I drafted it for her years ago), but she didn’t know where it was. I never found it, even after going through all of the boxes in her apartment. Having copies of all your bills (and your login information and passwords) can be super helpful. Just make certain someone knows where those documents can be found. Since this happened with my mom, it has inspired me to have a conversation with my dad, in order to be better prepared for when he passes away. He also lives alone, so his passing could become a similar situation. This has also inspired me to get things in order in my own home. While preparation doesn’t make the loss of a loved one any easier, it helps make all of the details less intrusive in the grieving process.

Learning to be patient through life’s challenges is a lesson we all must go through. Jenna Wright is a charming and bright 17-year-old that has already recognized this valuable lesson. With warmth and humor this impressive young lady has learned that winning in life is much different than winning in the arena, and she has done both. Jenna loves math and is taking some medical/college courses while still in high school with a goal to obtain her CNA. She is the recipient of a scholarship to SUU where she plans to continue in the medical field. She loves to hunt, camp, hang out with family and friends, tumble, play piano, sing, and rodeo! She says that she likes to stay

Corbin Ellis

Corbin Ellis is a shy and polite young man who is 11-years-old and a student at Kanesville Elementary. He likes math and aspires to become a veterinarian someday. Corbin likes to show goats, play soccer, baseball and tumbling. He likes to do backflips and front flips, but if you ask him his favorite sport, he will boldly tell you rodeo. This young man comes from a rodeo family where all the members practice and team rope together. He can rope either end but prefers heeling. He is a member of the Utah Youth Rodeo Association and the Idaho Junior High School Rodeo Association where he competes in team roping, breakaway and calf tying for District 9. He rides a buckskin

horse named Spirit and told me that hard work pays off and that losing makes you stronger. This humble young man wouldn’t brag about himself, but his mom told me that he won the team roping at his first junior high school rodeo. Corbin has also won his first saddle as an All-Around Champion. He is currently sitting in third place for the All-Around and in first place for the Rookie of the Year award. He is working hard to qualify for the State Finals and the National Finals this summer. I asked him if there was something unique about him that most folks wouldn’t know. He was excited to share that his grandfather is the famous rodeo photographer, Jim Fain.

When she started high school it was just too much, and she had to pick one to focus on and rodeo was it. She loves to make friends and works hard to stay positive in the face of adversity. After losing her rope horse to blindness she has worked hard this year to prevail with a new equine partner. She said that they are connecting now after lots of practice and that they rodeo for District 9 in Idaho where she competes in breakaway roping. Her goal this year is to qualify for the State Finals.

DIY/RTC Ornate Mirror

When I told my husband I was going to write this article on my new DIY mirror he laughed and said “DIY? More like RTC – Rachel tells Casey.” I have to admit that he is fully correct. I have the ideas–he executes them. It really does work out well for me. Our latest project was a large, framed mirror.

I have wanted a large mirror for a while, but have you seen the price on them? Yikes! Casey was working on a remodel and a large, beveled edge mirror was in the garbage, so he brought it home. I pouted a little and didn’t want an old mirror, but then one night I was inspired! We (Casey) could buy the pretty trim and molding from a home improvement store to frame out the mirror more to my liking.

I wanted it to look ornate and fancy, so I used Antique Gold Rub N Buff to bring out the detail. It turned out better than I could have imagined.

I really am lucky with all of my RTC projects–this one wasn’t nearly as hard to execute as bringing two old grain silos to Hooper from east Layton…that RTC project’s to come!

Irish food is hearty and comforting, with a familiarity and simplicity that makes preparing and eating it so very satisfying. Try some of our Irish favorites and see if you don’t leave the table feeling lucky!

Irish Potato Bites

12 red potatoes small

1 cup corn beef

½ cup cheddar cheese

1 Tbsp. melted butter

Salt & pepper to taste

Sour Cream

Green Onion - one bunch diced

• Preheat oven to 400 degrees

• On the stove cook your red potatoes in a big pot of boiling hot water until cooked. Our potatoes were done in about 15 minutes. If you poke the potatoes with a fork and it goes in easily, they are done. Pull from hot water and let cool.

• Cut cooled potatoes in half and dig out the middles, savethem in a bowl.

• Add cheese, corn beef and butter to your bowl of potato filling and mix together.

• Salt and pepper your mixture to taste and scoop into the potato halves.

• Place on a baking sheet and stick in the oven for 10 minutes.Remove from oven, serve with a dollop of sour cream and diced green onions.

Makes 22 Irish Potato Bites

Easy Irish Soda Bread

4 Cups flour

1 egg

4 Tbsp White Sugar

1 1/4 cup buttermilk

1/2 cup margarin, softened

1/4 cup butter, melted

1 tsp baking soda

1 Tbsp baking powder

1/2 tsp salt

• Preheat oven to 375 degrees, and lightly grease a large baking sheet

• Combine dry ingredients and margarine in a bowl

• Stir in 1 cup of buttermilk and egg

• Turn the dough out onto a lightly floured surface and knead slightly

• Form dough into a round loaf and place on prepared baking sheet

• Combine melted butter and ¼ cup of buttermilk, brush onto loaf

• Cut an X in the top of the loaf

• Bake until a toothpick comes out clean, check for doneness after 30 minutes, bake time is between 45 to 50 minutes. For added darker crust, you can continue to brush the butter/ buttermilk mixture on the loaf as it is baking.

Bangers & Colcannon Mash

2, 12 oz packages pork large link sausages

2 lbs Yukon gold potatoes, chopped into 2” cubes

4 Tbsp butter

1 red onion, sliced

4 cloves garlic, minced

½ head of green cabbage, chopped

2 green onions, thinly sliced

2-3 Tbsp minced chives

¾ cup milk

7 oz block of Irish cheddar, grated (You can find Irish cheddar in the Smith’s or Lee’s deli)

Salt

Black pepper

Olive oil

• Place the chopped potatoes in a large cooking pot full of cold water. Season with a dash of salt and bring the water to a boil over high heat. Once boiling, reduce the heat to medium and simmer about 30 minutes.

• Pour 2 Tbsp of Olive oil to coat the bottom of a large skillet. Cook sausages about 5 minutes on each side, until brown. Add ½ cup of water to the skillet, reduce heat to medium and cook an additional 15-20 minutes/. When sausage is no longer pink,, remove from pan, cover with foil and keep warm in a low temperature oven.

• Add 2 tablespoons of butter to the skillet (no need to rinse it- you want the sausage flavoring left in the pan!) Meld & add red onion. Saute for 5 minutes until tender. Stir in the garlic and cook for another minute.

• Stir in the cabbage and season with salt and black pepper. Cover the skillet with a lid and cook for 5 minutes. Remove the lid and add the green onions.

• Drain the potatoes and set awside. Use the large cooking pot to melt 2 tablespoons of butter over medium-low heat. Add ½ tsp of salt and the milk and bring to a simmer. Add the cooked potatoes and use a masher to mash.

• Stir in the grated Irish cheddar. Once melted, stir in the cabbage mixture. Season with salt and pepper to taste.Serve the sausages with the Colcannon on the side, sprinkle with chives and black pepper. Serve with a side salad or steamed cabbage.

Kendal’s Shepherd’s Pie

1½ pounds ground lamb (or beef)

2½ pounds russet potatoes, peeled and cut into 1-inch chunks

1 egg yolk

8 Tbsp Irish butter (1 stick)

1/2 cup heavy cream (or milk)

2 medium yellow onions, diced

2 carrots, diced

3 cloves garlic, minced

2 cups red wine or beef broth

2 Tbsp all-purpose flour

3 Tbsp tomato paste

1 tsp Worcestershire sauce

1 Tbsp thyme

½ tsp black pepper

½ cup frozen peas

1 cup shredded white cheddar cheese

2 Tbsp chives

• Preheat the oven to 375°F.

• Boil potatoes until fork tender and drain. Add cream (or milk), butter and egg yolk and mash or blend with a hand mixer. Taste and adjust seasoning, if necessary. Set the mashed potatoes aside.

• Brown ground meat and season with salt and pepper. Add the onions, carrots and garlic and cook until tender. Add flour and sauté for one minute. Deglaze with the wine or beef broth and increase the heat to high; bring to a boil, scraping any brown bits from the bottom of the pan, until the liquid is reduced by about half. Add the tomato paste, and Worcestershire sauce. Bring to a simmer, reduce the heat to low, and cook until thickened, about 2 minutes. Stir in the thyme, pepper, peas, and cook until the peas are warmed through. Taste and adjust seasoning, if necessary.

• Dollop the mashed potatoes evenly over the filling. Spread the potatoes evenly over the stew and all the way to the edges of the skillet. Sprinkle cheese on top. Place the skillet on a baking sheet or large sheet of foil to catch any drips and bake until the filling is hot, the topping is lightly browned, and the edges are bubbly, about 30 minutes. (For more color, turn on the broiler and broil for the last 5 minutes, or until the top is golden.) Sprinkle with chives and serve.
