chairman’s Spending time with the people you love is among life’s greatest pleasures, but busy days make this easy to forget. Recently, I had the good fortune to be reminded again on a fabulous fishing trip in Port Antonio, Jamaica, where my family and some marvelous old friends joined me. We were in pursuit of marlin, that enormous fish of lore, prized by big-game fishermen as the pinnacle of the sport. It takes a precise hand, patience and cooperation to reel in a marlin, but it’s a thrilling experience and another reason to love the turquoise waters of the Caribbean. All fishermen dream of the big one, the greatest one, the one that got away. For 30 years I have been living my dream–providing the most memorable vacation experience for two people in love, bar none. W

hen painting their houses, Bahamians draw inspiration from Nature’s big show Perhaps the only rival to the vivid blues and greens of the Bahamian waters are the colorful hues that decorate Bahamian architecture. From the classic creamy pale Nassau Pink that adorns government houses, to the bright shades of fuchsia and orange that pop up in the most unexpected of places, the colors fascinate visitors. Bahamians, on the other hand, don’t even notice what may seem like unlikely color combinations and shades because they have become a natural part of their daily experience. Colors have a way of creating an identity and Bahamians are not afraid to shout out loud when it comes to how they paint their buildings. The color of Bahamian buildings can be roughly divided into two periods. The first period lasted until the early Seventies and is represented by a much more muted palette. Homes were usually painted a lighter or pastel shade of pink, blue, yellow or green. Nassau Pink is still heavily used in buildings throughout the Bahamas today and is the traditional color for the Houses of Parliament in Nassau. The story

Wadadli is a refreshing pale lager named after the original Amerindian word for the island. Released in 1993, Wadadli is the flagship beer of the Antigua Brewery. It has a light golden color and a full, bitter-sweet taste. The distinctive green bottle and stand-out label make this one hard to miss. In Antigua, there may be “365 beaches for every day of the year,’’ but there’s only one beer and that’s Wadadli!

Bahamas Throughout the islands of the Bahamas, the favorite is the laid- back Kalik beer. The name is derived from the famous cultural festival “Junkanoo,” which is known for colorful costumes, resounding rhythmic beats and the irresistible sound of the cowbell shaking, “Kalik, kalik, kalikin!” Brewed from some of the finest malt and hops at the Commonwealth Brewery since 1988, this supremely mellow lager has received no fewer than four gold medals from the World Selection in 1990, 1991, 1992 and 2001. Try one (or a few) and you’ll understand why the locals lovingly boast that “It’s a Bahamian ting!”

Red Stripe was first brewed in 1928 by Desnoes & Geddes Ltd, to give the locals an island beer they could be proud to call their own. Today, thanks to its amazing drinkability and reggae-inspired mystique, Red Stripe is arguably the most recognizable Caribbean beer in the world. It is certainly one of the Caribbean’s most decorated beer brands, having won numerous prestigious awards including 11 gold medals at the annual Monde Selection. The name apparently comes from the red stripe found on the pants of the Jamaican police uniform, but, not unlike the beer itself, its exact origin has some intrigue and mystery. Despite its distinctly squat stature and unassuming, dark brown bottle, this is a giant among Caribbean beers.

“La Bière Sent Lisi’’ (The Beer of Saint Lucia) was launched by Windward and Leeward Brewery Ltd in 1992. The launch coincided with a period of heightened national pride as Derek Walcott, a native Saint Lucian, had just been awarded the Nobel Prize for Literature. Saint Lucian pride in Piton is well justified, as it is a multiple award winner with a silver medal in the Monde Selection International Beer Competition in Brussels, Belgium in 1993 and a prestigious gold medal at the Monde Selection in France in 1994. With a name that evokes images of the majestic volcanic peaks of the Pitons, the brand is an indelible part of Saint Lucian life.

In the Turks and Caicos, the local potion is named after the indigenous Turks Head cactus that grows on the islands. Luckily, the cactus is on the label only and is not an ingredient in this simple, crisp and exquisitely refreshing beer! Turks Head Brewery on Providenciales has produced Turks Head Beer since 2001 and, if you’re lucky enough to visit, you do not want to miss out on sampling this slightly sweet and floral brew.

Within three months everything was gone—the glasses and plates, anything with a Sandals logo disappeared, that’s how it all started. I like the man from then, he didn’t make a fuss, we just buy everything again.” Stone comes with a rare quality from a bygone era. He leans forward and smiles. “When I left my job, the owner call me and offer me more money and a housing allowance and a car, I tell him no way, I mek a promise to Butch Stewart and I’m sticking to it.” After just five years, success was theirs. “Butch calls me and say, ‘We’ve done it, Daddy, Sandals has been named the number one, all-inclusive resort in the world,’ so with that we continued doing what we do best—giving good service.” Twenty-three years after that call from Butch Stewart, Daddy Stone received another phone call that marked an equally important milestone in his career. “The man ask me is this Robert Stone, so I say ‘yes.’ He said, ‘but you have a middle name? Are you the Robert Edward ‘Daddy’ Stone?’ The man was from King’s House. I knew then Butch had something to do with this.” In August 2008, Jamaica honored Robert Stone; he was awarded the country’s Order of Distinction for devoting more than 55 years of service to the hospitality industry. “On the day of the ceremony when I was handed my award, Butch just get up and left his friends and walk over to me and hugged me. He say ‘you’re the best, Daddy Stone.’ They were words I will never forget.”

The great thing about Sandals Resorts is that there is inherent romance—this is what the place was literally designed for. However, there are some locations that are dripping in it, from the ambiance to the sensuality of the food. Armando’s Italian restaurant at Sandals Regency La Toc is just such a spot. The place channels the charm of Renaissance-era Italy from the moment you approach the entrance. It is located above the Sunset Bluff pool, tucked behind a waterfall cascading into the pool below. There are tables available on the balcony, so that you can drink in the beauty of the view, as early evening reservations almost guarantee an expanse of ocean awash in the glow of the sunset. The exterior may be the ideal setting for sought-after romance, but inside is serious competition. Yam Pudding Wash, peel and boil yams in a saucepan in water until tender. Then, using a food processor, puree cooked yams and set aside. In a mixing bowl, add milk, sugar, eggs, coconut milk and melted butter and mix to combine. Add the yams to the mixture. Add all remaining ingredients and mix well until smooth. Bake at 350 degrees for 35 minutes.

Drain the yams and allow to cool slightly. Push the yams through a potato ricer or food mill into a large bowl; add the egg yolk, salt, pepper, nutmeg, bacon and scallions and mix thoroughly to combine.

In the bristling heat of an Antiguan afternoon, Kathy Tyson, an eighth grade teacher from New York, catches my eye as she sits alone in the spacious third-floor lobby of Sandals Grande Antigua Resort & Spa. She stands to greet me and is framed in sunlight from head to toe. She’s just one of a number of people with a social conscience inspired to spend their vacations doing something for others. “I can’t stress enough the importance of reading with children,’’ she said. “To me, that’s the greatest gift you can give anyone.” In 2009, Kathy and her husband Roy attended a guest reunion event at Sandals Grande Antigua. It was an elegant evening of splendid food and entertainment. When Gerald Christ, the resort’s general manager, thanked the returning guests for their loyalty, he urged them to leave behind the books they had finished reading, as a donation to the Sandals Foundation, the charitable arm of the resort company which was partnering with Antigua’s new national library. For Tyson, it was the next stage of a beautiful relationship. “A little bell went off in my head and I said this is a great idea and I decided there and then to partner
