LOLA•S BAKERS The mouthwatering cakes in this book are created by Julia Head, working under the direction of Asher Budwig and his team of bakers at LOLA•s. Asher is a fourthgeneration baker, born into a family of sweet-toothed entrepreneurs and inspired by his family’s enduring passion for cake. Asher grew up watching his father Mario Budwig establish the hugely successful Millie’s Cookies, which grew to over 100 stores across the UK. Mario in turn was inspired by his mother and grandmother, who ran a pâtisserie and café during the 1940s in Colombia, South America.

Lemon polenta cake This delicious citrus-infused polenta cake is a fail-safe crowd pleaser. The gluten-free sponge has a light texture and the lemon syrup that soaks it gives a real zing. To add to the Italian ambience, try teaming your cake with a chilled glass of Limoncello. 200 g/1¾ sticks butter 200 g/1 cup golden caster/ granulated sugar 200 g/2 cups ground almonds 100 g/¾ cup polenta (cornmeal) or semolina 1½ teaspoons baking powder 3 eggs zest of 3 unwaxed lemons LEMON SYRUP

squeezed juice from 2 lemons 125 g/1 cup plus 1 tablespoon icing/confectioners’ sugar, sifted a 23-cm/9-inch springform cake pan, greased and baselined with baking parchment

Preheat the oven to 180°C (350°F) Gas 4. Put the butter and sugar in a large bowl and beat with a wooden spoon or using the paddle attachment in a stand mixer until pale and fluffy. In a separate bowl, combine the ground almonds, polenta (cornmeal) and baking powder. Beat a little of the dry ingredients into the butter-sugar mixture, followed by 1 egg. Continue to add alternate dry ingredients and eggs, beating well after each addition. Finally, beat in the lemon zest. Spoon the mixture into the prepared cake pan and bake in the preheated oven for 40–45 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove the cake from the oven and allow to cool in the pan. Meanwhile, make the lemon syrup by boiling the lemon juice and icing/confectioners’ sugar together in a small saucepan. When the sugar has dissolved, prick the top of the cake all over with a toothpick and pour over the warm syrup. Leave to cool before removing the cake from the pan and cutting into slices to serve.

350 g/3 sticks butter 1 teaspoon vanilla extract 500 g/4½ cups icing/ confectioners’ sugar, sifted 30 ml/2 tablespoons whole milk TO ASSEMBLE

Preheat the oven to 180°C (350°F) Gas 4. To make the sponge, put the melted butter, sugar and vanilla in a large bowl and mix using a wooden spoon or the paddle attachment in a stand mixer. Add the eggs one at a time, making sure to scrape down the sides of the bowl as you do so. Carefully add the mashed bananas and combine. With the speed on low, slowly add the flour and baking powder and bicarbonate of/baking soda and mix until just incorporated. Do not over mix, as the batter will become tough. Divide the mixture evenly between the three prepared pans and level the surfaces. Bake in the preheated oven for 20–25 minutes until well risen and a skewer inserted into the middle of each cake comes out clean. Remove from the oven and allow to cool. Meanwhile, make the frosting. Put the butter in a bowl and beat with a hand-held electric mixer or in a stand mixer until soft and smooth. Mix in the vanilla extract. Mixing at slow speed, add half the sifted icing/confectioners’ sugar and mix until well incorporated. Add the second half and beat in slowly. Once all the sugar is incorporated add the milk, a tablespoon at a time with the mixer still running but now on a medium speed. Stir until the frosting is light and fluffy. Scrape the frosting into the piping/pastry bag with a spatula and set aside. To assemble the cake, put the caramel into another disposable piping/pastry bag. Place one of the sponge cakes onto a serving plate and carefully pipe large dots of frosting around the outside edge of the sponge to form a ring. Take the caramel piping bag and do the same with the caramel just behind the frosting. Next, take half of the sliced bananas and place in the remaining circle of the visible sponge to cover. Repeat with the next sponge layer. Finish with the final layer of sponge and decorate using large piped dots of alternate caramel and frosting. Try to lift the piping bag away quickly from the frosting to create neat little peaks. Continue until the surface of the cake is covered, finishing with a single dot of frosting in the middle. You now have your wonderful banana caramel creation!

Mindful Eating

Food & Drink

Many of us fall easily into patterns of “mindless” eating. We pick at food while working at our computers, we reach for the quickest—and usually the unhealthiest—snacks for a quick energy boost, we don’t take proper lunch breaks, and we are constantly distracted while we eat. We have lost a lot of the enjoyment of eating and as a result we are guilty of just “shoveling” food into our bodies. Mindful eating applies the principles of mindfulness to our everyday eating habits. Becoming mindful of what we are eating allows us to become more aware of the whole experience of eating, and helps us to appreciate and savor our food. By eating mindfully we can also break negative habits such as overeating. It helps us to avoid the pitfalls of yo-yo dieting, and so enables us to lose weight and keep it off for good. This book shows how we can use mindfulness to aid weight loss by really listening to our body. Filled with practical exercises and delicious recipes, Mindful Eating will set you on the path to a new and healthier way of eating. • Mindful eating is now used by health professionals to tackle the rising levels of obesity in our society—it fundamentally changes our relationship with food and the way we eat.

NEW EDITION

• Recent research has shown mindfulness to be effective in helping bingeeaters to curb their bingeing and to feel more in control of their eating.

SUZY PELTA Winner of ITV1’s Lorraine’s Cake Club Competition in 2012, Suzy Pelta is a home cook turned pro baker. She has her own bespoke set of baking kits (Baking with Suzy) that are sold all over the world and regularly works as a demonstration chef at major UK food shows. She has been the official blogger for Marie Curie’s Blooming Great Tea Party Campaign for three years. She lives in London, UK with her husband and three children, and this is her first book.

Indulge your inner child (or your actual children) with these 28 recipes for Miracle Mug Cakes and Other Cheat’s Bakes. The mug cakes, organized into a section for kids, a section for grown-ups, and a section for family fun can all be prepared in the microwave in just a few minutes. With recipes for Nutella and Peanut Butter, Crushed Up Cookie, and Hidden Oreo mug cakes there’s plenty to delight little ones; while the Boozy Berry Center, After Dinner Mint, and Caffè Latte mug cakes keep the adults happy, too. The second half of the book is then divided into three sections: Cookies, Cakes and Desserts, and No-bake Bakes, where each of the recipes has a cheat to speed things up. Why make things difficult with long-winded processes and waiting times when you could stuff your cookies with pretzels, chips, and confectionery? Ever wanted an ice-cream sandwich at home? Well look no further than Suzy’s Ice-cream cookies that use store-bought ice-cream in the batter meaning there’s no assembly required. Try a Soda Pop Dump Cake where the only ingredients you need are a packet cake mix and a can of lemonade. Or use chocolate spread as a fast and filthy filling for a No-bake Cheesecake. Cheat your way to trashy baking notoriety with all these and more. • Cheat’s baking is all about fun! It may not be the most sophisticated form of baking, but it sure is indulgent, so why not treat yourself by keeping the baking nice and simple and the flavors especially naughty! • “Google found that mug cakes were one of the most highly-searched foods from January 2014 to February 2016.” (Tech Insider, June 2016) • Mother-of-three Suzy Pelta has perfected the art of making baking simple, straightforward, and achievable for people on a budget and short on time.

LEMON & YUZU ÉCLAIRS

JAMES CAMPBELL has worked as a chef in Michelin-starred establishments across the world. In London, UK he was Head Pastry Chef at Gary Rhodes’ Michelin starred restaurant and the award-winning Mandarin Oriental Hotel. It is in his current position as Product Development Manager for Marks & Spencer, that James’s passion for Japanese culture and ingredients truly developed through research and in-depth visits to Tokyo and Osaka. James was recently a semi-finalist in the BBC TVs Great British Bake Off spin off: Crème de la Crème.

The sharp, fragrant tang of Asian yuzu juice is a surprising yet delicious addition to the classic French éclair. It is well worth a little effort as the results are stunning. 1 x quantity Choux Paste (see page 18) 1 beaten egg yolk, to glaze YUZU & LEMON CREAM

300 ml/1¼ cups yuzu juice freshly squeezed lemon juice, to taste seeds from 1 vanilla pod/ bean 4 egg yolks 25 g/¼ cup cornflour/ cornstarch 75 g/1⁄3 cup plus 2 teaspoons caster/ superfine sugar a pinch of salt 30 g/¼ stick butter, softened 100 ml/½ cup minus ½ tablespoon double/ heavy cream WHITE CHOCOLATE & YUZU FONDANT

200 ml/1 cup yuzu juice juice of ½ lemon 80 g/½ cup minus 1 tablespoon caster/ superfine sugar 50 g/1¾ oz. white chocolate, chopped 200 g/7 oz. readymade fondant, warmed a few drops of yellow food colouring (optional) melted white chocolate, silver leaf and white chocolate discs, to decorate (optional) 3 piping/pastry bags, 2 x 8-cm/3-inch plain nozzles/ tips and a baking sheet lined with baking parchment MAKES 8

following the method on page 18. Once the pastry has reached dropping consistency transfer to one of the piping/pastry bags fitted with a 8-cm/3-inch plain nozzle/tip. Preheat the oven to 200°C (400°F) Gas 6. Pipe eight 12-cm/4½-inch long straight lines onto the prepared baking sheet. Hold the bag at an angle rather than upright and be careful not to pipe the choux too flat as this could stop it from rising properly. Brush the dough with the beaten egg yolk and bake in the preheated oven for around 10–15 minutes or until risen, golden and cooked through. Leave to cool on a wire rack. TO MAKE THE YUZU AND LEMON CREAM , heat the yuzu juice, lemon juice and seeds from the vanilla pod/bean together in a small saucepan until they reach boiling point. In a clean mixing bowl, whisk together the egg yolks, cornflour/cornstarch, sugar and salt. Carefully and slowly pour the boiling yuzu mixture into the dry ingredients, then whisk until you have a thick emulsified mixture and the dry ingredients have been fully absorbed. Pour everything back into the pan and return to a medium heat, whisking constantly to cook the cornflour/cornstarch. Transfer the mixture to a bowl and whisk occasionally while letting cool. When the mixture has cooled a little, whisk in the softened butter. Once completely cool, whisk in the double/heavy cream until fully incorporated. Transfer the yuzu and lemon cream to a clean piping/pastry bag and chill in the refrigerator until needed. TO MAKE THE WHITE CHOCOLATE & YUZU FONDANT , boil the yuzu juice, lemon juice and sugar together in a small saucepan until the mixture has reduced by half and resembles a syrup. Set aside to cool a little. Meanwhile, melt the white chocolate in a heatproof bowl set over a pan of barely simmering water. Stir the melted chocolate into the warmed fondant. Add cooled yuzu syrup to taste and stir in a few drops of yellow food colouring to give a stronger but delicate yellow colour, if needed. TO CONSTRUCT THE ÉCLAIRS , make two small holes in the base at either end of the cooled choux, then gently pipe the chilled yuzu and lemon cream inside from either end to meet in the middle. Dip one long side of each éclair in the white chocolate and yuzu fondant, wiping away any untidy edges. Place the iced éclairs in the fridge to chill. TO DECORATE THE ÉCLAIRS , put the melted white chocolate into the other piping/pastry bag and pipe a very fine line of white chocolate diagonally end to end. Add a white chocolate disc and some silver leaf to finish, if desied.

4 individual tart pans, baking beans, 2 baking sheets lined with baking parchment, a sugar thermometer, 2 piping/ pastry bags, a tuille stencil, a tea strainer, a cook’s blow torch MAKES 4

Preheat the oven to 200°C (400°F) Gas 6. TO MAKE THE TART CASES , thinly roll out the flan paste, cut into four even squares and line the tart pans. Trim away the edges and put in the fridge for 10 minutes. Line the cases with baking parchment and fill with baking beans. Blind bake for12–15 minutes (8 for petit four) until golden. TO MAKE THE CRÈME BRÛLÉE , reduce the oven to 150°C (300°F) Gas 2. Whisk together the egg, egg yolks and sugar, and set aside. Stir together the whipping/heavy cream and matcha green tea powder in a saucepan and bring just to the boil. Pour the hot cream into the eggs and sugar, whisking constantly until fully combined. Transfer the mixture to an ovenproof dish and place in a baking pan with high sides. Pour boiling water into the pan to form a bain-marie. Carefully transfer the pan to the preheated oven and bake for 30–40 minutes or until the brûlée has just set with a slight wobble in the centre. Remove the dish, allow to cool, then refrigerate until needed. TO MAKE THE WHITE CHOCOLATE CREAM , heat the whipping/heavy cream in a saucepan over medium heat until just boiling. Remove from the heat, add the white chocolate and stir until melted. Let cool a little, then whisk in the double/heavy cream and set aside. TO MAKE THE RASPBERRY TUILES , heat the liquid glucose and fondant icing/ confectioners’ sugar together in a saucepan. Use the sugar thermometer to bring the temperature up to 156°C (313°F). Carefully pour the hot mixture onto one of the lined baking sheets. Cool completely, then break up and blitz to a fine powder in a blender with the freeze-dried raspberry powder. Preheat the oven to180°C (350°F) Gas 4. Lay the tuile stencil on the second lined baking sheet. Using the tea strainer, dust a good amount of raspberry glucose powder over the stencil: not enough means the tuile will be too thin, too generous and it will be too thick. Bake in the preheated oven for about 3 minutes or until the sugar has melted. Have a clean rolling pin to hand and remove from the oven. Pick up the paper and carefully lay the hot paper-backed tuiles directly over the rolling pin so that they curve to its shape. Allow to cool and set, then carefully remove the tuiles from the paper. Store the tuiles in a dry airtight container until required. TO CONSTRUCT THE TARTS , remove any skin on the brûlée and whisk until smooth. Generously pipe or spoon the brûlée into each tart case and scrape level. Dust with demerara/turbinado sugar and heat with the chef ’s blow torch until golden. Let cool, then arrange the fresh raspberries on top. Pipe the white chocolate cream into the middle and pop a tuile on top. SWEET TARTS 53

oatmeal pancakes with berry compote These are great breakfast pancakes – with oatmeal soaked in milk mixed into the batter and toasted candied oats on top. Served with a warm berry compote and crème fraîche or yogurt, they are the perfect pancakes to make in the summer, when you have a glut of fresh soft red berries to use up. 370–400 ml/1½ cups milk 200 g/1½ cups self-raising/rising flour, sifted 2 teaspoon baking powder 1 egg a pinch of salt 1 tablespoon caster/granulated sugar 3 tablespoons melted butter, plus extra for frying crème fraîche or plain yogurt, to serve (optional)

for the compote 500 g/4 cups summer berries (raspberries, blueberries, strawberries and blackberries in any combination of your choosing), stalks removed 250 ml/1 cup water 100 g/½ cup caster/granulated sugar 1 teaspoon vanilla extract/vanilla bean paste freshly squeezed juice of 1 lemon

for the toasted oats 60 g/½ cup oatmeal 50 g/¼ tablespoon caster/granulated sugar a large frying pan/skillet or griddle MAKES 10

Begin by preparing the compote. Put the summer berries in a saucepan or pot set over a medium heat with the water, sugar, vanilla extract/vanilla bean paste and lemon juice. Simmer until the sugar has dissolved and the fruit is just starting to soften but still holds its shape. This will take about 5 minutes. Set aside to cool then store in the refrigerator until you are ready to serve. For the toasted oats, place the oats and sugar in a dry frying pan/ skillet set over a medium heat and toast for a few minutes until the sugar starts to caramelize the oats. Remove from the heat and set aside to cool. Soak half of the toasted oats in 250 ml/1 cup of the milk for about 30 minutes, until plump. Reserving the rest of the oats for the pancake batter. To make the pancake batter, put the flour, baking powder, egg, salt, caster/ granulated sugar and milk-soaked oats in a large mixing bowl and whisk together. Add in the melted butter and whisk again. Gradually add the remaining milk until you have a smooth, pourable batter. Be careful not to make the batter too thin when adding the remaining milk – you may not need it all. Cover and put in the refrigerator to rest for 30 minutes. When you are ready to serve, remove your batter mixture from the refrigerator and stir once. Put a little butter in a large frying pan/skillet set over a medium heat. Allow the butter to melt and coat the base of the pan, then ladle small amounts of the batter into the pan. Sprinkle some of the reserved toasted oats over the top of the pancake and cook until the underside is golden brown and a few bubbles start to appear on the top – this will take about 2–3 minutes. Turn the pancake over using a spatula and cook on the other side until golden brown. Keep the pancakes warm while you cook the remaining batterin the same way, adding a little more butter to the pan each time if required. Serve the pancakes with the cooled berry compote and crème fraîche or yogurt, as preferred.

10 WHOLESOME & HEALTHY

salted caramel waffles Salted caramel gives these dessert waffles a modern twist. I could eat the sauce with anything but it is particularly delicious with hot waffles and chocolate curls. The recipe calls for vanilla salt which is available online but if you want you can make your own at home following the method given here, but be aware that it takes two weeks to create! 260 g/2 cups self-raising/rising flour, sifted 1 teaspoon baking powder 3 eggs, separated 375 ml/1½ cups milk 75 g/5 tablespoons butter, melted, plus extra for greasing 50 g/½ cup plain/bittersweet chocolate curls, to serve

for the salted caramel sauce 150 g/¾ cup caster/granulated sugar 100 g/7 tablespoons butter 1 teaspoon vanilla salt (see Note) or sea salt plus 1 teaspoon vanilla extract/ vanilla bean paste 250 ml/1 cup double/heavy cream an electric or stove-top waffle iron MAKES 8

also available:

Begin by making the salted caramel sauce. Put the sugar and butter in a saucepan or pot set over a medium heat and simmer until both have melted and the resulting caramel starts to turn a deep golden brown. Add the salt and cream and whisk over the heat until the sauce is smooth and glossy. If any lumps of sugar have formed in your sauce, strain through a fine mesh sieve/strainer over a mixing bowl. Set aside to cool. To make the waffle batter, put the flour, baking powder, egg yolks, milk and melted butter in a large mixing bowl. Whisk until you have a smooth batter. Add 80 ml/scant 1⁄3 cup of the caramel sauce and whisk again. In a separate mixing bowl, whisk the egg whites to stiff peaks and then gently fold into the batter a third at a time. Preheat the waffle iron and grease with a little butter. Ladle a small amount of the batter into the preheated waffle iron and cook the waffles for 3–5 minutes until golden brown. Keep the waffles warm while you cook the remaining batter in the same way. Serve the waffles immediately with the caramel sauce on the side, topped with chocolate curls. Note: To make vanilla salt, split 2 vanilla pods/vanilla beans and remove the seeds. Cut the pods in half. Stir the vanilla seeds into several large spoonfuls of sea salt flakes. Place the salt, seeds and vanilla pods/vanilla beans in a sterilized airtight jar and set aside for 2 weeks. Discard the vanilla pods/vanilla beans before using.

The crisp, burst of lemon or lime is an essential element to so many classic recipes. A squeeze of lemon can bring a dull sauce or lacklustre soup to life as its tartness cuts through and brings out flavor in a subtler (and healthier) way than salt. Smaller, sharper, but more intensely fragrant than lemons, limes work with exotic, spicy flavors. Some dishes call for the sharp, clear lift of lemon, at other times the richer fragrance of lime is more appropriate. They are both perfect as an antidote to the heat of chile or pungent garlic, the best friend of herbs and olive oil, roasting meat, and freshly grilled seafood. Their brightness is also perfect in sweet, buttery desserts. Try Small Bites such as Lemon, Mushroom, and Tarragon Arancini or Salmon and Kaffir Lime Fishcakes. Make amazing Soups and Salads with a Zucchini and Lemon Summer Grain Salad or Pork Dumplings in Lime-leaf Broth. Poultry, Meat, and Fish is full of hearty yet summery dishes that will feed all the family, from Lamb, Bocconcini, and Lemon Skewers to Spiced Roasted Chicken with Chickpeas, Carrots, and Preserved Lemon to a Grilled Lemon Seabass with Roasted Red Pepper and Basil Butter. In Rice and Pasta dishes is a delicate Spaghettini with Calamari, Rosemary, and Lemon or a Spicy Lime Kedgeree. Lastly try a Gin and Tonic Cake with lemon syrup and candied zest or a refreshing Mint and Lime Granita. Insightful essay spreads are also included on the history and culture around cooking with lemons and limes, the various types and ways of preparing them and their wonderful health benefits.

Falafel Forever Falafel are an ancient Middle Eastern food originally made with fava beans or chickpeas, which are crushed and mixed with herbs and spices and molded into patties. They are then traditionally served in pitta breads with salad and dips such as hummus, tzatziki, or tahini sauce. The rest of the world have since caught on to the delights of falafel, and chickpea patties have steadily been becoming the darlings of vegans and vegetarians, picnic goers, festival food trucks, and delis since the early 2000s. It’s not hard to see why: quick, easy, and inexpensive for home-cooks to make, they also fall into that wondrous overlapping category of being crave-worthy and satisfying (up there with french fries and other such savory morsels) as well as nutritious and fairly low in fat. What’s more, chickpeas are a brilliant source of protein for those who don’t eat meat. They are rich in fibre, as well as nutrients manganese and folate. But the health benefits don’t stop with chickpeas— modern falafel are often made with added vegetables, nuts and seeds, lentils, or other grains and legumes, as are many in this book. • International Falafel Day is celebrated on June 12th, the map on International Falafel Day website is filled with pins, proving that there isn’t a single continent that doesn’t serve them in at least one location. • As the number of vegetarians and vegans has risen in recent years, so has demand for falafel.

A steaming plate of pasta is one of the most satisfying things in the world— whether coated in a rich tomato-based ragù, doused in a light, fragrant herb pesto or smothered in creamy, salty carbonara sauce. Pasta has many merits: it is inexpensive, quick to make, and works both as an everyday staple or a dinner party showstopper. Umami-expert Laura Santtini is an author with one foot in the rich culture and heritage of Italian cooking, and another in the truly modern understanding of methods and ingredients popular with home-cooks today. Laura’s approach is that the heart and soul of each dish is down to the sauce or topping, what it is then paired with is really down to the individual. It can be anything from spiralized vegetables, quinoa, or gluten-free pasta for a healthy mid-week supper to hand-made tortellini at the weekend. The book opens with The Principles of Pasta: an accessible guide to making and cooking pasta, which also explains dried versus fresh pasta and pasta alternatives. A key recommends pairings between sauces and pastas or pasta alternatives throughout the book. The dishes are then divided into sections starting with Quick and Easy for Pepper, Parmesan, and Lemon Artichoke Pesto. Vegetables and Fungi comes next with a Wild Mushroom Ragù and a delicious Pumpkin, Sage, and Salted Ricotta. Next is Fish and Seafood with a simple Salmon Carbonara as well as luxurious affairs like Asparagus and Scallop. In Meat and Poultry are Best-ever Meatballs, Spicy ‘Nduja Sausage and a hearty Duck Ragù. Flip to the Creamy and Cheesy chapter to find earthy Gorgonzola and Walnut and zesty Saffron and Zucchini.

6 tablespoons vegetable oil 2 cloves 1 teaspoon cumin seeds 1 teaspoon mustard seeds 1 tablespoon each of ďŹ nely diced ginger and garlic 30 fresh curry leaves 1 onion, ďŹ nely chopped 2 teaspoons salt 1 teaspoon ďŹ nely sliced green chilli/chile 1 teaspoon ground turmeric 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon paprika powder 2 tablespoons tomato purĂŠe/paste 1 tablespoon palm sugar 400 g/2 cups coconut milk 2 teaspoons garam masala 1 tablespoon chopped fresh coriander/cilantro SERVES 4

Prepare the prawns/shrimp by removing the eyes and the vein that runs down the back of the spine. Gently rinse under running water and drain. Combine all of the marinade ingredients together in a small bowl and pour over the prawns/shrimp. Mix well and refrigerate to marinate for a minimum of 1 hour. For the curry, heat the vegetable oil in a thick-bottomed wok, over medium heat until hot. Add the cloves, cumin and mustard seeds and allow to sizzle and pop. Add the ginger and garlic and fry for 1 minute until slightly golden. Add the curry leaves and let them sizzle for 10 seconds – be cautious as the oil will spit as soon as the curry leaves go into the pan. Add the diced onion, salt and sliced green chilli/chile, and fry until the onions are softened and golden brown. (Covering the pan with a lid will help the onions cook quicker.) Using the same â€˜ďŹ‚avour layering’ technique I mention on page 48, add depth to this sauce by adding in the ground turmeric, cumin, coriander and paprika. Mix them well into the ingredients already in the wok and gently fry the spices for 2 minutes, stirring well. Add a splash of water to stop the pan from drying out too much and burning. When the spices have cooked out, add the tomato purĂŠe, mix well and fry for a further 5 minutes, adding a splash of water if the pan is becoming too dry. Add in the palm sugar and gently simmer for 2 minutes. Next, pour in the coconut milk, mix well, reduce the heat to low and simmer for 5 minutes to ensure all of the avours are well infused. After the coconut milk has warmed through, add 300 ml/1Âź cups of water to loosen the sauce. Leave to simmer for a further 2 minutes. In a frying pan/skillet, add the oil, set over high heat and heat until smoking. One by one, add the prawns/shrimp into the pan going around in a circle. When they have all been placed, turn them over in the order of how they were ďŹ rst placed in the pan. Add the garam masala to the curry sauce and stir in. Add the prawns/ shrimp and mix in well. Let the prawns simmer for a good 3–4 minutes, until they are cooked through. Add in the chopped coriander/cilantro and remove the wok from the heat. This curry is best eaten right away with basmati rice or naan bread.

MY MODERN INDIAN KITCHEN I 15

Food & Drink

Magical spice powders, sizzling dried whole spices, noisy popping saucepans, aromatic smells, colorful foods... this is what sums up great home-cooked Indian food. In this book, Nitisha Patel walks you through a myriad of spices to understand how each one adds flavor. Most traditional Indian dishes incorporate the use of various different purÊes, pastes, and spice blends. They all contribute to different functions of a dish whether that be aroma, flavor, taste, texture, mouth feel, or appearance, and so she begins by setting out the basic pastes, purÊes, masalas, and toppings that can be used throughout the book. The excitement, freshness, and snack-friendly appeal of street food leads to an explosive mixture of flavors in recipes for Fish Pakoras, Smokin’ Fiery Chicken Wings, Batata Vadas (deep-fried spiced potato), and Dhokla Muffins. The beauty of curry is that nothing defines what makes a good curry —recipes vary meaning that the possibilities are endless. Included are Uncle Rambo’s Goat Curry, Paneer Kaghai, and Gosht Aloo Saag Masala. Celebratory dishes are also here, with Tandoori Spatchcock Poussin and Hariyali Salmon, while vegetarian dishes offer a variety of dhals, Channa Masala, and Pili Pili Fries. And if all that wasn’t feast enough, finish up with sweet treats, such as Pistachio and Rose Ice Cream, and Mango and Mint Kulfi.

CICO BOOKS

Romantic English Homes

Home & Garden

Robert O’Byrne has gathered together a collection of some of England’s most glorious homes including a rural farmhouse set in a quietly picturesque village and a fourteenth-century folly. Ever since the English aristocracy embarked on Grand Tours in the seventeenth century, the passion for developing collections has been a national trait of England. As a result, the country’s aristocratic palaces became repositories of treasure gathered from around the globe. But so too, thanks to the spread of an Empire providing goods from across the world, did almost every residence in England. Romantic English Homes features 14 such houses. Large or small, old or new, they all convey an impression of massed objects intentionally mingling styles and tastes, the classical placed next to the gothic, plaids competing with florals. Decorated with defiant eclecticism, the buildings featured here indicate that although the Empire may have gone, the English love of collecting remains as strong as ever. Criss-crossing the country, it is both the romantic timelessness of these properties and their many-layered appearance that makes them so alluring. • Celebrates the timeless appeal of the English country house and town house with atmospheric photography by renowned interiors photographer Simon Brown.

ARTIST IN RESIDENCE Dutch artist Peter Gabrielse creates miniature threedimensional spaces, framed fragments of rooms with tiny windows, and doors that often stand ajar. Furnishings are sparse – a chair or two, and maybe a table, and perhaps some bundles of documents smaller than postage stamps, tied with thread. These shrunken worlds bear little relation to the cosy, domestic muddle of a child’s dolls-house, and even less to the twee ideal homes created THIS PAGE Peter’s showroom is lined with his box sculptures, some on the walls, some propped on the floor, some sitting on pieces of furniture. Each has its own lighting, designed to add drama to the miniature scene within. The coffee table has a top made from a marble memorial carved with lettering in Latin.

MEMORIES OF CHILDHOOD

PERFECT FRENCH COUNTRY I 25

Home & Garden

In Perfect French Country Ros Byam Shaw celebrates relaxed rural France at its finest, whether in a half-timbered farmhouse in deepest Normandy, or an ancient stone mas in Provence. In a series of case studies that visit delightful French country houses, we see French style in its home environment. Here are beams and stone fireplaces, paneled rooms and attics under steeply-pitched tiled roofs—and a delight in simple pleasures that’s reflected in the comfort and patina of rooms that are pretty, practical, and effortlessly chic. As an antidote to modern life’s texts and tweets, traffic jams and queues, additives and packaging, we seek out the simple and the wholesome, and long for the luxuries of peace, space, and fresh air. France can offer all these things, with its traditional farming methods, its authentic regional cuisine, and its low population density. Add to this the inimitable French sense of style and joie de vivre, and you have all the ingredients for an enviable way of life.

Urban Pioneer The conversion of industrial buildings into residential spaces first emerged in the 1960s and ‘70s. A decline in manufacturing in city centers meant that many warehouses and factories became vacant, attracting the first wave of urban pioneers—artists and creatives seeking cheap rents and large interiors to use as studio spaces. Since then, industrial areas in many cities have become sought-after residential districts. The trend shows no sign of waning, with a second generation of urban pioneers cleverly converting former lofts, warehouses, schools, factories, offices, and retail spaces into highly desirable homes full of personality and soul. In Urban Pioneer, Sara Emslie investigates the trend for transforming non-residential spaces into homes, the key elements of the look—from exposed brickwork to copper piping and metal roof trusses—and the related rise in the popularity of industrial design. She then explores 12 inspiring and varied real homes that showcase the Urban Pioneer look. • Industrial décor is a major design trend even if your home is not a conversion—conventional housing and new builds also lend themselves to this style as exposed brickwork and industrial styling will bring a sense of history and personality to any space. • Explores a trend that is at the forefront of creative interior thinking. THE SCANDINAVIAN HOME I 27

Home & Garden

Scandinavia is famous for its distinctive style: homes are pared-back and simple, and form and function are combined to create aesthetically pleasing and practical interiors. Scandinavians are inspired by light, having an abundance of it in summer but so little of it in winter, and house designs tend to maximize the amount of natural light that enters the home, and allow the inhabitants to make the most of outdoor life during the summer. Similarly, nature and the weather are major influences: homes are made warm and cozy for the freezing winter months—not just literally with log burners, but also through incorporating wood and natural materials. The Scandinavian Home showcases a wide range of these beautiful homes. The first chapter, City Dwellings, features sharp, modern apartments and smart townhouses. By contrast, Country Homes shows the Scandinavian take on country style with laid-back, bohemian homes, as well as coastal cottages.

Modern Vintage Style In Modern Vintage Style, Emily Chalmers—interiors stylist and owner of hip boutique Caravan Style—shows how using vintage items in a contemporary context can introduce humor, flair, and personality to a home. She believes that decorating should be fun and inspiring, so there are no style diktats; no “this-must-go-withthat”. Modern vintage style is all about trusting your instincts and taste and using a bit of imagination in seeking out the right items to create a perfect balance of old and new. In the first section of the book, Inspirations, Emily offers up imaginative and varied examples of furniture, lighting, textiles, decorating, and collections & display. In the second section, Style, she shows you exactly how to pull the look together, applying her decorating philosophy so you can cook and eat, live, sleep, and bathe perfectly in tune with Modern Vintage Style. • Emily’s previous books for Ryland Peters & Small have combined sales of more than 200,000 copies. • Vibrant photographs by Debi Treloar complement the lively, accessible writing style.

SIMPLE HOME I 29

Home & Garden

The simple home is calm and uncluttered, with each item carefully chosen. It’s in tune with the current desire to buy well-made, well-designed items that will grow old gracefully, and to create homes that are sustainable and stylish. This doesn’t mean a minimalist home—it’s about living in comfort in a carefully considered space. The first half of the book examines the philosophy of the simple home and explores Mark and Sally Bailey’s design ethos. In the second part, the Baileys turn to simple Spaces, showing you how to create welcoming yet practical Entrances and Hallways, versatile, convivial Cooking and Eating spaces, and supremely comfortable Living spaces. Bedrooms are soothing places with possessions tucked neatly away, while Bathrooms are functional yet warm. Workrooms are a joy to furnish with rescued desks and fittings from old offices or former factories. Above all, the Baileys urge you to surround yourself solely with the objects that you really love and to enjoy the beautiful calm of an uncluttered home.

TRACEY RADFORD Craft has always played a part in Tracey Radford’s life: through her childhood, her career as a BBC journalist, and then as a busy mum of three. But it was only when she started making cardboard animals for her kids, while her husband was posted to Afghanistan for a year, that this passion really took center stage. A keen upcycler, Tracey’s mission was to make all the creatures from things found around the home that usually get recycled or thrown away. The cardboard animals have become a hugely popular part of her blog and featured in her first book, Make Your Own Zoo. This book brings together Tracey’s wonderful new farmyard creations. Simple Chic Crochet Susan Ritchie and Karen Miller are the proprietors of Mrs Moon, an online yarn store, and their mission is to show you how simple it is to create your own modern-casual crochet garments, accessories, and homewares. There are easy-to-hook projects in chunky yarns that will grow so fast you’ll be finished in a day, and larger or more intricate items that will take longer, but are well worth every stitch you hook in to them. There are pieces that are perfect for beginners to crochet—such as a chevron throw, a simple beanie, or a snuggly snood—and other projects that introduce lacy and textured stitches so you can expand your skills at your own pace, and with the help of the techniques section at the back of the book. Choose to make a delicately lacy ombré scarf, a hipster granny-square coatigan, or a giant owl amigurumi that children will love. Whatever your skill level, Susan and Karen have designed projects for Simple Chic Crochet that you will love to make for your home, your friends, your family, and of course, yourself. • Crochet continues to grow in popularity, with beginners and improvers always looking for simple but stylish projects to make. • Follow-up to the lovely Simple Chic Knits (ISBN: 978-1-78249-310-5) by the same authors.

MINDFUL EATING I 49

Health, Body, Mind, & Spirit

The Power of Gratitude Can being more grateful change your life? Ongoing research suggests that it can. Practicing gratitude has a positive impact on the brain and changes the way we feel about the world—and each other. It transforms our lives from the inside out—and The Power of Gratitude explains how. Gratitude extends far beyond the ritual of sharing gifts or saying thank you. It is a form of recognition—a way of appreciating the kindness, beauty, and wonder that life has to offer. Gratitude connects us to one another and to the world we live in. It increases our wish to nurture, help, and protect one another—and increases our sense of belonging. Included are practical and conscious ways to embrace gratitude that have lasting meaning, from creative ways to turn a simple thank you into a heartfelt gift to strategies to help us to see life with brighter eyes. Try keeping a gratitude journal, whether on paper or using an app, or making a gratitude altar. Discover meditations to end your day on a grateful note and to help you find your way back to thankfulness when times are hard. You will soon find that gratitude becomes a way of life and will reap the benefits, both emotional and physical. • Gratitude has been described as “the latest self-help trend”. There are over 11 million posts on Instagram with the hashtag “grateful” as of September 2016. MINDFULNESS ON THE GO I 51

Health, Body, Mind, & Spirit

It is often challenging to weave mindfulness into our day as we get caught up in the busyness of life. Mindfulness on the Go is designed to address this problem. The illustrated book introduces the essential pillars of mindfulness and how to cultivate it and the 52 cards offer a daily invitation to put it into practice. There are two types of card: Activity, which is about doing something, such as a random act of kindness, and Practice, which is about being—for example, tuning into your breath. You can deliberately choose an Activity or Practice card, or leave it up to chance. By focusing on just one thing per day, it makes it easier to remember rather than just feeling that you should be mindful all the time. You can carry the card with you as a reminder if you are on the move all day. If you’ll be in one place, such as at home or in the office, you can use the box lid to display your card—simply slide the card into the lid and it can be propped up, like an easel. As you become familiar with the type of practices, you will find that you begin to do them without the card prompts, and mindfulness will become part of your daily life.

Morelabradorable Join Barnaby as he meets up with his animal friends, at home and in the surrounding countryside of England’s Peak District. First there are Dilly and Bumble, his labrador “sisters,” then there’s Bobbin the Robin who visits the bird table every day. The friendly donkeys he meets on his walk are always interested in what he has to say, but the deer steer clear of him, even though he’s on the leash. The Highland cows that belong to dad’s friend are just a little bit scary—those long horns, all that hair—but the chickens are always up for a game of “chase me.” • Beautiful images of the countryside and the animals that live there, including the three labradors, Barnaby, Dilly, and Bumble.

Mindfulness and Coloring for Cats Cats live a stressful life, what with being expected to operate on only 16 hours of sleep a day, plus having to cope with unexpected trips to the vet or a particularly stubborn hairball. So how can the modern cat keep calm and carry on in the face of battles with the evil cat next door or not being allowed to sleep on the bed? Why, coloring in of course. Don’t let the fact cats don’t have thumbs put you off, cats love coloring! Just watch how they purr in delight when given the chance to add some creative kitty flourishes to drawings of their favorite toys and treats. And if the coloring doesn’t get a cat calmer than a marathon grooming session, it can try its hand (paw) at some mindful moggy meditations and a healthy dose of mindful exercises designed to increase inner pussy peace and encourage access to catnip. • This tongue-in-cheek guide is crammed with hilarious illustrations that make this the purrfect gift for cats and their owners. • Contains 20 images for your cat to color in—just give them a pen and watch them go.

AVAILABLE NOVEMBER 2016 From his early days as a journalist through to his years as the Mayor of London and now his position as British Foreign Secretary, Alexander Boris de Pfeffel Johnson has made it his trademark to insult, appall, and entertain in equal measures. Never far from his latest gaffe—be it writing offensive limericks about world leaders, or dangling helplessly from zip wires—Boris, aka the Teflon toff, has an innate ability to weather even the most severe political storm. Can you image many other politicians who can so easily shrug off scandals as varied as extra-marital affairs, saying Hillary Clinton looks like “a sadistic nurse in a mental hospital” and insulting entire countries? Loved and loathed in equal measures, no matter what you think about the man you can’t deny that he gets people talking. Through a series of hilarious images, games, captions, and quotations Oh Boris! delves deep into some of BoJo’s biggest gaffes, examining who he is, where he came from, and who he’s annoyed on his journey to the top. And of course, it wouldn’t be a book on Boris without a thorough analysis of THAT haircut. • A laugh out loud look at one of the most controversial figures in world politics. • Covers his entire career, from the Bullingdon Club to Brexit, and all the gaffes in between. • Whether you’re on the left or the right, are laughing at him or with him, there’s plenty of fun to be had with this brilliant collection of Boris-related images and trivia.
