LOLA•S BAKERS The mouthwatering cakes in this book are created by Julia Head, working under the direction of Asher Budwig and his team of bakers at LOLA•s. Asher is a fourthgeneration baker, born into a family of sweet-toothed entrepreneurs and inspired by his family’s enduring passion for cake. Asher grew up watching his father Mario Budwig establish the hugely successful Millie’s Cookies, which grew to over 100 stores across the UK. Mario in turn was inspired by his mother and grandmother, who ran a pâtisserie and café from the 1940s in Colombia, South America.
Lemon polenta cake This delicious citrus-infused polenta cake is a fail-safe crowd pleaser. The gluten-free sponge has a light texture and the lemon syrup that soaks it gives a real zing. To add to the Italian ambience, try teaming your cake with a chilled glass of Limoncello. 200 g/1¾ sticks butter 200 g/1 cup golden caster/ granulated sugar 200 g/2 cups ground almonds 100 g/¾ cup polenta (cornmeal) or semolina 1½ teaspoons baking powder 3 eggs zest of 3 unwaxed lemons LEMON SYRUP
squeezed juice from 2 lemons 125 g/1 cup plus 1 tablespoon icing/confectioners’ sugar, sifted a 23-cm/9-inch springform cake pan, greased and baselined with baking parchment
Preheat the oven to 180°C (350°F) Gas 4. Put the butter and sugar in a large bowl and beat with a wooden spoon or using the paddle attachment in a stand mixer until pale and fluffy. In a separate bowl, combine the ground almonds, polenta (cornmeal) and baking powder. Beat a little of the dry ingredients into the butter-sugar mixture, followed by 1 egg. Continue to add alternate dry ingredients and eggs, beating well after each addition. Finally, beat in the lemon zest. Spoon the mixture into the prepared cake pan and bake in the preheated oven for 40–45 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove the cake from the oven and allow to cool in the pan. Meanwhile, make the lemon syrup by boiling the lemon juice and icing/confectioners’ sugar together in a small saucepan. When the sugar has dissolved, prick the top of the cake all over with a toothpick and pour over the warm syrup. Leave to cool before removing the cake from the pan and cutting into slices to serve.

Banoffee cake At Lola’s, we adore the classic British banoffee pie, so we decided to rearrange the delicious dessert into a showstopper of a layer cake – you will find that it’s perfect for serving at special occasions. In our opinion, you can’t go wrong with moist banana sponge, creamy frosting, fresh bananas and lashings of caramel. 230 g/2 sticks butter, melted 340 g/1¾ cups caster/ granulated sugar 2 teaspoons vanilla extract 4 eggs 5 very ripe bananas mashed (approx. 750 g/26½ oz.) 450 g/scant 3½ cups plain/ all-purpose flour, sifted 2 teaspoons baking powder 1 teaspoon bicarbonate of/ baking soda FROSTING
350 g/3 sticks butter 1 teaspoon vanilla extract 500 g/4½ cups icing/ confectioners’ sugar, sifted 30 ml/2 tablespoons whole milk TO ASSEMBLE
1 x 380 g/14 oz. can readymade soft caramel (we use Carnation) 3 small bananas, sliced 3 x 23-cm/9-inch springform cake pans, greased and baselined with baking parchment 2 disposable piping/pastry bags

Preheat the oven to 180°C (350°F) Gas 4. To make the sponge, put the melted butter, sugar and vanilla in a large bowl and mix using a wooden spoon or the paddle attachment in a stand mixer. Add the eggs one at a time, making sure to scrape down the sides of the bowl as you do so. Carefully add the mashed bananas and combine. With the speed on low, slowly add the flour and baking powder and bicarbonate of/baking soda and mix until just incorporated. Do not over mix, as the batter will become tough. Divide the mixture evenly between the three prepared pans and level the surfaces. Bake in the preheated oven for 20–25 minutes until well risen and a skewer inserted into the middle of each cake comes out clean. Remove from the oven and allow to cool. Meanwhile, make the frosting. Put the butter in a bowl and beat with a hand-held electric mixer or in a stand mixer until soft and smooth. Mix in the vanilla extract. Mixing at slow speed, add half the sifted icing/confectioners’ sugar and mix until well incorporated. Add the second half and beat in slowly. Once all the sugar is incorporated add the milk, a tablespoon at a time with the mixer still running but now on a medium speed. Stir until the frosting is light and fluffy. Scrape the frosting into the piping/pastry bag with a spatula and set aside. To assemble the cake, put the caramel into another disposable piping/pastry bag. Place one of the sponge cakes onto a serving plate and carefully pipe large dots of frosting around the outside edge of the sponge to form a ring. Take the caramel piping bag and do the same with the caramel just behind the frosting. Next, take half of the sliced bananas and place in the remaining circle of the visible sponge to cover. Repeat with the next sponge layer. Finish with the final layer of sponge and decorate using large piped dots of alternate caramel and frosting. Try to lift the piping bag away quickly from the frosting to create neat little peaks. Continue until the surface of the cake is covered, finishing with a single dot of frosting in the middle. You now have your wonderful banana caramel creation!

LEMON & YUZU ÉCLAIRS
JAMES CAMPBELL has worked as a chef in Michelin-starred establishments across the world. In London he was Head Pastry Chef at Gary Rhodes’ Michelin starred restaurant and the awardwinning Mandarin Oriental Hotel. It is in his current position as Product Development Manager for Marks & Spencer, that James’s passion for Japanese culture and ingredients truly developed through research and in-depth visits to Tokyo and Osaka. James was recently a semi-finalist in the BBC TVs Great British Bake Off spin off: Crème de la Crème.
The sharp, fragrant tang of Asian yuzu juice is a surprising yet delicious addition to the classic French éclair. It is well worth a little effort as the results are stunning. 1 x quantity Choux Paste (see page 18) 1 beaten egg yolk, to glaze YUZU & LEMON CREAM
300 ml/1¼ cups yuzu juice freshly squeezed lemon juice, to taste seeds from 1 vanilla pod/ bean 4 egg yolks 25 g/¼ cup cornflour/ cornstarch 75 g/1⁄3 cup plus 2 teaspoons caster/ superfine sugar a pinch of salt 30 g/¼ stick butter, softened 100 ml/½ cup minus ½ tablespoon double/ heavy cream WHITE CHOCOLATE & YUZU FONDANT
200 ml/1 cup yuzu juice juice of ½ lemon 80 g/½ cup minus 1 tablespoon caster/ superfine sugar 50 g/1¾ oz. white chocolate, chopped 200 g/7 oz. readymade fondant, warmed a few drops of yellow food colouring (optional) melted white chocolate, silver leaf and white chocolate discs, to decorate (optional) 3 piping/pastry bags, 2 x 8-cm/3-inch plain nozzles/ tips and a baking sheet lined with baking parchment MAKES 8
following the method on page 18. Once the pastry has reached dropping consistency transfer to one of the piping/pastry bags fitted with a 8-cm/3-inch plain nozzle/tip. Preheat the oven to 200°C (400°F) Gas 6. Pipe eight 12-cm/4½-inch long straight lines onto the prepared baking sheet. Hold the bag at an angle rather than upright and be careful not to pipe the choux too flat as this could stop it from rising properly. Brush the dough with the beaten egg yolk and bake in the preheated oven for around 10–15 minutes or until risen, golden and cooked through. Leave to cool on a wire rack. TO MAKE THE YUZU AND LEMON CREAM , heat the yuzu juice, lemon juice and seeds from the vanilla pod/bean together in a small saucepan until they reach boiling point. In a clean mixing bowl, whisk together the egg yolks, cornflour/cornstarch, sugar and salt. Carefully and slowly pour the boiling yuzu mixture into the dry ingredients, then whisk until you have a thick emulsified mixture and the dry ingredients have been fully absorbed. Pour everything back into the pan and return to a medium heat, whisking constantly to cook the cornflour/cornstarch. Transfer the mixture to a bowl and whisk occasionally while letting cool. When the mixture has cooled a little, whisk in the softened butter. Once completely cool, whisk in the double/heavy cream until fully incorporated. Transfer the yuzu and lemon cream to a clean piping/pastry bag and chill in the refrigerator until needed. TO MAKE THE WHITE CHOCOLATE & YUZU FONDANT , boil the yuzu juice, lemon juice and sugar together in a small saucepan until the mixture has reduced by half and resembles a syrup. Set aside to cool a little. Meanwhile, melt the white chocolate in a heatproof bowl set over a pan of barely simmering water. Stir the melted chocolate into the warmed fondant. Add cooled yuzu syrup to taste and stir in a few drops of yellow food colouring to give a stronger but delicate yellow colour, if needed. TO CONSTRUCT THE ÉCLAIRS , make two small holes in the base at either end of the cooled choux, then gently pipe the chilled yuzu and lemon cream inside from either end to meet in the middle. Dip one long side of each éclair in the white chocolate and yuzu fondant, wiping away any untidy edges. Place the iced éclairs in the fridge to chill. TO DECORATE THE ÉCLAIRS , put the melted white chocolate into the other piping/pastry bag and pipe a very fine line of white chocolate diagonally end to end. Add a white chocolate disc and some silver leaf to finish, if desied. FIRST, PREPARE THE CHOUX PASTE

Preheat the oven to 200°C (400°F) Gas 6. TO MAKE THE TART CASES , thinly roll out the flan paste, cut into four even squares and line the tart pans. Trim away the edges and put in the fridge for 10 minutes. Line the cases with baking parchment and fill with baking beans. Blind bake for12–15 minutes (8 for petit four) until golden. TO MAKE THE CRÈME BRÛLÉE , reduce the oven to 150°C (300°F) Gas 2. Whisk together the egg, egg yolks and sugar, and set aside. Stir together the whipping/heavy cream and matcha green tea powder in a saucepan and bring just to the boil. Pour the hot cream into the eggs and sugar, whisking constantly until fully combined. Transfer the mixture to an ovenproof dish and place in a baking pan with high sides. Pour boiling water into the pan to form a bain-marie. Carefully transfer the pan to the preheated oven and bake for 30–40 minutes or until the brûlée has just set with a slight wobble in the centre. Remove the dish, allow to cool, then refrigerate until needed. TO MAKE THE WHITE CHOCOLATE CREAM , heat the whipping/heavy cream in a saucepan over medium heat until just boiling. Remove from the heat, add the white chocolate and stir until melted. Let cool a little, then whisk in the double/heavy cream and set aside. TO MAKE THE RASPBERRY TUILES , heat the liquid glucose and fondant icing/ confectioners’ sugar together in a saucepan. Use the sugar thermometer to bring the temperature up to 156°C (313°F). Carefully pour the hot mixture onto one of the lined baking sheets. Cool completely, then break up and blitz to a fine powder in a blender with the freeze-dried raspberry powder. Preheat the oven to180°C (350°F) Gas 4. Lay the tuile stencil on the second lined baking sheet. Using the tea strainer, dust a good amount of raspberry glucose powder over the stencil: not enough means the tuile will be too thin, too generous and it will be too thick. Bake in the preheated oven for about 3 minutes or until the sugar has melted. Have a clean rolling pin to hand and remove from the oven. Pick up the paper and carefully lay the hot paper-backed tuiles directly over the rolling pin so that they curve to its shape. Allow to cool and set, then carefully remove the tuiles from the paper. Store the tuiles in a dry airtight container until required. TO CONSTRUCT THE TARTS , remove any skin on the brûlée and whisk until smooth. Generously pipe or spoon the brûlée into each tart case and scrape level. Dust with demerara/turbinado sugar and heat with the chef ’s blow torch until golden. Let cool, then arrange the fresh raspberries on top. Pipe the white chocolate cream into the middle and pop a tuile on top. SWEET TARTS 53

Served with a warm berry compote and crème fraîche or yogurt, they are the perfect pancakes to make in the summer, when you have a glut of fresh soft red berries to use up. 370–400 ml/1½ cups milk 200 g/1½ cups self-raising/rising flour, sifted 2 teaspoon baking powder 1 egg a pinch of salt 1 tablespoon caster/granulated sugar 3 tablespoons melted butter, plus extra for frying crème fraîche or plain yogurt, to serve (optional)
for the compote 500 g/4 cups summer berries (raspberries, blueberries, strawberries and blackberries in any combination of your choosing), stalks removed 250 ml/1 cup water 100 g/½ cup caster/granulated sugar 1 teaspoon vanilla extract/vanilla bean paste freshly squeezed juice of 1 lemon
for the toasted oats 60 g/½ cup oatmeal 50 g/¼ tablespoon caster/granulated sugar a large frying pan/skillet or griddle MAKES 10
Begin by preparing the compote. Put the summer berries in a saucepan or pot set over a medium heat with the water, sugar, vanilla extract/vanilla bean paste and lemon juice. Simmer until the sugar has dissolved and the fruit is just starting to soften but still holds its shape. This will take about 5 minutes. Set aside to cool then store in the refrigerator until you are ready to serve. For the toasted oats, place the oats and sugar in a dry frying pan/ skillet set over a medium heat and toast for a few minutes until the sugar starts to caramelize the oats. Remove from the heat and set aside to cool. Soak half of the toasted oats in 250 ml/1 cup of the milk for about 30 minutes, until plump. Reserving the rest of the oats for the pancake batter. To make the pancake batter, put the flour, baking powder, egg, salt, caster/ granulated sugar and milk-soaked oats in a large mixing bowl and whisk together. Add in the melted butter and whisk again. Gradually add the remaining milk until you have a smooth, pourable batter. Be careful not to make the batter too thin when adding the remaining milk – you may not need it all. Cover and put in the refrigerator to rest for 30 minutes. When you are ready to serve, remove your batter mixture from the refrigerator and stir once. Put a little butter in a large frying pan/skillet set over a medium heat. Allow the butter to melt and coat the base of the pan, then ladle small amounts of the batter into the pan. Sprinkle some of the reserved toasted oats over the top of the pancake and cook until the underside is golden brown and a few bubbles start to appear on the top – this will take about 2–3 minutes. Turn the pancake over using a spatula and cook on the other side until golden brown. Keep the pancakes warm while you cook the remaining batterin the same way, adding a little more butter to the pan each time if required. Serve the pancakes with the cooled berry compote and crème fraîche or yogurt, as preferred.

salted caramel waffles Salted caramel gives these dessert waffles a modern twist. I could eat the sauce with anything but it is particularly delicious with hot waffles and chocolate curls. The recipe calls for vanilla salt which is available online but if you want you can make your own at home following the method given here, but be aware that it takes two weeks to create! 260 g/2 cups self-raising/rising flour, sifted 1 teaspoon baking powder 3 eggs, separated 375 ml/1½ cups milk 75 g/5 tablespoons butter, melted, plus extra for greasing 50 g/½ cup plain/bittersweet chocolate curls, to serve

Begin by making the salted caramel sauce. Put the sugar and butter in a saucepan or pot set over a medium heat and simmer until both have melted and the resulting caramel starts to turn a deep golden brown. Add the salt and cream and whisk over the heat until the sauce is smooth and glossy. If any lumps of sugar have formed in your sauce, strain through a fine mesh sieve/strainer over a mixing bowl. Set aside to cool. To make the waffle batter, put the flour, baking powder, egg yolks, milk and melted butter in a large mixing bowl. Whisk until you have a smooth batter. Add 80 ml/scant 1⁄3 cup of the caramel sauce and whisk again. In a separate mixing bowl, whisk the egg whites to stiff peaks and then gently fold into the batter a third at a time. Preheat the waffle iron and grease with a little butter. Ladle a small amount of the batter into the preheated waffle iron and cook the waffles for 3–5 minutes until golden brown. Keep the waffles warm while you cook the remaining batter in the same way. Serve the waffles immediately with the caramel sauce on the side, topped with chocolate curls. Note: To make vanilla salt, split 2 vanilla pods/vanilla beans and remove the seeds. Cut the pods in half. Stir the vanilla seeds into several large spoonfuls of sea salt flakes. Place the salt, seeds and vanilla pods/vanilla beans in a sterilized airtight jar and set aside for 2 weeks. Discard the vanilla pods/vanilla beans before using.

AMRITSARI FISH PAKORAS These delicious fish pakoras are the perfect snack and are a popular street food, most commonly eaten in Punjab, especially Amritsar. Made up of deep-fried, diced fish in a spiced chickpea/gram flour batter, they make a great appetizer and are best served with coriander/cilantro and mint chutney on the side and a wedge of lemon to squeeze over. 500 g/18 oz. cod loin, diced into 2.5-cm/ 1-inch cubes plain/all-purpose flour, for dusting vegetable oil, for frying mango powder, for sprinkling black salt, for sprinkling MARINADE
2 tablespoons vegetable oil 1 tablespoon Green Chilli/Chile, Garlic and Ginger Paste (page 10) juice of ½ lemon ½ teaspoon ground turmeric ½ teaspoon salt ½ teaspoon chilli powder BATTER
4 tablespoons rice flour 8 tablespoons chickpea/ gram flour, sifted

First, rinse the fish under cold running water and gently pat dry with paper towels. Combine all of the marinade ingredients together in a large mixing bowl and add the diced fish. Coat the fish well and let marinade in the fridge for a minimum of 30 minutes and a maximum of 1 day. Next, combine all of the batter ingredients together in a separate large mixing bowl and add 180 ml/¾ cup of cold water. Set aside for 30 minutes to allow the ingredients and flavours to come together. The batter should be the consistency of double/heavy cream. Turn on the deep-fat fryer or set a deep frying pan/skillet over medium heat, fill with oil and bring to a medium–high heat. Pat the marinated fish pieces with the sifted plain/all-purpose flour and shake off any excess. Dip the floured fish pieces into batter ensuring that fish is fully covered in the batter with the spices distributed evenly. Deep-fry the fish pieces in batch sizes of 6–8 pieces in the deep-fat fryer, until golden-brown and the fish is cooked through – this should take no longer than 3–4 minutes. Sprinkle each piece with the mango powder and black salt, according to taste. Serve with your choice of garnish.

Prepare the prawns/shrimp by removing the eyes and the vein that runs down the back of the spine. Gently rinse under running water and drain. Combine all of the marinade ingredients together in a small bowl and pour over the prawns/shrimp. Mix well and refrigerate to marinate for a minimum of 1 hour. For the curry, heat the vegetable oil in a thick-bottomed wok, over medium heat until hot. Add the cloves, cumin and mustard seeds and allow to sizzle and pop. Add the ginger and garlic and fry for 1 minute until slightly golden. Add the curry leaves and let them sizzle for 10 seconds – be cautious as the oil will spit as soon as the curry leaves go into the pan. Add the diced onion, salt and sliced green chilli/chile, and fry until the onions are softened and golden brown. (Covering the pan with a lid will help the onions cook quicker.) Using the same ‘flavour layering’ technique I mention on page 48, add depth to this sauce by adding in the ground turmeric, cumin, coriander and paprika. Mix them well into the ingredients already in the wok and gently fry the spices for 2 minutes, stirring well. Add a splash of water to stop the pan from drying out too much and burning. When the spices have cooked out, add the tomato purée, mix well and fry for a further 5 minutes, adding a splash of water if the pan is becoming too dry. Add in the palm sugar and gently simmer for 2 minutes. Next, pour in the coconut milk, mix well, reduce the heat to low and simmer for 5 minutes to ensure all of the flavours are well infused. After the coconut milk has warmed through, add 300 ml/1¼ cups of water to loosen the sauce. Leave to simmer for a further 2 minutes. In a frying pan/skillet, add the oil, set over high heat and heat until smoking. One by one, add the prawns/shrimp into the pan going around in a circle. When they have all been placed, turn them over in the order of how they were first placed in the pan. Add the garam masala to the curry sauce and stir in. Add the prawns/ shrimp and mix in well. Let the prawns simmer for a good 3–4 minutes, until they are cooked through. Add in the chopped coriander/cilantro and remove the wok from the heat. This curry is best eaten right away with basmati rice or naan bread.

the remaining marinade. Allow the excess buttermilk to drip from the wings, then press into the crumbs to coat.
* Arrange the chicken wings on the baking sheets.
Bake in the preheated oven for 25–35 minutes or until golden brown and the juices run clear when the thickest part is pierced to the bone. Remove from the oven.
* Preheat the oil in a deep fryer set to 190°C (375°F). Fry the wings in
batches for a few minutes to crisp them. Drain on a plate lined with paper towels and season to taste with salt. Serve with Dijon-Blue Cheese Dipping Sauce (see below).
* For the Dijon-Blue Cheese Dipping Sauce: Stir or whisk the mayonnaise, sour cream, lemon juice, vinegar, mustard and Worcestershire sauce in a bowl until smooth. Add the blue cheese, garlic, parsley and spring onion/ scallion, and stir until combined. Season to taste, then cover and refrigerate for at least 1 hour before serving.

In a row across the centre of the wrapper, place 1 tablespoon of shiitake, 1 tablespoon tofu, a handful of cabbage, basil, mint, coriander/cilantro and lettuce, leaving about 5 cm/2 in. uncovered on each side. Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat to make another 7 spring rolls.

* Heat the oil in a frying pan/skillet. Add the onion and sauté until caramelized. Cool and mix well with all of the other sausage-mix ingredients.
* Lay the pastry sheet on a lightly floured surface and give it a little roll, if necessary, to make it 3 mm/1⁄8 in. thick. Cut it crossways into 3 strips.
* Divide the sausage meat into 3 parts and press a line of sausagemeat
down the middle of each strip of pastry, leaving 2.5 cm/1 in. free at each end.
* Brush the length of the pastry with a little of the beaten egg on one
side and roll the other side over the sausage to secure it in place. Pinch the ends of each roll together.
* Transfer the rolls to the prepared baking sheet, brush them with more
egg wash and pop them in the freezer for 15 minutes. Meanwhile, preheat the oven to 190°C (375°F) Gas 5.
* Take the sausage rolls out of the freezer and cut each roll into 8 pieces. * If you have leftover egg wash, brush it on, spread the rolls out on the prepared baking sheet and bake for at least 20 minutes, or until golden.
