My goodness how quickly a few weeks can significantly transform the world that we all love. The shocking changes we are experiencing with COVID-19 are unprecedented and are re-shaping our world as we know it. The arrival of this virus came as we were finalizing this Spring issue and left us in a quandary on how to proceed. We know that many of you love to travel but that has all but evaporated. So, we focused on travel closer to home – that is our home in Austin, Texas and the Texas Hill Country. The beauty of our famed Hill Country with wide-open spaces and beautiful German-influenced towns provides lots of variety (where there is plenty of social distancing yet allowing you to enjoy time with your family and friends). Spring in Texas doesn’t need to be missed given the vast vistas and spaces that the Lone Star State offers. Hop on a virtual tube and float down the lazy river of these pages – enjoying a bountiful spring harvest of carefully curated Texas Hill Country highlights to help you plan your visit – and don’t miss our special section on traveling with pets. They offer so much comfort, even more in these challenging times, so get into the great outdoors and enjoy being with man’s best friend! There is no shortage of outdoor recreation in the Hill Country, with spring being one of the best times to take advantage of all the area has to offer. MUSIC LOVERS LOVE THE HILL COUNTRY Music plays an important role in the Hill Country. In fact, one whole town is dedicated to it. Be sure to visit the small town of Luckenbach and the Luckenbach Dance Hall for a Hill Country musical treat. But it doesn't stop there... music is found throughout the region in places like Gruene Hall in Gruene or the Gruene Whitewater Amphitheater in New Braunfels. A little further south you will find the 11th St. Cowboy Bar, also known as the "Biggest Little Bar in Texas" in Bandera.

FIRST THINGS FIRST
Have your pet checked by the vet to ensure it is healthy enough for travel. Ensure there is plenty of time, as it may take several visits to complete vaccine and certificate requirements. You will want to check your final destination for any specific requirements, as some countries require specific vaccines as much as 6 months in advance of travel. Be sure to have your vet prepare all documentation with duplicate printed copies prior to departure. If your pet requires medications, special food, and/or flea prevention, then be sure to get enough for the duration of the trip plus a few weeks after your return. Reducing your and your pet’s stress is paramount to a successful trip. You may consider microchipping your pet prior in case you and your pet get
traveling with pets
CARRIER/CRATE
Carrier/Crate: If you are buying a shipping crate for your pet, be sure it is IATA (International Air Transport Association) approved. The carrier or crate should be large enough for your pet to sit, stand, and turn around in with ease. It should also be secure enough to withstand vehicle/plane movements and stops. For your pet’s comfort, line the crate or carrier with absorbent bedding. Freeze water in a container that can attach to or adhere to the inside floor, so that it doesn’t slosh or spill as your pet is transported. The ice will melt and offer water when your pet is thirsty. Attach a bag of dry food and your pet’s documents to the outside of the crate/carrier. Ensure they are in a sturdy pouch and zip tied to the carrier. Your pet’s ID should be clearly marked on the crate/carrier as well. Make sure you retain a set of your pet’s documents should they be needed while you are separated from your pet. CAR HARNESS
There are many car harness options available for securing your pet (most likely a dog) utilizing a standard seatbelt in the back of the car. And as much as we love a happy pup hanging its long tongue out the window, the safest place for your pup is secure inside the vehicle. BACKPACKS/SOFT CARRIERS/SLINGS
If you don’t require a hard-sided crate, then there are endless options for soft

Having a local vet’s number on hand at your destination will drive down panic in case of an emergency. ROASTED ASPARAGUS FARRO RISOTTO serves 6
The ingredients:
FARRO
This ancient Italian wheat grain is a whole food that is packed with fiber, protein, and vitamins. As a healthy alternative to other refined grains, farro looks like wheat berries when dry and like barley when cooked. It can be used for soups, salads, and granola or muesli.
• 10 thin slices prosciutto • 1½ pounds fresh asparagus, cut into 1-inch pieces • 6 cups chicken stock • 1 shallot, diced • 3 garlic cloves, minced • 1 tablespoon olive oil • 2 cups uncooked farro • 1/2 cup dry white wine • 1/2 teaspoon cracked black pepper • salt to taste • 1 cup grated Parmesan cheese The instructions: 1. Preheat oven to 400˚F. Place prosciutto slices on a baking sheet and bake for 10-12 minutes, or until crisp. Allow prosciutto to cool before crumbling it into small pieces. Place asparagus on another large, ungreased baking sheet in a single layer. Bake at 400˚F for 20-25 minutes while you are preparing the risotto. Set prosciutto and asparagus aside until the end. 2. Add stock to a large saucepan and bring it to a boil. Reduce the heat to just below simmer to keep the stock warm throughout the cooking process.

For presentation, set aside the tops of the asparagus and poke them into the top of the risotto. Then finish with a few of the curliest pieces of prosciutto and a bit of fresh parmesan.

If you have never had pavlova you are in for a treat. The range of textures and flavors make it a favorite for many people. The baking method results in a light and crispy crust enveloping a soft marshmallowy center. Top that off with whipped cream and fresh berries for an 'out of this world' dessert. The raspberry sauce adds a bit of tartness that helps balance the sweetness of the meringue. Pavlova is named after the famed Russian ballerina. As the story goes, in 1926 the dancer toured Australia and New Zealand. This was a monumental event for those times. The dessert was invented to honor her light and airy dance. There is still debate over which country developed it first.

Before you start:
*This is easier than you think. Armed with the right tools and a little bit of knowledge your attempt will be well rewarded. *Any oils in the bowl can have a negative impact on your meringue. Make sure your bowl is very clean. *Your pavlova will likely crack. Don't panic. It is expected. *Adding the sugar to the egg whites will weigh it down a bit. You may begin to think that the egg whites won't stiffen up again. Be patient. Just about the time you are ready to give up, it will happen. *Either buy superfine sugar or run granulated sugar through your food processor for 20-30 seconds. This will make it easier for it to dissolve in the
egg whites. *Use two baking sheets together to make sure the bottom does not cook too quickly. It works perfectly every time. *Do not assemble this until just before serving. The weight of the cream and berries can flatten the soft center of the meringue over time.

For the meringue base: • 4 egg whites • pinch of salt • 1¼ cups superfine sugar • 2 teaspoons cornstarch • 1 teaspoons white vinegar • 1 teaspoon vanilla extract For the topping: • 3 cups fresh raspberries, divided • ¼ cup sugar

Start with what is most important to you. If you are staying in your home long term, buy the best appliances you can based on budget. If you are planning to move in the future, consider portable options.
Make a detailed plan of where everything will go. Consider these 5 zones- hot cooking, cold storage, wet for cleaning, dry for food prep, and the entertaining area where people will gather to eat or hang out.
Don't assume the most obvious choice for your outdoor kitchen is the best choice. Look around your property and consider privacy and areas of your yard that are perhaps underutilized.
CHECK WITH YOUR INSURANCE PROVIDER TO ENSURE THAT YOUR OUTDOOR KITCHEN WILL BE COVERED. GENERALLY, IF YOUR OUTDOOR KITCHEN IS CONNECTED TO THE BACK OF YOUR HOUSE OR IS PART OF A DECK OR PATIO THAT IS CONNECTED YOU WILL BE COVERED. IF IS IT NOT, IT MIGHT NOT BE COVERED... EVEN IF IT IS ONLY A FEW FEET AWAY.
CHOOSING MATERIALS It should go without saying, but cabinetry, countertops and flooring should be waterproof and coordinate with the overall design and landscaping. NOT THAT. Spend a load of money on rugs. That expensive Persian rug can be showcased on the wall and not ruined by cat vomit or muddy paws. Paint with flat paint that shows marks easily and cannot be cleaned (see our spring paint guide on page 25 for more information). Use upholstery fabrics such as silk, velvet, or leather OR accessories with loose weaves and tempting tassles. Nails, claws, teeth and fur will wreak havoc on these things. Forget to bathe and groom your pets regularly including routine nail trimming. Allow your cat to use the furniture as a scratching post or allow your puppy to use wooden legs as chew toys. Allow pet toys to overtake your home.

Because of Austin’s beautiful natural environment, many of the modern homes have balconies with stellar views or are nestled in the woods. Landscape designers have a field day when it comes to designing the outdoor spaces while architects face challenges designing homes within the wooded areas of sprawling live oak trees or wide expanses of hilly terrain. Whatever the challenge, Austin architects are increasingly focusing on outdoor living as the key to designing healthy homes for the well-being of their clients. While there were many homes on the Austin Modern Home Tour with inspiring architecture and design, two were exceptional. Both are great examples of how important it is for architects to factor in the outdoor environment into the design of the home, literally bringing the outdoors in and the indoors out.

Every year Austin offers design enthusiasts a multitude of Home Tours, but one that captures the essence of outdoor living, and kicks off the spring season, is the Austin Modern Home Tour. Produced by Modern Architecture + Design Society, and in its 12th year now, The Austin Modern Home Tour provides an incredible opportunity for local architects, interior designers, builders, and landscape designers to showcase their work. At the same time, the tour gives the community a rare chance to explore modern homes in and out and “engage the minds” behind the designs. With a record attendance of 2,100 in February, the attendees toured 14 exceptional modern homes designed by some of Austin’s finest architects, interior designers, and landscape designers. Attendees experienced incredibly inspiring homes from the urban core of the city to the scenic hills of the Texas Hill Country.

SEASONAL design A FEW YEARS AGO, INTERIOR DESIGNER LINDA HOLT AND HER HUSBAND "RIGHT SIZED" FROM A LARGE HOME IN THE COUNTRYSIDE OUTSIDE OF BOSTON TO A MUCH SMALLER CONDO INSIDE THE URBAN CORE. DURING THAT PROCESS, SHE HAD TO ELIMINATE MUCH OF WHAT SHE AND HER HUSBAND OWNED, WHILE AT THE SAME TIME CONSIDERING WHAT SHE WANTED TO KEEP THAT HAD THE MOST MEANING FOR HER AND HER FAMILY. ONE ITEM THAT HELD TREASURED MEMORIES FOR LINDA WAS HER GRANDMOTHER'S BOSTON BAKED BEAN BEAN POT. THAT POT HAD BEEN USED COUNTLESS TIMES FOR HER GRANDMOTHER'S WELL LOVED RECIPE AND WAS A BEAUTIFUL GREEN THAT INSPIRED LINDA'S COLOR PALETTE CHOICE FOR THE KITCHEN OF THEIR NEW HOME. SEASONAL design COLOR TOP TIP: Look at the fixed elements in a room such as countertops, backsplash, fireplace surround, floor, ceiling, etc. to find the predominant undertones. If the undertones are consistent, you can choose a paint color based on that undertone. If they differ, choose a color that flows with the undertone in the element that has the largest visual span. BONUS TIP: You can find the undertone by looking at the far end of a paint swatch strip. If one end of the paint strip is off-white and the other end is yellow, for example, the undertone of the off-white is the yellow. BUDGETING TOP TIPS: 1. Add money into your mortgage or refinance that you will need for structural renovations and re-furnishing. 2. Choose the two things from your wish list that you want the most for your new

In Linda's case, she knew she would be keeping her dog food in her custom built-in, so she even measured the height of the packages she normally bought, to make sure they would fit. Make sure to also leave room between the built in and whatever will be in front of it for a person to stand, lean over, use a ladder, etc.

3. Heat olive oil in a large skillet over medium-high heat. Add shallot and garlic and cook until tender (about 3 min). Add the farro and cook for 3 minutes, stirring frequently. Reduce heat to medium and add wine, salt, and pepper. Cook, stirring continuously, until all of the wine is absorbed. 4. Add the stock, about ½ cup at a time, and stir while cooking until the liquid is absorbed. Repeat until the risotto is creamy and the farro is al dente (about 25 min). Remove from the heat and stir in prosciutto, asparagus, and parmesan. Check the risotto for seasoning and add salt to taste. Serve immediately with a bit of parmesan for garnish.

paper. 4. On medium high to high speed, whisk the egg whites and salt until soft peaks form. Begin mixing in sugar but only a tablespoonful at a time. Mix until shiny stiff peaks form. 5. Evenly distribute cornstarch, vinegar and vanilla over the egg mixture. Fold in gently. 6. Divide the batter evenly between the circles you drew on the parchment paper. Make a bit of a depression in the middle of each mound. It will rise during baking and then sink at cooling. However, this little dip will serve as a "bowl" for the cream and fruit. Lightly run a rubber spatula around the outside of each mound to make it smooth. 7. Place the tray in the oven on the middle most rack. Turn the oven down to 300˚F. Bake for 30 to 40 min. Check at 30 mins with a clean toothpick test. When toothpick is almost completely clean (there may be a little moisture) turn off the oven and open the door. Allow the meringues to finish cooking/cooling here until completely cool. For the topping: 1. Place 1½ cups of raspberries, reserving the remainder for later, in a blender and blitz to purée. Strain off solids by pressing through a fine mesh strainer with a rubber spatula. Add the strained purée to a small sauce pan with sugar and lemon juice. Cook over medium heat, stirring occasionally, until sauce thickens. Cool before serving. 2. Place the whipping cream and confectioners sugar in a bowl. Whip on medium high to high speed until thick but not stiff. 3. When you are ready to serve, divide the whipped cream among the meringue bases, making sure to take it to the edges with little pillows of cream. 4. Distribute raspberries evenly over the desserts first and then fill in spaces with blueberries. Drizzle each with raspberry sauce and garnish with pansies just before serving.
