Pineapple-Habanero Chutney

Coconut Shrimp

with Pineapple-Habanero Chutney Adapted from Emeril Lagasse and Jessie Tirsch’s “Emeril’s New New Orleans Cooking”

Coconut Shrimp Canola oil, for frying 2/3 cups all-purpose flour 1/2 cup cornstarch 1 large egg, beaten 1 cup shredded or flaked coconut 1 cup ice cold soda water In a heavy pot, heat 2 inches of oil over medium-high heat to 350 degrees F. In a medium mixing bowl, combine the flour, cornstarch, egg and soda water. Mix well to make a smooth batter. Measure the coconut into a shallow dish. Season the shrimp with 1 tablespoon of seasoning mix.

1/2 teaspoon salt 1 pound large shrimp, peeled and deveined, tail on 1 1/2 tablespoons seasoning mix (i.e. Cajun, Creole, Emeril’s Essence) Pineapple Habanero Chutney, recipe follows Holding the tail of the shrimp, dip it in the batter, coating completely and shaking off the excess. Roll shrimp in coconut. Fry the shrimp in batches until golden brown, about 4 to 6 minutes. Drain the shrimp on paper towels. Season with the remaining 1/2 tablespoon of seasoning mix.

1 tablespoon butter 1/2 cup chopped onions Pinch salt 2 cups small diced pineapple 1/2 cup small diced red bell pepper 1 tablespoon minced habanero 1/2 cup white vinegar 1/4 cup sugar 1 1/2 teaspoons cornstarch 1 tablespoon water Melt the butter in a saucepan over medium heat. Add the onions. Season with salt, and saute for 2 minutes. Add the pineapple, red bell pepper and habanero. Continue to saute until the pineapple is soft, about 7 minutes, stirring frequently. Add the vinegar and the sugar. Bring the mixture to a boil. In a small bowl, combine the cornstarch and water, and whisk until smooth. Stir the slurry into the pineapple mixture and return mixture to a boil. Continue to cook for 4 minutes, stirring constantly. Remove from the heat. For a smoother consistency, pour the chutney into a blender or food processor and blend. from ezrapoundcake.com

BALANCING life in the school year By Suzanne Swearengen, DOM The temperatures are still high, but according to the calendar, summer vacation is coming to an end. This can be a blessing for some who want their day back to complete projects while the kids are in school. Others use this opportunity for some quiet time. Individuals seeing their children off to school or college for the first time are experiencing a strange, yet wonderful combination of anxiety and excitement. Perhaps the most demanding scenario is the adult going back to school to pursue a graduate degree or continuing education. The beginning of the school year represents change, and requires adjustment. This creates hectic schedules and stress. In order to maintain sanity and good health, have a plan. Juggling school, family and work is a challenge. Be diligent in creating and maintaining a balanced schedule. Otherwise, you end up on a bumpy road to bad habits and poor health. Most people convince themselves that they will get back on track when they have completed the curriculum. Often, this does not work. Here are some things that do work:

Set a schedule. Be realistic. Sign up for class times that work for you. If options are not available, arrange everything around them. Have set days for family fun, school, study time, and your job. Designate 1-2 days off for yourself to spend as you wish. This will maintain balance in your life and prevent burnout. Be persistent about keeping this schedule and do not be afraid to ask for help. Understandably, exam time changes things. You may have to sacrifice your planned days off for studying during that week. Avoid succumbing to stress and resorting to comfort foods. Instead, find substitutes for the hand to mouth cravings like almonds, cherries, or frozen grapes. Licorice root, Orange zest, and Chinese dates are also beneficial due to their ability to harmonize the organ systems. Be sure to reward yourself afterward with something like a nice dinner or a one-day mini vacation. It is important not to allow exams to throw you off your routine beyond the day you take them. Following these guidelines ensures achievement of you academic goals

while minimizing stress. In medium pan, combine chicken, taco sauce, chicken stock, salt and pepper, and cook on low, covered, approximately 2 hours, or until internal temperature of chicken reaches 165°F. Remove chicken from pan and shred using two forks. Turn heat to medium-high and reduce cooking liquid into thick sauce, cooking 3-5 minutes and stirring occasionally. Remove from heat and combine sauce with shredded chicken. Serve in taco shells with desired taco toppings.

In large bowl or re-sealable plastic bag, combine chicken breasts with green taco sauce. Stir or shake to coat. Marinate at least 30 minutes or up to 2 hours. Heat oven to 350°F. Bake chicken 15-20 minutes, or until internal temperature reaches 165°F. Let chicken cool 10 minutes then cut into small cubes. In medium bowl, combine refried beans and salsa. Transfer prepared pizza crust to baking sheet. Spread bean mixture over dough, leaving 1/4 inch at edges for crust. Top with peppers, green chiles, chicken and cheese. Bake 10-15 minutes, or until crust is golden brown and cheese is melted. Top with taco sauce and crispy onion toppers then serve.

Prepare tater tots according to package directions. Heat medium skillet over medium heat. Cook ground beef 4-5 minutes until browned, using wooden spoon to break into small pieces. Add taco seasoning and water. Cook until water evaporates and sauce is thickened. Top hot tater tots with cooked ground beef and cheese, and broil in oven 5 minutes.
