THE SANI GREEN PROGRAMME 2014

1.0 THE SANI GREEN PROGRAMME

Sani Green is the name of the SANI SA sustainability programme, a key element of the company’s overall vision. The Sani Resort seeks to reduce its energy footprint through such initiatives as the use of solar and heat recovery systems, the recycling of water for use in the gardens of the resort, and the reduction of waste. The Sani Resort is not just another resort, nor is it an ordinary holiday destination. It expresses a new philosophy, focused on escape from everyday routine, with the emphasis on well-being. It is a location where man and nature come together, where nature is respected, an environment of unrivalled aesthetic appeal, luxury and natural beauty. The Sani Resort offers a comprehensive holiday experience to all holidaymakers seeking something unique: an ecological sanctuary extending over 450 hectares of beautiful natural landscape, blue waters and limitless views, with four luxury hotels, opulent holiday villas, a state-of-the-art marina, three impressive spas, five-star services and unbeatable amenities – not to mention a full cultural and gastronomic programme in the form of the International Sani Festival of Music and the Visual Arts, and the Sani Gourmet Festival. The Sani Resort, run by SANI SA, was created forty years ago by two men who shared a common vision and ambition. Today, the family business remains steadfastly loyal to that original vision: hospitality with respect for the visitor, facilities designed with respect for the natural landscape, and a promise to preserve the environment for the enjoyment of future generations. SANI SA’s commitment to the principles of sustainable development is expressed through a comprehensive environmental and social programme, going by the name SANI GREEN. In the 1960’s, when the land on which the resort stands was first purchased, there were fewer trees growing here. Over a period of thirty years, despite the large-scale construction work, the forest areas were greatly expanded, bringing unique ecological advantages, enriching the life of the community and improving conditions for the local population and the ecosystem. This is a location that not only offers peace and relaxation from the frenzied pace of modern life, but also provides protection for many species of wildlife – a sanctuary where they can live in safety and peace. The Sani wetland, which adjoins the resort and is one of the protected areas of natural beauty in the European Natura network, is home to more than 214 species of birds – about half the total number of bird species found in Greece – many of which are rare and threatened with global extinction. SANI SA continues its work to expand and protect the forest areas of the resort, with the help of the Sani Resort forest protection team, who work to ensure the forest is properly managed and that local people and tourists can enjoy large areas of forest land. They clear undergrowth to reduce the risk of fire, maintain the necessary fire-breaks and ensure that the forest trails are always clear. A wide range of environmental measures have been incorporated in the design and operation of the hotels. Every year we plan actions relating to: • Protection and highlighting of the biodiversity of the area, the natural environment and the marine ecosystem. • Reduction of energy consumption in all areas of hotel operation, with increased use of renewable forms of energy. • Efficient use of water. • Systematic monitoring of quality of liquid waste. • Reduction of waste generated, particularly plastics. • Reduction in chemical use. • Environmental checks on the supply chain. 5


• The promotion, use and showcasing of local and Greek products. • Increasing environmental awareness of employees, customers and the local community. • Cultivating the environmental awareness of children and young people, and promoting sustainable experience for customers. • Ensuring high standards of health and safety for staff and customers.

In recent years SANI SA has made substantial progress in the control of energy use and energy-saving, while also reducing its CO2 footprint. Use of heating oil has now been reduced to the absolute minimum, with solar systems now generating part of the hot water used at the SANI BEACH HOTEL. We have also installed low-energy lightbulbs all across the resort, thereby reducing its energy footprint. Every day measurements of energy consumption are taken, and staff are trained in energy use. We have introduced innumerable measures to ensure more efficient use of energy across the whole resort.

THE SANI GREEN TEAM IS CONVINCED THAT FOR VISITORS AND LOCAL PEOPLE TO TAKE AN INTEREST IN THE ENVIRONMENT AND APPRECIATE ITS IMPORTANCE, THEY MUST HAVE AMPLE OPPORTUNITY TO EXPERIENCE THE NATURAL WORLD AT FIRST HAND.

To implement all the measures and priorities described above, SANI SA has developed a comprehensive system of sustainable management, in line with the principles of the ISA 14001:2004 and TRAVELIFE standards. The system is implemented and monitored at all our hotels through procedures which combine upgraded hotel operations with the principles of sustainability, opening the way to a whole range of environmental benefits for the resort, the community and the surrounding region.

2.0 OUR ENVIRONMENTAL PERFORMANCE

In 2014 total energy consumption per guest per night was cut by 14.8% from the previous year’s figure. The actions taken included the installation and operation of heat pumps at the SANI BEACH HOTEL and SANI BEACH CLUB, the replacement of old, energy-burning appliances with energy class A appliances, and the limiting of our use of heating oil. Through regular maintenance of all our energy equipment and monitoring of energy consumption using special software we have been able to make significant improvements in our energy efficiency. Finally, our actions to boost energy-saving have been backed by intensive training for all our staff and measures to raise our guests’ awareness of energy-saving issues. Water use is a very important environmental aspect of our hotel operations. The SANI GREEN environmental programme has focused on the efficient use of water. In 2014 water consumption per guest per night was down by 6.9% on the previous year. Actions implemented in 2014 included the replacement of a large part of the water supply system, to reduce leaks, a detailed study of the watering programme for the grounds of the resort, by area and season, to maximize efficient water use, systematic monitoring and repair of leaks, and reduction of water flow at high flow points. At the same time our personnel has received regular training in the use of water, encouraging them to understand that every single drop is precious.

Sani Green is the name we have given to the SANI SA sustainability programme. This programme is of central importance in the company’s vision and activities. The Sani Resort is continually striving to reduce its energy footprint through such initiatives as the use of solar and heat recovery systems, the recycling of water for the resort gardens, and the reduction of waste. We attach particular importance to creating a supply chain which is as sustainable as possible, sourcing more than 60% of our fruit and vegetables from the local and domestic markets, cooperating with suppliers to cut waste, and hiring local workers. Finally, we lay particular emphasis on the opinion of our customers concerning our sustainability performance, with satisfaction levels in 2014 reaching 9.55/10.

Waste generation is another aspect of our hotel operations of great environmental significance. The SANI GREEN programme has focused on two objectives: reducing waste, and increasing the level of recycling. Moreover, in 2014 we launched a pilot scheme for the composting of organic waste from the hotel kitchens, and the results have been extremely positive.

More than 35% of the waste we generate – paper, glass, plastic, aluminium, batteries, electrical appliances and used candles – is recycled, while the oil used for cooking in the hotel kitchens and restaurants is converted into bio-fuel. This significant achievement – raising the recycling rate to 35% across the whole resort – was no accident. By keeping a daily record of waste and recycling for each area of operations (waste-mapping), we were able to redesign our waste collection procedures at source. Intensive staff training and an increase in recycling infrastructure in workplaces and common areas were just two of the new measures we implemented. New, clear signing also made for better waste sorting at source.

So, in 2014 SANI SA recycled significant quantities (225,128 kg) of waste, which would otherwise have ended up in the landfill sites of Halkidiki. The recycling rate for the SANI BEACH HOTEL rose to 35% in 2014 from 20% the previous year.

As part of our efforts to protect the environment, we pursue environmentally-friendly practices in the use of chemicals and cleaning agents. All chemicals used in our hotel operations are condensed and bio-degradable, while those in most common use are certified with the EU ECO LABEL. Our environmental programme, implemented in 2014, featured regular training for all staff in the safe use of chemical substances and the appropriate response to any leaks or spills, the systematic monitoring of consumption by operational area and the installation of measuring devices at all points where chemical substances are delivered. Pesticides are used only at times of year when the hotels are closed; they are used only when necessary and in carefully controlled quantities, to ensure protection of the ecosystem.

We lay particular emphasis on the creation of a more sustainable supply chain, procuring more than 60% of fruit and vegetables from the local and domestic markets, cooperating with our suppliers to reduce waste, and hiring local workers. Great importance is attached to the supply chain and the checking of suppliers. In 2014 sustainability criteria were introduced into the supplier evaluation system, with two new priorities: a) increasing the use of local Greek products, and b) reducing the amount of packaging.

4.0 INITIATIVES FOR THE LOCAL COMMUNITY

• Protection and showcasing of the Sani wetlands The resort is surrounded by the Sani wetlands, which are a protected area of natural beauty in the European Natura network. The Sani wetlands cover an area of 110 hectares and are home to more than 214 species of bird – around half the total number of species found in Greece – many of which are threatened with global extinction. SANI SA works alongside the Hellenic Ornithological Society in planning and implementing a programme to monitor birds and their habitats. On check-out visitors are asked to donate one Euro towards protecting the incredible biodiversity of the Sani wetlands, all donations being matched Euro for Euro by the company. This scheme ensures a steady flow of funds for a scheme which safeguards the protection of the area.

3.0 THE SANI GREEN PROGRAMME AND CORPORATE SOCIAL RESPONSIBILITY

All visitors will find in their room a copy of the book Sani Wetlands – A natural treasure house, which describes the objectives of the area study, showcases the amazing wildlife of the lakes, and includes maps and recommended walks for bird-watchers. SANI SA has also published a children’s fairy tale titled Hermes, the black-winged stilt who walked, which is available in selected rooms and for sale. All proceeds from sales go to the Hellenic Ornithological Society.

Our policy for corporate social responsibility is a key parameter in the sustainable development of the region and the local community. Our commitment to corporate social responsibility features a range of important actions and initiatives, such as systematic monitoring of the impact of our operations on the local community, investment in the local workforce and local products, as well as promotion of sustainability and training, helping to strengthen and showcase the local community and the broader region of Halkidiki. Moreover, the Sani Green programme is not confined solely to hotel operations, but extends also to the protection of the forest and nearby wetlands, through a network of partnerships with experts in these fields. To learn more about the incredible biodiversity of the area around the resort, visitors can participate in various initiatives during their stay, from the recycling opportunities in their own rooms to the provision of maps to the forest paths and the organizing of free visits to a local farm. We invite our guests to experience the Sani Green programme at first hand, through the free guided tours of the local landscape (bird-watching, walking, cycling) held on a daily basis, the Eco Days, a range of events held on a weekly basis and dedicated to the natural landscape, traditions and produce of Halkidiki, as well as the ecological education programme Sani Adventurer & Explorer, which features outdoor activities and is specially designed for children and teenagers.   The company attaches particular importance to participation of local people in all events staged in the programme. These events include the scheme for protection and showcasing of the Sani wetlands, the conservation and protection of the forest, pop-up events to showcase the area and its produce, the Sani Animal Rescue programme, and other initiatives staged all year round. 10

The Sani Resort also organizes events open to the public, such as those staged to mark the annual Eurobirdwatch event, held each year at the Sani wetlands. There are birdwatching tours of the wetlands, on foot or by bike, and throughout the year local school groups are invited to visit the wetlands. SANI SA has placed easy-to-read signs along the trails and around the lakes to inform visitors of the biodiversity of the area and the need to protect it. The public can also learn about the new species recorded in the wetlands and new developments in their protection by visiting the blog posted by the Sani Resort at saniwetlands.gr.

The company also welcomes to the wetlands groups from local schools, and members of the general public, for whom it organizes birdwatching sessions and environmental awareness-raising events.

Under the guidance of the Hellenic Ornithological Society, and with your help, we have launched a programme to record and classify the birds, and also to implement special protective measures, such as the construction of a special platform for artificial nesting for endangered species. The Hellenic Ornithological Society is a partner of BirdLife International, the most important of the international agencies involved in the protection of birds and biodiversity.

For example, as part of the Plant a Tree scheme more than 10,000 trees have been planted in areas destroyed by forest fires. The Sani Resort also supports the Arcturos environmental organization through sales of the Sani Bear, which is available in selected rooms, the proceeds going to forest protection activities across the country.

Every day our ecological guide helps guests and visitors from outside the resort to explore the local eco-trails. With narrative and facts about the landscape and birds, these tours are a truly educational experience. Frequent visits ensure that the trails are kept clear of waste and litter, while any sign of unlawful activity is reported to the authorities.

• Maintenance and protection of the forest The Sani Resort forest protection team works to protect the local forest and wildlife. The team is responsible for care of the signed forest trails, stretching several kilometres in length, ensur-

This support takes a variety of forms, such as donations to local charities and organizations, including gifts to churches and children’s playgrounds, or the setting up of a public library in N. Fokies in 2014/5, or the procurement each year of more than 60% of its fruit and vegetables from local growers. We also have an arrangement with a local farmer whereby guests can visit the farm and spend a morning helping him in his work. The Sani Eco Days are open to guests and to the local community, and are designed to showcase the produce of Halkidiki, including honey, olives and tsipouro. Local growers, women’s cooperatives and cultural associations are all represented at the events. The Sani Resort regularly opens its doors to local people as part of initiatives like the provision of free tickets for the Sani Festival to local young people, the organization of visits and tours of the wetlands for local schoolchildren, and the offer of free sailing lessons.

• Animal protection The purpose of the Sani Resort’s Animal Rescue scheme is to find new homes for the stray animals of the region. Animals are immunized and a record kept of the stray cat and dog population of the area, and homes are found for the strays, often by adoption by visitors to the Sani Resort from all over the world. The Halkidiki Animal Rescue Society, which manages the scheme in partnership with the Sani Resort, cooperates with many animal welfare organizations here and abroad (such as Greek Animal Rescue, Danish Friends of Animals, Friends of Strays of Greece, Caring for the Animals Trust and Animal Pard Net), and with local veterinarians. The Sani Resort also supports Halkidiki Animal Rescue in its work beyond the boundaries of Sani. The company has made gifts in cash and kind to set up a stray animal refuge, run by the society, which was set up to offer help to as many animals as possible in the region of Halkidiki.

As part of the Plant a Tree scheme, more than 10,000 trees have been planted in areas devastated by forest fires, with the support of the not-forprofit society Thessaloniki Friends of Nature. The Animal Rescue scheme is run in partnership with Halkidiki Animal Rescue. The programme involves immunization and recording of the local stray animal population, and the finding of new homes for the strays, often through adoption by visitors to the Sani Resort from all over the world, who decide to take home with them a stray dog or cat. Proceeds from the sale of the Sani Bear, available in selected rooms, go to finance forest protection schemes, run in partnership with the Arcturos environmental organization.

5.0 PARTNERSHIPS We have made a firm commitment to protecting the biodiversity of our local environment and to make the beauty and natural wealth of our location a significant aspect of our guests’ vacation experience. We have worked with selected not-for-profit organizations on schemes to improve the holiday experience enjoyed by visitors to the Sani Resort. In association with the Hellenic Ornithological Society (a partner of Birdlife International), SANI SA is implementing a programme to monitor the birds of the Sani wetlands and their habitats. The Society runs an information kiosk at the Sani Marina.

6.0 OUR TARGETS FOR 2015

In 2015 the Sani Green programme will be expanded along the following main axes: • Continuing reduction in the use of plastics, and better plastic recycling, with further reinforcement of the existing recycling programme. • Continuing regular monitoring of consumption of energy, water and chemicals, with parallel implementation of the programme to control their consumption. • Regular training and education for staff and the local community in aspects of environmental management and sustainability. • Showcasing of the natural environment, with continuing actions to protect and showcase the vulnerable ecosystem of the area. • Educating and raising the awareness of the local community in environmental management and sustainability. Every year we seek to continue improving our performance as measured by 70 environmental indices, which we monitor systematically and which reflect the vision of the overall Sani Green programme.
