THE GRIND ERIN SPENCER

With the lockdown in force, Barista Life turns its focus on indoor activities as a way for the coffee community to be healthy and well during the pandemic. United Baristas founder Tim caught up with Erin over Zoom to talk about her journey to become a yoga instructor, and to make plans to start a weekly coffee community yoga session during lockdown. How did you start in the industry? Like many people I went to classes now and then, but following one community classes at Lululemon that I realized how powerful the practice was for my mental and physical wellbeing. I’ve been riding that wave ever since, making it an integral part to my lifestyle. What do you get out of it? It’s the perfect antidote to an otherwise hectic and fast-paced city lifestyle. I love the freedom of movement, the mental benefits, but above all the community. Everyone is so lovely and supportive – nothing competitive about it in the slightest. Also, contrary to what many might think, yoga builds a lot of strength, both physically and mentally. I think yoga has made me more resilient in all other aspects of my life, particularly working in social media.

ABOUT PUREOVER Pure Over is an all-glass pour over coffee maker designed by Portland, Oregon glass artist Etai Rahmil, launching on Kickstarter in August 2020. Made from pure borosilicate glass, Pure Over uses a built-in glass filter which allows coffee’s rich flavor to fully develop. The process makes coffee using just glass, water and ground beans, delivering a bolder, more flavorful cup of pour over coffee. With art and design at its core, Pure Over is made to be a new staple in your at home coffee routine. Follow Pure Over on Instagram @pureovercoffee and sign up to receive alerts about our Kickstarter launch at: www.pureover.com

Tell me about yourself. What was your inspiration to do what you do? My name is Etai Rahmil and I’m a glass artist and the Founder & CEO of Pure Over. For the past 12 years I have focused on making glass pipe art, creating re-imagined musical instruments, masks and antiques into functional, smokable art. Now, I’m launching an all glass pour over coffee maker called Pure Over on Kickstarter August 25.

What is your favorite food memory from childhood? Favorite food now? My favorite food memory is going to my best friend and Pure Over Co-founder’s house for homemade Persian food as a kid. Nate has been my friend since we were seven years old and now we’re building a business together! I would always leave Nate’s house with plates of rice and kabob.

Please tell me about your company. What do you do that’s different? ER: Pure Over is an all glass pour over coffee maker with a built-in glass filter. It doesn't require any paper filters or pods, just ground coffee and hot water. What’s different about Pure Over is the first of its kind all glass filter. Brewing with only glass and water ensures that no other tastes from filters like paper or metal end up in your cup, just pure coffee.

What is your passion? Over the past 12 years, I have found my passion for making glass art, with a focus on form and function working together and complimenting each other to create an epic final product. Bringing that passion to a new endeavor and industry has been extremely fun and rewarding.

What is your six and twelve month plan? What obstacles exist in your professional world? In six months, we will have delivered the Kickstarter orders to our backers, and have a built out an e-commerce presence on PureOver.com along with other web retailers. Being an artist founded brand, art and the artist, will always be a major focus for Pure Over. By the six month mark, we hope to have our first collaborations in the works and available on limited. BEAN How NYC barista Antonio Guzmán is revolutionizing the cafe industry Antonio has been in the coffee business since his teen years, with experience in both corporate and local coffee shops, and has a real passion for coffee culture. We cover his background in coffee in this interview, as well as how he got to know Rise Café, and he shares a couple of fun stories along the way. Chris: Hey Antonio! Thanks for doing this interview. Let’s get started. How did you get started in coffee? Antonio: Hey Chris! Great to be here. Let’s see…when I was 16, I worked for a coffee shop in California where my dad was the H.R. director, called The Coffee Bean and Tea Leaf. They’re based in L.A. and had a couple of stores in Hawaii and Arizona. It was my first job outside of refereeing sports. I worked there back when it was a pretty good-sized company with about two hundred stores, and now they are public with franchises in New York and Vegas. I worked (continue on page 42)

SUSTAINABILTY

Fair TRade Coffee Brands Worth Waking Up For

Grumpy Mule is stubborn when it comes to their ethics. While short term sustainability is easier to achieve, The Mule has opted for long term standards that drive their roasting and sourcing practices. They’ve worked to earn Fair Trade, Rainforest Alliance and Organic certifications for all of their products brew has a conscious story. These guys are really coffee nerds and you’ll see that passion throughout. Location | London, UK Buy | https://grumpymule.co.uk £4.65 - £5.25 per bag Location | St. Paul, MN Buy | https://equalexchange.coop $6 - $8 per bag

Equal Exchange has been brewing great coffee for over 25 years. Their business was formed through what, at that time, seemed like a novel idea: what if food could be traded in a way that is honest and fair, in a way that empowers both farmers and consumers? Their answer was to start a business that was worker-owned. Their co-op has over 100 worker/ owners and each holds an equal share and voting. 57 | QUICKSAND

Location | London, UK Buy | https://www.cafedirect.co.uk £8.95 per bag

Their quality coffee blends have won them more than 30 Great Taste Awards in the last 8 years and quality relationships have been built on face to face meetings that they conduct with every farmer each year. That same drive for quality has earned them Fair Trade and Gold Standard certifications for their treatment of people and planet. We also love the fact that Cafédirect has made almost 90% of its farmers shareholders in the business and has.

THE NAUTICAL BEAN COFFEE COMPANY

LOCAL FLAVORS

SAN LUIS OBISPO, CA

THIS MONTH'S FEATURED COFFEE SPOT TAKES US TO THE CENTRAL COAST OF CALIFORNIA

From 2002 to 2018, the little coffee shop that could has grown into a tried and true hangout known for fresh, quick breakfast and lunch options as well as a curated list of specialty coffee drinks. Nautical Bean's Nutty Bean coffee, an exclusive hazelnut roast you can purchase by the cup or the bag, rose to cult classic status. During that time, the

family also opened and shuttered another location, this time downtown.

o nC ea al B tic Nau

Between colorful skateboard decks and framed local art (currently featuring Lena Rushing), you'll probably see Nautical Bean owner Brett Jones. Chances are, he's whipping up a Caramel Sutra Vanilla Iced Latte, pouring fresh Whalebird Kombucha from the tap, or just chewing the fat with regulars while “Eggel” sandwiches, kitchen sink breakfast burritos, and turkey club wraps are swiftly prepared behind the bar.

The new digs offer all the same menu items ffe you crave from the OG eC om establishment (including pasp tries, bagels, wraps, salads, flatbreads, any L ogo and sandwiches), but you've just got more room to chill out. Cozy nooks abound and the foyer is sunny and bright, the perfect place to sip on your Shot in the Dark chai latte or “Nautical Bean is a true coffee Rainforest Latte (my fave, made with anomaly. The business isn’t soy, chai, and matte).

geared toward third wave coffee snobs or corporate drones. It's something else. Something a little more approachable, more "San Luis Obispo.”

But Jones knew pretty much nothing about the coffee industry. No prob. Up for anything, Jones quickly got a job at the Nautical Bean. QUICKSAND | 58

ARTIST SPOTLIGHT

GUILIA BERNARDELLI COFFEE TURNED INTO BEAUTIFUL ART What can you do with food and coffee? Just eat & drink, right. But that’s not the case with Bernulia, a creative food artist on Instagram. Have you ever thought of coffee a art? Guilia Bernardelli, known on Instagram as Bernulia is an Italian lady which makes amazing art with leftover foods such as spilled coffee, breakfast and ice cream too. But most of her artwork is done with spilled coffee. As we know, coffee stains are the really a tough one cleaning job, but this brilliant artistic lady turned messy things into beautiful work of art using spilled liquid and a spoon or whatever else is nearby.

99 | QUICKSAND

According to her, she never plans creations in advance. Talking about her unique passion she says, “I decided to replace the brush with what nature offers us. So getting inspired from nature, opposite of other creators who sketch objects with coffee, Bernulia crafted the coffee artworks based on spilled coffee, she edited and give regular coffee splashes a new form by turning into attention-grabbing shapes and pictures. After seeing here artwork with coffee and foods, we bet you will hook on Bernulia’s marvelous art.

FROM BEAN TO

INK

SUBCULTURE

The coffee industry and its niche following, has opened the doors to a whole new subculture of expression, art, and creativity. “You must really love coffee if you got a tattoo of it?” the question so many of us, myself included have encountered on a regular basis. With the many social media accounts and internet pages dedicated to millions of different coffee tattoo ideas, your selection is endless. From minimalistic coffee equipment, simple little coffee cups, coffee brewers, coffee plants and flowers to the outrageous designs of coffee being extracted into a cup, and flowing over to form a coffee farm somewhere in South America with an amazing coffee quote to finish it off. In the end, if you're pro coffee tattoos or against it, the regular coffee drinker, sitting at their desk in the corporate world, won't ever get something so different or outrageous. The avid coffee junkies, the pierced barista or bearded roaster would probably feel different. “Social construct” around strange looking coffee tattoos won't always be easy to explain to our friends, family, and customers. It's our crazy obsession with something exclaimed as “simple” or “ridiculously overpriced” that brought us to the forefront of always finding new ways to innovate, adapt, change and invent! Today, more than ever, the art and freedom of self-expression through tattoos, written word, language or whatever has become more important and fundamental than 50 years ago! Coffee tattoos won't always be what we thought it would be, but in some way, it's a mark left by an ever-changing industry, an industry that never fails to deliver - from bean to ink!
