11 As we move from Fall into Winter, I'm reflecting on how different life has been in 2021 than in 2020. I count myself extremely lucky and try to remind myself daily what a unique time in history this time really is. For so many (around the world), the last year has been one filled with loss and challenge. So many of us are fortunate and I think that this is a time for reflection and appreciation for many of the gifts that we have.

Once again, we're able to welcome family and friends into our homes. What a joy it has been for me to see my parents again and to rekindle friendships - in person. We've also been able to travel again, for pleasure and for business, and have had our senses newly refreshed by the beauty in places both familiar and new. We've gathered together with friends at restaurants for delicious meals with sparkling conversations creating memorable experiences we will never forget. We've come to know, more than ever, that the true joys in life are the sense of security and comfort our homes provide us, the love and acceptance our families offer us, and the joy of companionship and community our friendships create for us. As you enjoy this issue, we hope you will be inspired to entertain beautifully while making our seasonal recipes for your friends and families, find ideas for creating comfort and beauty in your homes, and explore the world in all its natural glory, once again. Here's what I love about Winter – the seasonal celebrations and festivities followed by the quiet….a great time to mentally de-clutter, it’s a great time to quietly reflect and plan for a harmonious and healthy Spring 2022. ASPEN, COLORADO

NEW YORK, NEW YORK - NYC is always a good idea, and the winter season is no exception. Check out the sparkle of the holiday season until late January. Enjoy worldclass shopping, entertainment, museums, and sports. Then, bundle up, and head to the New York City Botanical Gardens, where NYC's most iconic buildings and structures are re-created in miniature from all natural garden materials. WASHINGTON DC - During the holiday season, the capital city is beautifully lit and twinkly However, there is much to do throughout the winter season in DC. There are many free activities and museums to enjoy, outdoor skating, fine dining, and loads of history. For some unique and intriguing fun, visit the International Spy Museum. SAN FRANCISCO, CALIFORNIA - With much more agreeable temperatures, San Francisco is a great place to visit during the winter months. Experience film festivals, whale watching tours or take a short trip to Napa Valley for a total wine adventure. Visit one of the many attractions like Alcatraz, the aquarium, or SFMoMA. SEATTLE, WASHINGTON - Tucked away in the corner of the country, Seattle can not be ignored. Go for the food, the history, or just a city adventure with a beautiful backdrop. This town is a foodie's delight and there are many top restaurants in the area. If you are looking for some outdoor activity, try some of the many nearby ski resorts. The Pike Place Market is a 'must-visit' and don't miss the Chihuly Garden and Glass. STOWE, VERMONT -This is an outdoor lover's dream. If you love hiking, skiing, sledding, or snowboarding, head to Stowe. This picturesque town is even more beautiful in the winter and is a haven for snow-lovers. Enjoy a scenic hike to the gorgeous Moss Glen Falls, or just settle into one of the many lodges for a spa day and a hot cocoa by the fireplace. CHICAGO, ILLINOIS -Despite its reputation for harsh winter weather, Chicago is still a diverse, thriving city during the winter with many things to do. The beautiful sites and architecture are accessible without all of the additional summer tourists. Make the most of what the city has to offer like shopping, food, entertainment, and museums. Don't miss the Navy Pier, but dress accordingly.

SALT LAKE CITY, UTAH - Salt Lake City is a beautiful city with plenty to offer in and out of the city. Experience fine dining and shopping in the city or head to one of the nearby towns for a outdoor winter adventure. From the city, it is a quick trip to Park City for skiing or the town of Midway, where you will find an ice castle wonderland with slides, fountains, tunnels, and changing lights. ASPEN, COLORADO - Regarded as a premiere ski area in the US, Aspen is the place to go if you love to ski. Even if you don't ski, be sure to take a ride on the Silver Queen Gondola to the summit of Ajax Mountain. In Aspen you will also find great nightlife, shopping, and fine dining. If you just want to relax, spend a day at one of the many top-notch spas. MT. HOOD, OREGON - For just about any snow activity, Mt. Hood is the answer. Here you will find resorts, camping, or cabins to put you right in the middle of the action. And if you've had enough of the snow, the gorgeous city of Portland is just 90 minutes away by car. While you're in the area, be sure to check out some of the many falls like Tamanawas Falls or Ramona Falls.

NEW ORLEANS, LOUISIANA - A trip to New Orleans in the winter is great for someone who wants to experience this great city and escape the colder northern temperatures. The city is rich with food, culture, history, and entertainment. Don't miss the French Quarter and its food and architecture.

SOUTH

MIAMI, FLORIDA - Culture, class, and winter sun. Yep, for a winter destination, Miami has it all. Apart from the ocean, you will also find great shopping, dining, and museums. Soak up all that Miami has to offer from its diverse culture to iconic architecture. Don't miss Miami's most Instagrammed spot, Wynwood Walls, for stunning street art. JOSHUA TREE NATIONAL PARK, CALIFORNIA - Nature lovers, rejoice. Joshua Tree is a fantastic winter destination as the temperatures are quite good and allow for outdoor activities like cycling, rock climbing, and hiking. Bring your camera to capture the wildlife, caves, canyons, and starlit sky. ORLANDO, FLORIDA - Well-known as a popular family travel destination, Orlando has more to offer than just theme parks. Don't miss the theme parks, if you like those, but be sure to visit the lush surroundings of the Harry P. Leu Gardens in nearby Winterpark and visit the nearby John F Kennedy Space Center. PHOENIX, ARIZONA - For warmer temperatures, Phoenix is a great getaway. Visit some of the many attractions, such as the Pueblo Grande Museum & Archaeological Park or the Desert Botanical Garden. If you make it before the end of the year, be sure to check out the lantern festival downtown. KEY WEST, FLORIDA - Is warm weather and a tropical vibe your thing? Key West is for you. This Florida city is perfect for a laid-back experience by the sea. Visit Ernest Hemingway's house, go snorkeling, or enjoy the nightlife along Duval Street. SAN DIEGO, CALIFORNIA - San Diego is good anytime of the year, but even more appealing to visitors from the north at this time of the year. The temperatures are generally in the upper 60s and there is plenty of sunshine. Go whale watching, visit one of the many museums or galleries, or pass the day shopping or touring one of the many craft breweries. ORANGE BEACH, ALABAMA - Perhaps a little less known, Orange Beach is a great winter destination for nature lovers. While the water temperature is a little cold for swimming, many surfers enjoy the waves (with wetsuits). If surfing isn't your thing, hang out on the beach, take in the views at Alabama Point East, or enjoy top notch fishing or bird watching.

YOUR NEW FAVORITE PASTA DISH DOESN'T HAVE ANY PASTA. IMAGINE A WORLD WHERE YOU CAN EAT A GENEROUS HELPING OF ITALIAN CASSEROLE AND NOT FEEL LIKE YOU'VE BLOWN YOUR DIET. THAT WORLD IS HERE. THIS LIGHTER RECIPE PAIRS ITALIAN FLAVORS WITH SPAGHETTI SQUASH INSTEAD OF PASTA. THE RESULT IS A DISH THAT IS AS HEARTY AS IT IS HEALTHY. PESTO CHICKEN SPAGHETTI SQUASH BAKE serves 8

The ingredients: • 1 large spaghetti squash • 2½ cups chicken breasts, cooked and shredded • ½ cup pesto

GOOD TO KNOW This is definitely the type of dish that can be prepared ahead and refrigerated or frozen until ready to heat and eat. However, it is important to note that the squash has high water content and it may be necessary to drain off any excess water before heating. Want the top to be a little more caramelized? Place the top of the casserole within 6 inches of your broiler for 4-5 minutes. To easily cut your squash in half, create a dotted line around the center of the squash vertically by poking a sharp knife into the squash. Then microwave the squash for 5 minutes. Allow the squash to cool slightly and then cut in half along the dotted line.

• ½ cup onion, chopped • 3 cloves garlic, minced or grated • ¾ cup plain non-fat Greek yogurt • 1 teaspoon dried oregano • ½ teaspoon red pepper flakes • ¼ cup parsley, finely chopped • salt and fresh ground black pepper to taste • 1 cup mozzarella cheese • ¼ cup shredded Parmesan cheese • 2-3 medium tomatoes • basil leaves for garnish The instructions: 1. Preheat oven to 400˚F and line a baking sheet with parchment paper. Cut a clean squash in half vertically. Remove the seeds and coat the flesh of each half with a little olive oil, salt, and pepper. Bake the squash halves, flesh side down, for 40-50 minutes or until the flesh is fork tender. Allow to cool slightly before handling. 2. Reduce oven to 375˚F. 3. Remove the outer skin from the squash and shred the flesh gently with a fork. Add the flesh to a large mixing bowl.

4. Heat olive oil in a skillet over medium heat and add onion and a light sprinkling of salt. Cook, stirring frequently, for 4-6 minutes or until the onion becomes soft and translucent. Add the garlic and cook for 1 minute more. 5. Add the onions and garlic, chicken, pesto, yogurt, oregano, pepper flakes, parsley, salt and pepper, and ¾ cup of the mozzarella to the squash. Mix thoroughly and taste for seasoning. Adjust salt as needed. 6. Pour the mixture into a casserole dish and press it down gently.

CLEMENTINE DREAM-CAKE GOOD TO KNOW Straining the Greek yogurt well is critical to the success of this recipe. To strain it, place 3 cups of non-fat Greek yogurt in a clean tea towel (not terry cloth). Gather the sides and twist making a ball of yogurt at the bottom. Continue twisting and squeezing. When you have expelled enough liquid, the yogurt will have a consistency similar to room temperature cream cheese. The candied clementine slices can be made a day ahead. Just be sure to store them in an airtight container or zip bag. The crust can be made a day ahead and kept in the refrigerator until you are ready to fill and bake.

YIELDS: 8-10 PREP TIME: 30 MIN TOTAL TIME: 1 HR 15 MIN + RESTING / CHILLING TIME

Before you start: The graham cracker crumbs should be ground quite fine. The crust should be cold (directly from the fridge) when it is filled and baked. The filling should be at room temperature. This will allow the filling to begin to set before the butter in the crust melts, which will keep the crust from absorbing the filling. Consider making more candied clementine slices than you need for the recipe. They will be great for snacking or as a garnish for a winter cocktail. Add the 'whipped' yogurt cream just before serving. It does not have the same staying power as traditional whipped cream.

The ingredients:

For the "cheesecake": • 1½ cups finely ground graham cracker crumbs • ⅓ cup sugar (or substitute) • 6 tablespoons butter, melted • ½ teaspoon ground fennel seed • 2 cups plain non-fat Greek yogurt, well-strained • 1 (14-ounce) can non-fat sweetened condensed milk • 2 large eggs • juice and zest of two clementines For the glaze: • 1½ teaspoons unflavored gelatin • 14 tablespoons freshly squeezed clementine juice, strained (7-8 clementines) • 4 tablespoons sugar (or substitute) • 1/2 teaspoon cornstarch For the garnishes: • 2-3 clementines, very thinly sliced • sugar for coating • 1 cup non-fat Greek yogurt • 2 tablespoons confectioners sugar

The instructions:

For the "cheesecake": 1. Preheat oven to 350˚F. Add graham cracker crumbs, melted butter, 1/3 cup sugar, and ground fennel seed to a bowl. Mix well with a fork to fully coat the graham cracker crumbs. Firmly press the crumbs into a square baking pan lined with aluminum foil or a spring-form pan. The crumbs should form an even layer and should be packed tightly just on the bottom, not the sides. Bake for 8-10 minutes or until the top just starts to brown slightly. 2. Let the crust cool slightly, then cover with plastic wrap and refrigerate for at least one hour before filling and baking. 3. Preheat oven to 325˚F. Place strained Greek yogurt, sweetened condensed milk, eggs, and clementine juice and zest in a mixing bowl. Beat on mediumhigh speed until fully combined. Pour the mixture over the graham cracker crust and lightly tap the bottom against the counter to eliminate extra air bubbles. Place the dish on a baking sheet and bake for 25-30 minutes or until set. The center may still be a bit jiggly. 4. Remove the cake from the oven and allow it to cool completely before covering it with plastic wrap and refrigerating for at least one hour. 5. After refrigerating, pour glaze over the top of the cake and tilt the pan in all directions to make sure the glaze is evenly distributed. Chill for at least 30 minutes. 6. Top the cake with small dollops of yogurt cream and half slices of candied clementine just before

At the end of a long day, the thought of a warm shower is enticing. Warm water is like a caress, it relaxes our body and cleanses our mind. Adding an oversized shower head with multiple settings elevates your shower experience. Now, showerheads with multiple settings enable you to massage tired muscles, experience water as if you are standing in soft summer rain and add bluetooth enabled music. Thermasol, Kohler, and others offer this type of showerhead and both companies offer steam units, as well, to complete the spa-cation shower surround experience. Relaxing in a bath has also been elevated into a spacation like experience. Whether you add an oversized freestanding tub or a standard *alcove* tube with a shower, you can enrich both. Pismo Beach, CA based designer ARIANA LOVATO, principal of Honeycomb Home Design, overcomes a unique set of challenges to create a chic, modern, family home.

THE DOSSIER

his was a teardown project. The clients had purchased a dated and run-down home from the '90s with the intention of completely demolishing and starting over. The land is what sold them on the property. The home overlooks farmland, the dunes, and the Pacific Ocean. It's breathtaking. We started the process from scratch and I introduced them to their architect, Pack Design. With Pack Design, we worked to create a cohesive interior and exterior that reflected our client's tastes but also honored the surrounding landscape. This project is one of my favorites because it is a great example of "warm modern" and how you can really bring the outdoors in with special thought to finishes.

THE CRITERIA

An indoor gym was a must! We designed that space to have plenty of natural light and installed cork flooring for a super soft and sustainable floor. The other unusual request was a "his and hers" suite. The home has two primary bedrooms and accompanying bathrooms. There are little "niches" throughout the home that allow for a beautiful garden space. Each primary bedroom allows for this indoor/outdoor connection, an important consideration for our clients.

THE CHALLENGES

Seeing the neighbors' homes from the front yard. - Our client's home is situated on top of a mesa in an older part of town. The houses across the street are older and a little more *run down.* The architectural designer worked hard to address this challenge by placing the windows in ways that captured the right sections of the beautiful views out over the mesa. In addition, Pack Design added clerestory windows in the master bath, to capture as much natural light as possible, in areas of the home where adding a regular window would have created a less than ideal view. Heavy winds due to location - There is lots of dirt and sand up on the mesa, so that created a challenge we had to overcome during construction and made for a messier job site. Luckily, we had understanding clients. Once their outdoor areas are landscaped, this problem will be solved, allowing them to enjoy their new indoor | outdoor lifestyle, year around. 50-foot setback off of the mesa created challenges for the layout - We had a smaller lot to work with because of this, but solved for it beautifully with the "H" style floorplan, which suited the client's needs perfectly. Harsh salt air - The materials we specified had to be very durable. We used a combination of smooth stucco, stacked stone and cedar siding for the entryway. The eaves are also lined with cedar. It's a beautiful wood that will hold up in the harsh salt air, but we wanted to limit its use, for maximum visual impact. The deck that faces the ocean is accoya wood, another strong durable material that will hold up for years.

he clients were fairly new empty nesters. While I was working on this project, their last child was graduating from college. They purchased their dream home and were ready to invest in design in a way that would allow them to entertain their friends and family in a chic, sophisticated indoor | outdoor setting, year-round. I found myself drawn to creating unique and different ways for two people to reconnect after 20+ years of raising their children.

My client's home is in a brand new community in San Diego. The builder capitalized on the beautiful year-round weather here with La Cantina doors that slide into the walls to achieve one large indoor | outdoor living space. My clients requested I find ways to maximize this feature, along with maximizing the modern pool and gym in the backyard and the several conversational spaces prevalent throughout the floor plan. The first space I addressed was

the outdoor living room which appears as part of the interior - separated by glass. By choosing similar colors and textures for the interior and exterior furnishings and accessories, I was able to accomplish a consistent flow from the interior to the exterior.

HOW DID SUSTAINABILITY PLAY INTO THE PROJECT?

Sustainability considerations are always part of Blackdoor's process when sourcing for our clients. In this project, our clients appreciated how we sourced from local vendors and how we used sustainable materials. For example, we used textiles from Sunbrella, a leading outdoor fabric supplier, which uses recycled fibers in its production process. In addition, we sourced 60% of the furnishings for this home from local vendors, cutting down on greenhouse gas emissions from long-distance transportation.

WHAT UNIQUE TOUCHES FOR INDOOR | OUTDOOR LIVING DID YOU INCORPORATE?

We designed this home to optimize for flexibility between open indoor | outdoor entertainment space and privacy for the times when our clients wanted intimacy or needed to be productive. For instance, the custom grommeted drapery we designed can be closed around the daybed to create a private and intimate space. The custom walnut console and stools we designed can be used outdoors for a workspace in the fresh air when they aren't being used by our clients for their dinner parties.

o accomodate a wish list that included mountain views, a spacious gourmet kitchen and pantry as the client loves to cook and entertain, a private office and a large gathering space, the couple brought in award-winning Utah based design firm, Miya Interiors. The space needed to be single level with great views for everyday living and highfunctioning to facilitate their love for entertaining.

The biggest challenge for interior designer Lori Miya was fitting everything the homeowners requested on one level, given the size of their lot. Because the clients love to entertain, a large loft area was eventually added for their out-of-town guests, solving ABOVE: Warm woods and black accents again a white backdrop create an entry space that is modern yet inviting and casual. The couple loves to cook together and entertain so the kitchen was a top priority for space planning. The gourmet kitchen is flanked by a walk-in pantry. A section of floating shelves in walnut was installed to create a space to display the homeowners' large collection of serving pieces they have gathered on their travels and keep them close at hand for use.

SEASONAL design the problem. The loft area includes a large family room with game and kitchenette spaces, a large bunk room, and a bathroom. Storage was also incorporated for seasonal items. The overall priority of this home was accessibility. Because the homeowners are approaching retirement, future needs were taken into consideration during the design phase. For instance, there are no stairs, both the patio and garage are ramped, and walk-in showers were blocked to accommodate future grab bar placement. To make the most of the surrounding golf course environment and the stunning mountain and lake views, a fire pit, outdoor seating areas, and garden areas were added. Columnar maple tree-lined fences were added for privacy and light control. The homeowners can now entertain their friends and family indoors or outdoors, in every season. KEY ASPECTS Lindsay Salazar

FLOW AND FUNCTION There is a beautiful ease to this home achieved with the floorplan, finishes and the furnishings. Ten-foot ceilings give a sense of volume without feeling cold. Hardwood flooring throughout warms the space, and expansive windows create a connection to the outdoors.

Top with remaining mozzarella and Parmesan. Add tomato slices. 7. Bake the casserole for 20-25 minutes or until everything is heated through and the cheese is melted and slightly browned. Cool slightly, cut into pieces, and top with basil leaves before serving.

CLEMENTINE DREAM-CAKE continued from page 7

serving. For the glaze: 1. Place 4 tablespoons of clementine juice in a small bowl. Sprinkle the gelatin over the juice and swirl the bowl to make sure all of the gelatin is covered. Let it rest for at least 10 minutes for the gelatin to absorb the juice. 2. After 10 minutes, place 2 tablespoons of clementine juice in a small bowl. Add cornstarch and stir to fully combine. Place 8 tablespoons of clementine juice and sugar in a small sauce pan and bring to a boil. Remove from the heat and whisk in the juice/ cornstarch mixture. Then whisk in the juice/gelatin mixture. Allow to cool slightly before pouring over cake. For the garnishes: 1. Preheat oven to 180˚F and line a baking tray with parchment paper. 2. Cut the clementines into very thin slices, horizontally, and place them on paper towels. Use another paper towel to blot them dry as much as possible. 3. Put sugar in a small shallow bowl. Press each side of each clementine slice in the sugar, then place the slices on the parchment-lined baking sheet. 4. Bake for 2-3 hours or until the slices are completely dry. Remove from the oven and allow to cool completely on the tray. Store any remaining candied clementine slices in an airtight container. 5. Create the yogurt cream by whipping together 1 cup of Greek yogurt with 2 tablespoons of confectioners sugar until light and fluffy.

• The way all of the finishes came together to create a warm modern feel and reflect the exterior landscape. • Working through the challenges of project delays, difficulty with the build, permitting issues, supply issues (right at the start of COVID). • Working with clients who had very different tastes and creating harmony between them.

THE INDOOR/OUTDOOR BLEND

Our weather here is beautiful year-round so indoor/ outdoor living is HUGE here. We designed a large deck out the living room with a folding door system that allows the clients to open up their space completely. We used Accoya wood for the decking so it matches closely to their hardwood, allowing for a seamless look. Their view warrants a lot of outdoor living and the home was really designed to take advantage of that, whether you are inside or outside. They are eventually installing a plunge pool and a hot tub but landscaping is not complete yet. Both bathrooms also open up to a small alcove that allows for enjoying the garden space, meditating, or just catching some sun.
