For this issue, we’ve opened the space to be a platform for Thai/ International student to express their talent. Kenny J, Deakin University’s graphic design student lends us a hand in making artwork for this month’s calendar. Miss Panatcha took us to a little secret cafe that offers brunch with a punch. We also went and discovered Brandon Kim (Local Talent), a hidden gem in one of our favourite places, Middle Fish. (It’s amazing how faith knocks on your door. Faith called Mr. Can. lol. ~ Thank you) For the cook in you, Humming Chef took it up a notch with delicious recipe that’s so simple to follow and adjust. Dr. Labee also shares his insights on why why why waiting longer in ER isn’t so bad. Brandon Kim is a South Korea born, Melbourne-based fashion designer whose ‘Less is More’ approach to design gives him good focus on sharp clean lines, sophisticated f inishing and functional detail. Certainly there’s no compromises for quality. His Iconic Revolution 360 collection is an extend of the award winning A Tailored Skater Boy 2013 collection that still keeps the essences of street-to-studio very well. (I could picture recent graduates on skateboard to work. How very Melbourne. )

We all know how multicultural our city is so it’s not too surprising to see bunch of friends from various nationality hanging out together. That being said, Melbourne also has vase variety of gastronomical wonders from any cuisine you could possibly imagine but what Melbourne can’t live without is cafe-life. You see, Melbourne people seem to live for coffee, and it’s a good place to meet up with friends and chat while zipping some good coffee. So we are taking you to hunt for a good cafe with good food and enjoyable ambient. Today’s pick is very close to the city. It’s a medium sized cafe with very lovely staffs who take care of you very well. The name is Proud Mary. Which, we must say, it is vibrant with customers every time we visit. Our recommended menu is the basic but we are happy to give it an easy 4 (stars), the Potato Hash. There’s no way to you’d be disappointed with with dish. The one missing star is for the sauce that was a tiny bite too salty for our taste. So we added a little sweetness to our palatte with a side order of mocha, so we get the sweetness from chocolate, the creaminess from ice-cream and the nice hint of coffee aroma. That’s was all it take to enjoy every bit of the meal.

เมนูแนะนำ�ของเราในวันนี้ก็คงจะเป็นเมนูเบสิคง่ายๆอย่าง Potato hash แต่ความอร่อยขอ ติดสี่ดาวให้ไปเลยค่ะ ใครได้มาลองรับรองไม่ผิดหวังแน่นอน อีกหนึ่งดาวที่หายไปต้องขอหัก ไปกับความเค็มไปนิดของซอสค่ะ ดังนั้นเราก็ต้องมาเติมความหวานด้วยไอซ์มอคค่ากันค่ะ ได้ รสหวานของช็อคโกแลต และความมันของไอศครีม บวกกับรสหอมเบาๆของกาแฟ แค่นี้ก็ ทำ�ให้คุณเพลิดเพลินไปกับอาหารมื้อนี้แล้วล่ะค่ะ สำ�หรับเพื่อนๆที่ยังไม่รู้ เมนูไอซ์ของคาเฟ่ในเมลเบิร์นส่วนมากเขาจะใส่ไอศครีมแทนน้ำ�แข็งค่ะ หรือบางที่ก็ใส่ทั้งสองอย่างค่ะ น้อยที่ที่จะใส่น้ำ�แข็งอย่างเดียว
For those who is unfamiliar with iced-coffee in Melbourne, most of the iced-coffee is topped with ice-cream, not ice like we are used to at home. Although some cafe does it with both, hardly any cafe will topped the drink with ice alone.

The yummy experience does not stopped there, we simply MUST top up our love handle with Ricotta Hotcake, topped with banana, blueberry, and coconut ice-cream with drizzle of maple syrup. Simple ingredients but it’s a match made in heaven.

COOK | Salmon Zab คนไทยถูกสอนมาว่าไม่ทานอาหารสุกๆดิบๆเพราะอาจเป็นพยาธิ ท้องเสีย อาหารเป็นพิษ แต่คนญี่ปุ่นกลับพยายามลองทานทุก อย่างในขณะที่เนื้อสัตว์นั้นยังดิบๆอยู่เพื่อสัมผัสถึงรสชาติและ texture ที่แท้จริงของอาหารนั้น แทบทุกสิ่งทุกอย่างถูกทาน แบบ sashimi คือทานแบบดิบ อาจจะจิ้มซอสและวาซาบิบ้าง ทานกับหัวไชเท้าบ้าง ใบชิโสะ โอบะ แตงกวาและอื่นๆเพื่อดับคาว แก้เลี่ยนและชูรสเนื้อสัตว์นั้นๆ โดยที่เนื้อสัตว์นั้นต้องเย็นจัด ถูกแล่มาด้วยมีดที่คมมากๆ เพื่อคงสภาพสีสันและลวดลายใน เนื้อนั้นให้มากที่สุดและมักจะถูกจัดวางมาอย่างสวยงาม เพราะ เนื้อสัตว์และปลาต่างๆ ตอนที่ยังไม่ผ่านความร้อนล้วนมีสีสัน สดใสลวดลายมากกว่าตอนที่สุกแล้ว ในขณะที่คนไทยเองแทบ ไม่มีเมนูของดิบเลย เนื่องด้วยประเทศเราเป็นเมืองร้อน ทำ�ให้ การนำ�เสนอเมนูอาหารดิบเป็นเรื่องที่เสี่ยงอันตรายต่อสุขภาพ
วันนี้เชฟขออนุญาตนำ�เสนอเมนูสุ่มเสี่ยง (~เสี่ยงว่าจะติดใจ 55555) คาดว่าหลายคนคงคุ้นเคยกับกุ้งแช่น้ำ�ปลากันแล้ว เมนูดิบหนึ่งในไม่กี่อย่างที่คนไทยเคยกิน แต่กุ้งที่นี่ไม่เอื้อ อำ�นวยเท่าที่ควร เลยต้องปรับเปลี่ยนมาใช้วัตถุดิบท้องถิ่นที่ ควรค่าแก่การทดแทนมากๆ Atlantic salmon นั่นเอง เอา มาราดน้ำ�แซบๆเพื่อให้กรดจากน้ำ�มะนาวเป็นตัวทำ�ให้เนื้อปลา สุก แต่ถ้าเรารอให้มันสุก มันก็ไม่อร่อย ต้องรีบทานทันที การ เอาน้ำ�เปรี้ยวๆมาราดแบบนี้ฝรั่งเค้าก็มีนะ เรียกว่า ceviche (เสอะ-ฟีช~ชฺ ใส่สำ�เนียงฝรั่งเศสด้วย 555 ) เอ้าๆๆ ยาวละ วันนี้ความรู้มาเต็ม ชักจะไปกันใหญ่ พอละๆไป เข้าครัวดีกว่า Atlantic salmon

“Holy hell.” Rob shined his flashlight on the wreck. The metal hull was covered in jagged rents, and the smooth curves had been crushed and dented, but the basic shape was still there. Two arms, two legs, and a head.“Guys, it’s a robot!” Mark was at his side in an instant. “Look at that. It’s got a duralloy frame. It must be a pre-Collapse model! Do you realize what this means?” “Yeah, that much duralloy could pay our rent for half a year.” “That’s what you notice? The scrap value?” “Take a look at the damn thing! Its arms and legs got torn off. It’s basically just scrap metal, now.” “Now, now, boys. Let me take a look at what’s inside first.” Jen knelt down in front of it and lowered her goggles. She moved her head slowly as she probed the robot’s internal structure. The pre-collapse sensor goggles had been a lucky find, and they had led the crew to many more lucky finds. “Guys... You’re not going to believe this. It’s still alive.” “Alive?” “Well, whatever the word is for a robot. It’s still thinking. The computer core is still active, it looks like there’s a deep-reserve battery that’s keeping it alive. The wires running into the head are still intact, so it might even be able to see us.” “Can we talk to it?” Mark asked. “If you can get it a power source, I don’t see why not. Just need to convince it that it can come out of sleep mode.” Rob pulled his backpack off his shoulders. “Well,
we’ve got a big universal pack in my bag. That should be plenty of power, right?” Jen nodded and pulled off the goggles. “That’ll do just fine. Help me get this front panel off, would you? The poor guy’s lost his charging outlet, I think we need to wire it up direct.” With a little bit of grunt work, they managed to get the robot plugged into their power pack. Almost immediately, its eyes lit up, and it turned its head to regard them. “Hey, it worked!” “Robot, can you hear me?” No answer. Jen slipped the goggles back on. “The wires going into the limbs are buzzing. If it still had legs, this thing would be running around screaming, I think.” “How’s the voice box? Can it talk?” “Yeah, just let me hook it up and...” “YOU ARE IN A RESTRICTED AREA. LEAVE IMMEDIATELY.” “Gah! That thing is loud.” Jen prodded something in the mass of wires in the robot’s head. “Lemme just lower the gain a little there.” “You are in a restricted area. Leave immediately.” Mark raised his hands. “Robot, the facility you are guarding has been decommissioned. Stand down!” “You are not authorized to give commands. You are in a restricted area. Leave immediately.” “Everyone in here has been dead for three

Can you tell us the way out of the restricted areas?” “Error retrieving facility-wide maps from server. Local cache is corrupt. No answer available.” “Ah! You see? This thing is such a dummy because it gets its marching orders from a central server. We find that, and we’re in business.” Rob shrugged and gathered up his backpack. “May as well. I don’t see why you’re so intent on getting something out of that scrap pile, though.” Jen unplugged the power pack and stood up. “Oh, come on, boss. You can’t tell me you aren’t a little curious. We might find out something about the Collapse.” “Yeah, maybe we’ll find out they were all driven insane by robots that wouldn’t shut up.” The explorers laughed as they moved further into the ruins. ...........

Floral charms, decorations and arrangements has been our traditional way to express grace and make religious offering for generations. Eventually the delicate works develop into a form of Art and Wirin has taken it to the next level. Her geometric minimalist artworks pick out the essence of traditional floral arrangement and produce an outstanding artwork. Now you don’t have to be a sweetie to like floral arrangement. Wirin artwork’s preserved unique forms of traditional arrangement well so it’s conveniently recognisable for those who are familiar with Thai floral arrangements. At the same time, the minimalist take on the pieces and choice the colour platelet add splash of modernism and bring out the beauty that can be easily appreciated by anyone. The every f i rst set of artworks were done for her f i nal year thesis at Silapakorn University. With the popular request from friends and curators, Wirin started to create some limited editions and eventually developed into Pub Piab Riab Roy brand that we know today. What to see more of Pub Piab Riab Roy’s pieces? Her collection is on Behance. Wirin is also hosting workshop at The Museum of Floral Culture, Bangkok from time to time. At a quick glance, you’d think that these images are a professional calendar photo or a desktop wallpaper images but really it’s a photograph by Mr. Ruangpratin KIAOSOD taken at Chom Dao Islet, Na Tan District, Ubon Ratchatani. Mr. Ruangpratin captured an eye engaging point well which makes the spectacular view even more enchanting. ~ Even more impressive than those in the commercial stockimages, actually. ~ It’s almost unbelieveable that Thailand would have something like this hidden in the unseen part of the country. stay HEALTHY สำ � หรั บ ปั ก ษ์ ที่ แ ล้ ว ผมได้ อ ธิ บ ายถึ ง การพบคุ ณ หมอสำ � หรั บ การป่ ว ยแบบ ธรรมดาในดินแดนจิงโจ้แห่งนี้ไปแล้วนะครับ คราวนี้ผมจะมาบอกเกี่ยวกับการ พบคุณหมอสำ�หรับผู้ป่วยที่มีอาการหนักกันบ้าง
“การรอของคุณ อาจจะต่อชีวิต ของคนคนนึงก็เป็นได้” “อาการหนัก” จริงๆ แล้วเป็นอย่างไรนะ ? จากประสบการณ์ของผม เมื่อเรารู้สึกไม่ไหวแล้ว รู้สึกว่าเราอาการหนัก ต้อง ไปหาหมอ ต้องการพบหมอโดยด่วน แต่อาการที่เรียกว่าหนักจริงๆ ตามหลัก การแพทย์จะมีลักษณะดังนี้ คือ รู้สึกเจ็บหน้าอกหรือปวดหัวอย่างรุนแรงแบบ ไม่สามารถควบคุมตัวเองได้ หัวใจเต้นผิดปกติ ปวดท้องจนทนไม่ไหว หายใจ ไม่ออก เป็นลม/สลบ ปวดตา มีบาดแผลใหญ่เลือดออกไม่หยุด เป็นไข้สูงไม่ หาย ฯลฯ ซึ่งจริงๆมีเยอะกว่านี้ ซึ่งผมจะกล่าวถึงในครั้งถัดๆ ไปครับ เจ็บจัง ทำ�ไมคุณหมอถึงไม่มาซักทีล่ะเนี่ย หมอจ๋าาาา !!?!! การที่เราดั้นด้นไปหาคุณหมอถึงโรงพยาบาล นั่นเป็นเพราะเรารู้สึกว่าเราเจ็บ ป่วยมาก ไม่ไหวแล้ว โดยหน่วยงานที่เราต้องไปติดต่อคือ “ห้องฉุกเฉิน” เพื่อ ทำ�การซักประวัติและอาการก่อนจะเข้าพบคุณหมอ ซึ่งบางครั้งเมื่อคุณมาห้อง ฉุกเฉิน คุณอาจจะรู้สึกว่า “ชั้นมารอนานแล้วนะ ทำ�ไมหมอไม่มาดูซะที แอบอู้รึ เปล่าเนี่ย” หรือ “ทำ�ไมคนที่มาทีหลัง ถึงได้หาหมอก่อน ทั้งๆ ที่ก็ไม่ได้ดูจะ อาการหนักไปกว่าเราเลย” ซึ่งจริงๆ แล้ว คุณพยาบาลที่ซักอาการเราจะเป็น คนแบ่งคนไข้ออกเป็น category ต่างๆ ตามความร้ายแรงของอาการ ซึ่งจะ ใช้ระบบที่เรียกว่า triage ซึ่งเป็นระบบที่ได้รับการยอมรับและใช้การอย่างแพร่ หลายในโรงพยาบาลทั่วโลก ซึ่งระยะเลาการรอของคนไข้ก็จะถึงกับว่า อาการ ของคุณจัดอยู่ใน category ไหนนั่นเองครับ Triage คืออะไร ? Triage คือระบบที่ใช้แบ่งชนิดของอาการของคนไข้เป็น category 1 เรื่อย ไปจนถึง category 5 โดยจะแบ่งตามความร้ายแรงของอาการ โดยที่ category 1 หมายถึง ผู้ป่วยมาด้วยอาการหนักที่สุด ต้องได้รับการรักษา ทันทีไม่งั้นจะถึงชีวิต และ category 5 หมายถึง ผู้ป่วยมาด้วยอาการเล็กน้อย ไม่มีความจำ�เป็นต้องได้รับการรักษาทันที โดยผู้ป่วยใน category 5 นี้อาจ จะต้องรอถึง 6 ชั่วโมงหรือมากกว่า ถึงจะได้เข้าพบคุณหมอ เพราะเมื่อมีคนไข้ ที่ต้องการความช่วยเหลือมากกว่าก่อนมาใหม่ คุณจะต้องหลีกทางให้พวกเขา เพราะถือว่ามีความเส่ียงที่จะเสียชีวิตมากกว่าคุณนั่นเองครับ ซึ่งหลังจากที่คุณ หมอได้วินิจฉัยโรคเป็นที่เรียบร้อยแล้ว คุณจะสามารถกลับบ้านหรือต้องนอน ค้างที่โรงพยาบาล ก็อยู่ที่การวินิจฉัยของคุณหมอ ซึ่งสำ�หรับที่ออสเตรเลีย แล้ว ทางโรงพยาบาลจะเน้นให้คนไข้กลับไปพักฟื้นที่บ้านมากกว่าที่จะต้อง นอนโรงพยาบาลครับ

เอาล่ะครับ ผมหวังว่าทุกคนคงจะเข้าใจหลักการของการพบคุณหมอในดิน แดนจิงโจ้แห่งนี้ รวมถึงระยะเวลาที่ต้องรอในการพบคุณหมอกันแล้วนะครับ ครั้งหน้า ถ้าต้องรอพบคุณหมอเป็นเวลานานๆ ก็อย่าอารมณ์เสียกับคุณหมอ กันเลยนะครับ เพราะพวกเราก็อยากจะรักษาทุกคนให้ดีที่สุดและไม่ต้องการ ให้คนไข้ต้องรอนานเหมือนกัน... ผมขอให้คิดซะว่า เวลาคุณรอพบคุณหมอ เหมือนกับคุณกำ�ลังทำ�บุญให้คนที่เจ็บมากกว่าได้รับการรักษาก่อน ไม่แน่นะ ครับ การรอของคุณ อาจจะต่อชีวิตของคนคนนึงก็เป็นได้ Dr.Labee | หมอระบี
