Easy ways to wow your guests By Ashlyn Daniel-Nuboer
First things first
Begin the party planning by creating your guest list. According to professional event planner Laurie Mantegari of Everyday Details (85 Barbour Road, Hampton, N.H., 603-601-6223, everydaydetails.com), it is best to get party invitations out six to eight weeks before the event. To make your invitation pop, Mantegari recommends sending an initial email invite, followed up by a paper invitation in the mail as a reminder. Follow-ups become really important during a busy time of year, Mantegari said. “I feel like a hard copy [invitation] is classy,” Mantegari said. “People love to get something in the mail that isn’t a bill.” Depending on how much time you have before the date of the party, consider the guest list and who you think will actually attend in order to plan accordingly as the RSVPs trickle in. With longer notice, more people are likely to be able to make it. If you are looking for a smaller, more intimate party, shorter timing may work in your favor. Mantegari suggests a party time from of 6 to 9 p.m. “Three hours gives people ample time to socialize with one another,” Mantegari said. Mantegari also said a three-hour time
frame enables people to arrive early and leave early, while others arrive late and stay until the end. For those fashionably late guests, there is still enough time for everyone to enjoy the holiday festivities without exhausting the person who has to play host all evening.

If you’re planning a last-minute Christmas gathering or a New Year’s Eve soiree, the color scheme and decorations should be fairly easy. When in doubt, green, red and silver make for a festive setting no matter the type of holiday party. Mantegari has been in the business 26 years, long enough to know that keeping it simple can really go a long way. For a more formal setting, Mantegari recommends a color palette combination of reds, greens, silvers or gold. To add your own flair, try including one pop of color

The words “easy” and “party planning” do not often go together. However, The Scene has the scoop on just how easy it can be to throw a party, whether it’s a fancy holiday cocktail party or a laid-back game night, with tips from the professionals who do it for a living. Start by narrowing down what kind of party you’re going for — casual or formal? — and from there you can start thinking about the basic elements, from food to playlists to decorations.

to liven up the usual holiday scheme like blues, purples or even a shade of blush. Particularly with casual parties, like an ugly sweater party or a pajama party, strive for decor that will match the theme. For the former, anyone can make decorations look ugly; for the latter, you could go with soft colors, cozy blankets on the furniture and dim lighting and candles. Believe it or not, there are decorating supplies all around you. Dive into your box of holiday ribbons and pull out the spools that match your desired color scheme. Ribbon is extra handy when decorating to add dimension to your decor. Vases, candles and any round containers can become part of the holiday statement with the addition of ribbon. If you are having a sit-down holiday dinner party, chairs can become part of the decorations by styling with bows made of ribbon and tied around the back of the chair with the bow displayed from behind. “Recently I planned a holiday party where there were birch vessels,” Mantegari said. “I took holiday ribbon, a nice kind of bright red ribbon with white

polka dots on it, and I ran it around the middle of the round [vessel] and tied it into a nice bow.” Table centerpieces are another great way to decorate and take up space that might otherwise have looked empty, Mantegari suggests. A vase or glass vessel can decorate a table. Fill it with flowers or even water, then add objects like cranberries to sit atop the water or even floating candles to add to the chic cocktail party theme. Mantegari recommends using roses as the holiday flower of choice to cut costs. Surprisingly, roses have become one of the more inexpensive flowers to purchase, Mantegari says. “For this time of the year, a lot of things that are great for decorating are things that have lights or candles,” Mantegari said. This time of year you can dig into your plastic bins of Christmas lights and pull some out to incorporate light into the ambience. Although Mantegari would rather keep the Christmas lights outside, small sets of lights like the 100 mini light packs or even battery-powered lights can be used throughout your party space to maintain a stylish or relaxed atmosphere, depending on the desired party theme. Another decorating resource that surrounds us is the outdoors. Put on your snow boots and take your gardening
Although websites like Pinterest and other DIY (Do-It-Yourself) resources may look easy to imitate, Mantegari suggests only tackling the projects that take 30 minutes or less to create to avoid overloading yourself. The party pro also believes adding your own touches to DIY projects is a great way to incorporate your own style.

shears outside. Take a walk in your backyard or local forest to collect valuable decorating items like small bunches of pine tree cuttings, princess pine (also known as ground pine and prince’s pine), pine cones and other greenery. “You can do something simple and sweet using greenery and put it in the middle of your table or have it on the
outskirts of your tables.” Mantegari said. The fresh and not to mention free greenery you decide to use can be utilized in multiple ways. Twinkle lights entwined within greenery can create a soft glow throughout the entertaining space. To add color, string together cranberries to wind throughout the greenery
for a simple pop of red. Like Mendari suggests, the greenery can be used in a centerpiece or displayed on top of tables to add a touch of holiday flair. Princess pine can be strewn together to decorate a mantel or windowsill, or you can bunch together pine tree trimmings and tie with ribbon to sit on top of the dinner plates.
Avoid the sound of silence
Music is a major component of a party no matter the level of elegance or simplicity. Sometimes the music is forgotten until right before the guests arrive. This year, take some time to consider the type of music to keep you from defaulting to an old Disney Christmas CD or ’90s par-

ty music (unless, of course, your party has a ’90s theme). If you’re willing to go all out, live music can take your party to the next level. “Ambience is really key,” Mantegari said. “This time of year you can reach out to a really great cellist or violinist or
maybe a duo of piano and violin together to play at a cocktail party for a [reasonable price].” If live music is a bit too formal or just not in the budget, another option could be to create your own personalized party playlist. Whether on Apple Music, Spotify or other online services that allow
Partying with wine
What to get and how much you need Wine is a staple at many parties, because it helps people relax and can often be a conversation piece. One question that arises a lot during party planning is, how much wine do I need? What if I want to offer beer too? If you’re standing in the aisle of a store and you’re stuck, don’t worry. Thankfully, there are some great online tools available to help. Typically, each 750ml bottle of wine contains four glasses of wine (based on a standard pour). According to VinePair.com, the average person drinks three glasses of wine with dinner. These numbers are great, but they aren’t necessarily helpful when you are looking at the overall number you need for a party. VinePair has a tool called “The Dinner Party Wine Bottle Calculator” on its website that lets you choose the number of guests, including hosts; whether or not there will be a cocktail hour; red, white or both; and a preference on red or white for an extra bottle to have on hand. For example, for a party with six people, with no cocktail hour, with an even split of red and white and an extra bottle of red, VinePair suggests four bottles of red and two bottles of white. Using these same selections but with a cocktail hour, VinePair suggests two bottles of sparkling wine for the cocktail hour in addition to the other bottles. This is based on one glass of sparkling wine per person during the cocktail hour.
Total Wine.com has a Drink Calculator tool that will help you determine the amount of wine, beer and spirits you’d need. For example, for a party with six guests lasting three hours where wine, beer and spirits are served, Total Wine suggests three 750ml bottles of wine, eight 12-ounce beers and one 750ml bottle of spirits. Then it would be up to you to determine what kind of wine, beer and spirits to serve. After looking at a few of these tools, the safest bet is one bottle of wine per person. However, that is based on the “average” wine drinker, and I know I have some more enthusiastic wine drinkers in my family and friend group. So if I were planning a gathering based on those numbers, I would make sure I had some extra bottles on hand just in case. The nice thing about wine is that it does not go bad; it can be stored in the wine rack until it is time to drink it. Of course, when you are serving wine, beer and other spirits, it is best to offer snacks to go along with them. Depending upon the style of the party (appetizers versus a sit down dinner), you could put out grapes, cheese, crackers, olives, nuts, and anything else your guests may like. I have heard that olives are a good choice while drinking but I am not sure if that has been scientifically proven. It is also a good idea to offer some non-alcoholic beverage options as well like soda, seltzer and water. — Stefanie Phillips

you to create a playlist, there are many ways to add to the ambience of your party without a live musician. To create your own playlist, refer back to the theme of your party: elegant cocktail party or a casual get-together? If you are not up to date on your classical favorites to play at the formal party, you can check out classical or instrumental stations on Pandora.com, the internet radio streaming service.
The most important party ingredient
Food and drink, especially at a cocktail party, are primary pieces of the successful party puzzle. Don’t skimp on quality food, said Jay Curcio, owner and executive chef at The White Apron (1

Washington St., Dover, N.H., 603-6173555, thewhiteapron.com). If your party does not have to include a sit-down dinner, your wallet can be spared. No matter the type of party, most guests do not expect a sit-down meal to begin with, which often makes appetizers the main focus. Don’t let the thought of homemade appetizers cause stressful images of a sweaty host slaving over the oven all evening.Curcio offered a few options to send you smoothly sailing into the party. Prep the night before, he says. There are plenty of foods that can be made in advance to keep the day of the party stress-free. Impress your guests with appetizers by adding an ingredient with a twist. “Today I just made some pistachiocrusted chicken.” Curcio said. “You just take chicken breast and bread it with egg, flour and pistachios. Then you fry them. They’re basically like a form of nice chicken nuggets.” Although Curcio shows off his skill by serving the pistachio-crusted chicken with an apricot curry sauce, you can create your own simple concoction to drizzle over your app. Just cook them up the night before and zap them in the oven to heat them and serve. The idea is to keep the appetizers simple but circling. Mix in some cold foods amongst the hot, such as prosciutto-wrapped asparagus. “Shrimp cocktail is always an easy food to do,” Curcio said. “Get some pickling spices, some water and some salt, bring it to a boil, drop in some shrimp and cook for 90 seconds. You have really tasty shrimp you can serve with cocktail

sauce you can make literally out of ketchup and horseradish mixed together.” It can be that easy and painless, Curcio assures. If you don’t want to carry around a plate with hors d’oeuvres all night, consider creating a food station. Setting up your food will not only highlight your decor and put your food on display, but it will also keep people moving around and socialising, Curcio said. Rotate your dishes periodically or put out the cold appetizers when you want a break from manning the food station. To add a hearty, more substantial food to the mix, Curcio also suggests focusing on a meat. Whether it be a pork loin, lamb leg or piece of beef, it can all be marinated a day or two before the night of the party. To add to the ease of cooking, roast the meat ahead of time and store it in the fridge. A couple hours before it is to be served, take the roasted meat out of the fridge and let it warm to room temperature. A basket of fresh rolls or sliced bread pairs nicely with the roast. To add a touch of class, turn the roast into a carving station where the freshly sliced meat can be served on small pieces of crispy bread and topped with a homemade creamy aioli sauce. “You can even slice [the roast] up for [the guests], put it on a platter, lay out a couple sauces and some spoons and go make yourself a martini. Easy.” Curcio said. Speaking of martinis, this year, don’t get stuck playing bartender for your guests. Instead, try to create a self-serve cocktail bar stocked with cocktail fixings. Offering beer and wine along with a specialty drink is simple and accommodates everyone, and it saves your wallet,
Mantegari said. Use garnishes that mirror your party’s theme in your specialty cocktail or punch. Foods like cranberries floating on top of the beverage can highlight the holidays in your drinks. Popular drinks like a Moscow Mule can be modified with a splash of cranberry juice, making it a Holiday Mule. Desserts can be as simple and easy as you wish. Homemade fudge or an array of jumbo cookies displayed on the food table will cause everyone’s mouth to water. However, if you want to spice up your dessert, try making a chocolate bark. “Get a white chocolate and a milk chocolate or a dark chocolate and milk chocolate and melt one, spread it out onto a wax paper-lined sheet and add chopped nuts or dried fruit on top,” Curcio said. “Let that [layer] firm up and add the next chocolate on top, alternating, and throw in the fridge to harden. Next, crack it into pieces and put into a little basket for people to grab.” Even berries paired with homemade whipped cream can offer flair. Although berries are not particularly in season at this time, they are always available and no more expensive than the in the summer. Let your guests indulge in the tangy bite of the raspberries and the soft, sweet and creamy whipped cream. Just don’t forget to get some for yourself. The last, arguably most important tip to remember is to have fun. It is easy to get caught up in the planning headaches, but when it comes right down to it, it’s a party, and you should enjoy it too.
Whether a Scenic Tour for family or friends, or a "Dream Flight" where you get to take the controls, a Seacoast Helicopters Gift Certificate is certainly a unique gift this Holiday Season.

Enrolled in the tech school’s Animal & Plant Science program, the students qualified for the national competition after winning at the state level with a project in aquaponics where they grew fish and plants in a recirculating system. “Our job was to focus on one area for the competition, which was agricultural communication, so it involved marketing and journalism,” Marston said. “The purpose was to communicate about an innovative practice to the surrounding communities.” At the national convention, she said, they were presented with written tests and asked to participate in a kind of mock press conference about their project with each student fulfilling a particular role. Individually, each student garnered an award, with Marston securing a gold while Bernier and Bentz grabbed a silver and bronze, respectively. “Obviously, we were really proud of ourselves,” Bentz said. “Just making nationals is a reward in and of itself.” Bentz said the takeaway from her participation at the national convention was that she is not alone in her ambitions. “It was great to see so many students with such passion for agriculture,” she said. “All across the country, there are teenagers who want to make a difference. FFA promotes that so much.” Marston said she was also somewhat surprised at what she experienced in Indianapolis. “It was weird, but we found out that many of us are so driven,” she said. “There were no issues out there and no teenagers acting stupid. … It was also neat how adults talked to us like we were adults, too.” Noting there were substantial expenses incurred to make the trip to the national convention, Bernier said all three of them feel like it was entirely worth it. She said a private donation enabled them to also enjoy themselves outside of the competition. “We went to a rodeo and concerts — it was a lot of fun,” Bernier said. According to all three students, the program at SST has been an incredible experience. In particular, they each

expressed an appreciation at the additional opportunity to participate in the national FFA organization. Noting it is more than just an association for people who want to become farmers or those interested in taking care of animals, Bentz said FFA provides leadership and professional opportunities. She referred to it as “a family.” “Whenever you wear one of these iconic FFA blue corduroy jackets, the feeling is indescribable,” Bentz said. Bernier agreed and added, “All of the jackets on the back have the state you are from and the chapter you are in and an emblem that signifies that everyone is together. We are all potentially a family. We respect each other and we are part of the same organization.” In looking ahead, Bernier said she feels her experience in the program itself has helped prepare her for her future. Noting she is now a vice president of the local FFA chapter, she said she has consistently been pushed to try to do things she otherwise would not have done. Citing emerging technologies throughout the diverse field of agriculture, Bentz said she appreciates how her participation in the program at SST has broadened her worldview. “Agriculture is so much more than just about cows and plows — it’s very sciencedriven,” Bentz said. “Traditional forms of agriculture are not going to be suitable for a growing population. It’s amazing to be part of FFA, which has taken traditional forms of something that is so much more than tilling the soil and taking care of animals into something that relies on technology.” — Rob Levey

getting out of my way and learning to follow my intuition. Once I started to believe that I was a restaurateur and an entrepreneur, I started to attract amazing people onto Team Lu and new growth opportunities for the business. Now I have a team that is aligned with our mission — they are our biggest fans. Working with them has been one of the greatest gifts life has given me.
Have you always considered yourself one? No, not really. I knew from an early age that I wanted to be successful. I defined success as going to college, getting a ‘good’ job for a ‘good’ company making ‘good’ money and rising up the ranks of the corporate ladder. I dedicated nearly 20 years to building up my career that way. I definitely dreamed of having my own business, but I guess I thought of it as something I might do when I was older and more financially secure. It wasn’t until I examined what I truly wanted my life to look like that I made the leap to start my own business. When do you think you began to consider yourself an entrepreneur? This is such a great question — and funny thing is, it wasn’t until the past few months that I realized that I was identifying myself as an entrepreneur. I believe being a business owner doesn’t necessarily make you entrepreneurial. My adviser asked me recently if I have trouble staying focused. I confidently responded, ‘Not at all. I’m a creative. I’m an entrepreneur to my core.’ Since opening Laney & Lu, how has business been? It’s been unbelievable. There isn’t a day that goes by that I don’t walk into the café and feel entirely grateful and humbled by what we’ve created. The primary reason for taking the leap into starting my own business was to feel like I was contribut-

ing to something larger than myself. The connection with and contribution to community is what makes both Laney & Lu and Wild Adventurous Life so rewarding. Any big business challenges along the way? Honestly, a lot of people when they heard about what I was doing with Laney & Lu thought we were going to fail. Obviously, deep down I believed in our mission, but I still told myself to play it safe. Now I feel I did myself a little bit of disservice. Yes, you have to make sure your business model is sustainable, but dreaming big is part of the equation, too. I think another challenge was
How does Wild Adventurous Life play into all this and what exactly is it? Wild Adventurous Life started as my personal health coaching business in 2014. The company was essentially put on pause while I started up Laney & Lu. Now, Wild Adventurous Life is moving in a new direction as a wellness and lifestyle media company. I have brought in a partner, Emmy Katz, and we are rebranding and relaunching in the next few months. In a lot of ways, Wild Adventurous Life embodies the lifestyle that Laney & Lu promotes. Our philosophy is that there is adventure in all things. When we can see life as an adventure, more things are possible. We hope to inspire people to move off the sidelines and jump into their lives. We will educate through our blog on topics like holistic health, yoga, and even entrepreneurship, and I’m pumped that we’re already building our schedule of 2017 local, crafted adventures to inspire people through experiences. What is the biggest thing you have learned in the past couple of years with your different business ventures? The success of Laney & Lu has ignited a belief inside me that I am a creative. I now allow myself to dream big. My mind moves
very quickly and I call myself an ‘idea factory.’ My yoga practice has taught me to listen to the pull of my heart. If my entrepreneurial adventures are in alignment with my personal mission to help people be the best versions of themselves, I believe they will be impactful. I have also discovered that I love to collaborate with other people. I’m eager to align myself with people and businesses that have similar missions — there are a lot of people doing powerful work out there and I’m excited to be a part of it. Any big plans in the next year? For the next year, I plan to keep myself focused on building on the momentum of Laney & Lu and relaunching Wild Adventurous Life. For Laney & Lu, we will be launching a new website in January and offering more grab-and-go-style snacks and crafted beverages. For Wild Adventurous Life, we’ll be announcing multi-day retreats right here on the Seacoast as well as a multi-part speaker series called Impact. Impact will include some really well-known and a couple lesserknown speakers who will tell their stories about how one’s personal mission can change the world. If there is one thing you want people to remember about you as a person, what would that be? I always try to conduct myself from a place of love. I hope that they feel valued and inspired. I believe everyone is special and has something important and necessary to contribute. Life is an adventure and I hope I can bring as many people as possible with me. — Rob Levey

CAR TALK
Pushbutton start doesn’t always do the trick Dear Car Talk: I own a 2013 Honda Accord. It came with a pushbutton start. I put my foot on the brake pedal and push firmly, and sometimes it starts and sometimes it By Ray Magliozzi doesn’t. When it doesn’t — at least half the time — I get a staticsounding noise. This has been going on for approximately a year now. At first, I felt it had something to do with the brake pedal (where on the pedal I pushed). Sometimes the pedal was a bit mushy, and I had better results if I pumped the pedal until I got firm resistance. It got to where this didn’t help, so I moved my finger around the button from the center to all the edges. Currently, this is my method, and as yet, I haven’t been stranded. I’ve tried two respected local mechanic shops, and both said they couldn’t find anything wrong. I’ve discussed it with a guy at the gas station where I get my oil changed, and he experienced the problem but didn’t know what was causing it. I called the Honda dealership where I bought the car, and the guy who answered the phone said he had never heard of such an issue. I would like to
get a diagnosis and cure. Thanks. — Paul Once moving your finger to different parts of the button stops working, I think your next step is three Hail Marys and a couple of Our Fathers, Paul. Actually, I don’t believe the brakes or your finger position has anything to do with it. Whatever it is, though, the dealer is your best bet. Just don’t ask the receptionist next time. If anyone has seen this on multiple cars and knows what’s causing it, it’ll be the dealer, which services 2013 Accords every day. And since I presume it’s still under warranty — certainly, the problem began while the car was under warranty — they should fix it for you, whatever’s causing it. So make an appointment with them. Make sure that the service representative writes on the repair order exactly what the problem is. That’ll protect you in case they can’t fix it this time and you still have the problem after the warranty coverage expires. And if you can get them to experience the non-starting condition with you there, that’s even better. It could be any number of things: a bad starter, a battery with a bad cell, a faulty brake-pedal interlock or neutral safety switch, or a physical problem with the
pushbutton switch. Or it could be that the key fob is not communicating correctly with the immobilizer in the car (this prevents someone without the key fob from starting your car). I’ve never seen this on a 2013 Accord, so I don’t know precisely what’s causing it. But your dealer needs to figure it out. It’s Honda’s responsibility, under its warranty, and you just need to insist that they give you a solution that doesn’t involve sprinkling eye of newt on the dashboard. Good luck, Paul. Dear Car Talk: I have a 2002 Buick LeSabre that needs a new rack and pinion. Now, I found some that are pretty cheap, but they say they don’t have “Magnasteer.” I was wondering what this is, and if I need it or not. Some rack and pinions claim to have Magnasteer, and others don’t. Is this something that can be repurposed from the old rack? — David Magnasteer was an early version of variably assisted power steering. So, when you’re driving slow — like when you’re maneuvering this QE2 into a parking space — you get the maximum assist from the power steering. And when you’re cruising
on the highway and are more interested in just keeping the car pointed straight, you get a lot less power-steering assist. Lots of cars now do this via electric power-steering units. I believe all the 2002 LeSabres came with Magnasteer. And as you’ve probably discovered, the Magnasteer rack costs close to $500. So, with labor, that’s a $700$800 job. Can you replace your steering rack with a non-Magnasteer rack? Yes, and the nonMagnasteer rack is quite a bit cheaper. But unfortunately, in order to make the nonMagnasteer rack work, you have to replace both the inner and outer tie-rod ends. And by the time you do that, the price of the whole job ends up being about the same. So you might as well bite the bullet and buy the Magnasteer rack if you plan to keep the car, David. One other option is to find out what it would cost to rebuild your current rack. It’s probably leaking, and you can have it rebuilt and have the seals replaced. I don’t know if that’ll save you any money, but you might as well ask around and find out. Whatever you decide, good luck, and happy steering, David. Visit Cartalk.com.

FOOD
A food-filled first night Celebrate with a fancy meal New Year’s Eve is often filled with nostalgia, new beginnings — and food. There are usually two routes to take on New Year’s Eve: the couch-movie-Chinese-food cozy route and the put-on-your-glittery-gear, out-on-thetown excursion. If you spent 2014-2015 at home with pad thai or egg rolls, maybe this is your year to dawn your sparkle and head out. Up the ante even higher and partake in one of several gala balls and swank soirees on the Seacoast. The upshot to some of these is that you can stay right where you are with room and event packages and next-day buffets to curb all that fun you had, not to mention late check-out times to fully enjoy the first day of the new year.
A black tie soiree
At Wentworth by the Sea, in New Castle, the scenery and grand feel make it the ideal spot for ringing in the new year. With two dining options — a prix fixe, threecourse seated dinner at Salt Kitchen and Bar and a four-course plated dinner Casino Royale Grand Ballroom black tie soiree — it’s primed for luxury. Food and Beverage Manager Ken Lingle is proud of the event’s repeated success. “We’ve been doing the ball since the day we reopened, about 14 years ago. The last four years, especially, have been great, extremely popular,” Lingle said. This year is especially lucky with its theme of Casino Royale, replete with craps, roulette and blackjack tables. “It’s a grand ball themed event every year. In the past we’ve done a Bootleggers and a Masquerade theme,” Lingle said, adding that “we usually sell out the week before.”

The black tie ball, accompanied by the seven-piece show band Protégé, begins with a cocktail hour at 6 p.m. for passed hors d’oeuvres, wine and Champagne. For the menu, Lingle noted that Executive Chef Dean Pratt works to incorporate what people like to have on special occasions, typically in a prix-fixe fashion, while heightening the culinary experience with delicacies not in your home pantry. “I focus and highlight items that are more luxurious, like caviar or lobster, things people don’t always have the opportunity to try during the year but are willing to splurge on for New Year’s Eve,” Pratt said. The four-course Casino Royale menu starts with a delight to refresh the palate, according to Pratt, usually a seafood-based appetizer, which sets the stage for your mouth to experience the ensuing richness. All the while, the open bar is a welcome event as well. “I start to move from the appetizer into more approachable items, like a high-end salad into a beef and lobster combination, with everything finished by some type of decadent chocolate dessert,” Pratt said. Being so near the Atlantic is a culinary bonus for creating menus that evoke fresh flavor combinations. “We have the opportunity to source locally because we’re on the Seacoast, so near to the ocean, plus we source from local farmers,” Pratt said. For the three-course dinner, Pratt said he goes more classical.
SEACOAST SCENE | DECEMBER 22 - JANUARY 11, 2016 | PAGE 22
“I’ll do a veal and tuna duet, beef is also always well-received,” he said. “I’ll put our own contemporary spin on the classic dishes. I have a coq au vin made with chicken from Vermont, for instance.” Add to that choices of a tomato and squash gratin with potato and Vermont butter puree, New Hampshire bacon oyster mushrooms, filet mignon or slow-cooked wild salmon, to name a few. And after a night of libation and frolic, the New Year’s Day Recovery Brunch will be just the trick to fix you up right for 2017 — hair-of-the-dog mimosas and bloody marys are a must. “I work with the executive pastry chef and banquet buffet chef on the buffet brunch. We utilize approachable favorites — like waffles and an omelet station — and the pastry chef makes really appealing tarts, pastries, and of course lots of chocolate creations. We also have a carving station with prime rib and local turkey,” said Pratt. “I think this year will be the best event on the Seacoast,” Lingle said.
Grand ballroom plans
Down the road a bit, Ashworth by the Sea in Hampton has festive plans for its Grand Ballroom, now in its 20th year of NYE celebrations. Straight out of Lifestyles of the Rich and Famous, arrive to Champagne in room and get dolled up for the Grand Ballroom doors to open for the 6 p.m. seating. From 7 to 8 p.m. enjoy
tableside and passed hors d’oeuvres. According to Director of Sales and Catering Eileen Menard, “The evening starts with a displayed charcuterie station and passed hors d’oeuvres such as mini beef and chicken wellington, shrimp cocktail, Asian pot stickers with ginger soy dipping sauce, and lobster rangoon.” The Hampton Beach Village District ignites its fireworks celebration outdoors starting at 8 p.m., and dinner is served at 8:30 p.m., which highlights surf and turf, according to Menard. Think filet mignon and seafood-stuffed lobster tail, accompanied by vegetable and grain sides. Eat all of the Tiramisu Torte dessert, then dance the decadence off on the dance floor till 1 a.m. to the tunes of the Center Stage band. The cash bar will have you on your toes till 12:45 a.m., and late-night snacks and Champagne will also be on offer. “This event sells out each year as well as the 106 hotel rooms,” said Menard, and with an extended checkout time of 1 p.m., you can lounge at the New Year’s Day brunch to absorb any headache. For those who prefer to have their ball and sleep in their own bed, too, the Ashworth offers by-reservation dinner and dancing in Breakers Restaurant and Lounge from 5 to 10 p.m., with the lounge open to 1 a.m., where you can boogie on down to DJ-inspired entertainment starting at 9 p.m. If you just wish to enjoy music and dancing, $30 will get you in the door.
A cozy night
Also in Hampton, Lamie’s Inn and The Old Salt Restaurant offers a cozy package to end 2016 and begin 2017 on a romantic note. According to co-owner Liz Higgins, Lamie’s Inn and The Old Salt has offered its New Year’s Eve package for about 15 years now, which includes a night’s stay, breakfast on day of arrival, dinner for two at The Old Salt, Champagne to toast, New Year’s Day buffet for two, and a 2 p.m. checkout. That’s a whole lot of sumptuous food and frolic. “Guests love celebrating with our customers and crew and many reserve and come back every year. It’s nice to have the dining rooms, lounge and inn all under one roof, especially on those very cold New Year’s Eve nights,” Higgins said. And to celebrate such an important occasion, co-owner Mike Higgins likes to design an extra-special menu for the holidays, highlighting dishes he would enjoy having on a festive night out. 24

Bigger, bolder flavors for winter
151 PORTSMOUTH AVE. STRATHAM, NH | 603.772.2780
Winter has fully set in now, and that means I am reaching for red wines. The white wines sit patiently in my wine rack until warmer weather arrives in the spring. When the weather gets colder, I like bigger, bolder reds, either on their own or with food. Many good wines were made to pair with steak, pasta or dessert, so this is the best time of the year to enjoy them.

Italian reds
This is a big category of wines that would require more space than I have to describe them all. But if you haven’t ventured to the Italian wine section recently, go! There are so many nice Italian red wines that are not expensive. But if you are looking for a nice gift or a wine for a special occasion, there are options too. I think what deters people from purchasing Italian wines, like many other wines from around the world, is not knowing what they are just from their names or varietal (grape). While I will say I don’t think you can go wrong here, here is a little bit of background on a couple of Italian reds. Chianti is one of the most common Italian reds; it hails from Tuscany and is made using sangiovese grapes. Chianti wine must be produced in the Chianti region. It may contain a blend of grapes, including cabernet franc, merlot, or cabernet sauvignon. I find that it can be a bit too dry for me on its own, but it pairs really well with food. Not surprisingly, dishes with tomato-based sauces are an ideal match, but it can also go with steak or other grilled meats. Good Chianti can be purchased within the $12 to $20 range. Valpolicella is a red wine made from corvine, molinara, and rodinella grapes. It comes from the Veneto region of Italy and is usually a fruity, medium-bodied wine, according to WineIntro.com. This is one of my favorite Italian reds, as I find it to be smooth and velvety. This wine ranges in price from about $14 to more than $40. The next wine, amarone, is a valpolicella subtype. Amarone is a red wine from the Veneto region near Venice. According to LifeInItaly.com, it means “big bitter one.” Amarone is typically full-bodied and bold, as its name implies. It is aged for five years or more before it is bottled and can have an almost port-like texture. LifeInItaly.com recommends pairing it with cheeses and roasted pork. Amarone is not one of the cheaper Italian reds, but it’s worth the splurge.

a fortified wine, which means brandy is added during its production. It hails from the Douro Valley in northern Portugal and is available in many different styles, from aged tawny to late bottled vintage. White port is another option, which is often drunk as an aperitif. Traditional port is usually served with dessert or after a meal. It is rich and smooth and can be enjoyed young or aged, with 20-, 30- and 40-year-old or older ports (it dates back to the 1600s) available on the market. As it ages, its characteristics change, and many would say it gets much better with age.
Ice wine
Technically, ice wine can be red or white. It is a dessert wine made from grapes that have frozen while still on the vine. It is very sweet and syrupy in texture. You will probably only want to enjoy a small glass. It is produced in smaller batches and its price reflects this, but it is a great choice for a gift or a special occasion. Some New Hampshire winemakers make their own ice wine. Others available here typically come from Canada. Many different grapes are used but the most common are vidal, riesling, seyval blanc and gewürztraminer. Ice wines can also be made out of pinot noir, cabernet sauvignon or merlot. This wine is a splurge, often sold in 375ml bottles, but it is worth it Port wine When the weather gets this cold, I like if you have a sweet tooth — it will definiteto sip on port to help warm me up. Promoter boosts genre in Seacoast region At last fall’s Apple Harvest Day, live music poured from outdoor stages across Dover, including one on Orchard Street that leaned toward country rock. Giving off a vibe befitting Nashville’s Broadway nightclub district, the location stayed crowded all the day. One patron enjoying the day’s sounds was a booker from the nearby 603 Bar & Lounge, who struck up a conversation with promoter Amanda Morneault. A few months later, plans were set for a January residency by artists from NEON Music Management, where Morneault works as managing partner with founder Matt Casey. The Wednesday night series features original performers playing a mix of country covers along with their own material. The residency opens Jan. 4 with Kevin Herchen, a Rhode Island singer-songwriter. Early this year, Herchen won a Big Break competition in his home state, which allowed him to record a music video of his original song “Closer.” On Jan. 11, Jimmy Connor continues the series. ”He is a young Hunter Hayes,” Morneault said of the 16-year-old Massachusetts performer. “Such a prodigy; he amazes me.” Another young rising talent, 18-yearold Caroline Gray, follows Connor on Jan. 18. A multi-instrumentalist (guitar and piano), Gray already has song co-writes in her resume; she collaborated with Music Row’s Marty Dodson, author of Blake Shelton’s Top 10 hit “Doin’ It.” Crossover duo Martin and Kelly — singer-songwriter Jilly Martin and guitar slinger Ryan Brooks Kelly — finish the month on Jan. 25. The pair released a self-titled EP last spring. If it catches on, the series will continue in February; given Morneault’s track record, that’s likely. She found her way into the music business through her father’s sound company. Soon after installing a system at Portsmouth’s Thirsty Moose Taphouse, she was booking music there. by The Cadillac Three at the club connected her with New England Country Music’s Chris Whynock, which planted the seeds for her biggest venture yet. “A few months later I was on a beach with my kids,” Morneault said. “I got a phone call from Chris saying, ‘I’m thinking that maybe we should put a festival together.’” In June 2015, country star Kellie Pickler headlined the first New England Country Music Festival at Redhook Brewery, and the show went clean. A year later, TC3 returned to headline the second annual festival; it also sold out. That she’d booked the southern rockers in a nightclub two years earlier and now had them filling a venue with thousands of fans was testament to talent-selection savvy. Looking forward, 2017 portends even bigger things. Three acts are already booked for the festival’s third edition, though Morneault won’t say who just yet. “But they all have No. 1 hits,” he said. The festival always features several NEON performers. The acronym stands for North East Of Nashville, and the agency works tirelessly at artist development, alongside New England To Nashville (NETN), a support and artist exchange effort that began as a Facebook page and
now is an 800-member-strong organization. As the name indicates, NETN helps performers expand their reach, whether they’re local, or southern-based and looking to reach East Coast audiences. NEON manages their tours when they come up to the region, and if they have already established relationships with venues for weekend shows, helps them find midweek gigs. “Fill in the gap and expand,” Morneault said. “That’s our goal.” Efforts often include multi-act shows at Loretta’s Last Call in Boston. “These are the artists that are hungry,” Morneault said. “They have quit their partor full-time jobs. Some are still in school and some folks are older, but everybody is dedicated and hard-working. When they’re not playing or writing, they are traveling back and forth to Nashville.” Morneault wants the New England Country Music Festival to become a tradition like Hookfest, which has surpassed two decades. “That is what we want to grow this to,” she said, brimming with optimism and dreaming out loud about one day hosting a band like Lady Antebellum. “Outside, there’s 10,000 people. The event is rain or shine, and it’s been shining the last two years.” — Michael Witthaus

Recurring themes
Whistleblower goes to jail; responsible industry executives make millions: Long-time Mississippi environmental activist Tennie White is 27 months into a 40-month sentence (for “falsifying” three $150 tests in her laboratory), but highranking executives at the Kerr-McGee chemical conglomerate made millions on the case White helped expose: leakage of cancer-causing creosote into communities, including White’s Columbus, Mississippi, neighborhood. A detailed investigation by TheIntercept.com in November noted the executives’ brilliant response to the 25,000 creosote lawsuits nationwide: put all the liability into one outlying company (eventually going bankrupt) but selling off, highly profitably, the rest of the firm.
Compelling explanations
Apparently the plan by a 33-year-old unlicensed, un-car-registered driver in Perth, Australia, in November to keep from being stopped by police was to print “POLICE” in large, “official”-looking letters on the sides of her white Hyundai, using a blue dry-erase board marker. (She was, of course, quickly stopped by police.) A woman in a quiet north Minneapolis neighborhood told reporters she became all out with holiday decorations at his fearful after seeing a large swastika spraypainted on a garage door down a nearby alley (just after election day!). (Problem: The base “X” of the correct design has the Earth’s “core”). (4) Odds that Statis- “hooks” that should always extend to the tics Lecturer Nicholas Kapoor (Fairfield right, clockwise; three of the Minneapolis University, Fairfield, Connecticut) said “artist’s” awkwardly hook left.) he played against in buying a $15 Powerball ticket: 1 in 913,129 (but he won The passing parade (1) In November, a court in Christ$100,000!). (5) Speed police calculated Hector Faire, 19, reaching in an Oklahoma church, New Zealand, ordered the local police chase: 208 mph (but they got him, police to “undo” the 493 bottles’ worth anyway). (6) Different languages spoken of liquor they had recently poured down by children in Buffalo, New York, public the city’s drain after raiding an unlicensed classrooms: 85.
bar. The court said the police must pay a pumping company to recall the hooch because of environmental regulations. (2) In November, the Littleton, Colorado, city government, faced with the need to “blot” sticky tar on 120 streets whose potholes it was filling, bypassed expensive “detackifiers” in favor of stuffing toilet paper over the tar, causing the streets to have a trickor-treat look.
A News of the Weird classic (February 2013)
An estimated 3.2 million kids ages 5-12 take mixed-martial-arts classes, training to administer beatdowns modeled after the adults’ Ultimate Fighting Championships, according to a January (2013) report in ESPN magazine, which profiled the swaggering, Mohawked Derek “Crazy” Rayfield, 11, and the meek, doll-clutching fighting machine, Regina “The Black Widow” Awana, 7. Kids under age 12 fight each other without regard to gender, and blows above the collarbone, and on the groin, kidneys, and back are prohibited. “Crazy” delivered merciless forearm chest smashes before the referee intervened, and the Black Widow won her match in less than a minute via arm-bar submission. Parental involvement is said to be either “fear” of their child’s getting hurt or “encouragement” to be meaner. Visit weirduniverse.net.

(1) Michelle Keys, 35, among those joyously caught up in Iowa’s upset win over highly ranked Michigan in football in November and celebrating that night in Iowa City, was slurring and incoherent and told police she was certain she was standing in Ames, Iowa (120 miles away), and had just watched the “Iowa State - Arizona” game (a matchup not played since 1968). (She registered .225) (2) A 38-yearold woman was arrested in Springwood, Australia, in November when police stopped her car at 3 a.m. at an intersection with a children’s swing set wedged onto the roof of her SUV. (She had shortly before mistakenly driven through someone’s back yard and through the swing set.) (.188.)
Texas is among the most enthusiastic states for jailing low-income arrestees who cannot pay a money bail, especially during devastating family hardships, and the four Houston bail magistrates are particularly harsh, according to a recent report of the Texas Organizing Project. After hearing one financially overwhelmed woman beg sarcastically that $1,000 bail is “nothing” next to her other bills, unsympathetic magistrate Joe Licata shrugged, “It’s nothing to me, either. It’s job security.” Recent alarming headlines “Man Mixing LSD and Cough Syrup Saves Dog From Imaginary Fire” Weird quantities (1) Price tag for one round of a 155mm (WNYT-TV, Albany, N.Y.), 10-15-2016). projectile shot from the Navy’s USS (Panicked, he had first sought help from Zumwalt: $800,000. PET OF THE WEEK
Laia is a 5-year-old black kitty who was brought to us as a stray. Her sleek black fur and graceful long lines gives her an exotic quality. She is a bit shy at first but loves to be petted. Once she gets to know you, she purrs, chirps and headbutts you for more. Laia hasn’t been a fan of the other cats at the shelter and would be happiest as the only feline in her new home. Given that she was a stray, we don’t know a lot about her history. We know her future involves a loving person or family that will give her a second chance at being loved and cared for. Stop by the New Hampshire SPCA in Stratham to meet this sweet girl today and prepare to fall in love. Like all the animals available for adoption at the New Hampshire SPCA, Laia is spayed/micro-chipped and up to date on all her vaccines. Call 772-2921 for more information.
