Spicy Carrot & Ginger Dip
Homemade Pita Chips The perfect chip to spread your dip on. And so simple to make. Cut up some Lebanese style pita into slices and pull apart to make single layers. Lay out on a baking tray, brush one side with olive oil, and sprinkle on a powdered mix of paprika, chili pepper, and garlic salt. Bake for 4-5 minutes at 400°F, until they start to turn crispy and slightly golden.
Carve out a decorative pumpkin as a serving bowl, this is a wonderful fun way to celebrate Fall!
½ Tub Sriracha Humble Seedz Cream Cheeze 100gm Carrots (approx. 1 cup when chopped) 1 Tsp Fresh Ginger 1 Tbsp Extra Virgin Olive Oil
Chop up the carrots and ginger, and put in a blender with the olive oil. Blend into a nice paste, then transfer into a small bowl, and add the Humble Seedz. Give it a good mix with a fork, and for serving, add some grated carrot for a bit of colour and texture.

Roasted Eggplant & Chickpeas Serves
2 Tbsp Sriracha Humble Seedz Cream Cheeze 1 Cup Chick Peas 2 Small Eggplants 2 Tsp Paprika 1 Tbsp Extra Virgin Olive Oil Pomegranate Mint Leaves

Heat the chickpeas in a small pan, and mix in the EVOO and Humble Seedz until nice and creamy. Slice the eggplant lengthways, brush with EVOO and place on baking tray, along with sliced cherry tomatoes that have also been brushed with oil. Bake in the oven at 385°F for approx. 35 minutes, until eggplant is soft and golden. To serve, spread the creamy chickpeas onto the eggplant, add the tomatoes, sprinkle on the paprika, and garnish with the pomegranate and mint leaves.
Idea
If you just make the creamy chickpeas, it’s a great side dish. Or eat it on its own as a snack!
Roasted Tomato Soup 1 Tub Original Humble Seedz Creame Cheeze 12 Plum Tomatoes 4 Cup Veg Stock 1 Large Onion 4 cloves of garlic ¼ Cup Extra Virgin Olive Oil 1 Tsp Salt 1 Tsp Pepper 2 Tsp Dried Basil
Preheat oven to 400°F. Cut plum tomatoes in half, scoop out seeds and discard. Place open side up on a cookie sheet leaving enough room to add onions and garlic. You may need two sheet pans for this. Peel and roughly chop the garlic and onions. Add to the sheet pan with the tomatoes. Sprinkle the tomatoes with salt, pepper and basil. Drizzle olive oil over the veggies and roast in the oven until tender and golden, about 45 min.
Once cooked, add all the veggies to a large pot, add veg stock and bring to boil. Simmer for about 15 min and then use a blender to purée soup smooth. Return to pot and taste and adjust seasoning. Add the Humble Seedz Original cream cheese and use a whisk until smooth. Serve hot and enjoy

Serve with wholegrain bread spread with Humble Seedz & sautéd onions or sauerkraut.
Creamy Fall Vegetable Stew Serves

½ Tub Garlic & Herb Humble Seedz Cream Cheeze 2 Acorn Squash 1 Sweet Potato 1 Onion 3-4 Small Carrots 360ml Jar Cannellini Beans 3 Cups Organic Veg Broth ½ Tbsp Apple Cider Vinegar Sprig Rosemary 1 Tbsp Extra Virgin Olive Oil Salt & Pepper
Slice off bottom of squash so they stand up. Cut tops off, and scoop out seeds. Then scoop out some of the flesh and put to one side, leaving approx. ½ inch thickness to the “bowl” sides. Peel and chop sweet potato and boil until soft. Drain water, add 1 cup of broth, and mash. In a large pan, sauté finely chopped onion in olive oil on a medium heat, until golden brown. Add sliced carrots, squash flesh, Humble Seedz, and 2 cups of broth, and mix well. Add chopped rosemary, salt & pepper to taste, apple cider vinegar, and beans. Gently stir and leave to simmer. Brush the scopped out squash with EVOO and place in oven for 45 minutes at 375°F, until flesh is soft. Stick a fork in to check. Serve stew in the “bowls” garnished with rosermary.
A hearty Fall meal in an edible bowl
If you want to serve the stew in a regular bowl (as cover photo), then just use one squash, cut up into small squares and roast until soft. Mash up with the sweet potato.
Pizza Pockets For this recipe you can buy ready made fresh pizza dough, or try making your own. It’s not as tricky as it seems. Searching for Jamie Oliver’s Oliver’s dough recipe online is a good place to start, if you want to give it a go. Roughly chop and sauté the onion. Chop up your squash and beets into small cubes, rub on some olive oil, sprinkle some salt and pepper, and roast until soft. Approx. 30 mins. Make 2-inch balls from your dough, and roll out to approx. 6 inch diameter circles. Place some pieces of beet, squash, onion. With a small spoon, scoop on pieces of Humble Seedz, and some sage leaves. Fold over to make a closed pocket, and make ensure edges are folded over and crimped. Bake at 475°F for approx. 25 minutes, until slightly browned. Enjoy!
