Marrakech resident and insider, Maryam Montague, is the owner of Peakcock Pavilions, a Give Back Boutique Hotel in Marrakech. She is also the cofounder of Project Soar, a non-profit organization based in Marrakech with satellites around Morocco with the goal of emporwering adolescent girls. We chatted with Maryam to get an insider’s perspective on exploring Marrakech and the surrounding area. Her recommendations are here to help you plan your own “out of the ordinary” Moroccan adventure. SL: What are your favorite "off the beaten path" places for visitors? MM: Sir Richard Branson’s Kasbah Tamadot, 50 minutes from the city. Have lunch on the grand terrace with its beautiful views and stretch out on a lounger near the magnificent pool. Meander through the paths that straddle the tented bungalows lined with fruit trees. You might even run into Mr. Branson himself, who occasionally visits. Visit the Berber Museum tucked into the Majorelle Garden. You’ll miss it if you don’t look for it! The Berbers were the original people of Morocco and their artistic legacy is key to the design narrative. The jewelry collection is particularly spectacular! SL: Where are the "must experience" restaurants with the best seasonal foods. MM: La Famille is tucked inconspicuously down a winding medina road and the very definition of “haven.” You can expect excellent vegetarian meals with a Moroccan twist in a leafy outdoor courtyard with no charming detail overlooked. Best for lunch or an early dinner and reservations are absolutely essential. Paradis du Safran will give you an insider look into one of the world’s most expensive spices, saffron. Take a short course on saffron (including how to spot fakes – which make up over 90% of the market worldwide) before being guided through the lovely botanical garden. You’ll top it off with a delectable meal infused with saffron from start to finish.

Make your own Moroccan meal with charming Moroccan Chef Souhail at Domaine Sauvage. The outdoor cooking school is located on his magnificent organic farm in the low foothills surrounding Marrakech. Much of the produce for the meal comes straight from the farm, picked that day! Take a hike afterwards into the carob and walnut groves. SL: What experiences does Marrakech offer for visitors that is unique to the city? MM: To get as close to heaven as possible (literally) I recommend a balloon ride with Ciel d’Afrique. You’ll be picked up early in the morning and set off for your aerial adventure. Enjoy a feeling of peace floating in the mist over the low Atlas Mountains, where the views are truly spectacular. You’ll end your outing with a Berber breakfast before heading back. Spend a gorgeous hour wandering around the newly opened Dar al Basha, the former Pasha of Marrakech’s home. You will see one of a kind mosaic tiles that were made just for the Pasha. It’s a pattern lover’s paradise! Dar al Basha now also houses the lovely collection of American heiress Patty Birch that she bequeathed to the kingdom before her death. Take a course or two at Café Clock. A favorite hangout of expats from around the world, Café Clock holds activities such as traditional Moroccan storytelling and calligraphy classes. Order the camel burger and the almond milkshake and you will not be disappointed. SL: For short visits, what are some things that should not be missed? MM: Don’t miss the recently opened Yves Saint Laurent Museum in the Marjorelle garden. It’s a beautiful homage to the designer who found so much inspiration in the Red City. Indeed, he credits Marrakech with his discovery and incorporation of brilliant colors into his work! Little known secret: the small cinema within shows films (for free!) every Thursday Night. Head over to the concept store, 33 Rue Majorelle, which represents an array of stylish designers who are particularly adept at melding Moroccan flair with modern tastes. Indulge in pure Moroccan fantasy at the Spa at the Royal Mansour Hotel. With its lacy white architecture, it's no wonder that it has been named the most beautiful spa in the world. Have a treatment in the hammam, with its soaring white marble arches and choose from a variety of divine massages. Then take your time in the recovery room with its down cushions, rose-filled fountains, and dreamy teas and cakes.

Visit Maryam’s Project Soar on a Sunday morning. The organization is dedicated to empowering hundreds of teenage Moroccan girls and is now located at 30 sites throughout the country. There is a suggested donation of between $75-$100/pp, all of which goes to supporting the activities of this nonprofit. CLICK TO LEARN MORE
SL: What are the cultural norms that people need to observe while visiting? MM: If you are in the medina, or old city, be prepared to bargain. This should be an easygoing back and forth. Bargaining is most required when it comes to the city’s Marrakesh by Design famous rug shopping. If bargaining makes you uncomfortable, you can always shop in Maryam Montague the new city of Marrakech, where many shops have fixed prices. $29�⁵, Amazon Click to buy Although Morocco is a photographer’s dream, be forewarned that many Moroccans don’t like having their picture taken, particularly traditional women wearing veils or men sporting beards. Ask if in doubt. You’ll also notice that shops with the famous Moroccan lanterns don’t like you taking photos unless you shop first! While you will find a real mix of clothing in Marrakech, I recommend that women wear clothing that covers the knees and be careful of baring too much cleavage. This is a predominantly Muslim culture and tourists should be respectful of local traditions.

Choosing colors can be an exciting process, especially when you consider the positive impact the right colors have on your life. By exploring the colors of a specific region, you can pull together a ready-made palette for creating a space focused on wellness and sustainability. To better illustrate the point, we turn our attention to the extraordinary colors of Morocco.
oroccan design incorporates everything from decorative architectural elements, elaborate tile patterns, luscious textures and the overall experience of an exotic color palette. Together these elements are so distinctive that they create a personal space that holds you close and soothes your soul. The appeal of Moroccan colors is largely due to the rich sense of history behind them. Many shades of red are from the reddish earth used for the construction of buildings over many centuries. Blues and deep purples are visible wherever art and architecture are decorated with elaborate tiles and decorative mosaics. The robust, saturated yellow, gold, orange, and deep rust colors of the area reflect the clothing and spices sold in local souks and used for meals… truly a feast for the eyes. Rich greens are often added to the architectural designs associated with Morocco and are part of its history. The palette of the region is instantly recognizable and its bohemian flair makes it a popular choice for interiors the world over. Calming colors are typically considered to more quiet and pale than these, but the truth is that Moroccan design offers several ways of creating a color palette that is relaxing and satisfying for you. Choose warm, richer colors to make your home cozier and more introspective or create a lighter home by choosing beautiful neutral mosaics and tiles that weave together a variety of subtle textures. The beauty of this approach is that you can personalize your home in a way that is most meaningful to you. You can use lighting and paint to easily incorporate these colors into the design of your home. Use softer, ambiante lighting to illuminate the subtleties of the varying textures of everything from fabric to tile designs. Use sustainable paints with little to no VOCs (Volatile Organic Compounds) to coat walls, ceilings, and trim for a home that contributes to a feeling of well-being. Wrapping yourself in the colors and textures you love will create an ambiance and relaxing atmosphere that you and your family and friends are sure to enjoy.

SEASONAL design DESIGNER SPOTLIGHT betsy burnham
odern Moroccan comes to life in this Los Angeles home through the thoughtful eyes of interior designer Betsy Burnham. The home was built in place of the 1970’s contemporary home where the clients raised their children, who are also Burnham’s clients. The concept for the design was modern Moroccan. Burnham’s approach was to keep with the theme without going too trendy. She focused more on the modern side than the Moroccan side and balanced the design with global furniture and objects , many of which were sourced on her trip to Morocco during the design process. Rugs and tiles naturally played an important role in the design. No fabrics were selected until the rugs were chosen. The rugs needed to relate, but still look modern. To achieve this, faded rugs were used rather than traditional Persian rugs, which would have been too bold in color and pattern to maintain the desired sophisticated look. Beautiful tile installations appear in many of the rooms. In fact, the designer chose to forego carpets in the hallways, adding inset mosaic tiles instead for unique and colorful runners. The canvas of the home is neutral. White walls and black steel window frames set the stage for more neutrals. Burnham, who is greatly influenced by fashion, called on some of her favorite neutrals, such as denim blue, army green, and sweatshirt heather gray. Then with the stage set, she started adding the pops of color through dramatic pieces and accessories. The result… a home with a personal, timeless feel that is perfect for entertaining a large family and friends.

TILE LOVE Traditional Moroccan tile or Zellige (also zelige or zellij) is mosaic tilework made from individually chiseled geometric tiles set into a plaster base. This form of Islamic art is one of the main characteristics of Moroccan architecture and commonly used as ornament for walls, floors, fountains and pools. Mulitple colors are often combined to create a lavish wash of pattern. Using the historic pattern inspirations from Morocco, modern tile makers here in the US create their tile patterns using different techniques. For instance, Patterson Collection tiles are created using a true historic encaustic method where the pattern is created by filling channels with colored clay slip. The tiles are then high fired resulting in a pattern that is as durable as its body. Because it is not a surface glaze pattern, it is extremely durable both indoors and out even in freeze/thaw climates. Theses tiles will not react with sunlight or chemicals making them the perfect choice for outdoor installations whether residential or commercial.
WHAT TO LOOK FOR:
When choosing a tile to use outdoors consider how the space will be used and the climate. Whether coastal Southern California, which does not freeze, or coastal North Carolina, where you may have freezing temperatures, it's important to have a full discussion with your tile contractor and tile showroom. The tile must be able to withstand the sun, moisture, and temperature changes where you live. Be sure to buy a very dense body tile that will resist staining and absorption of water and glazes that will resist etching and fading when exposed to chemicals and sun. One last point... if using tile on a horizontal surface, be sure to consider the surface texture since smooth tile can become slippery when wet.

n coastal communities like Pensacola, Florida, indoor and outdoor design often go hand-inhand. In collaboration with Cosentino, Kohler and Benjamin Moore, nationally-known, award-winning interior designer and owner of InDetail Interiors, Cheryl Kees Clendenon takes on a greenhouse kitchen project with a natural, Moroccan feel. With the objective of creating a true ‘living’ kitchen, Cheryl set out to define distinct kitchen zones, using colors provided by Cosentino, that would allow for activities like gathering, food prep, light gardening, and wine storage. In a room that is flooded with light and an abundance of windows and live plants, she was able to blur the lines between inside and outside. Designed for a family with middle-school aged children, the room needed to become a multi-activity space where they could begin and end their day together. Multiple seating

options were included and wide enough spaces to accommodate extra guests. This family-centric space was also equipped with multiple sink options from Kohler, so everyone can be involved in healthy meal preparations. With easy access to the patio, fresh ingredients are onhand and guests can move freely between the kitchen and the outdoors. The arches and floor tile provide a Moroccan feel while the Silestone countertops in Iconic White, Charcoal Soapstone, and Eternal Calcutta Gold give the space a sense of timeless modernity.

INGOT COLLECTION - BEHIND THE SCENE S The Ingot Collection is handmade; no two pieces are alike. It’s extremely labor-intensive, beginning with sheets of raw copper that are crafted into the final products. The painstaking process involves flattening sheets of copper over intensely hot pinewood fires, hammering decorations into the washed copper, adding patinas and colors to the face of the metal before it is fashioned into luxurious furnishings that stand the test of time. Once complete, each object is coated with PVC to protect the copper finish against fading or oxidation so that it can be enjoyed, admired, and treasured well into the future.

Melt butter in a large skillet over medium heat. Add shallots and cook for 3 minutes.

For the dressing:

6 large garlic cloves, minced

juice from one lemon
Add chicken stock, salt, and pepper. Increase heat to high and bring liquid to a boil.

5 saffron threads

2 tablespoons olive oil

1 butternut squash (2-2½ pounds), peeled, seeded and cut into 1-inch chunks

1 tablespoon honey
•
1 cup chicken stock
•
1 teaspoon cumin
Remove the skillet from heat and add couscous. Stir just to fully incorporate. Cover the pan and let it rest for 10 minutes.

Add pine nuts and currants and toss lightly with a fork.

¼ cup fresh parsley, chopped

¼ teaspoon salt

pinch of cayenne pepper
Instructions: 1.

Place salt, red pepper, cardamom, cloves, turmeric, cinnamon, ginger, coriander, and pepper in a small bowl and stir to fully combine. Rub chicken pieces with half of the spice mixture. Place the bottom of the tagine on a heat diffuser on the stove over medium-high heat. When the tagine base is hot, add 2 teaspoons of oil to heat. Add the chicken and cook 3-4 minutes on each side until browned. Do this in two batches if necessary. Set chicken aside. Reduce heat to medium.

Add the remaining oil, onions, garlic, and saffron to the tagine base. Cook for 2 minutes, stirring occasionally.

Place the squash in the tagine base and cover with remaining spice mixture. Toss lightly.

Return chicken to the tagine base and add chicken stock. Bring liquid to a boil, then reduce heat to medium-low and cover with tagine lid.

Simmer for 1 hour, then add raisins. Cook for an additional 20-25 minutes or until chicken breasts are fully cooked (165˚F) and squash is tender.

Preheat oven to 400˚F.

Cut carrots in half lengthwise or quarters as necessary depending on size. Toss carrots in olive oil, lemon zest, salt and pepper. Lay carrots on a parchment-lined baking sheet in a single layer. Roast for 20-25 minutes, or until fork tender.

While carrots are roasting, make the dressing by combining all of the dressing ingredients in a small bowl and whisking until well-combined and smooth.

Remove carrots from oven and allow to cool slightly.
5.
Toss greens together with radishes, beets, chickpeas, and mint. Place mixture on a serving platter. Add carrots to top of salad and sprinkle with almonds and extra mint, if desired.
Garnish with fresh parsley. Serve from tagine or on a platter, reserving liquid for serving.
NOTE: If you do not have a tagine, this recipe can be made in a Dutch oven with a lid.
