Hohoho??? or bah humbug! PREPARING FOR THE HOLIDAYS: HO HO HO??? OR BAH HUMBUG BY: KATHY PAAUW

Some of my clients dread the holiday season because it often represents stress, pressure, expectations, guilt, disappointment, pain, loneliness, exhaustion... and the list goes on. This is a choice. We choose who we spend time with. We choose what activities we say yes and no to. We choose where we go. Your holiday season can be as simple or as elaborate as you choose to make it, and it can be a lot of fun if you plan accordingly. Take some time this week to think about what’s most important to you this season, and then do a little planning. Here are some suggestions to help.

==> Create a list of holiday rituals that are important to you. Seek your family’s input on holiday decisions. Ask family members what they liked and disliked about last year’s holidays. Write down the most important elements and activities you wish to include this year, and plan to make it happen. Keeping time-consuming and irrelevant traditions or rituals “just because we’ve always done it that way” can increase stress. Keep only those traditions that have meaning to you, or create some new ones. Give yourself permission to be in the moment and enjoy the smells, sounds, feel, and tastes that are unique to this season of the year.

==> Make a list of those you want to spend

time with during the holidays. Who nourishes

you? Who are the family members, friends, and colleagues you enjoy being with? Do you want to do any entertaining? If so, when and with whom? Plan ahead and ask for help if you want it. True friends and loved ones will not care how many hours you slaved over the stove. Spending time with you is what they’ll cherish most. You don’t have to be Martha Stewart to throw a great party. Are you invited to holiday parties that you really don’t want to go to, but you’ve gone in the past because you should? Be at choice -- don’t play the victim! This is not about whom you should see, but rather whom you choose to spend time with.

==> Mail your greeting cards, holiday letters, and packages early. Some time-saving tips:

Write a short holiday letter that covers the highlights; copy it on holiday paper and add a note at the end to personalize it. Make a collage of pictures to photocopy on the back side of the letter. Use self-adhesive return labels. These labels are inexpensive and often come with festive holiday designs. One great online source for these is Walter Drake at http://www.wdrake.com. If you have your addresses on a computerized database, consider printing out your mailing list on clear address labels. Years ago, an old college friend commented that she thought it was tacky to use address labels on holiday cards and letters. I told her that my choice was to either use labels or not mail our annual holiday letter to the 250 people on our list. Now that she has a young family, I’ve noticed she has started using address labels, too! E-mail a holiday letter to those with whom you correspond electronically. You can easily personalize this for each recipient. Attach color photos highlighting the past year. Another alternative is to create a holiday web page, and include the link to it in a personalized e-mail message. Mail packages early to avoid longer lines at the post office and ensure they will arrive in time. Or, better yet, sign up with Stamps.com and avoid the lines altogether. You can mail large packages without standing in any lines -- as long as you have an accurate way to weigh them before you purchase postage online.

==> Thoughtfully plan your gift-giving.

Give from the heart... not out of obligation. Decide whom you choose to give to and make a list. This will help you avoid overspending through impulse buying. If you think back to the most cherished gifts you have received, they are often homemade or from the heart. A gift of time -- such as a gift certificate redeemable for an activity you can do together -- can be very meaningful. Among the most prized gifts I’ve ever received have been homemade cards with a heartfelt note written inside. Value goes far beyond the cost of the gift. A great resource for homemade gift ideas is a book called The Perfect Mix. It contains creative edible gift ideas, including wrapping suggestions and tag instructions, along with a source guide for supplies. The book offers more than 90 recipes for soups, breads, muffins, cookies, and other gifts. The gifts I’ve created from this book have been very well received and appreciated. Instead of exchanging gifts with friends, consider having a holiday or post-holiday party with them. Avoid parking hassles, gridlock traffic around the malls, and long lines at the register by shopping online and through catalogs. A number of retail stores now offer merchandise online, as well. If you are purchasing a gift that needs to be mailed, you can arrange to have it sent directly to the recipient, thus avoiding the extra steps of wrapping, labeling, and mailing the gift. Spread out your purchase of gifts over the weeks of November and early December. It’s easier on the budget, and less stressful than waiting until the last minute. Wrapping gifts can take a lot of time. Instead of wrapping all of them, use a gift bag with a nice bow tied at the top, or use a decorated gift box.

Consider giving an alternative gift to a friend or loved one by giving to a charity in their name. One of my favorite charities is Heifer Project International. Through living gifts of animals, HPI is helping families worldwide to become self-reliant. You can buy an animal that can change the life of a hungry family and at the same time honor family and friends. Visit HPI’s “gift catalog” at http://catalog.heifer.org/index.cfm.

==> Spread the holiday cheer with those in need.

Volunteer to serve a holiday meal to the homeless, work in a soup kitchen, or work at a food bank. Adopt a family for the holidays and provide them with gifts or holiday foods. Many churches and non-profit organizations can match you with a needy family.

Look for a Giving Tree in your local retail stores. The tree is filled with cards that list a specific gift desired by someone in need. You select a card off the tree, purchase the suggested gift listed on the card, and return the gift to the tree with the card attached. The store wraps the gift and delivers it to the intended recipient. The end of the tax year is a great time to review your budget and consider a year-end gift to your favorite charities. This can represent a significant tax deduction if you itemize, while doing great things locally and globally. Continued from page 9

Now that you’re clear about your intentions, calendar them in. Writing them down for follow-up on a specific date will help you to remember to do it and will keep things from falling to the last minute. Here is a list of activities you can pencil in on your calendar: Schedule family meeting to discuss plans and intentions for the holiday season Make airline, hotel, and rental car arrangements (if traveling out of town for the holidays) -- ASAP Holiday decorating (indoor, outdoor, office, etc.) Finalize holiday entertainment plan and guest list Mail invitations or call to invite others to events you have planned Meal planning and preparation (can some cooking be done ahead of time and frozen?) The holiday season is a time for gifts and parties. People are more likely to attend and organize tens of thousands of celebrations and as such the trendy should always be prepared to face such challenges. However, the hype of the holidays can prompt the fashion crowd to end up having major fashion disasters. Fortunately, though these fashion faux pas are quite common, they are not entirely inevitable. Through preparation and a little guidance from style experts, you can definitely void the most common mistakes that people commit during the holiday season.

Excessive Glitz

Every thing that's more than enough is definitely not good. Although it may be a holiday season, you shouldn't put excessive glitz on your outfit. Basically, beads and shimmers are generally okay during the holidays but if the shine and spark is too much, you might look like less of a star and more of a walking Christmas tree. Do not overwhelm people with the glitz that you wear. And, if ever you decide to wear such, do not focus on the parts that you do not want to highlight.

Showing Too Much Skin

Showing too much skin is often not very appealing. While these skimpy outfits might look good on models on the runway, they are fairly no-nos in the real world. Skimpy outfits often make women look sleazy, not pretty. If you want to look your best during the holiday, wear something that leaves a lot to imagination. A pretty dress that will cover but highlight your best features is often recommended.

Nothing To Wear

Before the holiday season, stock-up your closet with your party outfits. Make sure that before the holiday settles in, your dresser is already equipped with few dressy basics such as jeans, dresses, and some appealing shirts. You should always be prepared for parties that will

have last minute invitations. Do not forget to collect accessories as well-from silver chandelier earrings to chain bracelets. However, take note of the fact that you can re-wear some of your outfits. Just make sure that you mix and match your tops and jeans properly.

Too Complex

If you are one hell of a busy girl during this holiday season, then you are not alone. There are many women who approach the holiday season with dismay primarily because they have to deal with many things - gift buying and giving, party organization, reunion coordination, travel plans and more. As such, it will be best if the task of becoming stylish and trendy will not add up to your burden, right? Make things simple. Do not complicate the art of being fashionable. Instead of matching up tops and bottoms, opt for the plain and simple dresses. In most cases, an elegant little black dress will definitely fit the demands of the holiday season. FOOD & TRAVEL CHRISTMAS APPLE PIE 2 pounds pâte sucré (recipe follows page 59) 5 pounds (about 10 large) pippin or Granny Smith apples 6 tablespoons (3 ounces) unsalted butter 1 cup sugar ¼ cup plus 1 tablespoon Calvados 1 tablespoon brandy 2 tablespoons heavy cream 2 ounces (about ¼ cup) chopped dried prunes 1 ½ ounces (about ¼ cup) chopped dried apricots 1 ounce (about ¼ cup) chopped dried figs 1 tablespoon lemon juice 2 teaspoons ground cinnamon 1 teaspoon lemon zest 1 teaspoon orange zest ½ teaspoon freshly grated nutmeg 1 egg white, very lightly whisked 1 ½ tablespoons crystallized sugar

For the next row, alternate the strips that you turn back (2, 4, 6, etc.) and again place a horizontal strip across, close to the first strip. Repeat this procedure until all the strips are used. Refrigerate just until firm.

Divide the pastry into two parts, one a little larger than the other. Wrap the larger piece in plastic wrap and reserve. On a lightly floured surface, roll the smaller piece into a round, 1/8 to ¼ inch thick, large enough to overlap a 10 x 2-inch pie plate. Arrange in the pie plate and even with a sharp knife, leaving about a ½-inch overhang. (Add the trimmings to the reserved dough). Tuck the overhang back under, making a slightly thicker edging. Chill for 30 minutes. If using a glass pie plate, remove from the refrigerator 15 minutes before filling.

Sprinkle in the sugar and over medium-high heat, saute the apples until lightly caramelized and tender, 15 to 20 minutes, turning often so that the apples cook evenly. Pour in 1 tablespoon of Calvados and the brandy and cook until the alcohol burns off. Pour in the cream and stir through. Transfer and spread over a large baking tray to cool.

On a lightly floured surface, roll out the reserved piece of dough into a 12-inch square, about ¼ inch thick. Cut out a piece of cardboard, ½ inch wide and 10 or 12 inches long. Wrap the strip in plastic wrap and use as a guide. With a sharp knife or a pastry cutter, cut the dough into 20 ½-inch strips. Lay 10 strips vertically on the back of a large baking pan, leaving a very small space between strips. Weave a lattice pattern by placing each of the remaining strips over and under horizontally. (It’s easier to weave if the dough is not too firm, but it can’t be too soft, either. If it’s too soft, refrigerate for a little while and then continue). To weave, turn back every other strip of dough (1, 3, 5, etc.), lay a horizontal strip across, as close to the top as possible, and return the turned-back strips to the original length.

Using a 9-inch cardboard round, a plate, or a pot cover as a guide, cut out a 9-inch circle of latticework and refrigerate on the baking pan until needed. (Excess dough can be wrapped and refrigerated or frozen for future use). Peel, core and quarter the apples. Cut into ¼-inch slices. In 2 or 3 large skillets, melt the butter (2 or 3 tablespoons in each skillet, depending upon how many you use) and brown. The butter will have a slightly nutty aroma. Divide the apples, arrange in the pans, and coat with the butter.

Preheat the oven to 400 degrees F. Warm the remaining ¼ cup Calvados. Combine the chopped prunes, apricots, and figs in a small bowl. Pour the Calvados over and let plump. In a large bowl, combine the cooled apples and the plumped dried fruit. Stir in the lemon juice, cinnamon, lemon and orange zests, and nutmeg, and mix well. Spoon the filling into the prepared pie plate. Using a wide spatula, carefully transfer the 9-inch latticework circle and arrange on top of the filling. Brush the latticework with egg white and sprinkle with the crystallized sugar. Bake 30 minutes, turn the oven down to 350 degrees F and bake 35 to 40 minutes longer, until the crust is golden brown. Cool on a rack. Serve warm. Yield: Serves 8 to 10

Some of the extras include coverage for the kids and the grandkids of the traveler, extra coverage for the various events that you can get involved in when traveling. You can get coverages for sporting activities, adventure activities and even business activities to name just a few. There are a couple of disadvantages that should be considered when purchasing annual holiday travel insurance. Disadvantage #1 - May Not Fit Your Needs If you are someone who only makes one or two trips a year, the annual holiday travel insurance policy may not fit your needs. For this type of traveler, the individual travel insurance is probably the best choice to make. Disadvantage #2 - May not be able to meet customized requirements. It may not suit very specific insurance requirements. If you have very customized requirements, the insurance agent may not be able to meet your needs. In a food processor fitted with the steel blade, combine the flour and sugar. Add the butter and process until the texture resembles fine meal. In a small bowl, whisk together the yolks and 1 tablespoon of the cream. Scrape into the machine and process until a ball begins to form, using the additional tablespoon of cream, if necessary. Remove the dough from the machine, and on a lightly floured surface, press down into a circle. Wrap in plastic wrap and refrigerate for at least 1 hour. Yield: Makes 1 1/2 pounds or two 9-inch tart shells

FOOD & TRAVEL PUMPKIN RAVIOLI 8 tbsp unsalted butter 1 lb. fresh pumpkin, peeled and cut in 1-inch cubes 2 c. heavy cream 1/2 bay leaf 2 tbsp minced fresh sage, plus 6 small leaves for garnish 2 tsp fresh thyme leaves Heat a heavy skillet over low heat and add 4 tbsp of butter. When butter is foamy, add pumpkin and cook, stirring often, until it softens. Transfer pumpkin to a medium saucepan, add half of heavy cream and half the herbs, cook over low heat for approximately 30 minutes or until puree is thick and the liquid has evaporated. Stir occasionally. Crush any remaining lumps with a fork. Remove from heat and beat in an additional 2 tbsp butter. Whisk in the beaten eggs. Season to taste with salt and pepper. Set aside to cool. Lay out 3 sheets of pasta. Using a pastry bag or teaspoon, place 8 equal mounds of pumpkin puree on each sheet of dough, about 2 inches apart. Brush around each mound with egg wash. Cover mounded dough sheets with second sheet of pasta and press around mounds to seal the dough. Using a 2-inch cookie cutter, cut out the ravioli. Dust a tray with flour and place the ravioli on it. Bring a large pot of salted water to a boil while you make the sauce.

To prepare the sauce 2 eggs, beaten Salt and freshly ground white pepper 6 sheets, approx 6 x I 2-inches of fresh spinach pasta 1 egg, beaten lightly, for egg wash 1/4 c. semolina or all purpose flour, for dusting 2 c. chicken stock (see separate recipe) 2 shallots, chopped In a medium saucepan, reduce the stock with shallots to 1/2 cup. Add remaining heavy cream and reduce by half. Over low heat, whisk in remaining 4 tbsp butter, a little at a time. Strain the sauce into a clean saucepan and add remaining sage and thyme. Season to taste with salt and pepper. Add ravioli to rapidly boiling water and cook for 4 to 5 minutes. Remove with a slotted spoon. Add ravioli to the sauce and bring just to a boil. Correct the seasonings. Divide the ravioli among preheated plates and spoon the sauce over them. Garnish with a fresh sage leaf. Serve immediately.

Female reindeer retain their antlers till after they give birth sometime in spring. Therefore logic will tell you that Santa's reindeer, who all sport antlers, must be female. Some say this was obvious because we should have known this when they were able to find their way HoHoHo. The Reindeer - who are they? They were first named in the now legendary Christmas poem "A Visit from St. Nicholas" also known as "The Night Before Christmas" first published in 1823. There were eight in the original line-up. Rudolph was added in 1939. 1. Rudolph with his red nose. Heads up the team as the light of the way with his shiny bright red nose so Santa could see through thickening fog, which had previously caused several accidents and delays. The message of Rudolph proved popular, that is, a perceived liability (his nose for which he was ostracize, teased and often made fun of) is often an asset waiting to be discovered! 2. Dasher is the fastest. She was the right-hand leader of the sleigh before Rudolph was included. 3. Dancer can't stop dancing and the left-hand leader before Rudolph was included. 4. Prancer is elegant and good looking and the third reindeer on the right in the second row before Rudolph was included. 5. Vixen is the practical joker and the fourth reindeer on the left-hand side in the second row before Rudolph was included. 6. Comet is the day dreamer looking upon stars and making wishes and the fifth reindeer on the right-hand

side in the third row before Rudolph was included. 7. Cupid is the love reindeer - Santa's second favorite and the sixth reindeer on the left-hand side in the third row before Rudolph was included. 8. Donner is the lover of poetry, giggles and having fun and the seventh reindeer on the right-hand side in the fourth row before Rudolph was included. 9. Blitzen was the last reindeer in the original line-up and her motto was: "Santa saved the best for last" and the eighth reindeer on the left-hand side in the fourth row. While it is known in the Santa world that the reindeer are female, it is a little known fact amongst most people celebrating Christmas and the festive season. The fact is that reindeer lose their antlers by mid-December. While it is true that both male and female reindeer grow antlers in the summer-time, by the beginning of winter, the male reindeer drop their antlers, usually sometime during November and up to mid-December.

So if you now go over the reindeer and their attributes you will see that they take on a different energy when you now consider them female. However, Santa with his busy schedule does not have time for long explanations when out and about, so he doesn't refer to the reindeer as male or female rather only by their names and qualities. Santa believes that we all, male and female, can transform our lives if we take on the qualities of the reindeer. We all need to 'lighten up', laugh more, dream more, take better care of ourselves, reach out and love more and incorporate more fun into our lives. It's good for our health and well-being and peace on the planet. Plus when we have fun and laugh together, we are creating quality time together; connecting more deeply at a heart level.
