21/2tbsp extra virgin olive oil 1/ 4 cup pumpkin seeds (raw) 1 bunch kale, stems trimmed and chopped into thin ribbons 1 tbsp lemon juice 2firm Bartlett pears. cored and cut into 1/ 4-inch shces 4 ounces goat feta crumbled fresh ground pepper to taste sea saft
Heat 1/2tbsp oliveoil in a small skillet over medium-high heat. Add in pumpkin seeds and sprinklewith sea salt. Toast. shaking pan frequently, until seeds arefragrant and the first few start to pop, 2- 3 minutes. Spoon into a small bowl and set aside. In a largesalad bowl. add kaleribbons with remaining 2 tablespoons oliveoil and several pinches sea salt. Massageoliveoil and salt into kale. Tasteand add more sea salt as needed. Add pear slices and lemon Juice. Top with crumbled cheeseand pumpkin seeds, finish with pepper to taste.
