The Co-op’s Cooking School & Community Learning Center offers something for everyone—cooking classes for cooks of all ages, interests and levels of experience; wellness seminars; events at local farms, and workshops to encourage healthy living and creativity. Our private teambuilding cooking classes offer a hands-on and co-operative experience for your office, clients or group of friends.

CHILDREN IN CLASS We offer cooking classes designed especially for young people. To maintain an adult learning environment, we ask that babies and children under 16 are not brought to adult classes.
PARKING Complimentary parking is available on the first floor of the parking garage at 28th and S streets; after 5:30 pm and on weekends all levels of the garage are available. Please do not park in the lot in front of the store.
CANCELLATION POLICY: Fee is non refundable and classes are non transferable with less than a 48-hour cancellation notice. Menus may change due to availability of seasonal ingredients. We expect all students to behave in a safe and respectful manner, and we reserve the right to refuse service to anyone. 2

Students receive instructional handouts or copies of the recipes in most cooking classes. Snacks and a sample of each menu item will be served. A complimentary glass of wine is offered to students 21 and over in most classes, and additional glasses are available for purchase.

Cooking Classes Vegan Sushi Rolls Monday, August 12 6-8:30 pm • $65, $55* Learn the art of rolling sushi, make sushi rice, how to cut the best size vegetables and create delicious sauces. We'll roll two omotemaki rolls—one with umeboshi and cucumber filling, and one with avocado and veggie filling. KNIFE Handmade Pasta Basics
Monday, Sept. 30 6-8:30 pm • $55, $49* Italian food expert Lucia shares her secrets to perfect, homemade pasta. We’ll start by making both a basic pasta dough and a spinach dough, then create three different fresh pasta shapes. Lucia will then prepare each shape with complimentary sauces and seasonal ingredients: farfalle pasta in a fresh pesto; garganelli pasta in a fresh marinara sauce, and orecchiette pasta with an olive oil herb sauce. Farm Classes Garden and Art to Soothe Stressed Children: Sowing the Seeds of Serenity Saturday, July 20 9 am-noon • $25 (plus a $10 materials fee, payable to the instructor in class) Garden and art activities can help children manage their big feelings and fears. Preparing a Fall Garden Tuesday, August 13 5:30-8:30 pm • $25 Summer is the time to start planning your fall garden. Saturday, September 7 9 am-noon • $25 Learn to use the water you already have for outdoor irrigation of shrubs, trees and vegetable gardens. With the changing climate we can expect more droughts like the recent 2011 to 2016 drought. Even with these challenges, we can still grow food and have a healthy vibrant landscape. Rainfall on our roofs and the laundry water from our washers can be used to keep a landscape healthy. Examples of integrated landscape solutions including low water use plants, rainwater and gray water will be provided in this workshop. Chris Brown
Raising Backyard Animals (Ducks and Goats) Saturday, September 7 1-4 pm • $25 Ducks and goats, much like chickens, can be easy to raise if you have the right tools—knowledge, space, and commitment. When introducing a new animal to your property and your neighborhood, there is always research to do, but with the right awareness, and careful attention, ducks and goats can become a lovely, entertaining, even productive and profitable, backyard addition. We’ll discuss the right feeds, space and hygiene requirements, breeding/ birthing, first aid and veterinary skills, and putting your animals to use for eggs, milk and more. PEACH
BLACKBERRY COBBLER
For filling: 6 large yellow freestone peaches, pitted, and cut into thin wedges (peel them if you’d like*) 1 pint of fresh blackberries ¼ t. ground ginger ¼ t. cinnamon ¼ c. sugar 1 T. fresh lemon juice 1 t. cornstarch 4 T. butter For topping: 1 ½ c. all-purpose flour ¾ c. sugar 1 ½ t. baking powder ¾ t. salt
9 T. cold unsalted butter, cut into small pieces ¼ c. + 2 T. boiling water 2 T. sugar for sprinkling 1) Preheat oven to 425°F. 2) Toss peaches and blackberries with ginger, cinnamon, sugar, lemon juice, and cornstarch in a 2-qt. non-reactive baking dish and bake in middle of oven 10 minutes. 3) In a separate bowl, stir together flour, sugar, baking powder, and salt. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Add the boiling water and stir until just combined.

4) Remove peaches and berries from oven and drop spoonfuls of topping over them. Sprinkle the 2 Tbs. of sugar over the cobbler topping. Bake in middle of oven until topping is golden, about 25 minutes. (Topping will spread as it bakes.) 5) Let cool for at least one hour. Serve with vanilla ice cream or whipped cream. *Best way to peel peaches: Score a cross in the bottom of each peach. Plunge them into boiling water until the skin starts to pull away, then plunge into ice cold water. Peel the skin from the peach.

Wellness Wednesday Yoga on the Farm
Drop-in 60 minute yoga class with Summer Ward is held every *Wednesday at 8 am. Meet in the Outdoor Theatre. This class is open to all levels. The class will be a blend of breath work, along with intentional movement. Summer’s style is grounded in nature, intuitive and accommodating to all who attend. Bring your own yoga mat. Suggested donation is $10. Pay instructor. No one turned away for lack of funds.
Year-Round Garden Team Looking for a fun way to get some exercise, fresh air and sunshine? Play, make friends, get your hands in the soil and nourish your spirit. Volunteers are welcome every Wednesday (9-11:30 am summer hours) to assist the staff in tending our gardens at the American River Ranch. You will learn about medicinal herbs, native plants, flowers, trees, vegetables and succulents. Volunteers support with greenhouse activities, plant sales and fruit tree orchard care. Tasks change with the season. It’s an opportunity to gain knowledge and build skills. Beginning and experienced gardeners are welcome. Help us plan accordingly, sign up for a volunteer shift in advance on our website. Come early for a free herb talk and tea with Kellan at 8:30 am in the Sacred Circle.
