SABAUCE HANDICRAFT MARINADE


Yogurt marinates meat in a much milder and much more efficient way than regular marinades. While acidic vinegar or citrusbased marinades can toughen proteins, such as chicken breast, to a rubbery consistency, yoghurt gradually softens them, resulting in meat that can be virtually pulled apart by hand.
2/3 cup whole milk Greek yogurt
2 Tbsp olive oil
2 Tbsp lemon juice + 1 tsp lemon zest
1 Tbsp minced garlic
1 Tbsp peeled and minced fresh ginger
1 tsp each ground cumin, ground coriander, and paprika
1/4 tsp each cayenne pepper and cinnamon
1 tsp salt and freshly ground black pepper (can adjust to taste)
1/4 cup chopped cilantro, plus more for serving
