It’s that time of year again, and I couldn’t be more excited to be guest-editing this year’s M&S Christmas Food magazine! For me, Christmas food is all about serving up a feast. It doesn’t have to be fussy, it just has to be really, really tasty.

CHRISTMAS EVE
Prep the veg
Peel and parboil your vegetables the night before and leave them in the fridge overnight. Carrots, red cabbage, broccoli and parsnips can all be precooked and finished o or reheated when needed.
Get the roasties ready
Peel the potatoes and boil for 15 minutes or until they are cooked all the way through. Place on a cooling tray and leave to dry at room temperature so they form a crust around the edges.
Sort the stu ng
Make the stu ng, shape into balls and store in the fridge overnight.
TOM’S TIMEPLAN
With the right timings and prep, cooking up a festive feast can be a breeze. Follow my simple timeplan for a stress-free Christmas lunch…
CHRISTMAS DAY
8am Take the turkey out of the fridge to let it come to room temperature before roasting.
9am Pop your turkey in a roasting tray with chopped celery, carrots, shallots and garlic. Based on a 5kg whole turkey that serves eight people, the turkey would need to go in the oven now and cook for 3½-4 hours. To work out the cooking time for your turkey, allow 40 minutes per 1kg for the first 4kg, then add 45 minutes for every 1kg over that weight. Be sure to allow at least 45 minutes’ resting time before you carve.
Relax and enjoy the Christmas festivities!
1pm Take the turkey out of the oven and place on a serving plate to rest. Set the
roasting tray with the juices and veggies aside – you’ll need this to make the gravy later!
1.10pm Place a roasting tray filled with vegetable oil or goose fat in the oven. Once hot, place your preboiled potatoes in the tray, leaving plenty of space in between them. Roast for 40 minutes, turning the potatoes every 10-15 minutes so they get nice and crispy all over.
1.15pm Place your stu ng balls on a tray and roast in the oven for 35-40 minutes.
1.20pm Serving cauliflower cheese? Make the cheese sauce now. Take the parboiled cauliflower out of the fridge and place in an ovenproof dish. When the sauce is ready, pour it over the cauliflower and roast for 20 minutes until bubbling.
1.25pm Fry your brussels sprouts with crispy bacon lardons and rosemary; add chestnuts and peanuts if you like extra crunch!
1.35pm To make the gravy, pop your turkey roasting tray containing the veggies and turkey juices on the hob over a medium heat.
1.40pm Finish o any vegetable side dishes that you precooked yesterday – such as your parsnips, carrots, broccoli and red cabbage – by roasting them in the oven, or warming through in a saucepan.
2pm Christmas lunch is served!

THE PERFECT TURKEY SANDWICH
This turkey sarnie is packed with all the flavours of Christmas Day – from the turkey to the cheese – and is baked in the oven for crunchy, gooey perfection

Christmas Sourdough
150ml leftover turkey gravy, warmed
2 tbsp M&S Turkey Gravy Mayonnaise
2-3 slices leftover turkey
4-5 leftover pigs in blankets
1 handful leftover brussels
sprouts, sliced
1 tbsp Collection Cranberry and Port Sauce
1 tbsp Collection Festive Chutney
2-3 slices leftover Christmas cheeses, such as brie or stilton
2 gherkins, to serve
SUPER-JUICY TURKEY ORZO SOUP
This hearty orzo soup is a great way to use up every bit of that succulent turkey
Serves 4
3 tbsp olive oil
1 leek, diced
2 large carrots, diced
2 cloves garlic, crushed
4 sticks celery, diced
1 litre homemade turkey stock
or M&S Chicken Stock
2 sprigs rosemary, leaves picked
3 sprigs thyme, leaves picked
1 tin (400g) chopped tomatoes
1 leftover turkey carcass
300g leftover roast turkey, shredded
250g M&S Risoni Orzo Pasta
100g cavolo nero, chopped (stalks removed)
100g frozen garden peas
60g M&S Green Pesto
Extra virgin olive oil (optional), to serve
200g parmesan, grated, to serve
1 Heat the oil in a large saucepan. Gently fry the leek and carrots for 5 minutes, until softened. Add the garlic and celery and cook, stirring, for 2-3 minutes.
2 Pour in the stock along with 1 litre water. Add the rosemary, thyme, tomatoes and turkey carcass (you may have to break this down to fit in your pan), and simmer gently for 20 minutes.
3 Remove the turkey carcass from the broth and leave to cool slightly. Pull any extra meat from the carcass, add to the leftover roast turkey and set aside.
4 Add the orzo to the pan and cook, stirring, for 8 minutes. Stir in the cavolo nero and peas and simmer for 2-3 minutes. Add all the turkey meat. Stir and season with salt and freshly ground black pepper.
5 Continue simmering until the turkey has warmed through, then ladle the soup into bowls. Drizzle with pesto and extra virgin olive oil if you like, then sprinkle with grated parmesan to serve.
1 Toast the sourdough, then soak one of the slices in the leftover turkey gravy. Preheat the oven to 180°C/160°C fan.
2 Add a splash of the gravy to the mayonnaise and mix to combine. Spread this on the other two slices of sourdough slices.
3 Build your sandwich by layering up the leftover turkey slices, pigs in blankets, brussels sprouts, cranberry sauce, chutney and cheese on either side of the gravy-soaked sourdough, all sandwiched between the two gravy mayonnaise-covered slices.
4 Wrap the sandwich tightly in foil. Place on a baking tray and cook in the oven for 10-15 minutes.
5 Top with gherkins and cut in half to serve.

TURKEY PILAF
Serves 4
2 tbsp vegetable oil
30g butter
1 red onion, diced
400g Collection Aged Basmati Rice
4 cardamom pods, lightly bashed
1 cinnamon stick
2 tsp M&S Garlic Paste
2 tsp M&S Ginger Paste
2tbsp M&S Roasted Garam Masala
1 tsp turmeric
½ tsp chilli flakes
½ can chopped tomatoes
400g leftover roast turkey, cut into chunks or slices
750ml turkey or chicken stock
120g frozen peas
½ tub M&S Crispy Onions (optional)
2 large handfuls fresh coriander, to garnish
Mini poppadoms and mango
chutney, to serve
1 Heat the oil and butter in a large non-stick sauté pan. When the butter begins to foam, add the onion and cook for 7-8 minutes.
2 Meanwhile, place the rice in a large mixing bowl, fill the bowl with water and stir the rice around with your hands. Pour out the water and repeat this process until the water runs clear. Drain the rice in a sieve and set aside.
3 Add the cardamom and cinnamon to the onions and stir well. Cook until the onions are beginning to brown. Add the garlic and ginger to the pan and cook, stirring well, for 2 minutes. Reduce the heat to low, stir in the garam masala, turmeric and chilli, and cook for 1-2 minutes.
4 Add the chopped tomatoes to the pan and cook for 2 minutes. Stir in the rinsed, drained rice, roast turkey chunks and stock. Season with salt and freshly ground black pepper and bring to a simmer. Reduce the heat to low, cover with a lid, and cook for 12 minutes.
5 Add the peas to the pan, pop the lid back on and cook for a further 2 minutes. Remove from the heat and leave to sit for 5 minutes.
6 Flu up the rice with a fork and serve the pilaf in bowls. Sprinkle over the crispy onions, if using, and garnish with coriander. Serve the mini poppadoms and mango chutney alongside.

FRIED CHRISTMAS PUDDING
Fry up that leftover Christmas pudding in melted butter until warm and crisp, then add a dollop of cream and sliced fresh fruit.
Save your potato skins
Turn those potato peelings into crisps! Just rinse the peelings, dry them out and toss in salt and olive oil. Bake until lightly browned and you’ve got lovely, crunchy bites, perfect for dipping with Roasted Red Pepper and Tomato Mezze Dip.
Make your own stock
Save veggie scraps and use up bits and pieces of veg in the fridge to make your own stock. Simmer for 45 mins, cool, then freeze in batches and you’ve got perfect hits of flavour in your freezer, ready to use in risottos or soups.
Use those cheese rinds
Cheese rinds are often thrown out, but they taste incredible! Freeze any leftover parmesan ends and use to add flavour to soups, stock, tomato sauces and risottos.
Throw the stalks in, too
Broccoli and cauliflower stalks are just as tasty and nutritious as the rest of the veg. Slice up thinly and add them when cooking your veggies to give a lovely bit of texture.
Reinvent stale bread
Bread that’s dried out won’t make the best sarnie – but it is great for croutons and French toast. Or pulse it to breadcrumbs in a food processor and use to coat leftover turkey for a waste-free schnitzel.
