W
hen I arrived in the U.S. Virgin Islands in 2002, I was only planning on staying 6 months or so. I moved because I needed a change of scenery and wanted to go sailing. Fresh off the plane, I promptly got a job crewing on a day sailing charter, intending to immerse myself in the island lifestyle before going back to The Real World. But after meeting my husband, David, a fellow sailor, we left St. Thomas, sailing “down island” on our 32 ft. Benateau sailboat, Nutmeg, passing through St. Martin, St. Kitts, Nevis, the Grenadines and, ultimately, all the way south to Trinidad to wait out hurricane season. We returned to St. Thomas the following fall and have been here ever since - 18 years. Sailing has remained a favorite family pastime and a big part of our lives all these years. We love to share our favorite locations with friends and family when they come to visit.
THE ALLURE OF THE VIRGIN ISLANDS It’s easy to see why the natural, colorful aesthetic that I feature in my design work is so desirable here. The vibrant blues, earthy greens, and bright pops of Hibiscus-red invite the eye to take in a rich, storied landscape that has captivated everyone from artists to presidents for hundreds of years. The Virgin Islands are some of the best sailing grounds in the world. And recently, private charter yachts have become more popular due to the seclusion they offer. A yacht really is the ultimate in sociallydistanced vacations. As a U.S. territory, we’re considered domestic travel within the United States, so passports aren’t required. And the Covid-19 restrictions here are some of the most accommodating in the U.S. All you need to visit is a negative test within 5 days of your flight departure. You’ll upload the test results to USVITravelPortal.com. When your flight lands, just show the test to the airport health officials, collect your luggage, and you can be on your boat in as little as 15 minutes! Best of all, visitors going back to the U.S. don’t need a Covid test for re-entry!

LINGUINE LANGOUSTINE WITH ROASTED TOMATO AND GARLIC SAUCE serves 6
CHEF'S NOTES LANGOUSTINE: As an alternative, this dish could equally be made with lobster or even shrimp. SAUCE: 6 cloves of garlic is a good starting point. If you like a stronger garlic taste, make it 8. If garlic isn't your thing, make it 4. PASTA: Linguine is the pasta of choice here, but the dish would work with spaghetti or angel hair, too... long and stringy is the key. STOCK: You will find fish stock in most good supermarkets. However, you can make a good shrimp stock by combining the heads and shells of shrimp with carrot, parsley, bay leaf, pepper, lots of salt, and about 3 liters of water. Also, you could make the pasta with just salted water, but the stock will add a unique, more robust flavor. PREPARATION: You can roast the tomatoes a day in advance. Separate the cherry tomatoes and make the sauce as directed with the tomato quarters and garlic. Keep both refrigerated in an airtight container and bring to room temperature before preparing the dish.

The ingredients: • 6 langoustine tails, fresh or frozen • 4 medium tomatoes, quartered • 2 cups cherry tomatoes, yellow and red • 6 cloves garlic, smashed • 1 tablespoon + ½ cup olive oil • 1 teaspoon lemon zest • 3 tablespoons fresh lemon juice • 1/4 cup water • 1 teaspoon coarse salt + ¼ cup for pasta • ½ teaspoon pepper • 1 teaspoon smoked paprika • 12 ounces linguine • 12 cups (or three 32oz. boxes) fish stock • ⅔ cup olives (black or kalamata), halved • 4 scallions, thinly sliced • ½ cup fresh parsley, finely chopped • ½ cup fresh basil, finely chopped • ½ cup feta cheese, crumbled

RAINBOW SALAD WITH CHORIZO CREAM SAUCE serves 6
The ingredients: For the salad: • 2 limes • 3 yellow bell peppers • 2 avocados • 1½ cups red radicchio or other small, colorful greens • 1½ cups finely shredded carrots • 2 cups diced beets • ⅔ cup goat cheese, crumbled • 1 teaspoon olive oil • ½ cup seeds - sunflower, pumpkin, or squash • 1/4 teaspoon ground cumin • pinch salt For the chorizo cream sauce: • 4 ounces mild Spanish chorizo • 4 ounces spicy Spanish chorizo • 2 shallots • 1¾ cup light cream • ¼ cup white wine • 3 tablespoons sour cream
CHORIZO CREAM SAUCE This cream sauce can be made a day or two in advance. Be sure to use Spanish (dried) chorizo... and remove the outer casing before cooking or blending. Refrigerate any remaining chorizo sauce in an airtight container. Use it for pasta or even as a dipping sauce for vegetables, crackers, or chips.

IT'S TIME TO OPEN OUR WINDOWS AND LET THE DELICATE SCENTS OF SUN WARMED SPRING FLOWERS FLOAT THROUGH OUR HOMES, DELIGHTING OUR SENSES, AS WE BEGIN TO THINK ABOUT HOW TO INCORPORATE FLORALS AND OTHER NATURAL ELEMENTS INTO INDOOR/OUTDOOR ENTERTAINING WITH FRIENDS, ONCE AGAIN..

ur word remains resilient despite having been shut down for over a year now. However, with more and more vaccines becoming available and giving us renewed hope this Spring, we are all longing to return to normalcy and to entertain friends and family again. My first thoughts take me directly to the great outdoors and creating a beautiful setting for an outdoor dining experience. I’m sure that for a while we may need to remain somewhat socially distanced, and an outside gathering is the perfect place to start! But how do you set the ideal table? Is a buffet preferred or shall the meal be served? There are many decisions to be made, but for me, outdoor dining does not mean paper plates... bring out the fine china! I believe from this point forward, we all need to adopt a new attitude each and every day... we should always use our best and our finest!

But if there's not a local florist in your area, get out your trusty garden clippers and have fun getting creative. For years, as a floral designer, I've called collecting from nature, "roadside collected." Find a great container that won't tip over - a weighted one is best - then go out in nature and find what appeals to you. Remember that a centerpiece of only green foliage is always gorgeous, even without a single flower!
As an avid gardener in Colorado Springs, CO [ Zone 5B ], I cannot wait for spring and summer to fully arrive! I'm sure many of you feel the same. Sharing my gardens on the deck and patios surrounding my home is paramount to my warm weather happiness.
During the spring and summer months it's easy to create a tablescape of plants. Choose a mix of different types of green or blooming plants and allow them to trickle down your alfresco table. Perhaps use a series of collected vases with only fresh cut garden blossoms. Another great way to create a centerpiece is by using foods grown in the garden that add to your menu... red cherry tomatoes, bright green sugarsnap peas, yellow peppers. Combine these with breads, crackers and cheeses and fresh greenery for a beautiful presentation.
Depending on where you live, your options as to how you decorate your tables relies on your local resources. Some areas have amazing local farmers' markets to collect locally grown flowers from, some of you will forage from your own gardens or patronize your local grocery stores and florists.
Setting a tablescape outdoors isn't much different than what you'd consider for outdoors, with the exception of the weather. Always consider wind, sun and humidity conditions to make sure your selections will last throughout the entertaining event.

If you're in the mountains, like I am, you may want to choose pine branches and cones. But, wherever, you are, a decorative basket or simple vase of in season flowers is always perfect. Just remember, whatever your style and budget have fun, be creative, express your style and watch your guests come alive with delight. And don't forget... send me an invitation. I'm ready to travel again and to welcome my own friends and family into my home, for the hugs, handshakes and high fives we all miss and love! Carpe diem!

Keep it simple with a monochromatic scheme. Choose all white florals, for example, to create a frilly floral scene. Choose containers or vases that are similar (but not necessarily the same) to continue the theme.
The secret to most good design is in the layers. Start with the statement pieces and work your way outwards, incorporating different sizes and textures for a look that seems effortless, but well-planned.
In spring there is an abundance of green. Often, a vase with simple branches of delicate new green leaves is enough to make guests swoon. Consider groupings of greenery in varying sizes and hues.
BLURRING THE LINES Make the connection between indoors and outdoors through nature. Pull back the curtains and let the outdoors be seen. Bring plant life inside and add cozy spaces outdoors that seem like they could be inside. Add lighting to your outdoor spaces like cordless lamps and torches from the SEASONAL LIVING INDA collection to give the impression of one continuous space. Add soft touches, such as accent pillows on benches and throw blankets on the backs of chairs for cooler evenings outside. COLOR BURST Even if you choose a monochromatic theme for the floral accents, don't
forget to introduce some color. Among a sea of white, a bright red stool will have even more impact. Consider occasional tables and stools that will steal the show. Consider the fragrance of your blooms, though. Some of your guests might be allergic - always check.

The instructions: For the salad: 1. Remove the zest from the limes and set aside for later use. Juice the limes into a small bowl. 2. Remove the top and bottom of the yellow peppers. Cut the rest into ½-inch rounds horizontally. 3. Cut the avocados widthwise and remove the pits. Remove the peels carefully and then cut the remainder into ½-inch rounds. Immediately cover the avocado pieces in lime juice to prevent browning. 4. Use a ring mold to build each salad in the center of a plate. Start with an avocado ring. Fill the center of the ring, as necessary, with pieces from the ends of the avocado. Cover the avocado with a thin layer of radicchio leaves. 5. Add a yellow pepper ring. Fill the center with additional strips as necessary. Add another thin layer of radicchio leaves. 6. Add a layer of shredded carrots, pressing them firmly. Add another thin layer of radicchio leaves. 7. Add a layer of diced beets. Top with goat cheese crumbles. Sprinkle the top with a bit of lime zest. Remove ring mold. 8. Heat olive oil in a non-stick skillet over medium heat. Add seeds, cumin, and salt. Toast for 3-5 minutes until seeds are slightly toasted and fragrant. Transfer to a paper towel to cool. 9. Add a generous amount of chorizo cream sauce to the side of the salad. Sprinkle with toasted seeds and a few tiny leaves. Add a few drops of olive oil and freshly ground black pepper, if desired. For the salad: 1. Dice the shallots in small pieces. Remove the outer casing of the chorizo and cut the sausage into ¼-inch disks. 2. Add the shallots and chorizo to a medium saucepan with no oil over medium-high heat. Cook for 3-5 minutes, stirring frequently, until shallots are softened and chorizo has rendered some of its fat. 3. Add the white wine and let the liquid reduce to half. Add the cream and cook for 2 more minutes. 4. Allow to cool slightly before adding the mixture to a blender or food processor. Blitz until smooth. 5. Pass the mixture through a fine mesh strainer.

Discard the solids and pass through the strainer again. 6. Allow to cool to room temperature. Add up to 3 tablespoons of sour cream to obtain a smooth, creamy consistency.
LINGUINE LANGOUSTINE continued from page 8
The instructions: 1. Thaw langoustine tails in advance, if frozen. 2. Preheat oven to 250˚F. Line a baking sheet with aluminum foil for easy clean up. Add the quartered tomatoes, cherry tomatoes, and garlic to the baking sheet. Drizzle 1 tablespoon of oil over all of it and toss to coat. Turn quartered tomatoes so one cut side is down. Roast for 1 hour and 15 minutes. 3. Remove the baking sheet from the oven and separate the cherry tomatoes for later use. Add the tomato quarters, garlic, and juices to a blender. Cool slightly. 4. Add ½ cup olive oil, lemon zest, lemon juice, water, 1 teaspoon salt, pepper, and smoked paprika to the blender. Blitz until smooth. Set aside. 5. Bring the fish stock to a boil in a large pot. Once boiling, add ¼ cup salt and linguine. Cook for the time indicated on the package or to al dente stage. 6. While the pasta cooks, prepare the olives, scallions, parsley, basil, and feta. Set aside. 7. Drain the pasta, but retain the stock, returning it to the large pot. Bring the stock back to boiling. Place the pasta in a large bowl. 8. Add the sauce to the pasta and toss to coat. Add the cherry tomatoes, olives, scallions, parsley, basil, and feta. Toss lightly to combine. 9. When stock returns to boiling, add langoustine tails and cook for 4 minutes. Drain langoustine and cool slightly. PRO TIP: to prevent tails from curling, insert a wooden skewer into the meat of each tail before boiling and remove before serving. 10. Place finished pasta in a serving vessel and top with langoustine. Sprinkle with any remaining fresh herbs, if available. NOTE: The sauce can be made a day in advance. You can roast the cherry tomatoes at the same time. Keep both items refrigerated overnight and bring to room temperature before starting the preparation. The heat from the pasta will warm the cherry tomatoes.
